Debranning of wheat to remove the outer 7% of the kernel, prior to grinding or milling reduced xylanase activity in wheat wholemeal and wheat endosperm flour by up to 80 and 60%, respectively, whereas there was no significant reduction of xylanase inhibiting activity. Flours obtained after debranning and milling showed no major differences in moisture content, whereas ash content decreased and protein and arabinoxylan content decreased slightly with increasing debranning degree. Part of the xylanase activity in the flour was lost on addition of Triticum aestivum xylanase inhibitor (TAXI). Since TAXI specifically inhibits glycosyl hydrolase family 11 xylanases and since endogenous cereal xylanases belong exclusively to family 10, part of the xylanase activity in the flour is most likely of microbial origin. Debranning also significantly reduced alpha-amylase activities in wheat wholemeal and wheat flour. Debranning prior to milling can, therefore, impact on flour functionality.  相似文献

为给优质小麦育种和生产提供参考依据,以优质小麦新品种中麦175于2010-2011年度在河北和北京14个地点的样品为材料,分析了磨粉品质、面粉和面片颜色、面团流变学和淀粉糊化特性、馒头和面条加工品质。结果表明,中麦175为馒头和面条兼用型优质品种,特点是软质、中偏弱的面筋强度、面粉颜色白,多数品质性状较稳定,籽粒硬度、PPO活性、面片a*值、稳定时间、拉伸面积、延展性和最大抗延阻力的变异系数较大,馒头加工品质地点间变异大于面条。磨粉品质和面团流变学参数对馒头加工品质有显著影响,籽粒硬度和出粉率对馒头表面颜色有显著负向影响,相关系数分别为-0.82(P<0.01)和-0.58(P<0.05);面粉L*值高,馒头加工品质好,二者相关系数为0.72(P<0.01);吸水率与馒头总分呈显著负相关(r=-0.84,P<0.01),稳定时间、拉伸面积、延展性和最大抗延阻力与馒头总分呈显著正相关,相关系数分别为0.85(P<0.01)、0.77(P<0.01)、0.62(P<0.05)和0.70(P<0.01)。降低PPO活性和吸水率,提高蛋白质含量、出粉率和黄色素含量可以改善面粉和面片颜色的亮白度,增加部分黄度,形成消费者可接受的奶白色。淀粉糊化特性对馒头和面条加工品质无显著影响。上述信息对改良小麦品质的稳定性有重要意义。  相似文献

小麦淀粉品质对白盐面条的质量(尤其是煮后的感官特性)有重要影响。直链与支链淀粉的含量及比例是影响面条质量的重要因素,是造成不同小麦品种淀粉糊化和膨胀特性及面条质量差异的物质基础。较低直链淀粉含量的小麦粉具有较好的糊化和膨胀特性,制作的面条煮制时吸水率高,烹调损失低,具有较高的感官评分。优质白盐面条的直链淀粉含量应在22%左右。峰值黏度、稀懈值、峰值时间是影响面条质量的重要糊化参数,这3项参数高的小麦粉适合制作优质面条。高膨胀势或膨胀体积的小麦粉制作的面条中等偏软,光滑且富有弹性,可以作为面条用小麦的重要选择标准。一般认为,直链淀粉含量较低、峰值黏度和稀懈值高、峰值时间长、膨胀势或膨胀体积高的小麦粉适合制作优质白盐面条。其中,直链淀粉含量、峰值黏度和膨胀势是优质面条小麦评价的关键品质性状。  相似文献

Quality characteristics of northern-style Chinese steamed bread (CSB) prepared from two soft red winter (SRW) wheat flours blended with 0–30% waxy wheat flour (WWF) were analyzed to estimate the influence of starch amylose content. The increased proportion of WWF in blends raised mixograph absorption with insignificant changes in protein content and dough strength-related parameters. WWF incorporation generally increased specific volume and crumb softness of CSB. The analysis of covariance revealed that CSB quality attributes were little affected by protein content and dough strength-related parameters, indicating that starch amylose content was largely responsible for the changes in CSB quality. Flour blends with 5–10% WWF, of which starch amylose content was 22.4–24.7%, produced CSB with superior crumb structure compared to other blends, but insignificant changes in surface smoothness, stress relaxation and total score compared to the respective control wheat flours. Flour blends with 15% WWF to produce a starch amylose content of 21.4–22.7% exhibited reduced staling of CSB with total scores comparable to the respective control wheat flours. CSB prepared from blends with more than 10% WWF exhibited a higher soluble starch content, indicative of reduced starch retrogradation, than that prepared from wheat flours without WWF during storage for 3 days.  相似文献

Two trials with a total of 75 spring bread wheat cultivars and advanced lines, were used to evaluate single kernel characterization system hardness, puroindoline alleles, milling yield, flour ash content, flour colour, and end-use qualities for Chinese noodles, steamed bread and pan bread. The results indicated that all International Maize and Wheat Improvement Center hard wheat lines surveyed were Pina-D1b genotype, whereas Pinb-D1b was the most common allele in the remaining cultivars. Genotypes with Pinb-D1b possess significantly lower flour ash content and higher milling yield than those of genotypes with Pina-D1b. For steamed bread, mean scores for loaf volume, crumb colour, width, structure and total score of Pinb-D1b genotypes were significantly higher than those of genotypes with Pina-D1b and wild type. For Chinese fresh white noodles, means for noodle a*, colour score, viscoelasticity and total score with Pinb-D1b were significantly higher than those of Pina-D1b and wild type. Means of loaf volume, texture and total score for Pinb-D1b genotypes were significantly higher than those of Pina-D1b genotypes. This study further illustrated the superiority of the Pinb-D1b allele on milling and processing qualities for various end products and provides useful information for wheat quality improvement.  相似文献

为了给优质面包、馒头、面条专用品种选育提供品质辅助选择指标,以30份新疆冬小麦品种(包括自育品种和引进品种)为材料,分析了新疆冬小麦品种品质性状与面包、馒头、面条加工品质的关系.回归分析结果表明,小麦籽粒性状、面粉品质、面团特性、淀粉糊化特性以及面粉色泽对新疆冬小麦品种面包、馒头和面条加工品质均有显著影响;面粉灰分、湿面筋、稀懈值、亮度和红度是影响面包、馒头和面条加工品质的共同品质性状;形成时间、稳定时间、延展度是影响面包和面条加工品质的共同品质性状;而籽粒性状仅对新疆冬小麦品种馒头加工品质有显著影响.相关分析结果表明,千粒重、形成时间、稳定时间、拉伸面积、最大拉伸阻力、红度和黄度与面包总分呈显著相关关系,相关系数分别为0.460、0.516、0.537、0.719、0.707、0.534和-0.403;籽粒蛋白质含量、面粉蛋白含量和湿面筋含量与馒头总分呈显著相关关系,相关系数分别为-0.397、-0.458和-0.552,面团延展度、稀懈值与面条总分呈显著相关关系,相关系数分别为0.438和0.432.从以上结果可以看出,面包与面团流变学特性,馒头与蛋白质和面筋数量,面条与面团流变学特性及淀粉糊化特性的关系更为密切,这些品质性状可以作为新疆冬小麦品种面包、馒头、面条加工品质改良时的辅助选择指标.  相似文献

为明确安徽大田生产环境下软质小麦籽粒和终端产品品质表现,评价优质软麦品种的加工适用性,本研究选取该区当前推广种植的24个软质小麦品种,对其籽粒和面粉的主要品质性状及其制品南方馒头和曲奇饼干的品质进行差异性、相关性分析,并以美国软白麦近五年的主要品质性状平均值为理想指标进行灰色关联度比较。结果表明,供试材料的硬度、面粉色泽b*、湿面筋含量、面团形成时间、稳定时间等籽粒品质性状变异系数较大,而容重、面粉L*值和吸水率变异系数较小。南方馒头品质性状中,白度差异最小,比容差异最大;曲奇饼干品质性状中,感官评分变异系数较大,饼干直径均值和变异系数都较小。蛋白质含量、湿面筋含量、稳定时间均符合弱筋标准(GB/T 17320-2013)的样品数为0。相关分析表明,容重、降落值、面粉L*、b*、白度与大部分性状间相关性不显著;籽粒硬度与水SRC和乳酸SRC均呈显著正相关,与湿面筋含量和面粉a*值均呈显著负相关。蛋白质含量与面粉a*值等7个指标均呈显著正相关,与面粉b  相似文献

为了解河北省中低筋小麦品种的籽粒品质和馒头加工品质、评选优质馒头小麦品种,对河北省19个主推中低筋小麦品种的籽粒品质和馒头加工品质进行了测定。结果表明,除容重、出粉率、面粉色泽L*值、面粉白度、籽粒蛋白质含量、糊化温度、吸水率外,河北省主栽中低筋小麦品种品质性状的遗传变异范围较大,19个参试小麦品种馒头综合评分平均为78.4分,变化范围67.8~85.7分;达到良好馒头标准(80~90分)的共有9个品种,分别为良星66、石优17、石新828、良星99、科麦1号、永麦1号、邢麦4号、济麦22、和冀丰703。馒头高度与拉伸曲线面积、拉伸阻力、P值和W值极显著正相关,与稳定时间显著正相关;馒头评分与P值和W值极显著正相关;馒头比容与稳定时间、粉质质量指数、拉伸曲线面积、延伸度、拉伸阻力、P值、G值和W值负相关。馒头评分与馒头坚实度极显著负相关,与馒头硬度显著负相关,说明馒头坚实度对馒头感官品质影响较大。  相似文献

In this study, sixteen wheat varieties for cultivation in China were examined for the flour characteristics using the farinograph, extensograph and rheofermentometer, uniaxial extensional rheology employing the extensograph and the Kieffer extensibility rig and biaxial extension by uniaxial compression of mixed dough with and without yeast, rested and fermented dough, and steamed bread quality including specific volume and texture properties. Three statistical analysis methods including Pearson correlation, principle component and stepwise multiple regression analysis were carried out to correlate dough properties with steamed bread quality. Biaxial extension viscosity was positively correlated with texture properties (hardness and chewiness) of steamed bread (r = 0.521–0.685, p < 0.05). Based on the correlation coefficients and the model (r2 = 0.852, p = 0.003) obtained using stepwise multiple regression analysis, the best predictors for specific volume of steamed bread were the maximum resistance to extension of rested dough (r = 0.664, p < 0.01) and total work for breakage of fermented dough (r = 0.662, p < 0.01). Principal component analysis of rheological properties of fermented dough and flour characteristics provided more useful information for discriminating wheat flour quality and help breeders to select most convenient wheat flour for the steamed bread making.  相似文献

The objective of this study was to examine the influence of flour quality on the properties of bread made from pre-fermented frozen dough. The physicochemical parameters of 8 different wheat flours were determined, especially the protein quality was analysed in detail by a RP-HPLC procedure. A standardized baking experiment was performed with frozen storage periods from 1 to 168 days. Baked bread was characterised for specific loaf volume, crumb firmness and crumb elasticity. The results were compared to none frozen control breads. Duration of frozen storage significantly affected specific loaf volume and crumb firmness. The reduction of specific loaf volume was different among the used flours and its behaviour and intensity was highly influenced by flour properties. For control breads wet gluten, flourgraph E7 maximum resistance and RVA peak viscosity were positively correlated with specific loaf volume. However, after 1–28 days of frozen storage, wet gluten content was not significantly influencing specific loaf volume, while other parameters were still significantly correlated with the final bread properties. After 168 days of frozen storage all breads showed low volume and high crumb firmness, thus no significant correlations between flour properties and bread quality were found. Findings suggest that flours with strong gluten networks, which show high resistance to extension, are most suitable for frozen dough production. Furthermore, starch pasting characteristics were also affecting bread quality in pre-fermented frozen dough.  相似文献

为了提高馒头的加工品质,满足中国馒头加工业的迫切要求,以小偃22小麦粉为材料,研究其馒头加工的加水量、和面时间以及大豆蛋白、小麦胚芽、卵磷脂对馒头品质的影响。结果表明,加水量、和面时间以及大豆蛋白、小麦胚芽、卵磷脂的添加量对馒头回复性、内聚性和咀嚼性影响显著或极显著。随加水量增加,馒头的内聚性和回复性先增后减,咀嚼性呈减小趋势;随和面时间与大豆蛋白添加量的增加,馒头内聚性和回复性均减小,咀嚼性均先减后增;随小麦胚芽添加量的增加,馒头的内聚性与回复性先减后增,咀嚼性先减后增;随卵磷脂添加量的增加,内聚性先增后减,咀嚼性先减后增,回复性减小。优质馒头制作的适宜加水量、和面时间以及大豆蛋白、卵磷脂和小麦胚芽添加量分别为粉质吸水率的80%、4min、2%、0.4%、8%。  相似文献

Using the nine different wheat varieties, sixteen different flours were blended to achieve two protein levels 11 and 13%. Mixing characteristics of the flours were analysed by Farinograph and Mixograph. Thermal properties of flour were measured by differential scanning calorimetry (DSC). Starch gelatinisation, pasting viscosity, and gelation properties were assessed by a Rapid Visco-Analyser (RVA). Hearth bread loaves were produced from the flours using a small-scale baking method. The results from the analyses of flour were related to the properties of hearth bread loaves by multivariate statistical methods. The Partial Least Squares Regression (PLS) model (Model 1) obtained using results from grain and flour analysis (no starch analysis included) as X – matrix explained 70% of the total variance in hearth bread characteristic form ratio. If flour-pasting properties were included in the PLS1 model (Model 2) the explained variance increased to 77%. The model obtained including the DSC parameters of wheat flour explained 76% of the total variance in form ratio (Model 3). This emphasises the importance of starch in wheat flour and that it is possible to find wheat flour starch quality parameters in addition to protein quality that is important for hearth bread quality. No good models were obtained for hearth bread characteristics loaf volume and weight.  相似文献

The poor technological performance of weak wheat flours means that they are usually considered difficult to be transformed into satisfactory bread. During milling, there are several settings that can affect flour characteristics. In this study, we tested two operative parameters that have the potential to affect flour quality – stone rotational speed and wheat tempering. Tempering moistures were set at 11%, 13%, 15%, and 17%, while stone rotational speeds were set at 173, 260, and 346 rpm. Both factors were found to affect operative milling parameters, notably flour yield, process productivity and specific energy consumption. Grain moisture had a significant effect on both dough rheology and bread characteristics (dough stability, tenacity, and extensibility). Dough stability was maximum at 13% moisture. Dough tenacity decreased as moisture increased, while extensibility increased as moisture increased. Bread specific volume and crumb specific volume were improved at 13% and 15% moisture. In conclusion, wheat tempering can be used to improve the potential of a weak flour and bread characteristics, while stone rotational speed affects operative parameters and white flour yield.  相似文献

为了解中国黄淮冬麦区南部地区推广小麦品种的籽粒品质和馒头加工品质,并评选优质馒头小麦品种,对黄淮冬麦区南部42个小麦主栽品种的26个品质指标和馒头加工品质进行了测定.结果表明,42个小麦品种的籽粒和馒头品质性状,除淀粉含量、面粉亮度和白度及馒头比容特性外,其他性状的遗传变异范围较大;馒头总评分平均75.8分,达到80分以上的品种有10个,占24%;适合制作优质馒头的品种有豫农035、郑育麦029、周99133、周麦16、花培5号、周麦19、偃展4110、漯4518、豫麦34、丰舞981.馒头总评分与面粉白度和亮度呈极显著正相关,与面粉灰分、直链淀粉含量和膨胀势呈显著负相关,与其他品质指标相关性较小,没达到显著水平.  相似文献

Wheat filter flours are by-products obtained from air-classification of wheat flour. Physicochemical and rheological properties of wheat filter flours were investigated in the present study. Average values of crude protein, gluten, lipid and damaged starch content of filter flours were higher than those of standard flours for the same batch. The positive correlation of particles with size <20 μm and damaged starch was found. Moreover, the filter flours had higher water absorption, stability time except head milling filter flour samples. Short peak time and low peak viscosity were also observed. Different composition of wheat filter flours may be an important factor influencing its properties. This study is very useful for exploring the utilization of wheat filter flours in the food industry.  相似文献

Wheat germ flour (WGF) has been developed as a functional food ingredient with high nutritional value. In this study, WGF was applied in steamed bread-making in order to improve the quality of Chinese steamed bread (CSB). Partial substitution of wheat flour with WGF at levels of 3%, 6%, 9% and 12% (w/w) was carried out to investigate physicochemical properties of blends and their steaming performance. Falling number (FN) values of composite flours ranged from 199 to 223 s. Viscosity analysis results showed that wheat flour mixed with WGF had higher pasting temperature and lower viscosities. Dough rheological properties were also investigated using farinograph and extensograph. The addition of WGF diluted the gluten protein in dough and formed weak and inextensible dough, which can be studied by scanning electron microscope (SEM) analysis. CSB made with WGF had significantly lower volume, specific volume and higher spread ratio. The sensory acceptability and physicochemical quality of CSB were improved with the application of a low level of WGF (3% and 6%). However, results showed that a high level of WGF over 9% is not recommended because of unsatisfactory taste. As a whole, addition of appropriate level of WGF in wheat flour could improve the quality of CSB.  相似文献

The objective of this study was to produce wholegrain wheat flour on a laboratory-scale with particle size distributions similar to commercially-milled samples without re-milling the bran. The moisture contents of four hard winter wheat cultivars were adjusted to 7.29–7.98% (by drying), 9.00–10.6% (“as is”), and 15.6% (by tempering) prior to milling into wholegrain flour. The moisture treatments appeared to affect the partitioning of wholegrain flour particles into each of three categories: fine (<600 μm), medium (600–849 μm) and coarse (≥850 μm). When the distributions of particles were grouped into these categories, wholegrain flours made from dried and “as is” wheat fell within the values for commercial wholegrain flours, while that from tempered wheat contained more coarse particles than even the coarsest commercial wholegrain flour. Loaf volumes and crumb firmness were not significantly different between bread made from wholegrain flour that had been produced from dried or “as is” wheat, but loaf volume was significantly lower and bread crumb firmness was significantly higher when wholegrain flour from tempered wheat was used. These results show that wheat may be milled without tempering to produce wholegrain flour with particle size similar to some commercially-milled flours without needing to re-grind the bran.  相似文献

This work evaluates rheological properties of dough and quality of bread prepared from the flour of ancient varieties and modern breeding lines of spelt compared to common wheat. Spelt flours of old varieties exhibited similar water absorption; the largest was noted in the STH-8 line flour. Spelt doughs had longer development time and were more stable than wheat dough. The doughs made of old spelt varieties were more resistant to extension than that produced from new lines flours. Of the spelt breads, this of the STH-8 line spelt line had the largest loaf volume but smaller than wheat bread. In addition, spelt doughs had similar porosity; the most porous was the bread baked from the Frankenkorn cv, Schwabenkorn cv and STH-8 line flours. Moreover, the crumb of the bread manufactured from the flours of spelt variety Frankenkorn and the STH 28-4614 line showed the greatest resistance to compression and the smallest compressibility.  相似文献

为给改进实验室馒头制作和评价方法提供参考依据,以3种弱筋面粉(市售美玫牌面粉;磨自弱筋小麦品种宁麦9号和生选6号的面粉)为基础粉,采用响应面法中心组合试验设计,研究了酵母、糖、起酥油和泡打粉含量对南方馒头加工品质的影响,并建立了南方馒头感官得分与因素变量的二次回归模型方程,该模型回归显著。响应面分析结果表明,南方馒头加工中的最佳辅料配比条件为:酵母含量1.0%、糖含量15.0%、起酥油含量1.8%、泡打粉含量1.0%。在此配比条件下,3种弱筋粉制作南方馒头的感官得分预测值分别为86.5、88.3和84.5分,验证值分别为86.1、87.8和83.7分,与预测值的相对误差分别只有0.46%、0.57%和0.95%。  相似文献
