Parma hams at various processing stages were investigated by surface autofluorescence spectroscopy. Fluorescence "landscapes" of raw meat and salted (3 months), matured (11 and 12 months), and aged (15 and 18 months) Parma hams were obtained, and a three-dimensional data array (sample x emission x excitation) was used to develop a PARAFAC model including five components, which all exhibited characteristics of pure fluorophores regarding both excitation and emission spectra. The relative amount of each component related strongly to the processing stage, and sample age showed good correlation to fluorescence data (R = 0.98), with a relative error of prediction of approximately 1 month. Fluorescence measurements from samples of either semimembranosus or biceps femoris were used to predict chemical or sensory reference data, yielding good correlation for biceps femoris data, thereby enabling moisture content, sensory and instrumental color, and proteolysis value to be fairly well predicted. Overall, surface autofluorescence of Parma hams proved to hold relevant information, relating to major chemical/physical changes during processing. It is concluded that fluorescence spectroscopy has potential as an innovative method of quality control in dry-cured ham.  相似文献

Conifers and other trees are constantly adapting to changes in light conditions, water/nutrient supply and temperatures by physiological and morphological modifications of their foliage. However, the relationship between physiological processes and anatomical characteristics of foliage has been little explored in trees. In this study we evaluated needle structure and function in Norway spruce families exposed to different light conditions and transpiration regimes. We compared needle characteristics of sun-exposed and shaded current-year needles in a control plot and a thinned plot with 50% reduction in stand density. Whole-tree transpiration rates remained similar across plots, but increased transpiration of lower branches after thinning implies that sun-exposed needles in the thinned plot were subjected to higher water stress than sun-exposed needles in the control plot. In general, morphological and anatomical needle parameters increased with increasing tree height and light intensity. Needle width, needle cross-section area, needle stele area and needle flatness (the ratio of needle thickness to needle width) differed most between the upper and lower canopy. The parameters that were most sensitive to the altered needle water status of the upper canopy after thinning were needle thickness, needle flatness and percentage of stele area in needle area. These results show that studies comparing needle structure or function between tree species should consider not only tree height and light gradients, but also needle water status. Unaccounted for differences in needle water status may have contributed to the variable relationship between needle structure and irradiance that has been observed among conifers.  相似文献

A two year study of planktonic and littoral microcrustaceans (Cladocera and Copepoda) from 15 lakes in the southeastern part of Norway, Østfold county, document the recovery of acidified lakes due to liming. Six lakes that where limed about 10 years ago, seven acid and two neutral reference lakes, were sampled twice a year (1998 and 1999). One acid lake was limed in autumn 1998. Qualitative nethaul samples from the deepest part of the lake and from the most frequent habitat in the littoral zone were used. The limed lakes had a species composition which indicates that these lakes are about to recover. Species associated with neutral lakes dominates while acid-tolerant species were rare. The acid-sensitive species, Daphnia longispina and D. cristata, were found in the limed lakes. This study shows the usefulness of a low-cost sampling program where microcrustaceans are used as bioindicators of recovery.  相似文献

Summary Reduction processes in cultivated soil during the decomposition of liquid cattle manure were studied in laboratory experiments. Anoxic slurries of soil and manure in different proportions or alone were followed over 5 weeks. Upon NO inf3 sup- depletion, ferrous Fe appeared in solution in soil-manure slurries. Sulfide levels were generally low in the presence of both soil and manure, probably because of precipitation by Fe2+; Fe thereby counteracted the production of free hydrogen sulfide. Methane formation was the quantitatively most important electron sink under prolonged anoxic conditions. When extra sulfate was added to soil-manure slurries, the concentration of Fe2+ remained low and less methane was produced. The detection of Fe2+ was examined in a model system with a gel-stabilized soil-manure mixture sandwiched between two soil phases with a water content near field capacity. Large methodological problems made it impossible to quantify Fe2+ in this oxic-anoxic environment, but the results indicated that reducing conditions were maintained in the manure-saturated zone for the 20-day period of this experiment.  相似文献

OBJECTIVE: To analyse factors associated with breast-feeding and use of sweetened drinks at 12 months, and to compare dietary habits among breast-fed and non-breast-fed infants. DESIGN: Data were collected by a semi-quantitative food-frequency questionnaire filled in by the parents. SETTING: National dietary survey in Norway. SUBJECTS: In total, 1932 12-month-old infants were included. RESULTS: At 12 months, 36% of the infants were breast-fed. The odds of breast-feeding at this age were more than doubled both for mothers > or =35 years compared with mothers <25 years and for mothers in the highest educational group compared with mothers in the lowest. A negative association was found for maternal smoking, and the odds of breast-feeding were 40% lower for mothers who smoked than for non-smokers. Some dietary differences were observed between breast-fed and non-breast-fed infants apart from intake of milk. In particular, breast-fed infants had a significantly lower daily intake of sweetened drinks than non-breast-fed infants and a 16% lower mean daily intake of added sugars (P<0.001). Furthermore, breast-fed infants had 30% higher odds of not receiving sweetened drinks daily, compared with non-breast-fed infants. CONCLUSIONS: Maternal age, education and smoking status were important factors for breast-feeding at 12 months. Breast-fed infants had lower intakes of sweetened drinks and added sugars than non-breast-fed infants. From a public health perspective, continued promotion of breast-feeding is needed to reduce inequalities in breast-feeding. Moreover, prevention of high intakes of sweetened drinks and added sugars should start in infancy.  相似文献

The emissions of SO2 in China correspond at present to 8–10 TgSyr?1. The rapid industrialization has caused a dramatic increase in the emissions in recent years and this increase is likely to continue. This paper describes studies of concentrations and effects of acidifying substances in parts of the Guizhou and the Sichuan provinces where the S-emissions are large. A small catchment about 10 km from Guiyang centre was equipped with instruments for studies of soils, soil water and streamwater chemistry. The molar ratio Al/(Ca+Mg) is > 0.8 in soil water in some places. Two small streams have median pH-values about 4.6 and 5.1. Laboratory studies with selected Chinese soils showed that the anion adsorption was low. These studies gave also important information on soil sensitivity. The studies confirm that acid deposition may affect soils in parts of south-western China, but the sensitivity varies dramatically and there is a strong need for more information.  相似文献

Rahmstorf (Reports, 19 January 2007, p. 368) presented an approach for predicting sea-level rise based on a proposed linear relationship between global mean surface temperature and the rate of global mean sea-level change. We find no such linear relationship. Although we agree that there is considerable uncertainty in the prediction of future sea-level rise, this approach does not meaningfully contribute to quantifying that uncertainty.  相似文献

The identification of the active sites in heterogeneous catalysis requires a combination of surface sensitive methods and reactivity studies. We determined the active site for hydrogen evolution, a reaction catalyzed by precious metals, on nanoparticulate molybdenum disulfide (MoS2) by atomically resolving the surface of this catalyst before measuring electrochemical activity in solution. By preparing MoS2 nanoparticles of different sizes, we systematically varied the distribution of surface sites on MoS2 nanoparticles on Au(111), which we quantified with scanning tunneling microscopy. Electrocatalytic activity measurements for hydrogen evolution correlate linearly with the number of edge sites on the MoS2 catalyst.  相似文献

Peer reviews of 84 organic farming grant applications from Sweden were analyzed to determine whether the reviewers’ affiliation to one of two types of agriculture (i.e., organic and conventional) influenced their reviews. Fifteen reviewers were divided into three groups: (1) scientists with experience in organic farming research; (2) scientists with no experience in organic farming research; and (3) users of organic farming research. The two groups of scientists assessed the societal relevance and scientific quality of the grant applications based on three criteria (i.e., presentation, methodology, qualifications), whereas the user group only assessed societal relevance. The analysis showed that the two groups of scientists provided very different reviews. Scientist reviewers with experience in organic farming research agreed more with the user group on research relevance than did scientist reviewers without such experience, and the assessment of relevance was closely correlated to the assessment of scientific quality within both scientific groups. As both scientific groups did not clearly distinguish between societal relevance and scientific quality, the idea of an objective science is challenged. The contextual values associated with the norms of good agriculture were not clearly distinguished from the constitutive values of science associated with the traditional norms of good science. This raises the question of whether organic and conventional grant applications should be mixed for review regardless of the reviewers.  相似文献

A correlation of time with depth has been evaluated for the Camp Century, Greenland, 1390 meter deep ice core. Oxygen isotopes in approximately 1600 samples throughout the core have been analyzed. Long-term variations in the isotopic composition of the ice reflect the climatic changes during the past nearly 100,000 years. Climatic oscillations with periods of 120, 940, and 13,000 years are observed.  相似文献
