1. A study was designed to characterise dark, firm, dry (DFD) breast meat resulting from cold exposure of broilers and compare its properties with normal breast meat from cold-stressed and control birds.

2. A total of 140 broilers were selected from 5- and 6-week-old birds exposed to cold temperatures ranging from ?18 to ?4°C, or a control temperature of +20°C for 3?h in an environmental chamber. Half of these birds were slaughtered immediately following the cold exposure and the other half were given 2?h of lairage.

3. Breast meat samples were categorised based on ultimate pH (pHu) and colour L* (lightness) values into normal (5·7?≤?pHu?≤?6·1; 46?≤?L*?≤?53) breast meat from control (control-normal) or cold-stressed (cold-normal) birds, and DFD (pHu?>?6·1; L*? 4. Residual glycogen was not different between cold-DFD and control-normal breast meat. Lactate concentration was lower in cold-DFD compared with control-normal breast meat. Lactate concentration almost tripled for all the samples by 30?h post-mortem, which resulted in a drop in pH of normal meat, but did not have any effect on pH of DFD breast meat. Glycolytic potential at both 5?min and 30?h post-mortem was lower in DFD breast meat compared with the normal breast meat from both cold-stressed and control birds.

5. Cold-DFD breast meat was significantly darker, with higher pHu, lower cook loss, higher water-binding capacity and processing cook yield than cold-normal and control-normal breast meat, which were not different from each other.  相似文献

1. An experiment was conducted with 98 male and 98 female broiler chickens (Ross 308) to study the effect of growth rate, induced by different dietary means, sex and live weight (1500?g and 2000?g) at slaughter on production parameters, bone strength and sensorial characteristics of the breast meat.

2. The birds were divided into four groups and individually fed a standard commercial diet, a high energy diet or low energy diet from d?11 to slaughter at between d 28 and 39. Three groups were fed ad libitum and a further group was fed a restricted amount of the high energy feed. Half of the birds in each group were slaughtered at approximately 1500?g and the other half at 2000?g live weight.

3. The diets resulted in different growth rates. The chickens fed the high energy and the commercial diet had the highest growth rate at both live weights at slaughter. The restricted fed chickens had lower bone strength than the chickens fed the low energy diet.

4. Breast meat from male broilers was juicer, more tender and less hard than breast meat from females. Chickens slaughtered at 2000?g live weight were juicer than those slaughtered at 1500?g. Chickens given the high energy feed ad libitum and restricted had different growth rates, but the sensory parameter related to texture showed no difference.

A long-distance international transport of live pigs was simulated by transporting 216 pigs (± 100 kg live weight) around through The Netherlands for two days; 100 control pigs were slaughtered at start. The experimental pigs were allocated to groups with and without access to water and three different loading densities (0.66, 0.44 and 0.33 m2 per pig) during the transport. The watered pigs used 5.4 ] per pig during the 44 h of transport, part of which was wasted by leaning on the bite waternipples. Hence, water consumption was very low. In the high density compartments not all pigs could lie down at the same time, involving continuous alternation of lying down and standing up. During the two days the weather was warm (on average 22°C).After transport pigs had lost 8 kg live weight, half of which was lost carcass weight. The latter was mainly due to water loss, as illustrated by the increased fat/water ratio in the backfat (5.3 versus 4.1 in controls). It should be noted that the weight loss was a little higher in the watered groups than in the non-watered ones.Physiological parameters determined after slaughter in blood and urine did not indicate physiological imbalance due to non-watering or high loading density. These factors had no significant effect on meat quality parameters, except for higher pH1 and pH2 values in the high loading density group, indicating that these animals had got more fatigued. The experiment has shown that watering during transport by means of bite nipples is ineffective. It is suggested that loading densities should not exceed 235 kg body weight m?2 (0.44 m2 per pig of 100 kg) for reasons of animal welfare and meat quality.  相似文献

1. The effects of dried distillers grains with solubles (DDGS) dietary inclusion concentration, and sex, on body weight, slaughter efficiency and meat characteristics of Pekin ducks (Anas platyrhynchos f. domestica, strain P55) were studied.

2. Sexed ducklings (n?=?160) were divided randomly into 4 groups (each with 4 replicates). From d 1 to d 21, all the birds received the same commercial feed, then from 22 to 49 d of age the ducks were fed in the following groups: control (commercial feed) and three experimental groups (15%, 25% and 30% inclusion of DDGS). All ducks were weighed individually at d 1, 21 and 49. On the day of slaughter, 5 males and 5 females, of body weight close to the average weight for group and sex, were selected from each group, slaughtered and the following parameters were evaluated: slaughter yield, weight, and percentage of particular elements of carcase, physical and chemical characteristics of meat.

3. The results obtained showed that DDGS included from 22 to 49 d of rearing, at concentrations up to 30%, in a commercial Pekin duck diet did not affect the live body weight, slaughter yield, weight, and percentage of breast and leg muscle, skin with subcutaneous fat, and abdominal fat. There were no differences in physical characteristics (pH15, pH24, meat colour values L*, a*and b*, and hygroscopicity) of breast muscle, as well as in cholesterol content. DDGS addition at 30% significantly increased fat content in male, and crude protein in female, breast meat. Sex effect was observed only in a few traits and was diet dependent. Final body weight of females fed 30% DDGS was significantly lower than males; in the control and 15% DDGS group females had higher percentage of skin with subcutaneous fat.

4. The results obtained, and relative costs of feeds produced, allows the recommendation of DDGS addition at up to 30% to commercial Pekin duck diets from 22 d of age.  相似文献

1. The study was designed to assess the impact of stocking density (6 and 13 birds/m2 equivalent to 12·6 or 27·2?kg/m2, respectively) on growth performance, meat quality, behaviour, and indicators of physiological and oxidative stress as measures of bird welfare.

2. The higher stocking density negatively affected final body weight and feed intake but not cumulative feed conversion rate. Muscle colour traits, pH24, cooking loss and shear values were not affected. Birds reared at the lower density showed higher intramuscular fat, liver weight, liver NADP-isocitrate and NADP-malate dehydrogenase activity.

3. Higher stocking density was associated with decreased locomotor activity and increased physiological (H:L ratio and bursa weight) and oxidative (glutathione concentrations and reduced:oxidised glutathione ratios) stress indicators.

4. The results show that stocking density did not significantly affect broiler meat quality characteristics but higher density decreased growth performance, increased physiological and oxidative stress levels and decreased locomotor activity.  相似文献

Effects of pre‐slaughter showering and ventilation on stress, meat quality and energy metabolism of broilers in summer were investigated. After transport, 84 Arbor Acres broilers were randomly divided into four treatment groups: (i) control group without ventilation and showering (C); (ii) 10 min ventilation without showering (VWS); (iii) 10 min showering without ventilation (SWV); (iv) 5 min showering and then 5 min ventilation (SV). Compared with the control group, plasma lactate dehydrogenase and creatine kinase activities in the other three treatment groups were (P < 0.05) lower; however, the plasma glucose level did not show any significant changes among all the groups. The breast meat in the SV group had significantly (P < 0.05) higher pHu, glycogen content, lower L*, ΔpH, drip loss, cook loss, R‐value and lactate content than the control group; however, there was no significant difference in shear force values among all the groups. In conclusion, this study indicated broilers in the SV group showed a lower stress level and greater meat quality, which suggest that showering and ventilation after transportation may be a good measure to relieve stress caused by transport under high temperature and improve the meat quality of broilers.  相似文献

1. The objective of this experiment was to study the influences of xylanase and citric acid on the performance, nutrient digestibility, digesta viscosity, duodenal histology, and gut microflora of broilers fed on a wheat based diet.

2. The experiment was carried out as a 2?×?3 factorial arrangement with two concentrations of xylanase (0 and 200?mg/kg) and three concentrations of citric acid (0, 20 and 40?g/kg). A total of 408 one-day-old chickens with similar body weight were distributed into 24 pens with 17 birds/pen. Each dietary treatment was given to 4 replicate pens from 0 to 24?d of age. To determine the apparent nutrient digestibility, chromic oxide (3?g/kg) was added to the diets as an indigestible marker.

3. Xylanase significantly increased body weight gain at 24?d of age by 1·4% and improved gain-to-feed (G:F) by 3·6%. The inclusion of 40?g/kg citric acid decreased feed intake and body weight gain by 15·4% and 11·8%, respectively. The inclusion of 20?g/kg of citric acid decreased feed intake, but it did not affect body weight gain of broilers at 24?d of age. The inclusion of 20 and 40?g/kg citric acid improved G:F by 3·8 and 4·3% respectively. Xylanase significantly decreased the viscosity of digesta and improved retention of DM, CP, and energy.

4. Xylanase and citric acid did not have any effect on the histo-morphology of the duodenum and intestinal microbial population.

5. In conclusion, citric acid at 20?g/kg decreased feed intake, did not have a negative effect on body weight gain, and improved G:F. Xylanase decreased digesta viscosity, increased nutrient retention and consequently improved performance of broilers fed on a wheat based diet.  相似文献

The object of this experiment was to study physicochemical and sensorial traits in the 11th and 13th ribs of 24 Santa Ines (SI), 24 1/2 Ile de France?×?1/2 Santa Inês (ILE?×?SI) and 8 1/2 Texel?×?1/2 Santa Inês (TE?×?SI), slaughtered at different weights (30, 35, 40 and 45 kg, respectively). Subjective measurements (marbling, colour and texture) were carried out on the Longissimus dorsi, as well as initial pH (0 h) and final pH (24 h) after slaughter. The experiment was in a 3?×?4 factorial design and analysed using general linear model and correlation procedures in SAS®. Breed group did not influence colour (3.32), shear force (3.57 kg-force (kgf)) or loss in cooking (24.05%) of the L. dorsi, but slaughter weight affected these, with stronger colour, tougher meat and greater loss in cooking as slaughter weight increased. For sensorial analysis, the L. dorsi were cut, identified and evaluated by 30 untrained judges using a linear scale. Significant differences were detected in preference (6.61 points), tenderness (6.32 points), succulence (6.33 points) and flavour (7.08 points) of the meat from different breed groups and slaughter weights. For preference, all meats were well accepted although the crossbred animals slaughtered at 45 kg were less acceptable.  相似文献

Abstract

The effects of strain, sex and age on live weight, slaughter weight and sensory characteristics of organically reared broilers in orchards are presented. A total of 450 broilers of three different strains (I 657, Light Sussex, New Hampshire) were reared in an organic research orchard. Half of each strain was slaughtered at 91 days and the other half at 120 days. All broilers were weighed and a clinical welfare assessment was made at slaughter. A trained sensory panel evaluated the breast meat in relation to flavour, smell and texture characteristics defined by the panel. At both 91 and 120 days of age the commercial breed I 657 was significantly heavier than the slower growing strains. Males were significantly heavier than the females across strains. Weight ratios between males and females were nearly the same at both slaughter ages in I 657, whereas weight ratios increased significantly at 120 days in Light Sussex and New Hampshire. No overall effect of strain was found on the flavour and smell of the breast meat. However, the age-related changes in tenderness and toughness differed significantly between strains, since the commercial strain tended towards a tougher and less tender consistency with age, whereas the opposite was the case for the slower growing pure breeds. The positive flavour of salt was significantly improved at 120 days across strains with females having a saltier flavour than the males with age. The positive flavour of sweet corn was improved in the meat from the males, whereas the positive smell of sweet corn was significantly improved in both males and females. No negative effects of age were found.

In conclusion, broilers were tastier when slaughtered at 120 days compared with 91 days. The development in meat tenderness was related to strain, and weights at slaughter were related to both strain and sex.  相似文献

1. A 2?×?2 factorial design was used to investigate the differences in carcase, muscle and meat characteristics between fast and slow growing genotypes fed on low nutrient (LND) or high nutrient diets (HND) at their respective slaughter ages.

2. The birds were randomly assigned to treatments with 5 replicates of 145 birds for Wens Yellow-Feathered Chicken (WYFC, 5·75 birds/m2) or 115 birds for White Recessive Rock Chicken (WRRC, 7·25 birds/m2), according to the commercial recommendations for the two breeds and were fed on HND or LND. Birds were slaughtered at 63?d and 105?d of age.

3. The results showed WRRC had higher carcase yield and meat yield than that of WYFC, lower fat content, higher moisture content and lower cooking loss. The meat from WRRC was less tender and contained lower levels of polyunsaturated fatty acids (PUFA).

4. Birds fed on HND had higher breast meat yield, myofiber area and protein content in the breast muscle and lower fat content than birds fed on LND. The thigh muscle of birds fed on HND had higher levels of PUFA. Age had a positive effect on carcase parameters, but a negative effect on pH, meat tenderness and cooking loss, and the two genotypes exhibited different responses to the influence of nutrient density and age.

5. Genotype and age had the largest effect on carcase performance and meat quality. LND benefited meat quality and WRRC had larger responses in meat yield and shear force when fed on HND.  相似文献

1. Fermented plant product (FPP) is a natural fermented food which is produced from a mixture of fermented fruit and vegetables, and rice bran (1:9).

2. To investigate the effects of FPP on growth performance, some blood variables, carcase characteristics and intestinal histology were determined in 192 broilers. They were divided into 4 groups, with 4 replicates of 12 chicks each; the chicks were provided ad libitum access to a diet consisting of 0, 0·5, 2·0 and 4·0% dietary FPP.

3. The crude protein and metabolisable energy concentrations of these diets were adjusted to 230?g CP/kg and 13·40?MJ ME/kg for the 7 to 21?d old chicks, and 200?g CP/kg and 13·40?MJ ME/kg for the 22 to 49?d old chicks, respectively.

4. At 49?d of age, feed intake, body weight gain and feed efficiency tended to increase with increase in FPP concentrations. Feed intake increased in the 4·0% dietary FPP group, BW gain increased in the 2·0% and 4·0% dietary FPP groups and feed efficiency increased in all experimental groups.

5. There were no differences among diets in the blood variables and carcase characteristics, except for total visceral organ weight, increased in all experimental groups.

6. Most of the intestinal villus heights, villus areas, epithelial cell areas and cell mitosis tended to increase with increase in FPP concentrations; duodenal villus height and cell mitosis in the 2·0 and 4·0% dietary FPP groups, and jejunal cell mitosis in all experimental groups were significantly increased. Compared with flat cells on the villus apical surface in the 0% FPP group, all experimental groups had protuberant cells in all intestinal parts.

7. In conclusion, hypertrophy of the villi and epithelial cells was observed in the present study, indicating improved growth performance, especially in the 4·0% dietary FPP group. Furthermore, increased total visceral organ weights suggested that FPP has no harmful effects on broilers.  相似文献

1. One hundred and twenty (60 male and 60 female) 21‐d‐old Ross 1 broiler chicks were reared in cages in rooms kept at 21°C or 31°C and were killed at body weights of 1.0, 1.5, 2.0, 2.5 or 3.0 kg.

2. Birds reared at either of the two temperatures ate similar quantities of food to reach their slaughter weight although at 31°C they took longer to reach it.

3. The meat yields of the birds at each slaughter weight were similar at both rearing temperatures, but at body weights greater than 2.0 kg, the broilers reared at 21 °C had more breast meat than those reared at 31°C.

1. An experiment was conducted to evaluate the effects of dietary glutamine (Gln, 0 and 5?g/kg) and gamma-aminobutyric acid (GABA, 0 and 100?mg/kg) on raw breast meat colour, pH, composition and water-holding characteristic of broilers under cyclic heat stress (HS).

2. A total of 360 21-d-old Arbor Acres male chicks were randomly assigned to 5 treatment groups (6 replicates of 12 birds per cage). The positive control (PC) broilers were kept in a thermoneutral chamber (22–24°C) and fed on the basal diet. The other 4 groups were kept in a cyclic HS chamber (30–34°C) for 9?h (from 09:00 to 18:00).

3. A significant increase was observed in breast meat lightness at 28, 35 and 42?d; and pH values at 28, 35 and 42?d; while a significant decrease was observed in breast meat cooking loss (CL) and contents of moisture, crude protein (CP), crude fat (CF) and crude ash (CA) due to HS.

4. The supplementation with 0·5?g?Gln/kg decreased lightness at 28, 35 and 42?d; while increasing redness at 28?d, yellowness at 35?d, contents of CP, CF and CA, thawing loss (TL) and drip loss (DL). The addition of 100?mg?GABA/kg decreased lightness at 28 and 35?d, pH value at 28, 35 and 42?d, and TL; while increasing redness at 28?d, 35 and 42?d, contents of moisture, CP and CF.

5. The lightness, redness, and pH value; contents of moisture, CP, CF and CA; and TL, DL and CL of breast meat of broilers fed with the mixture of Gln and GABA under cyclic HS were similar to those of the broilers in the PC group.

6. Significant interactions were found between Gln and GABA for yellowness at 28 and 35?d; pH at 28, 35 and 42?d; moisture content, CP content, water-holding capacity and TL.

7. These results demonstrated that dietary Gln and GABA offer a potential nutritional strategy to prevent cyclic HS-related depression in broiler meat chemical composition and quality.  相似文献

ABSTRACT

1. The aim of this study was to determine the effect of dietary taurine supplementation on growth performance, meat quality and antioxidant responses in breast muscle of broiler chickens.

2. A total of 72 Arbor Acres broiler chickens (28-day-old) with similar body weight were randomly allocated into two groups, and fed either 0 g/kg (control; C) or 5 g/kg taurine-supplemented diets (TS) for 14 days.

3. The results showed that TS had no effect on growth performance or chemical composition of breast muscle in broilers. The drip and cooking losses were significantly decreased (P < 0.05), and the pH24h of breast muscle were increased (P < 0.05) in the TS group. Meanwhile, broilers in the TS group exhibited significantly higher (P < 0.05) scavenging activities of superoxide and 2,2-diphenyl-1-picrylhydrazyl radicals, and lower (P < 0.05) contents of carbonyl, malondialdehyde, and 4-hydroxynonenal. TS increased (P < 0.05) total antioxidant capacity and superoxide dismutase activities. Moreover, TS significantly upregulated (P < 0.05) the mRNA expressions of nuclear factor erythroid 2-related factor 2 (Nrf2), heme oxygenase 1, NAD(P)H quinone dehydrogenase 1, superoxide dismutase, catalase, and glutathione peroxidase.

4. These findings suggested that TS enhanced antioxidative capacity and improved breast meat quality of broilers via activating the Nrf2 pathway.  相似文献

  1. An experiment was conducted to determine the effect of reciprocal crossing of turkeys on early and 24 h post-mortem changes in quality traits of their breast muscles.

  2. The turkeys of slow-growing (SG) and fast-growing (FG) lines as well as SF (SG × FG) and FS crosses (FG × SG) were reared with access to free range.

  3. After slaughter turkey breast muscles were examined in the following terms: 5 min, 45 min, 2 h and 24 h post-mortem, for: temperature, pH, glycogen content (G), lactate content (L) and electrical conductivity (EC). Quality attributes of the breast meat were evaluated based on chemical composition, water holding capacity (WHC), cooking loss (%), shear force (N) and colour (L*, a*, b*).

  4. Despite differences in the rate of post-mortem changes, the genotype of turkeys had no significant effect upon many quality traits assessed 24 h post-mortem. Meat of lighter birds (SG and SF) was characterised by a lower fat content but a similar protein content compared to meat of FS and FG turkeys. In addition, meat of males from these groups was darker. Meat from the breast muscles of heavier birds (FS and FG) was harder.

  5. Significant negative maternal effects were determined for temperature of meat of both male and female turkeys, for pH2 and EC24 of males as well as for L2, L24 and cooking loss of female meat. Positive heterosis was confirmed only for pH2 of female meat and for G2 of male meat.

  6. In summary, the direction of fast- and slow-growing turkey crossing may affect the quality of their meat. However, meat of both types of hybrids reared under semi-confined conditions (with the possibility of using free range) was characterised by appropriate quality parameters.

1. The pharmacokinetics of gatifloxacin were investigated following intravenous and oral administration of a single dose at a rate of 10?mg/kg body weight in broiler chicks.

2. Drug concentration in plasma was determined using High Performance Liquid Chromatography with ultraviolet detection on samples collected at frequent intervals after drug administration.

3. Following intravenous administration, the drug was rapidly distributed (t1/2α: 0·33?±?0·008?h) and eliminated (t1/2β: 3·62?±?0·03?h; ClB: 0·48?±?0·002?l/h/kg) from the body.

4. After oral administration, the drug was rapidly absorbed (C max: 1·74?±?0·024?µg/mL; T max: 2?h) and slowly eliminated (t1/2β: 3·81?±?0·07?h) from the body. The apparent volume of distribution (Vd(area)), total body clearance (ClB) and mean residence time (MRT) were 3·61?±?0·04?l/kg, 0·66?±?0·01?l/h/kg and 7·16?±?0·08?h, respectively. The oral bioavailability of gatifloxacin was 72·96?±?1·10 %.

5. Oral administration of gatifloxacin at 10?mg/kg is likely to be highly efficacious against susceptible bacteria in broiler chickens.  相似文献

1. Behavioural and neural responses of 65 broilers to head-to-cloaca electrical stunning were evaluated and meat quality was assessed on two groups of 25 broilers stunned either head to cloaca, or in a conventional water bath method.

2. On the EEG recordings, a general epileptiform insult was observed when applying a current of 100?mA (100?Hz) or 70?mA (70?Hz) for 1·5?s. This study was conducted to evaluate the effect of dietary resveratrol (Res) supplementation on serum parameters, meat quality and muscle antioxidant status of broilers under heat stress (HS). A total of 270 21‐day‐old male Cobb broilers were randomly assigned to three treatment groups with six replicates of 15 birds each. The three treatment groups were as follows: the control group, in which birds were reared at 22 ± 1°C, and the HS and HS + Res (400 mg/kg) groups, in which birds were reared at 33 ± 1°C for 10 h (08.00–18.00 h) and 22 ± 1°C for the rest of the time. Compared with birds in the control group, birds in the HS group exhibited increased serum corticosterone (CORT) and triacylglycerol contents, L*, drip loss and muscle malondialdehyde content, and decreased serum glucose content, pH24 h, muscle total antioxidant capacity (T‐AOC), catalase (CAT) and glutathione peroxidase (GSH‐PX) activities (< 0.05). Compared with birds in the HS group, birds in HS + Res group exhibited increased serum glucose content, a*, pH24 h, muscle T‐AOC and CAT activities, and decreased serum CORT and triacylglycerol contents, L*24 h, drip loss and muscle malondialdehyde content (< 0.05). In conclusion, Res beneficially protects against HS‐impaired meat quality of broilers through regulating muscle antioxidant status.  相似文献

1. A pharmacokinetic study of valnemulin was conducted in healthy Muscovy ducks after intravenous (IV), intramuscular (IM) and oral administrations at a dose rate of 15?mg/kg body weight.

2. Drug concentrations in plasma were determined by high performance liquid chromatography-tandem mass spectrometry (LC-MS/MS). Pharmacokinetics parameters of valnemulin were analysed by compartmental analysis using the WinNonlin program.

Following intramuscular and oral administration, valnemulin was rapidly absorbed; the Cmax was 0·44?±?0·13 and 0·12?±?0·02?µg/ml (achieved at 0·28 and 1·80?h), the t1/2Ke was 3·17?±?3·83 and 4·83?±?1·81?h, and the absolute bioavailability (F) was 72% and 37%, respectively.

1. The objective of the present study was to investigate the effect of vitamin E (VE, α-tocopherol acetate) on growth performance and meat quality of broilers fed on diets containing maize distillers’ dried grains with solubles (DDGS).

2. A total of 360 one-d-old broilers were randomly assigned to 6 groups. Each group comprised 6 replicates of 10 broilers. Broilers were allocated to 1 of 6 diets and fed for 49?d in a 3?×?2 factorial design. The dietary treatments included three concentrations of DDGS (0, 10 or 20%) and two concentrations of VE (0 or 200?mg/kg).

3. Diets containing 20% DDGS decreased the growth phase and average daily feed intake, demonstrating that small amounts of DDGS affected feed intake in broilers and that an excess of DDGS was not conducive to feed intake.

4. Different dietary concentrations of DDGS did not significantly improve colour, drip loss, cooking loss, or shear force. Supplementation with 200?mg/kg VE significantly reduced cooking loss and shear force and improved colour.

5. In conclusion, supplementation with DDGS at 10% and/or α-tocopherol acetate at 200?mg/kg had positive effects on growth performance and meat quality in broilers.  相似文献
