为了改善奶酪品质,奶酪生产过程中通常会添加脂肪酶或者产脂肪酶乳酸菌来提升产品品质。该研究以前期筛选的4株高产脂肪酶乳酸菌为发酵剂,分别随机选取3株乳酸菌复配制作酸凝奶酪。试验组:A组T1-5和T1-3属融合魏斯氏菌(Weissella confusa)、H1-6属瑞士乳杆菌(Lactobacillus helveticus),B组H1-6、T1-5、B2-5属植物乳杆菌(Lactobacillus plantarum),C组H1-6、T1-3、B2-5,D组T1-3、T1-5、B2-5,对照组(E组)(添加商业发酵剂),分析发酵剂对传统奶酪pH值、滴定酸度和脂肪氧化情况的影响,并利用气相色谱法(Gas Chromatography,GC)检测奶酪中脂肪酸变化、利用气相色谱-离子迁移谱(Gas Chromatography-Ion Mobility Chromatography,GC-IMS)分析奶酪中风味物质的变化。结果表明:A,B,C,D组4组奶酪的pH值、过氧化值(Peroxide value,POV值)明显低于E组(对照组)(P < 0.05),A,B组奶酪滴定酸度比对照E组高(P < 0.05);A,B,C,D组奶酪中饱和脂肪酸(Saturated Fatty Acids,SFA)含量、单不饱和脂肪酸(Monounsaturated Fatty Acids,MUFA)含量和多不饱和脂肪酸(Polyunsaturated Fatty Acids,PUFA)含量均显著高于E组(P < 0.05);4个试验组样品中亚油酸(C18∶2n6c)含量明显高于对照组(E组)(P < 0.05)。GC-IMS及主成分分析结果显示,A、B组奶酪挥发性风味物质种类多,且相似度较高,其中2-庚酮、丁醛、乙酸丁酯是主要呈味物质;C、E两组奶酪中风味物质比较相似,风味物质主要以乙酸乙酯、乙酸丙酯、己酸乙酯等酯类为主;D组与其他4组有所差异,主要挥发性风味物质为乙酸丁酯、3-辛酮、庚醛等。结合感官评定,A、B两组奶酪整体风味和口感较好,评分较高。筛选得到的产脂肪酶乳酸菌可以作为发酵剂用于提升新疆传统奶酪品质。  相似文献

为探讨不同制粉方式及不同粒度对黑小麦流变学特性及加工品质的影响,将运黑161黑小麦经直接粉碎法和回添法制得的全麦粉分别过80、100、120目筛,以运黑161黑小麦面粉为对照,分析全麦粉淀粉含量、水合特性、发酵特性以及流变学特性。结果表明,直接粉碎且过80目筛的全麦粉支链淀粉含量最高,为80.18%,破损淀粉含量最低,为9.93%,溶解度、膨润力最小,分别为2.5%和3%。回添法制备的全麦粉面团发酵高度、持气率小于直接粉碎法。直接粉碎且过80目筛全麦粉的粉质质量指数最高,为59.5,形成时间和稳定时间分别为3.45和3.2 min,较接近于黑小麦面粉,且该全麦粉的阻力值、最大阻力值在醒发时间135 min时最大,用该全麦粉制作的面包感官得分最高。综上,以直接粉碎且过80目筛制备的全麦粉为原料制作的全麦面包品质较好。本研究结果为黑小麦全麦面包研发提供了理论基础。  相似文献

  1. Crocodilians represent one of the oldest extant vertebrate lineages. They have co-existed with humans throughout the Amazon basin for thousands of years, often having a strong cultural and economic influence on people's lives. Shifts in the socio-economic and political reality of the Amazon basin during the last century have led crocodilian populations to face large variations in their numbers according to different levels of exploitation and strategies for their conservation.
  2. This article reviews the scientific knowledge obtained between 1945 and 2019 on the biology, conservation and management for the four Amazonian crocodilian (caiman) species (Caiman crocodilus, Melanosuchus niger, Paleosuchus palpebrosus and Paleosuchus trigonatus). It provides a general overview on past and current population status and research efforts involving caimans in the Amazon basin and discusses perspectives for the future.
  3. The most significant studies on the ecology, genetics and management strategies are examined in more detail and this information is contextualized to provide an overview of the most relevant findings that might explain caiman population trends over the last 75 years.
  4. Systems for sustainable management in the Amazon basin have been discussed for the past 20 years, but remain rarely applicable. It is necessary to develop new ways to maintain healthy caiman populations through innovative management programmes. Sustainable harvesting of wildlife has been shown to promote conservation targets, especially those initiatives based on community co-management. In this article, we propose some general guidelines for future management schemes, in the expectation that the information provided by the scientific community will be considered fully without political agendas determining the priorities.

The integration of sodium carbonate (SC; dips at 20 °C for 150 s in aqueous 3% SC solutions) treatments and X-ray irradiation (at doses of 510 and 875 Gy) was evaluated on artificially inoculated ‘Clemenules’ clementine mandarins for the control of postharvest green and blue molds, caused by Penicillium digitatum and Penicillium italicum, respectively. Although significant, the reduction of both disease incidence (number of infected fruit) and severity (lesion diameter) on fruit either incubated at 20 °C for 7 days or cold-stored at 5 °C for 21 days was not sufficient for satisfactory disease control under hypothetical commercial conditions. Therefore, the combined treatments could not be a substitute for conventional chemical fungicides. However, pathogen sporulation was greatly inhibited on infected clementines, thus X-irradiation could be of value for management of Penicillium resistant strains and to reduce inoculum levels in citrus packinghouses. X-ray irradiation at 195, 395, 510, and 875 Gy did not influence either decay incidence or the area under the disease progress curve (AUDPC) of lesions of green and blue molds on mandarins inoculated with the pathogens 2, 3, or 6 days after irradiation and incubated for 7 days at 20 °C. Therefore, X-ray treatment did not induce disease resistance in the rind of irradiated fruit. Although X-irradiation at doses up to 875 Gy followed by either 14 days at 20 °C or 60 days at 5 °C caused very slight rind pitting, minor decreases in fruit firmness, and modest increases in juice acetaldehyde and ethanol contents, these changes had no practical impact on fruit quality. Rind color, titratable acidity, soluble solids concentration, maturity index and juice yield were not influenced by irradiation. ‘Clemenules’ can be considered as a clementine cultivar highly tolerant to X-irradiation.  相似文献

The anthocyanin pigment extracted from green-wheat-bran was studied to identify its antioxidant activity.The antioxidant activities of the pigment were evaluated by anti-lipid peroxidation,total antioxidant activity (TAA),superoxide anion radical scavenging activity (SARSA),active oxygen scavenging activity (AOSA),and DPPH (1,1-diphenyl-2 picrylhydrazyl free radical) radical scavenging activity.The results showed that the pigment had higher antioxidant activity and TAA,SARSA,AOSA and DPPH.scavenging activities at a certain concentration than Vc (antiscorbutic vitamin,vitamin C),and the capacity increased with the increase of pigment concentration.Its TAA was 51.06 U mL-1,1.73 times of Vc,and SARSA 18 025.21 U mL-1,2.26% higher than Vc,and AOSA 3 776.31 U mL-1,1.24 times of Vc.As to the DPPH.scavenging activity of the pigment,there was a trend that higher concentration performed higher activity significantly improved with the company of Vc.The pigment showed significant antioxidant activities evaluated by different assays.Results will provide a better understanding on antioxidant activity of green wheat and allow the screening or breeding of green wheat varieties with higher antioxidant activity for food processing.  相似文献

The hemibiotrophic fungus Colletotrichum orbiculare forms appressoria as infection structures and primarily establishes biotrophic infection in cucumber epidermal cells. Subsequently, it develops necrotrophic infection. In the pre-invasion stage, morphogenesis of appressoria of C. orbiculare is triggered by signals from the plant surface. We found that C. orbiculare PAG1 (Perish-in-the-Absence-of-GYP1), a component of MOR [morphogenesis-related NDR (nuclear Dbf2-related) kinase network] plays an essential role as a key component of the plant-specific signaling pathway and that hydrolysis of cutin by a spore surface esterase creates a cutin monomer that constitutes a key plant-derived signal. Development of the infection structure of C. orbiculare is strictly regulated by the cell cycle and we found that proper regulation of G1/S progression via two-component GAP genes, consisting of BUB2 (Budding-Uninhibited-by-Benomyl-2) and BFA1 (Byr-Four-Alike-1) is essential for the establishment of successful infection. In the post-invasion stage, the establishment of the biotrophic phase of hemibiotrophic fungi is crucial for successful infection. We found that C. orbiculare WHI2 (WHIsky-2), an Saccharomyces cerevisiae stress regulator homolog, is involved in the phase transition from biotrophy to necrotrophy through TOR (Target of Rapamycin) signaling, and is thus essential for full pathogenesis.  相似文献

枇杷属植物落黄叶片颜色遗传多样性分析   总被引:1,自引:0,他引:1  
调查发现枇杷属(Eriobotrya)植物种质落黄叶片有红褐色、金黄色、紫红色等24种代表性色泽。通过便携式色差仪观测枇杷属10个种176份种质落黄叶片正面和背面的色泽参数,探讨落黄叶片颜色的遗传多样性特征。结果表明:(1)枇杷属植物落黄叶片正面和背面的色泽参数L、a、b值变异系数差异较大,变幅为8.65%~185.30%,Shannon’s遗传多样性指数为1.95,说明落黄叶片色泽变异多样;(2)不同种质类群间和不同来源地类群间的变异系数和Shannon’s遗传多样性指数差异均较明显,呈现出栽培驯化程度越高,落黄叶片正面和背面的b值变异系数越小和a值变异系数越大的趋势;云南、贵州、福建地区的类群多样性指数较高;(3)系统聚类将落黄叶片正面色泽划分成12组,背面分成10组,且各组内所包含的枇杷种质类型差异大;(4)L值、b值对落黄叶片正面和背面的系统聚类分析贡献率均较大,落黄叶片正面L值与背面b值呈极显著正相关;(5)落黄叶片颜色的遗传多样性可作为枇杷属植物形态学特征描述的补充,为枇杷属植物的鉴别和利用提供新的参考,对枇杷分类研究具有潜在价值。  相似文献

The expansion of the Shanghai metropolitan region has caused a substantial amount of farmland to become urbanized. Most farmers have lost their land and have been relocated from villages to new collective settlements, resulting in dramatic changes in the landscape pattern. This study explores the effects of this transformation on the spatiotemporal dynamics of plant diversity. We randomly sampled 22 plots comprising 294 subplots within two crossed transects that pass through 5 traditional villages and 17 new settlements. The results show that resettlement has exerted significant effects on plant species diversity, both temporally and spatially. Temporally, the Gleason index (GI) of total species over time could be ordered as 1990s > 2000s > 1980s, while Shannon’s diversity index (SHDI) was ordered as 2000s > 1990s > 1980s. Spatially, the GI of total species decreased from the urban center to the exurbs or from the inside to the outside of the built-up areas. SHDI was highest in suburbs or ecotones. Furthermore, the GI of total species had significant correlations with those of indigenous species, exotic species, and planted species (r > 0.90, p < 0.01) as well as with the region and location of settlement (r < −0.48, p < 0.01). Both indigenous and exotic species had significant positive correlations with total species richness at 0.01 levels. Generally, compared with traditional settlements, new settlements displayed greater richness and diversity of plant species, primarily because of the exotic species present in new settlements. The farmers’ socio-economic status was found to be the primary cause of differences in species richness. To protect indigenous and wild species, it is necessary to take into account local knowledge in villages to encourage Chinese farmers to participate actively in community greening. A bridge should be built between traditional villages and modern settlements and between the past and future for farmers.  相似文献
