The effects of variety, mixing conditions and fermentation time on bread loaf characteristics were studied by univariate and multivariate statistical methods. Nearly all the measured bread loaf characteristics were significantly affected by variety, fermentation time, and mixing conditions. Significant interactions were also found. Multivariate analysis (principal component analysis; PCA), was used to find the main variation among the bread samples and to identify the bread loaf characteristics that contributed to describe this variation. The characteristics loaf volume and weight described a large part of the main variation among the loaves and these characteristics were studied in more detail by response surface methodology. The loaf volume and weight response surfaces for varieties, which by multivariate analysis were found to have common properties, followed similar general patterns. It was shown that the experimental design used provided information about the baking performance of wheat flours over a wide range of experimental conditions and, thus, can be a useful supplement to standardised and optimised baking tests. 相似文献

对24个玉米品种进行春播与夏播两种方式种植,研究春播与夏播两种播种方式对玉米品种特异性、一致性和稳定性(DUS)测试有关性状表达的影响。结果表明,玉米的果穗形状、果穗子粒颜色数量、果穗子粒排列形式和叶鞘花青甙显色强度4个性状表达不受播种方式的影响;抽丝期、散粉期、叶片宽度和果穗长度等4个性状表达受播种方式的影响明显;叶片弯曲程度等8个性状表达受播种方式的一定影响;雄穗花药花青甙显色强度等8个性状表达基本不受播种方式的影响。播种方式对玉米品种DUS测试性状表达有一定的影响。 相似文献

许多研究表明,世界大豆品种产量随着育成年代呈显著增加,但自20世纪90年代以来我围育成大豆品种的产量增加幅度有放缓和停止不前的变化趋势.说明以农艺性状为选择目标的常规育种其品种的产量潜力已受到限制.迫切需要建立新的育种目标和计划.大豆育种工作者在对大豆晶种产量和农艺性状进行定向改良时,并没有考虑生理性状的改良,也不清楚生理性状发生了哪些变化.许多研究表明,大豆品种遗传改良过程中其生理性状也发生了变化,并与产量呈密切相关.对1923年至2005年间育成的40个大豆品种农艺性状和生理性状的研究表明,生理性状与产量和农艺性状相比,其改善的幅度较小,说明大豆生理性状的遗传改良孕育着巨大的产量潜力.建立以生理性状为目标的育种程序,定向改变大豆的生物学和生理学特性,是提升当前我国大豆育种水平.实现产量突破的重要途径.总结作者及课题绀成员近几年来埘吉林省1923年以来育成的大豆品种农艺性状和生理性状的比较研究结果,认为大豆叶片的光合能力、表观叶肉导度、硝酸还原酶活性和根瘤的数量具有作为高产品种选择指标的价值,有待于对其进行选择成本、可靠性、关联性和可替代性进行研究,用于高产大豆品种的选育和改良计划. 相似文献

Potential commercial wheat cultivars usually have to adhere to strict criteria regarding primary rheological and baking properties such as mixogram peak time, alveogram dough strength and configuration ratio, farinogram water-absorption and loaf volume. Excluding the mixogram, all these tests require large quantities of flour, which is only available during the advanced breeding phases. The aim of this study was to determine if additional selected mixogram parameters, other than the peak time, can be used as indicators of acceptable rheological and baking characteristics. Thirteen mixogram parameters were used to determine correlations with primary rheological and baking characteristics. Highly significant correlations between mixogram and rheological and baking characteristics were observed. Multiple stepwise regressions indicated variable contributions made by the selected mixogram characteristics to variation in the measured characteristics. Specific mixogram parameters were identified which can be used as indicators of the most important baking and rheological characteristics. 相似文献

Two commercial hard red spring wheat cultivars were exposed to high and low temperatures, as well as drought stress when the main tiller kernels were at the soft dough stage. The trial was done in the greenhouse for two consecutive seasons to determine the effects of these stress conditions on protein content, SDS sedimentation and selected Mixsmart characteristics. Heat stress had the largest effect on mixing characteristics. Heat and drought stress caused a significant increase in flour protein content of both cultivars and had similar effects on mixing characteristics. The Mixsmart characteristics associated with dough strength were increased by heat and drought stress. Cold stress caused a slight increase in protein content of the cultivars, but in general caused a reduction in dough strength as measured with Mixsmart characteristics. The reaction of Mixsmart characteristics to heat and drought stress was much larger in Duzi than in Kariega, confirming that there is a large genotype effect in rheological characteristics. 相似文献

热力学特性是评价鲜食糯玉米子粒均匀性、热稳定性和回生程度的重要指标。为了解我国鲜食糯玉米品种热力学特性,利用差示扫描量热法(DSC)测定104个鲜食糯玉米品种的热力学特性,并采用主成分分析方法对其结果进行评价。结果表明,鲜食糯玉米104个品种间淀粉热力学特征参数有显著差异,且不同参数中以回生值变异最大,回生样品的终值温度变异最小。相关分析表明,糯玉米淀粉胶凝特征参数起始温度、峰值温度、终值温度两两极显著正相关,糊化范围与峰值指数呈极显著负相关,回生热焓值和回生值呈极显著正相关。将热力学特征参数可简化为4个主成分,累计方差贡献率为86.11%。104个糯玉米品种可分为8大类,其中I和II类分别有53和43个品种,共占供试材料的92.3%,是最主要的两种类型。糯玉米淀粉热力学特征值间有良好的相关性,影响鲜食糯玉米子粒品质最重要的热力学特征值为回生值、热焓值和胶凝温度。 相似文献

采用ADM遗传模型对不同玉米自交系开花后叶片保绿度衰减特性遗传效应进行研究。结果表明,不同自交系叶片保绿度衰减起始时间(Ts)、最大衰减速率出现时间(TVmax)、最大衰减速率(Vmax)均存在显著的遗传与环境互作效应,自交系叶片保绿度衰减特性在不同环境条件下的表现具有明显差异。利用包括基因型与环境互作效应在内的遗传分析方法,可以更清楚地发现不同亲本叶片保绿度衰减特性的遗传效应差异,有利于筛选出具有较大遗传效应的自交系,用于玉米叶片保绿度性状的改良。 相似文献
