A comparison was made of some productive traits of Stirling Nile tilapia (wild type) (Oreochromis niloticus, Linnaeus) and red hybrid tilapia (Florida red tilapia× Stirling red O. niloticus) males during a 98‐day grow‐out period. Twenty‐two males from each genetic group with initial weights of 139.0 g for O. niloticus and 207.3 g for the red hybrid were placed in triplicate tanks. The fish were fed with a feed containing 36.8% crude protein. Survival was 97.0% for the red hybrid and 83.3% for O. niloticus. Daily individual weight gains were 2.95 and 2.50 g and final body weights were 473.0 and 348.8 g for the red hybrid and O. niloticus respectively. Fillet yield was similar for both the species, with 33.4% for the red hybrid and 32.0% for O. niloticus. Fresh fillet lipid content was perceptibly less in the red hybrid (0.33%) than in O. niloticus (2.07%). Some benefits of a red low‐fat tilapia genotype are discussed.  相似文献

Two, 42‐day feeding experiments were carried out in aquaria working in a recirculation system, to determine the influence of the different dietary fat levels and fat sources on the growth and body composition of pikeperch fingerlings. In the first experiment three levels of dietary fat (F0: 60; F1: 120; F2: 180 g kg?1) were tested, compared with a commercial diet (Trouvit, 240 g kg?1 fat content). F1 and F2 were formulated by adding fish oil. Best growing and feed conversion ratio was obtained with the commercial control diet, which produced also the highest total body fat (117 g kg?1) while respective values of fish fed on the other three diets varied between 74.1 and 85.1 g kg?1. Different feeds had no significant differences in crude protein content of the fish body. In the second test, besides feeds F0, F1 and F2, two additional feeds were formulated containing 127 g kg?1 (L1) and 178 g kg?1 (L2) crude fat (from linseed oil). Dietary fat levels and fat sources had significant effect neither on growth nor on feed conversion ratio. Chemical composition of the whole body did not change significantly due to the different feeds. Linseed oil had a decreasing effect on the sum of saturated fatty acids and increased the oleic and the α‐linoleic acid proportions in fillet. However, total polyunsaturated fatty acid (PUFA) proportion remained constant.  相似文献

In order to investigate how seasonal variation in growth affects selected fillet quality parameters, immature Atlantic salmon (Salmo salar L.) were reared under simulated natural photoperiod (SNP) for 12 months or continuous light (LL) from January to June followed by SNP until December. Photoperiod treatments advanced the growth rate pattern of the LL group compared with the SNP group and influenced macronutrient metabolism, evaluated both as trends in protein and lipid retention and in fillet lipid and protein levels. Good growth was associated with low fillet lipid and protein level, in addition to reduced levels of fillet tocopherol and astaxanthin, indicating increased oxidative stress. Elevated levels of thiobarbituric reactive substances (TBARs) further supported this. Slaughtering during periods of high growth may therefore reduce postmortem quality, both because of increased susceptibility to fillet lipid peroxidation and reduced astaxanthin levels, which were lowered in vivo and might consequently be depleted further after slaughter. Specialized use of antioxidant‐rich feed prior to slaughter is suggested if slaughtering is expected to occur during periods of high growth rate.  相似文献

An experiment was conducted in aquaria with channel catfish (Ictalurus punctatus) to determine the efficacy of augmenting fillets with conjugated linoleic acid (CLA) and omega-3 highly unsaturated fatty acids (− 3 HUFA) by feeding diets amended with products containing high levels of these nutrients. Refined menhaden fish oil at 1.5% of diet supplied the − 3 HUFA. CLA was used at dietary levels of 0.5% and 1% with a preparation that contained approximately 65% isomers of CLA. Corn oil was added to the basal diet at maximum inclusion level for added lipids of 3% for the control diet and to adjust total added lipid content of the other diets to 3%. Average initial body weight was 57.39 ± 0.25 g/fish. Six experimental diets were fed twice daily to four replicate aquaria for six weeks. At that time, fish were group weighed for determination of weight gain and feed conversion. Fillets of six fish per aquarium were recovered and stored at − 80 °C for moisture and total lipid analyses, fatty acid analysis, and sensory evaluation. Results showed feed consumption and feed conversion did not differ (> 0.05). Significantly (< 0.05) greater body weight gains were observed only for fish fed the diets with two combinations of CLA and 1.5% fish oil compared to fish fed the diet containing 0.5% CLA and corn oil. Fillet − 3 HUFA levels were significantly (< 0.05) elevated for fish fed diets containing fish oil when compared to − 3 HUFA of fillets of fish fed diets containing either corn oil or CLA and corn oil. Similarly, fillets from fish fed diets amended with CLA contained substantial amounts of CLA of up to 6.4% of total lipids. Fillets from fish fed corn oil or fish oil diets had no CLA. Taste panel evaluation indicated that fillets containing − 3 HUFA and CLA were essentially without fishy off-flavor and had excellent sensory qualities. Catfish fillets produced by amending diets with sources of − 3 HUFA and CLA at the levels used in this study would contain elevated levels of these nutraceuticals and could be an important human food source for these healthful fatty acids.  相似文献

An experiment was conducted to determine the effects of different levels of dietary vitamin C (VC) and E (VE) supplementation on fillet quality of red sea bream fed oxidized fish oil (OFO). Fish with an average body weight of 205.0 g were fed four test diets for 9 weeks. Control diet contained fresh fish oil (FFO) with 100 mg kg?1 of VE and 500 mg kg?1 of VC (FFO100E/500C). The other three diets contained OFO with varying levels of VE (mg kg?1) and VC (mg kg?1) (OFO100E/500C, OFO200E/500C and OFO200E/1000C). After feeding trial, two fillets from each fish by hand filleting were stored in a refrigerator at 4°C for 96 h during analyses. Results showed that fish fed OFO increased fillet thiobarbituric acid reactive substances (TBARS) and K‐value, and decreased fillet VC and VE concentrations during storage time. Supplementation of VC did not have any detectable effect on fillet quality. Increasing dietary VE supplementation increased fillet VE concentrations, reduced fillet TBARS and K‐value values of red sea bream. Therefore, we suggest that dietary supplementation of 200 mg kg?1 of vitamin E could improve fillet oxidative stability of red sea bream fed OFO.  相似文献

This study evaluates the effects of inclusion level (60 to 100%) and washing cycles (0 to 2) of minced fish from Nile tilapia fillet by-products on proximate composition, mineral contents, color, hardness, and sensory acceptance of sausages. A complete 22 factorial experimental design was used. Regression models for protein, fat, moisture, minerals, color, and hardness were developed. The optimum combinations for the independent variables are sausages made with 100% non-washed minced fish, which represents a better use of by-products without generating washing residues, leading to less expensive sausage with higher nutritional value.  相似文献

The objective of this study was to evaluate the effects of liquid and wood smoking with a potassium lactate (PL) and acetate (PA) combination on the quality and inhibition of L. monocytogenes growth in ready-to-eat (RTE) smoked catfish fillets. Catfish fillets were tumbled with PL and PA, and treated with no smoke (NS), wood smoke (WS), liquid smoke 1 (LS1), and liquid smoke 2 (LS2). Wood smoke with antimicrobials (WSWA) showed greater inhibition (p < 0.05) of L. monocytogenes growth than other treatments with the exception of the LS1 treatment with antimicrobials. Consumers preferred (p < 0.05) smoked catfish fillets treated with WS to LS1 with respect to appearance, odor, flavor, texture, and overall acceptability. In conclusion, the use of PL and PA did not have a negative impact on the quality and sensory properties of smoked catfish fillets but had a synergistic effect with wood smoke constituents that inhibited the growth of L. monocytogenes.  相似文献

The food superchilling process is of increasing importance because of its benefit in achieving food quality and extending shelf life of food products. The rate of the superchilling process is critical to the products’ quality and to the productivity of the process, and therefore the superchilling dynamics are of extreme importance. The objective of this work was to develop a one-dimensional implicit finite difference numerical model for predicting partial freezing time necessary to achieve an optimal degree of superchilling in foods and to validate the model experimentally. The evaluation of degree of superchilling was determined using finite slab and measured by using a calorimetry method. There is a good level of agreement between numerical simulation and laboratory experimental results.  相似文献

The morphological characters, fillet texture, and nutrient contents of the F3 generation of Barbless carp (Cyprinus pellegrini,BC) female × Heilongjiang carp (Cyprinus carpio,HLC, geographical population of common carp) male hybrid, which were named as High‐quality carp F3 (HQC F3), were studied. The main morphological characteristics of HQC F3 were between BC and HLC, but closer to the BC. The fillet amino acids and crude protein showed significant differences between HQC F3 and BC. But, only fillet crude fat showed significant differences between HQC F3 and HLC. HQC F3's fillet had significantly different with BC's on the contents of myristic acid, linolenic acid, and stearic acid, and with HLC's on the contents of linoleic acid, linolenic acid, EPA, palm oleic acid, and 20 carbon‐dilute acid. HQC F3 broodstocks were selected with high intramuscular fat and effective population size. HQC F4 were bred and showed improved intramuscular fat content compared to F3. The intramuscular fat of 2‐year‐old HLC F4 was significantly (p < 0.05) correlated with body weight/standard length. Intramuscular fat is a stable trait that can be continuously passed on to the next generation. This study will lay a foundation for further carp selective breeding study to improve fillet quality.  相似文献

Food authenticity is one of the major issues in the mind of today’s consumers. The sale of frozen-thawed fish fillets under the “fresh fillet” label is considered as a commercial fraud. However, their close sensory properties complicate the differentiation. This study focused on analyzing the composition of exudate (pressured flesh juice) in order to rapidly differentiate between fresh and frozen-thawed skinless fillets of sea bass (Dicentrarchus labrax). Protein concentration, α-D-glucosidase specific activity, nucleotides and related compounds (NRCs) concentration, and free calcium concentration were measured in exudates corresponding to fresh or frozen-thawed sea bass fillets. Significant increases of these four parameters were observed in exudates from frozen-thawed fillets, especially with a twofold increase in NRCs and free calcium concentrations. These results suggest that NRCs and free calcium concentrations can be promising indicators to rapidly detect mislabeling of fresh fillets.  相似文献
