Our recent study demonstrated the potential of gastric fluid at pH 3.0 to accelerate lipid peroxidation and cooxidation of dietary constituents in the stomach medium. Metmyoglobin is known to catalyze the breakdown of lipid hydroperoxides to free radicals, a reaction that could enhance the propagation step and general lipid peroxidation. During this reaction, a part of the free radicals is autoreduced by metmyoglobin. At pH 3.0, metmyoglobin at low concentration was almost 7 x 10(4) times as effective as at pH 7.0 in enhancing the rate of lipid peroxidation. Our study demonstrated that metmyoglobin, at a low concentration (approximately 1:30), as compared with that of the hydroperoxides in the lipid system, worked prooxidatively increasing the amounts of linoleate hydroperoxides. However, at a high concentration (approximately 1:3), metmyoglobin acted antioxidatively and decomposed hydroperoxides, whose concentrations then remained at zero for a long time. Catechin, a known polyphenol, supports the inversion of metmyoglobin catalysis, from prooxidation to antioxidation. The antioxidative activity of the couple metmyoglobin-catechin was better at pH 3.0 than at pH 7.0, indicating that this reaction is more dependent on metmyoglobin than on catechin. During this reaction, catechin or quercetin not only donates reducing equivalents to prevent lipid peroxidation but also prevents the destruction and polymerization of metmyoglobin. The results of this research highlighted the important and possible reactions of heme proteins and polyphenols as couple antioxidants, working as hydroperoxidases or as pseudo-peroxidases. We hypothesize that the occurrence of these reactions in the stomach could have an important impact on our health and might help to better explain the health benefits of including foods rich in polyphenol antioxidants in the meal, especially when consuming red meat. 相似文献

Purpose
Sorbate-induced swelling and plasticization of sorbent have been linked to sorption hysteresis of organic compounds in the natural organic matter of isolated humic acids, soils, and coals. The above processes, which have important implications for the fate and bioavailability of organic and inorganic contaminants, are mostly based on macroscopic changes and require molecular-level confirmation. This study aimed to investigate the presence or absence of sorbate-induced plasticization of Pahokee peat soil as a function of different sorbates.Materials and methods
The plasticization of Pahokee peat soil was studied upon sorption of different proton-free solutes including C6D6, CDCl3, CCl4, C2Cl4, CBr4, C6D5Cl, and C5D5N, covering apolar and polar aromatic and aliphatic compounds. The swelling and plasticization of Pahokee peat soil were verified at the molecular level by 1H wideline and two-dimensional wideline separation (2D WISE) NMR. The use of 1H wideline shapes is the traditional technique for studying molecular dynamics but hampered by the lack of spectral resolution, with one dimension displaying 13C chemical shifts and the second showing 1H wideline shapes, is capable of providing information on molecular dynamics of specific functional groups.Results and discussion
Our results showed that the segments of Pahokee peat soil sorbed with C6D6, C2Cl4, and C5D5N became more mobile, but the changes due to the plasticization were small. Both C6D6 and C5D5N selectively increased the mobility of specific components, C6D6 of the nonpolar alkyl domains, and C5D5N of both the nonpolar alkyl domains and aromatic components.Conclusions
Some liquid solutes at high concentrations (2–5 wt%) are capable of slightly “softening” natural organic matter of a soil, and this provides support for the hypothesis that natural organic matter in Pahokee peat soil is in a glassy state that is subject to plasticization.103.

Huitlacoche is the ethnic name of the young fruiting bodies of Ustilago maydis, a common parasite of maize. In Mexico and other Latin American countries, this fungus has been traditionally appreciated as a local delicacy. In this work a metallomics approach was used with the determination of eight elements in huitlacoche by electrothermal atomic absorption spectrometry as one facet of this approach. The results obtained indicated relatively lower concentrations of commonly analyzed metals, as referred to the data reported for other mushroom types. This effect was ascribed to different accessibilities of elements, depending on fungus substrate (lower from plant than from soil). Subcellular fractionation was accomplished by centrifugation of cell homogenates suspended in Tris-HCl buffer. Recoveries of the fractionation procedure were in the range of 71-103%. For six elements (Cr, Cu, Fe, Mn, Ni, and Pb), the mean relative contributions in cytosol, cell walls, and mixed membrane fraction were 50.7, 48.2, and 1.1% respectively. To attain the molecular weight distribution of compounds containing target elements as an additional aspect of the metallomics approach, the fungus extract (1% sodium dodecyl sulfate in Tris-HCl, 30 mmol L(-)(1), pH 7.0) was analyzed by size exclusion chromatography with UV and ICP-MS detection. With spectrophotometric detection (280 nm), the elution of high molecular weight compounds was observed in the form of one peak (MW > 10 kDa), and several lower peaks appeared at higher retention times (MW < 10 kDa). On ICP-MS chromatograms, a coelution of (59)Co, (63)Cu, (57)Fe, (202)Hg, (60)Ni, and (80)Se with the first peak on the UV chromatogram was clearly observed, indicating that a fraction of each element incorporated with high molecular weight compounds (12.7, 19.8, 33.7, 100, 19.4, and 45.8%, respectively, based on the peak area measurements). From a comparison of (80)Se and (33)S chromatograms (for sulfur analysis, the extract was obtained in the absence of SDS), both elements coeluted with the first UV peak, but their lower molecular weight compounds were apparently different. Lake Victoria and its basin supports more than 30 million people, while its fishes are exported the world over. This second largest fresh water body is however experiencing stress due to eutrophication, sedimentation, declining levels and more recently the motor vehicle sector. This contribution examines the general pollution from motor vehicle and gives an in-depth analysis of motor vehicle washing along the lakeshore. The results indicate the water samples from the motor vehicle washing and urban runoff points to be slightly acidic (i.e., average pH of 6.7) and average Total Phosphorus levels of 0.4 and 2.4 ppm respectively. This implies that there was high soap input at these points. The conductivity for the motor vehicle washing points averaged at 150 μS/cm, while the urban runoffs point was more varied ranging from below 150 μS/cm to over 400 μS/cm (average 301 μS/cm). A positive correlation coefficient of more than 0.7 is obtained between the total daily count of vehicles and each of the water quality parameter tested. This signifies a strong correlation between motor vehicle related activities and the pollution of the lake. RZ-SHAW is a hybrid model, comprised of modules from the Simultaneous Heat and Water (SHAW) model integrated into the Root Zone Water Quality Model (RZWQM) that allows more detailed simulation of different residue types and architectures that affect heat and water transfer at the soil surface. RZ-SHAW allows different methods of surface energy flux evaluation to be used: (1) the SHAW module, where evapotranspiration (ET) and soil heat flux are computed in concert with a detailed surface energy balance; (2) the Shuttleworth–Wallace (S–W) module for ET in which soil surface temperature is assumed equal air temperature; and (3) the PENFLUX module, which uses a Penman transformation for a soil slab under incomplete residue cover. The objective of this study was to compare the predictive accuracy of the three RZ-SHAW modules to simulate effects of residue architecture on net radiation, soil temperature, and water dynamics near the soil surface. The model was tested in Akron, Colorado in a wheat residue-covered (both standing and flat) no-till (NT) plot, and a reduced till (RT) plot where wheat residue was incorporated into the soil. Temperature difference between the soil surface and ambient air frequently exceeded 17 °C under RT and NT conditions, invalidating the isothermal assumption employed in the S–W module. The S–W module overestimated net radiation (Rn) by an average of 69 Wm−2 and underestimated the 3-cm soil temperature (Ts3) by 2.7 °C for the RT plot, attributed to consequences of the isothermal assumption. Both SHAW and PENFLUX modules overestimated midday Ts3 for RT conditions but underestimated Ts3 for NT conditions. Better performances of the SHAW and PENFLUX surface energy evaluations are to be expected as both approaches are more detailed and consider a more discretized domain than the S–W module. PENFLUX simulated net radiation slightly better than the SHAW module for both plots, while Ts3 was simulated the best by SHAW, with a mean bias error of +0.1 °C for NT and +2.7 °C for RT. Simulation results for soil water content in the surface 30 cm (θv30) were mixed. The NT conditions were simulated best by SHAW, with mean bias error for θv30 within 0.006 m3 m−3; RT conditions were simulated best by the PENFLUX module, which was within 0.010 m3 m−3. 相似文献

The accumulation of perchlorate in vegetation is becoming a concern, with increasing numbers of sites reporting the presence of perchlorate in groundwater and surface water. This study investigated potential perchlorate uptake and distribution by a variety of forage and edible crops in both the laboratory and the field. Perchlorate concentrations in soybean leaves grown in the greenhouse were significantly higher than perchlorate concentrations in soybean seeds and pods. Perchlorate concentrations in alfalfa grown in sand were significantly lower than those in alfalfa grown in soil. The concentration of perchlorate in tomato was lower in the fruit than the leaves. Commercially grown wheat and alfalfa samples all contained perchlorate, 0.72-8.6 mg/kg of fresh weight (FW) in the wheat stems, 0.71-4.4 mg/kg of FW in the wheat heads, and 2.9 mg/kg of FW in alfalfa. All field garden samples tested (including cucumber, cantaloupe, and tomato) that were irrigated with perchlorate-tainted water contained perchlorate at various concentrations ranging from 0.040 to 1.65 mg/kg of FW. Bioconcentration factors (BCF), ratios of plant fresh weight concentrations to estimated or measured groundwater concentrations [(microg/kg of FW)/microg/L], were all in the same order of magnitude ranging from 215 +/- 126 for wheat stems to 233 +/- 264 for wheat heads and to 380 +/- 89 for alfalfa. BCF for garden fruit samples were much lower (0.5-20). Results from this study highlight the potential for perchlorate exposure by routes other than drinking water. 相似文献

Israel is a participant in the Earth Resources Technology Satellite Program (ERTS). The imagery of Israel and vicinity taken by the Multi Spectral Scanner of the ERTS-1 Satellite has been the subject of analysis in a multidisciplinary research program. The objectives of the program are mapping of agricultural crops, mainly wheat and orange groves, mapping of natural vegetation, and studies for Israeli hydrology, arid regions research, geology, and oceanography. Cases of water, air, and soil pollution have been observed in the imagery on several dates, and are reported in this paper. These are: oil slicks in the Gulf of Suez and possibly near Haifa; smoke plumes, extending over some 100 km in a nearly straight line along the Gulf of Suez, and soil pollution caused by copper mine effluents in the Arava Valley in Israel. The images of these cases of pollution are presented and ‘space signatures’, i.e., the radiometric spectral characteristics of these cases of pollution as seen from space are also given. 相似文献
