During fattening, the bodyweight of modern broad-breasted turkeys increases considerably within a very short space of time. In particular, the breast muscles increase disproportionately. This leads to a disadvantageous distribution in weight, and as a consequence, to a disturbed leg position and skeletal deformations like antitrochanteric degeneration, tibial dyschondroplasia, bending, twisting and rotation of the tibia, osteochondrosis, osteomyelitis, rickets, and epiphyseolysis of the femoral head increases. This cases of degenerative joint disease cause severe pain in humans and there are indications that this is also true for turkeys. The purpose of this study was to determine if behaviour indicative of such pain in turkeys of the B.U.T. Big 6 breeding line could be attenuated by administering a quick-acting analgesic, butorphanol. Twelve pairs of turkeys were tested at the ages of 7 and 12 weeks. One bird in each pair received an analgesic opioid injection, while the other one received a control injection of physiologically balanced saline solution. The time the birds spent putting weight on their legs, i.e., 'walking' and 'standing' and the distance covered by the birds were recorded during the 30 min periods before and after the application of the drug. At week seven the treated birds spent significantly more time putting weight on their legs than control birds. At week 12, the same tendency was observed. No significant differences were found in the distances covered by the animals. It is concluded that fattening turkeys reduce the time they are putting weight on their legs because these behaviours may be associated with pain.

This experiment was undertaken to examine the effect of dosing of a mechanical stimulating brush (RF) in the rumen on dressed carcass characteristics and on the fatty acid composition of dressed carcass fat in fattening beef cattle. The fattening trial was carried out with high-concentrate diets (organic cell wall contents: 27.5% on a dry mater basis) in eight Holstein steers (12 months of age). Four of the experimental animals were orally dosed with three RF/head (RF group); the other four animals without RF dosing were allotted as the control group. Grass hay was fed to the animals (0.2 kg/head/day) until 19 months of age. Concentrate diet was given ad libitum during the experiment. There were no statistical differences between the RF group and the control group in yield score and meat quality score of dressed carcass characteristics. Regarding fatty acid composition of dressed carcass fat, the proportion of C18 : 2 fatty acids in subcutaneous fat in the RF group was greater ( P  < 0.05) than that in the control group. C16 : 0 fatty acids in kidney fat in the RF group was lower ( P  < 0.05), and C18 : 2 fatty acids and total unsaturated fatty acids of 18 carbon number in kidney fat in the RF group were higher ( P  < 0.05) compared with the control group. The proportion of C18 : 2 fatty acids in rib eye fat in the RF group was greater ( P  < 0.05) than that in the control group. C18 : 1 fatty acids, C18 : 2 fatty acids and total unsaturated fatty acids of 18 carbon number in rib fat in the RF group were greater ( P  < 0.05) than those in the control group. The results suggest that in fattening Holstein steers fed with high-concentrate diets, the effect of ruminal RF dosing on dressed carcass characteristics is not significant, but the proportion of unsaturated fatty acid of carcass fat is increased.

OBJECTIVE: To determine tissue depletion profiles for gentamicin and its 3 major components (C1, C1a, and C2) in turkeys. ANIMALS: Twenty 10-week-old male turkeys. PROCEDURE: birds were maintained as untreated controls. The remaining birds were treated with gentamicin sulfate at a dosage of 2 mg/kg, IM, once daily for 5 days. Treated birds were euthanatized 45, 60, 75, and 90 days (4 birds at each sample time) after the last dose of gentamicin was administered, and samples of muscle, liver, kidney, and skin and fat were collected. Control birds were euthanatized on day 45. Concentrations of the 3 major components of gentamicin were measured by means of reversed-phase high-performance liquid chromatography. RESULTS: Total gentamicin concentration (ie, sum of the concentrations of the 3 major components) was < 100 microg/kg for all muscle and skin and fat samples by day 45 and all liver samples by day 75. At all sample times, concentration of the gentamicin C1 component was higher than concentrations of the C1a and C2 components in all tissues. CONCLUSIONS AND CLINICAL RELEVANCE: Results suggest that tissue depletion profiles of the 3 major components of gentamicin differ from each other. Withdrawal time, therefore, may depend on the ratio of the components in the pharmaceutical preparation used.

Rations containing 25% of either regular rapeseed oil (36% erucic acid), Oro rapeseed oil (1.9% erucic acid), soybean oil or a mixture of lard and corn oil were fed to chickens, ducks and turkeys. The regular rapeseed oil ration caused growth depression, increased feed conversion and anemia in all species. All the ducks and some of the chickens fed the regular rapeseed oil ration died. These dead birds were affected with hydropericardium and ascites. No deaths in the turkeys could be attributed to the regular rapeseed oil ration but some turkeys fed this ration had degenerative foci characterized by infiltrations of histiocytic and giant cells in the myocardium. Severe fatty change in the heart, skeletal muscles, spleen and kidney was found at an early age in all birds fed the regular rapeseed oil ration. Less severe fatty change but no other lesions were found in birds fed the Oro rapeseed oil and soybean oil rations.

Mycoplasma gallisepticum was isolated from 2 wild-type turkeys (Meleagris gallopavo) and 1 domestic turkey living in close contact on a farm in Tehama County, California. Sinusitis was detected in 2 of 14 wild-type turkeys and in 1 of 12 feral broad-breasted bronze turkeys, but in none of several chickens on the premises. The entire mixed flock was captured, sinus aspirates were collected from affected birds, and blood samples were obtained from all birds for serologic testing. Blood samples also were obtained from 10 domestic turkeys on adjacent premises from which breeding stock had been borrowed. The M gallisepticum isolated from sinus aspirates was typed and inoculated into susceptible chickens, resulting in airsacculitis. California wild turkeys with and without histories of exposure to domestic fowl and wild turkeys shipped into California from Texas for release were tested for antibodies to M gallisepticum, using the plate agglutination test. Evidence of M gallisepticum infection was not found in wild turkeys at any location other than the original premises.

1. Absorption of protein, fatty acids, calcium, phosphate and potassium by young turkeys maintained at thermoneutral (24 degrees C), hot (35 degrees C) and cold (8 degrees C) conditions was examined. 2. Non-acclimatised, heat-stressed birds absorbed less potassium and phosphate, whereas absorption of nitrogen, fatty acids and calcium was not altered, as compared with birds at 24 degrees C. Non-acclimatised, cold-stressed birds absorbed less calcium than control birds and more nitrogen than non-acclimatised, heat-stressed birds. 3. Heat acclimatization might reduce the adverse effect of heat stress on potassium and phosphate absorption.

The effect of different iron concentrations in the milk replacer on the development of iron deficiency anaemia during a fattening period of 28 weeks was studied in three groups of 14 calves. The iron contents in the milk replacer differed during the first seven weeks: 60, 100 and 150 mg Fe/kg in groups A, B and C, respectively. In all three groups blood haemoglobin, mean corpuscular volume, plasma iron concentration and saturation decreased during the fattening period, whereas the total iron-binding capacity increased. At week 7, liver iron concentrations were high with a large individual variation [A: 201 (61-706), B: 99 (47-129), C: 296 (77-1572) micrograms/g dry matter]. During the fattening period, liver iron concentrations decreased, with the lowest values at week 25 [A: 54 (34-82), B: 55 (44-83), C: 57 (42-79) micrograms/g dry matter]. Muscle iron concentrations decreased between week 7 and 19. Except plasma iron and saturation in group C, no differences in haematological and tissue iron variables were found throughout the fattening period in spite of different iron contents in the milk replacer during the first seven weeks.

Consideration of the shortened fattening period seems to be worthwhile for the realization of profitable beef production. In this study, change of fatty acid composition of the lumbar longissimus during the final stage of fattening was investigated in Japanese Black cattle. Each of 110 fattening animals was sampled three times: the initial two samples were taken by biopsy (25.7 months and 27.5 months on average) and the final one was from carcasses (29.9 months on average). Preliminary analysis indicated that removing muscle tissues from the constant body position of the living animals should be essential for sampling. Average monounsaturated fatty acids (MUFA) at three sampling points were 58.1%, 58.5% and 60.5%, and the differences of the third sampling with the first and second samplings were significant. Both in steers and heifers, MUFA also increased as the fattening stage proceeded, and MUFA of the heifers at all the sampling points were significantly higher than those of the steers. The increasing rate of MUFA rose from 0.21 percentage points (pp)/month at period 1 (from the first sampling to the second sampling) to 0.84 pp/month at period 2 (from the second sampling to the slaughter).

Histomonas meleagridis infection of turkeys is usually accompanied by a severe disease with unspecific clinical symptoms but with distinct pathological lesions in the ceca and liver. In the literature some macro- and microscopic evidence of the spread of histomonads to the other organs has been provided. The aim of the present investigations was to use real-time polymerase chain reaction (PCR) to demonstrate the dissemination of H. meleagridis DNA to different organs after natural and experimental infection of meat turkeys. Samples from several organs were collected from a meat-turkey flock, which proved to be naturally infected with histomoniasis, and examined for histomonad DNA by real-time PCR. Histomonad DNA was detected in all investigated ceca, livers, spleens, kidneys, and pooled brain swabs. Additionally it was found in 75% of investigated samples from bursae of Fabricius, in 50% of investigated duodenums, and in 40% of investigated jejunum samples. After experimental intracloacal infection of 3-wk-old turkey poults with 147,500 histomonads, similar samples were collected from all turkeys that died. After a 3-wk observation period the surviving birds, as well as the noninfected control group, were euthanatized and samples were taken. During the entire experimental period, 10 birds out the 20 infected birds died. Histomonad DNA was detected in all investigated ceca, livers, lungs, and hearts (100%) and almost all kidneys (90%) and bursae of Fabricius (80%). On the other hand, only 30% of examined spleens and 10% of brain samples revealed positive results. Surviving infected birds were euthanatized and necropsied; histomonad DNA was found in one out of 10 livers but not in any ceca. Also, histomonad DNA could not be detected in examined cecal and lung samples from the noninfected control group.

1. Male broilers selected for high (HF) or low (LF) abdominal fat were fed from 8 to 53 d of age on diets containing different concentrations of protein: according to N.R.C. (1984) recommendations (IP), 14% lower (LP) or 14% higher (HP). 2. The growth of LF birds fed on the LP diet was depressed until 35 d of age, but did not differ from the other groups later on. 3. The HF birds had heavier adipose tissues (AT) (g/kg body weight) than the LF birds. Significant line by diet interactions indicated a difference in magnitude of the response of the lines to dietary protein content. 4. Fat concentration of the AT and skin was higher, and in the tibia lower in the HF than in the LF birds. The fat concentration in liver and in breast muscle was not affected by line or by diet. 5. The ratio of saturated plus monoenoic fatty acids to polyenoic fatty acids, considered as an index of fat synthesis, was higher in the abdominal adipose tissue (AAT) of HF compared with LF birds. In AAT, liver and in breast muscle, this ratio was inversely related to dietary protein content.

A total of 600 crossbred pigs, whereof 56 were randomly selected for more in-depth studies of carcass and pork quality, were employed to test different tuna oil feeding regimens. The focus was put on the efficiency to enrich lean and adipose tissue with n-3 fatty acids and the expression of adverse side-effects on performance, carcass, and pork quality. The 4 treatments were 0% tuna oil in diet (T0; control), 1% of unrefined tuna oil in diet fed from 35 to 90 kg of BW (T1), and 3% of unrefined tuna oil in diet offered during the early (35 to 60 kg of BW; T3-E) or late stage of fattening (75 to 90 kg of BW; T3-L). With this arrangement, pigs consumed equal lifetime amounts of tuna oil (approximately 1.6 kg per pig). None of the tuna oil treatments had significant effects on performance. There were no differences in carcass quality among tuna oil groups except for group T3-E where carcasses and loin chops were fatter than those of the other groups. Water-holding capacity and texture of the loin as well as firmness and melting properties of the backfat remained widely unaffected by the treatments. Tuna oil feeding resulted in a lighter, less red and less yellow backfat and was found to increase the proportion of n-3 fatty acids to total fatty acids in all treatments. This especially concerned eicosapentaenoic acid and docosahexaenoic acid, but not alpha-linolenic acid. There was also a slight increase in oleic acid, whereas n-6 fatty acids largely decreased. Feeding tuna oil during a short period at the end of fattening (T3-L) or permanently during fattening (T1) proved to be similarly efficient in increasing n-3 fatty acid content of lean and adipose tissue (to about 1.6-fold of T0). By contrast, only two-thirds of this increase was found when the same amount of tuna oil had been fed exclusively during early fattening (T3-E). The decreased efficiency in T3-E was associated with better sensory flavor, overall acceptability grading, and oxidative status. The results show that, particularly under the condition of a continuous supply, much of the n-3 fatty acids ingested in early fattening can be recovered in pork. These findings give farmers flexibility as to when and how pork can be enriched in n-3 fatty acids with fish oil.

Weight and biochemical studies were conducted on 2-week-old turkeys inoculated with 10(4) to 5 X 10(5) sporulated Eimeria meleagrimitis oocysts, on their pair-fed controls (equivalent food intake), and on control turkeys fed ad libitum. Food consumption and rate of weight gain of all inoculated and pair-fed turkeys fell sharply on day 4 postinoculation (PI), but deaths occurred primarily among the birds inoculated with 5 X 10(5) oocysts. Heart weights (expressed as percentage of body weight) were reduced in inoculated and pair-fed birds, but liver, spleen, and pancreas weights did not differ from those of either control group. Feed conversion (feed consumed/gain) was less efficient for inoculated turkeys than for ad libitum or pair-fed controls and was least efficient for turkeys inoculated with 5 X 10(5) oocysts. Plasma glutamic oxaloacetic transaminase (GOT, aspartate and aminotransferase) activity increased, and carotenoid and total protein levels decreased in inoculated turkeys but not in the pair-fed turkeys, indicating that these changes were caused by the infection and not by reduced food intake. Plasma glutamic pyruvic transaminase (GPT, alanine aminotransferase) remained stable in all groups. Plasma glucose levels of inoculated birds did not differ from those of the control groups, but liver glucose and glycogen levels decreased in both the inoculated and pair-fed birds.

The authors report on occurrence, causes and diagnostics of liver affections observed in fattening bulls in Ukrainia between 1982 and 1988. For this purpose, 2747 bulls in 10 fattening plants had been controlled clinically once during the last month of their final fattening period (lasting, according to the feeding schedule, from the 4th until the 12th, or from the 6th until the 18th month of life), and 1318 of them were controlled for eventual hepatic lesions at slaughter. The authors found an increase in liver affections during the final fattening period. The type of lesion found preferentially in the different fattening plants showed a certain correlation with feeding used in these: The prevalence of liver lesions (i.e. in 87.2% of the animals controlled) were found in fattening bulls fed cereal branstraw-pellets; among these, liver abscesses were most frequent (i.e. 55.2% of all lesions observed in this group). Steatosis of the liver was prevalent in fattening bulls receiving eating offalls (i.e. 82.7% of all lesions found in that group), whereas liver cirrhosis was prevalent in fattening bulls fed with sugar beet chips-silage. In Holstein-bulls, liver lesions were about double as frequent as in Fleckvieh-bulls (i.e. 37.3 and 16.7% of the livers controlled were found involved, respectively). Diagnostical value of several clinical parameters controlled is discussed (i.e. size and sensitivity of liver percussion field, activity of SDH, LDH, AST and ALT in serum, serum concentration of vitamin A, D3-25 and E, concentration of Vitamin A in liver, and concentration of cholic acids and of their glucoconjugates in bile).

In this experiment, the effect of duration and time of feeding n-3 PUFA sources on the fatty acid composition and oxidative stability of the longissimus thoracis (LT) muscle was investigated. Linseed (L) and fish oil (F), rich in alpha-linolenic acid and eicosapentaenoic and docosahexaenoic acid (EPA and DHA), respectively, were supplied equivalent to a level of 1.2% oil (as fed), either during the whole fattening period or only during the first (P1; 8 wk) or second (P2; 6 to 9 wk until slaughter) fattening phase. All diets were based on barley, wheat, and soybean meal and were fed ad libitum. Crossbred pigs (n = 154; Topigs 40 x Piétrain) were randomly allotted to the 7 feeding groups. In the basal diet (B), only animal fat was used as the supplementary fat source. Three dietary groups were supplied the same fatty acid source during both fattening phases (i.e., group BB, LL, and FF). For the other 4 dietary groups, the fatty acid source was switched after the first phase (groups BL, BF, LF, and FL; the first and second letter indicating the diet in P1 and P2, respectively). Twelve animals per feeding group were selected based on average live BW. The LT was analyzed for fatty acid composition; lipid stability (thiobarbituric acid-reactive substances) and color stability (a* value, % of myoglobin pigments) were determined on the LT after illuminated chill storage for up to 8 d. The alpha-linolenic acid, EPA, and docosapentaenoic acid incorporation was independent of the duration of linseed feeding (1.24, 0.54, and 0.75% of total fatty acids, respectively, for group LL). Supplying fish oil during both phases resulted in the greatest EPA and DHA proportions (1.37 and 1.02% of total fatty acids; P < 0.05), but the content of docosapentaenoic acid was not affected. The proportion of DHA was greater when fish oil was administered during P2 compared with P1 (P < 0.05). There was no effect of diet on meat ultimate pH and drip loss or on lipid or color oxidation.

Broilers with feather follicle inflammation and birds free of this disorder were selected from the broiler chickens kept on plastic (bralen-)coated metallic slats. Both groups of broilers were killed on a sanitary slaughter line and the samples of breast and thigh muscles were analyzed for the basic composition and characteristics of the metabolism of nitrogenous and lipidic components. The content of individual amino acids in the muscles and the proportion of fatty acids in the intramuscular fat of broilers were determined for the evaluation of nutritive value. The samples of the affected spots of skin and samples of organs (liver) were subjected to microbiological examination. The resultant finding represented the common mesophilous microflora. No substantial statistically significant differences in chemical characteristics were found between the two groups. It follows from the results that the inflammation of feather follicles is a local skin disorder with no effect on the quality of the meat.

An experiment was conducted to determine the effects of different coccidiosis-preventing programs on performance and intestinal morphology of commercial turkeys. Three hundred fifteen1-d-old female commercial cross turkey poults (British United Turkeys, BUT Big 9) were distributed into 3 treatments with 5 replicates of 21 birds each. Three programs were evaluated from 1 to 70 d of age, where program 1 had no anticoccidial drug and no vaccination against coccidiosis; program 2 had an anticoccidial drug (maduramycin 1%, 5 ppm); and program 3 had a vaccination (commercial vaccine, 4 species of Eimeria). All the groups were challenged with a dose of oocysts sporulated (20,000/bird) of 2 species of Eimeria at 21 d of age. In the growing phase (d 0–28), BW, BW gain, and FCR were significantly greater in treated groups compared with control group. In the fattening phase, the performance was not affected by treatments. Treatments and coccidiosis challenge had no significant effects on intestinal villus height. These observations support other reports that confirm live oocyst vaccination can be used effectively as a preventive against avian coccidiosis in commercially reared turkeys.

The role of the capsule in the pathogenesis of fowl cholera was studied in turkeys. Avian Pasteurella multocida P-1059 was used in an encapsulated form, an enzymatically decapsulated form, and a mutant form lacking capsule-productivity (strain T-325). These forms were inoculated intravenously into normal or immune turkeys, and the numbers of viable bacteria in the blood, liver, and spleen were enumerated over a 120-minute period. Both normal and immune birds rapidly removed all three forms of organisms from the blood-stream at similar rates and trapped in the liver and spleen. In the liver of normal birds, the non-encapsulated mutant T-325 was readily inactivated, but the encapsulated P-1059 strain was not. When the decapsulated form of P-1059 was used, the bacterial counts in the liver temporarily decreased at 60 minutes PI. In immune birds, all three forms of organisms were equally inactivated in the liver. In the spleen, however, the bacterial numbers did not change throughout 120 minutes PI with all three forms of organisms in both normal and immune turkeys. The results indicated that the blood-borne P. multocida were readily trapped by reticuloendothelial phagocytes. The trapping process was not affected by encapsulation of the organism or by the immune status of turkey. Both factors, however, appeared to greatly influence the subsequent killing of P. multocida by hepatic, but not splenic, phagocytes.

This study evaluated the relationship between blood iron parameters and hepatic iron concentrations, and correlation of histologic findings with hepatic iron concentrations in a captive population of Egyptian fruit bats (Rousettus aegyptiacus) and island flying foxes (Pteropus hypomelanus). Blood samples were collected for complete blood counts, plasma biochemical profiles, serum iron concentrations, total iron-binding capacity, whole-blood lead concentrations, and plasma ferritin assays. Liver samples obtained by laparotomy were divided, with one half processed for histologic examination and the other half frozen and submitted for tissue mineral analysis. The histologic sections were scored by two blinded observers for iron deposition, necrosis, and fibrosis. The Egyptian fruit bats had significantly higher liver iron (mean = 3,669 +/- 1,823 ppm) and lead (mean = 8.9 +/- 5.8 ppm) concentrations than the island flying foxes (mean [Fe] = 174 +/- 173 ppm, mean [Pb] = 1.9 +/- 0.5 ppm). Hepatic iron concentrations significantly correlated with tissue lead concentrations, histologic grading for iron and necrosis, serum iron, transferrin saturation, and plasma ferritin (P < 0.001). Blood lead concentrations negatively correlated with tissue lead concentrations (P < 0.001). When the product of transferrin saturation and serum iron was greater than 51, an individual animal had a high probability of having iron overload. When the product of these two variables was greater than 90, there was a high probability that the animal had hemochromatosis. On the basis of this study, it appears that evaluation of serum iron, transferrin saturation, and plasma ferritin are useful and noninvasive methods for diagnosis of hemochromatosis in Egyptian fruit bats.

The protozoan parasite Toxoplasma (T.) gondii is one of the most common zoonotic infectious agents worldwide. Besides its sexual reproduction in cats, T. gondii can also infect a wide spectrum of other warm-blooded animals. These include animals used for human consumption such as pigs or chickens. Nevertheless, the role of turkeys for the epidemiology of T. gondii infections has not been studied thoroughly. We have established a kinetic ELISA (KELA) for the detection of T. gondii-specific IgG antibodies in turkey serum samples. The test is based on the recombinant dense granule antigens GRA7 and GRA8. These proteins were used as an antigen mixture at a concentration of 0.13 μg per well. The overall sensitivity of the assay was between 92.6% and 100% and the specificity ranged from 78.1% to 100%, depending on the method used to calculate these parameters. Using this KELA we examined 1913 turkey serum samples from 14 turkey farms from different areas of Germany. From these sera, 387 produced a signal in the KELA, corresponding to a true seroprevalence of up to 20.2%. The seropositivity rate in individual fattening cycles at individual farms ranged from 0.0% to 77.1%, whereas the rates were highly variable within the individual farms and individual fattening cycles. Consequently, conditions of animal husbandry could not be associated with particular seroprevalence rates. Although seropositivity cannot be linked directly to infectious tissue cysts in the muscle tissue of commercially produced turkey meat, we state that there is a potential risk of being infected by consuming turkey meat products that were not heat treated.
