以山西省吕梁木枣为原料,设计不同的提取条件,对木枣果皮花青素提取工艺及稳定性进行了研究。结果显示:以水作为提取剂,在温度为35℃,pH值为6.2,固液比为1:35,纤维素酶用量为9.20mg/g,提取时间为120min的提取条件下,木枣果皮花青素提取率高达21.37%;木枣果皮花青素对热、亚硫酸钠、蔗糖、苯甲酸钠以及部分金属离子比较稳定,对光和过氧化氢很不稳定。该木枣果皮花青素提取方法简便,易于操作,绿色环保;且稳定性也较好。是一种理想的天然色素资源,适用于功能食品添加、着色,保健药物与化妆品研发。 相似文献

The effects of black rice anthocyanidins (BRACs) on retinal damage induced by photochemical stress are not well known. In the present study, Sprague-Dawley rats were fed AIN-93M for 1 week, after which 80 rats were randomly divided into two groups and treated with (n = 40) or without BRACs (n = 40) for 15 days, respectively. After treatment, both groups were exposed to fluorescent light (3,000 ± 200 lux; 25℃), and the protective effect of dietary BRACs were evaluated afterwards. Our results showed that dietary BRACs effectively prevented retinal photochemical damage and inhibited the retinal cells apoptosis induced by fluorescent light (p < 0.05). Moreover, dietary BRACs inhibited expression of AP-1 (c-fos/c-jun subunits), up-regulated NF-κB (p65) expression and phosphorylation of IκB-α, and decreased Caspase-1 expression (p < 0.05). These results suggest that BRACs improve retinal damage produced by photochemical stress in rats via AP-1/NF-κB/Caspase-1 apoptotic mechanisms. 相似文献

Summary In order to investigate the inheritance of flower colour in tulips, seven cultivars were crossed and selfed in a diallel. Of these parents and their F1's the relative amounts of carotenoids, delphinidin, cyanidin, pelargonidin, quercetin and kaempferol were determined.For delphinidin, quercetin and daempferol only additive gene action was determined, and for carotenoids, cyanidin and pelargonidin also non-additive gene action and plasmic differences.Biosynthesis of delphinidin and pelargonidin was only found when cyanidin was present, while synthesis of delphinidin and pelargonidin was antagonistic. 相似文献

研究了紫色深浅不一的5个特定紫芽品种茶树春梢芽叶中的花青素、茶多酚、黄酮类、氨基酸、咖啡碱、水浸出物、儿茶素总量、酯型儿茶素总量、简单儿茶素总量等生化成分含量的差异.结果表明:紫芽品种茶树芽叶紫色深浅与花青素含量关系密切,与茶多酚、咖啡碱、氨基酸、黄酮类、水浸出物、儿茶素等含量没有直接相关性.普通品种紫色芽的花青素、茶多酚、水浸出物、儿茶素总量、酯型儿茶素总量等均较正常黄绿色芽叶高,氨基酸、简单儿茶素总量等均较正常芽叶低. 相似文献

【目的】探讨不同时期棉花叶片中蛋白质、可溶性糖和花青素含量与绿盲蝽抗性的关系,为深入研究棉花对绿盲蝽的抗性机制及组建绿盲蝽综合治理技术体系提供依据。【方法】以田间筛选出的31个棉花品种(系)为材料,通过网室抗性鉴定和室内测定分析,系统研究了不同棉花品种(系)对绿盲蝽的抗性水平及棉花叶片蛋白质、可溶性糖和花青素含量与绿盲蝽抗性的关系。【结果】不同棉花品种(系)在苗期、蕾期和花铃期叶片中蛋白质、可溶性糖和花青素含量存在差异;苗期棉花叶片中蛋白质含量和蕾期可溶性糖含量均随着棉花对绿盲蝽抗性的增强而降低,蕾期棉花叶片中花青素含量随着棉花对绿盲蝽抗性的增强而增加。【结论】棉花叶片中蛋白质含量和蕾期叶片中可溶性糖含量与绿盲蝽抗性呈负相关,而蕾期棉花叶片中花青素含量与绿盲蝽抗性呈正相关。 相似文献

用分光光度法测定了甘蓝型油菜3对黄—黑籽近等基因系成熟前期种子皮壳中的花色素、多酚、苯丙烯酸的含量和苯丙氨酸解氨酶(PAL)活性。结果表明,黄籽皮壳中的花色素、多酚和它们的共同合成前体———反式苯丙烯酸的含量都极显著低于黑籽的。因此,黑色素和花色素含量的多少都影响甘蓝型油菜籽色的变异 相似文献

茶树紫色芽叶的呈味特征及降低苦涩味的研究 总被引:1,自引:0,他引:1
茶树群体品种常见的紫色芽叶所制成的绿茶苦涩味明显。分离测定了茶树紫色芽叶主要苦涩味特征成分,用苦涩味阈值和苦涩味指数定量评价了各成分的呈味特征。结果表明,茶树紫色芽叶花青素含量高达1.14%,紫色芽叶中花青素和儿茶素的含量分别是绿色芽叶的57倍和1.13倍,花青素和儿茶素含量较高是其苦涩味较强的主要原因。茶叶苦涩味成分阈值的大小顺序为:咖啡碱(0.30)<花青素(0.40)<儿茶素(0.80);以苦涩味指数评价成分对紫色芽叶苦涩味实际影响大小顺序为:儿茶素(3.32)>咖啡碱(2.13)>花青素(0.57)。研究还表明,在紫色芽叶加工绿茶的过程中,添加约0.2%的酪蛋白具有降低苦涩味的作用,可使品质得到改善,使茶汤中多酚类浓度降低19.5%,苦涩味指数由3.70降至2.98,由此提供了一种降低紫色芽叶苦涩味的技术途径。采用多酚-蛋白复合反应模型,提出了用相对沉淀率(RA)作为酪蛋白对多酚类物质的苦涩味抑制能力的评价指标。 相似文献
