探究不同规格黄鳍金枪鱼(Thunnus albacares)肌肉营养成分及品质差异,实验以野捕的 3种规格黄鳍金枪鱼J1 (4.2±1.2) kg、J2 (22.5±2.5) kg和J3 (50.8±3.9) kg为研究对象,通过常规生化分析方法对金枪鱼肌肉的常规营养成分、氨基酸、脂肪酸及矿物质元素进行比较分析。结果显示,(1) J1组水分含量显著高于J2、J3组;J2、J3组粗蛋白含量显著高于J1组(P<0.05);J3组粗脂肪含量显著高于J1、J2组(P<0.05)。(2)检出19种常见氨基酸,氨基酸含量最高的为谷氨酸(3.04~ 3.25 g/100 g),必需氨基酸中含量最高的为赖氨酸(2.02~2.15 g/100 g),最低的为色氨酸(0.31~ 0.45 g/100 g)。非必需氨基酸含量J3>J2>J1 (P<0.05);必需氨基酸、呈味氨基酸含量J1组显著低于J3组(P<0.05)。依据氨基酸评分(AAS),缬氨酸为第一限制性氨基酸;以化学评分(CS)为评分标准,J1、J2组第一限制性氨基酸为色氨酸,J3组为苯丙氨酸+酪氨酸。(3)各组共检出25种脂肪酸,以多不饱和脂肪酸(PUFA)为主,含量最高的为二十二碳六烯酸(DHA),占总脂肪酸含量的37.46%~39.18%。DHA含量J3组显著高于J1、J2组;二十碳五烯酸(EPA)含量J2、J3组显著高于J1组;DHA∶EPA比值J1组显著高于J2、J3组(P<0.05)。单不饱和脂肪酸(MUFA)含量J3>J2>J1;PUFA含量J3组显著高于J1、J2组(P<0.05)。PUFA/饱和脂肪酸(SFA)、n-3系多不饱和脂肪酸/n-6系多不饱和脂肪酸(n-3/n-6)比值J2、J3组显著高于J1组(P<0.05)。h/H比值J3组显著高于J1、J2组(P<0.05)。(4) J2、J3组Na、Ca含量显著高于J1组,J1组K含量最高且显著高于J2、J3组(P<0.05)。4种重金属元素均低于食品中建议的最大允许限量,其中Fe含量最大的为J3组,且J3>J2>J1 (P<0.05);Cu含量最大的为J3组,且显著高于J1组(P<0.05)。综合分析,大规格黄鳍金枪鱼具有更好的营养质量,本研究为居民膳食的选择及黄鳍金枪鱼人工配合饲料的配制提供了科学依据。 相似文献

本研究应用排空强饲法及石岐杂公鸡、樱桃谷公鸭分别测定定了5种饲料氨基酸表观消化率和真消化率。结果表明:除玉米氨基酸表观消化率外,其余饲料的大多数氨基酸消化率在鸡和鸭之间都存在着明显差异;在32小时收粪时间里,鸭的内源氨基酸排出量明显比鸡多;内源氨基酸对鸡和鸭的饲料氨基酸真消化率都有影响,影响大小随蛋白质含量高低而异,一般饲料蛋白质含量越低的饲料两者相差越大。而内源氨基酸排出量对鸭饲料,尤其对低蛋白含量饲料的氨基酸真消化率的影响比鸡更明显。 相似文献

为研究不同种植区西洋参氨基酸的含量和品质,按食品安全国家标准GB/T5009.124-2016,对加拿大多伦多市、陕西省留坝县、吉林省抚松县、山东省文登市来源的4 a生西洋参进行氨基酸种类和含量测定及对比分析。各产地西洋参均检测出17种氨基酸,其中含有人体必需的赖氨酸、蛋氨酸、异亮氨酸、苯丙氨酸、亮氨酸、苏氨酸、缬氨酸和半必需氨基酸精氨酸;含有蛋氨酸、亮氨酸、异亮氨酸、苯丙氨酸、赖氨酸、天冬氨酸、甘氨酸、谷氨酸和精氨酸等8种药用氨基酸。人体必需氨基酸及药用氨基酸含量对比分析结果表明,加拿大多伦多市来源西洋参的这两类氨基酸含量最高,分别为46.20 mg/g和61.93 mg/g,占总氨基酸含量的54.0%和72.3%,其次是陕西省留坝县来源的西洋参,分别为45.70 mg/g和61.63 mg/g,占总氨基酸含量的51.9%和70.0%。主成分分析及综合评价结果表明,从氨基酸含量及营养均衡性角度来看,陕西省留坝县西洋参是最接近原产地加拿大的西洋参。 相似文献

BACKGROUND: Irish Wolfhounds frequently have a congenital portosystemic shunt, but a considerable proportion of the 6- to 8-wk-old pups has hyperammonemia in the absence of portosystemic shunting. This hyperammonemia causes no signs and is transient, normalizing at the age of 3-4 months. HYPOTHESIS: Transient hyperammonemia has a metabolic basis in Irish Wolfhounds. ANIMALS: Two related (same sire) litters of Irish Wolfhounds (17 pups) and their parents were studied. METHODS: Integrity of the portal circulation was examined by ultrasonography and scintigraphy. Absence of parenchymal liver disease was verified by liver biopsy. Amino acid profiles were measured in 4 pups and repeated in 2 of these pups when ammonia concentrations had normalized. The amino acid profiles were compared with those of healthy Irish Wolfhound pups. RESULTS: Fasting venous ammonia concentrations were high (113-622 microg/dL, 65-345 micromol/L) in all pups, whereas bile acids were within reference range in all but 1. The ammonia and bile acid concentrations from all parents were within reference range. Portosystemic shunting was excluded in all but 1 pup. Liver biopsy excluded significant lesions in all 10 pups examined. Hypercitrullinemia was found and persisted even when ammonia had normalized, at the expense of an increase in glutamine and asparagine. CONCLUSIONS AND CLINICAL IMPORTANCE: Citrulline concentrations are controlled by the urea cycle enzymes argininosuccinase and argininosuccinate synthetase, and a defect in either of these enzymes may be responsible for the transient hyperammonemia in Irish Wolfhounds. Resolution of the hyperammonemia is associated with increased activity of alternative metabolic pathways forming glutamine and asparagine. Confirmation requires measurement of enzyme activities in liver tissue. 相似文献

研究了生菜水培过程中,用混合氨基酸替代20%硝态氮时,不同的氨基酸添加方式和营养液的杀菌方式对生菜产量和品质的影响。试验于生菜采收前12 d开始进行,试验设置4个处理:A.替代氨基酸1次全部加入;B.每3 d添加氨基酸替代总量的1/4,共添加4次;C.氨基酸分次添加(添加方式同B处理),每次添加前营养液通臭氧0.5 h杀菌; D.氨基酸分次添加(添加方式同B处理),每次添加前把营养液加热到60-70℃保持10 min进行杀菌,然后迅速把营养液温度降低到常温。结果表明,在不杀菌的情况下,1次添加的产量和品质优于分次添加,但在降低硝酸盐含量方面,分次添加优于1次添加;在分次添加的情况下,杀菌与不杀菌相比,杀菌可以明显提高生菜的产量和品质,加热杀菌对生菜产量和品质的影响优于臭氧杀菌,臭氧杀菌处理的生菜根系活力、叶绿素等指标高于加热杀菌,但2种杀菌方式之间差异不大。 相似文献

This study investigated the influence of different dietary protein/carbohydrate ratios on activities of enzymes involved in the amino acid metabolism as well as on growth performance and body composition of Nile tilapia (Oreo- chromis niloticus). Fish were fed semi-synthetic diets differing in their protein/carbohydrate ratio. The diets were formulated to be isolipidic and isoenergetic (on the basis of metabolizable energy). Fish were reared individually. After a prefeeding phase, tilapia were randomly assigned to three groups and were fed the experimental diets at a relatively low level. The study lasted 9 weeks. Proximate composition, gross energy content, and activities of aspartate aminotransferase (ASAT) and alanine aminotransferase (ALAT) in the liver of fish were determined. While the mean growth rate and feed conversion efficiency did not differ significantly among the feeding groups, the body composition showed significant differences. The dietary protein/carbohydrate ratio had no significant effect on the protein and energy gain, but the lipid gain was significantly higher in tilapia fed the low-protein diet. The activities of ASAT and ALAT per gram of liver and per gram of soluble protein were significantly increased in fish fed the high-protein diet. There was a significant positive correlation between the activities of ASAT and ALAT. The activities of both enzymes in the liver were significantly higher in fish with a higher protein gain. Measuring the activities of enzymes involved in the amino acid metabolism can provide more information about the metabolic utilized dietary protein. 相似文献

用数学统计方法和蛋白质序列分析软件对部分已测序的17种低分子量走谷蛋白亚基含氮量、氨基酸含量及一级结构序列进行比较分析。以期从氨基酸层次上揭示其结构和功能及进化上的关系.结果表明:(1)其平均含氮量为17.8%;(2)氨基酸含量基本恒定。以谷氨酰胺的含量最多。且常连接在一起;(3)存在119个保守性氨基酸残基扣两个保守性片段。一个是“QQQ-PPFSQQ”。一个是“IP-VHPSILQQLNPCKVFLQQ—C—P—AM-Q-LARSQM-QS-CHVMQQQCCQQL—QIPQQSRYEAI-AI-YSIILQEQQ”(“-”表示各序列中不同的氨基酸);(4)X84960、X84961、Y14104;X13306、U86025、U86027、U86029两组亚基序列中各具有一定程度的同源性。 相似文献

The aspartic acid,tyrosine and serine contents of leaves were found reduced in prematurely reddened leaves of hirsutum cotton (Gossypium hirsutum) as compared to healthy green leaves. Amino acids other than those listed above were higher in the affected red leaves. Amino acids threonine and proline increased 63.7 and 2.3 fold over green leaves respectively. Chemical sprays not only maintained the levels of various amino acids at par with green leaf but tended to increase the concentration above the levels obtained in normally found green leaf. However, threonine level was dropped in treated leaves as compared to partly affected red leaf and chemical sprays significantly reduced the leaf reddening when it was sprayed before flowering.
