Effect of combinations of millet and legume and processing on digestibility, biological value and net protein utilization was evaluated using albino rats. The millets and legumes selected for the study include sorghum, pearl millet, finger millet, chickpea and green gram (P radiatus). The processes tested include dehulling, boiling, roasting, malting and baking. Among the combinations tested, the sorghum-chickpea combination had significantly (p<0.05) higher digestibility. Between the processes tested, roasting resulted in significantly higher net protein utilization. Results of biological study on biscuits prepared by using millet and legume combination flours, indicated the biscuits to be of good protein quality.  相似文献

了解河西走廊农作物种类、食物结构和饮食文化有助于认识东西方物质和文化交流历史。西汉时期,汉王朝大力开发河西走廊地区的农业资源,特别是绿洲农业资源,以满足士兵和移民的粮食和饲料需求,固疆戍边。笔者对甘肃省敦煌市敦煌藏馆提供(由黑河流域牧民收集)的谷物籽粒进行特性分析以及同位素测年,发现敦煌藏馆保留的谷物籽粒形态完整、色泽清晰,直观可辨。这些籽粒包括大麦(Hordeum vulgare L.)、青稞(Hordeum vulgare Linn.var. nudum Hook. f.)、糜子(Panicum miliaceum)和谷子(Setaria italica)。两批大麦样本的单籽粒平均粒重为0.029 g和0.030 g,最大单籽粒粒重达到0.041 g,但大麦籽粒已无发芽能力。两批青稞单籽粒平均粒重为0.025 g和0.028 g,最大单籽粒粒重达到0.048 g。经碳同位素(14C)测年鉴定,大麦距今2 063~1 898年,青稞距今2 010~1 885年,糜子距今1 994~1 865年,均为西汉时期的谷物籽粒。这一结果对研究东西方物质和文化交流具有重要的历史和学术意义。  相似文献

Abstract

In semi-arid areas, pearl millet is an important staple food crop that is traditionally intercropped with cowpea. This study evaluated the water competition between pearl millet and cowpea using deuterated water. At vegetative stage, pearl millet biomass production was lower in the pearl millet-cowpea (PM-CP) combination than in the pearl millet-pigeon pea (PM-PP) and pearl millet-bambara nut (PM-BN) combinations. PM-CP used more water than PM-PP and PM-BN under well-watered conditions; however, all combinations used similar amounts of water under dry conditions. The biomass production, photosynthetic rates, transpiration rates, and midday leaf water potential of pearl millet at early flowering stage were not significantly reduced by mixed planting with cowpea sown two weeks later as compared with single planted pearl millet. When pearl millet and cowpea were sown at the same time, mix planting significantly increased the recovery rates of recently irrigated heavy water in pearl millet, but not in cowpea in both vegetative and early flowering stages. Midday leaf water potential and transpiration rates in pearl millet were lowered by mixed planting but those in cowpea were not. These indicate that the water source of pearl millet is shifted to the recently irrigated and easily accessible water. By contrast, when cowpea was sown two weeks later than pearl millet, this trend was not observed. These results provide new evidence on water competition in the PM-CP intercropping system; cowpea has higher ability to acquire existing soil water than pearl millet when both crops are sown at the same time.  相似文献

The effect of heating and fortification with lysine on the protein quality of five minor millets namely Italian millet (S. Italica), French millet (Panicum miliaceum), Barnyard millet (Echinochloa colona), Kodo millet (Paspalum scrobiculatum) and Little millet (Panicum miliare) was carried out. The N content of the millets ranged from 1.69 to 2.76 per cent. Proximate composition and dietary fibre was estimated. A reduction of 19–25 in TD and increase of 4–18 in BV was observed on auto-claving and both the differences were significant (P<0.05) in all millets. However, heat processing did not have a pronounced effect on DE. Fortification with lysine at 0.6 g/100 DM increased both the BV and NPU. Although both heat processing and lysine fortification improved protein utilisation, the effect of fortification was comparatively more than heating.  相似文献

The objective of this study was to determine the effect of diets containing pearl millet silage ammoniated with urea on the intake, digestibility, production performance, and nitrogen metabolism of lambs. Thirty‐two uncastrated mixed‐breed lambs at 4 to 5 months of age, with an average initial body weight of 17.39 ± 2.16 kg, were distributed into four treatments in a randomized block experimental design with eight replicates. Experimental diets consisted of pearl millet silage ammoniated with urea during ensiling at the levels of 0, 20, 40, and 60 g/kg dry matter (DM). Increasing urea levels in the pearl millet silage led to a linear decrease (p < .05) in the intakes of DM, organic matter, and total digestible nutrients by the lambs. Total and average daily weight gains decreased linearly (p < .05) with the addition of urea to the silage. Intake and digestibility of crude protein, nitrogen intake, urine urea nitrogen, plasma urea nitrogen, microbial synthesis, and microbial efficiency had a quadratic response (p < .05) to the urea levels in the silage. Pearl millet silage ammoniated with urea reduces dry‐matter intake and daily weight gain in lambs. Urea is not recommended for use in the ensiling of pearl millet.  相似文献

Abstract

Deep root penetration, which allows access to deep soil water and hydraulic lift, may help plants to overcome drought stress. The aim of this study was to evaluate the ability of sixteen food crop species to take up water from deep soil layers and the extent of hydraulic lift by the use of deuterated water. Plants were grown in pots consisting of two loose soil layers separated by a hardpan and a Vaseline layer. The lower (deep) layers were always kept wet (32%; ψ = –5 kPa), while soil moisture in the upper (topsoil) ones was adjusted to 25% (ψ = –7 kPa) and 12% (ψ = –120 kPa) in the well-watered and drought treatments, respectively. The deuterium labeling of the deep soil water provided evidence that wheat, Job’s tears, finger millet, soybean, barnyard millet, rice, and rye (in decreasing order of D2O increments) extracted more water from the deep layers under drought than well-watered in topsoil. These species showed significantly greater hydraulic lift under drought, except for soybean. Most of these species also showed increased root length density in deep soil layers and sustained high photosynthetic rates under drought. In contrast, pigeon pea, cowpea, common millet, pearl millet, foxtail millet, maize, barley, and oat did not show a significant increment in either deep-water uptake or hydraulic lift under drought. In summary, increased extraction of deep soil water under drought was closely related with the magnitude of hydraulic lift.  相似文献

In the present study was examined the nutritive value of different sorghum and millet based baby foods. Different types of kisra, some fortified with chickpeas or peanuts, were also included in the study. Finally was compared the influence of replacing wheat bran with sorghum bran in bread. The nutritive value was assessed by chemical analyses and by rat balance studies. The addition of chickpea and peanuts improved the quality of kisra a staple food of Sudan. This type of kisra can be used as a well-balanced food for infants above the age of one year. The baby food developed from sorghum/millet malt, milk powder and processed by drum drier provides a safe level of protein for children above the age of one month. This formulation and way of processing is well suited for commercial production of sorghum/millet based baby food. Based on the results of the present investigation it is recommended that the use of brown bread for infants should not exceed ten percent wheat or sorghum bran as it affects the digestibility in a negative way.  相似文献

Pearl millet (Pennisetum typhoideum) was fermented with Lactobacilli or yeasts alone and in combination, and with natural microflora after various processing treatments, as grinding, soaking, debranning, dry heat treatment, autoclaving and germination. Fermentation was carried out at 30°C for 48 hours withLactobacillus plantarum (LP) andRhodotorula (R) isolated from naturally fermented pearl millet andLactobacillus acidophilus (LA),Candida utilis (CU) and natural microflora (NF). Germination and autoclaving, and debranning and autoclaving were the most effective processing treatments to reduce the phytic acid, amylase inhibitors and polyphenols. There was a further reduction in these antinutrients due to fermentation. Phytic acid and amylase inhibitors were completely eliminated after fermentation in some of the samples especially in soaked, debranned and germinated ones. Polyphenols were altered non-significantly in general but fermentation with Lp+R and NF caused a significant increased in polyphenols.  相似文献

Flooding has globally become common, and thus cultivation techniques to adapt to the stress are required. We have developed a technique called “close mixed-planting” using flood-adapted rice (Oryza sativa L.) and upland crops with tangled root systems, showing that this technique can mitigate the damage caused to upland crops by flooding. However, the plant response during the reproductive stage has not yet been examined. In this study, we estimated the alleviative effects of close mixed-planting on the growth inhibition and physiological damage to pearl millet (Pennisetum glaucum) caused by flooding at the reproductive stage in northern Namibia. Pearl millet and NERICA4 (Oryza spp., interspecies of O. sativa and O. glaberrima) were used. Four-week-old single- and mixed-crop pearl millets were transplanted and grown for 22 days, and then flooding treatment was administered for 28 days. The growth and physiological parameters of single pearl millet were significantly decreased by flooding stress, and the parameters did not recover during a 14-day recovery period compared with those of unflooded single and mix-cropped pearl millet. On the other hand, the damage to mix-cropped pearl millet by flooding was suppressed. Thus, the mixed-cropping mitigated the anoxic stress of pearl millet caused by flooding at the reproductive stage and contributed to the improved growth after the recovery period. This result suggested that the close mixed-planting with rice can contribute to the mitigation of flooding damage not only at the vegetative stage but also at the reproductive stage of pearl millet in the semi-arid African country, Namibia.  相似文献

A survey of the production, consumption and storage ofKunu was carried out. Some of the information included consumption rate, processing techniques andequipment, producer's status and grains used. About73% consume Kunu daily, 26% occasionally; 1% knowit is produced but may or may not be consuming it. Millet (Pennisetum typhoideum), sorghum (Sorghum vulgare), maize (Zea mays), rice (Oryza sativa) and acha (Digitalis exilis) wereused in its production in decreasing order ofpreference. The grains were used singly or combined;sorghum/millet was the most common combination in aratio of 1:2 (w/w). Steeping was done in ordinary water for 12–72 h, depending on the grain type, in localclay pots, plastic buckets, calabashes or basins or5–7 h in warm water (60–70 °C). The grainswere dry or wet milled with or without spices such asginger, red pepper, black pepper, clove and garlic.Other ingredients introduced included: sweet potatoes,malted rice, malted sorghum and Cadaba farinosacrude extract. Both dry and wet milling was done withgrinding mills, mill stones or mortar and pestle,depending on locality. The product was then cookedinto a thin free flowing gruel. The various types ofkunu were: Kunun zaki, Kunun gyada, Kunun akamu, Kununtsamiya, Kunun baule, Kunun jiko, Amshau and Kunungayamba. Kunun zaki was the most commonly consumed. The focus of this article is the traditional andtechnological uses of two tropical cereal grains: Digitaria exilis (acha) and D. iburua(iburu); with emphasis on their carbohydrate andprotein components. Some useful attributes of thegrains emanating from present knowledge are discussed. The major classes of traditional foods from thesegrains are thick and thin porridges; steam cookedproducts, e.g. couscous; and nonalcoholic andalcoholic beverages. The proteins in these grains are not easilyextractable; however, the digestibility of the proteinsare better than those of sorghum and millet. The highlevels of residue protein in them may have importantfunctional properties. Technologically, acha and iburucan be utilized in ways similar to rice. The twograins require minimal processing due to grain sizeand location of constituents. Whole acha and iburugrains are now used for quick cooking,non-conventional food products including weaning foodsof low bulk density and breakfast cereal with goodfiber content. The grains could be used in a widevariety of other products. Cookies, crackers, andpopcorn, made in an almost endless array of forms areexamples. The breeding of acha and iburu cultivarswith good kernel properties is critically important totheir utilization potential.  相似文献

The protein quality of Nigerian traditional diets based on the African yambean (AYB) and pigeon pea (PP) were performed by in vivo and in vitro bioassays. The individual foods were processed, cooked, dried and mixed to resemble the traditional diets. Weanling male Wistar rats (45–55 g) were used for the bioassay. The rats were fed ad libitum for 35 days of which 28 days were for growth and 7 days for N-balance. All the eleven diets including casein (control) provided 1.6 g N/100 g diet. The parameters tested include PER, growth, N-balance, BV, NPU and apparent digestibility (AD). The rats fed the AYB diets, except AYB: Agidi (Ag), showed superiority in most of the parameters tested. There were significant positive correlations between PER and NPU (r=0.925;p<0.001); PER and AD (r=0.908;p<0.001); PER and body weight gain (r=0.969;p<0.001). The in vitro protein digestibility of the diets was significantly correlated (r=0.80;p<0.01) with the in vivo apparent digestibility. These parameters were used to rank the various diets. Crayfish protein was a better supplement to legume/cereal or legume starchy staple mixtures than leguminous oil seed. However, supplementation of PP: steamed corn (SC) diet with crayfish did not prove beneficial. The result showed that diets based on the African yambean, an under-exploited legume, are nutritious. The need for its reintroduction into the fare of the populace through increased production and appropriate processing technology is stressed. The results of this study can form a base for the standardization of Nigerian diets based on these legumes.  相似文献

Natural as well as single, mixed and sequential pure cutlure (S. diastaticus, S. cerevisiae, L. brevis andL. fermentum) fermentations of pearl millet flour for 72h lowered pH and raised titratable acidity. The fermentation either decreased or did not change the protein content of pearl millet flour. Natural fermentation increased whereas pure culture fermentation decreased the fat content. Ash content did not change. Natural fermentation at 20°C and 25°C increased whereas at 30°C it decreased the thiamine content of the pearl millet flour. Yeast fermentation raised the level of thiamine two- to three-fold, while lactobacilli fermentation lowered it significantly.  相似文献

Raw, skinless peanut kernels from US commercial production lines were dry- and oil-roasted according to standard industrial practices. Eighty percent (v/v) methanolic extracts from the peanut cultivars were prepared and characterized by RP-HPLC: five predominant compounds were found comprising free p-coumaric acid and potential p-coumaric acid derivatives, as elucidated by DAD-UV spectra with comparisons to those of commercial standards. A Spanish high-oleic peanut possessed the greatest naturally-occurring level of p-coumaric acid and its derivatives, followed by a high-oleic Runner, a normal Runner, and a Virginia peanut. Upon thermal processing, p-coumaric acid was liberated at the expense of its derivatives according to the relationship: oil roasting > dry roasting > raw. A high-oleic Runner exhibited the greatest increase (∼785%) in free p-coumaric acid levels after oil roasting. For many of the samples from the 2007 crop, processing increased the TPC and antioxidant capacities in the order of raw < dry roast < oil roast, but results were cultivar dependent. Oil-roasted peanuts were more effective at scavenging O2 - than their dry-roasted counterparts, as determined by a photochemiluminescence assay. Overall findings indicate that although thermal processing altered the composition of peanut kernel antioxidants, TPC values and radical-scavenging activities are preserved. Depending on peanut type, cultivar, and harvest date, enhanced antioxidant capacities can result.  相似文献

Summary Potatoes account for about half of the world's annual output of all roots and tubers, and since the early 1960s, the increase in area planted in developing countries has been higher than for any other major food crop. Annual world production currently totals 274 million tons on 18 million hectares, with China and India accounting for 22 percent of this total. In less than a generation, most of the world's potatoes will be harvested in Asia. Africa, or Latin America, where the potato is becoming an increasingly important source of food and its cultivation provides rural employment and income for the growing population. The rapid emergence of processing facilities for the fast food industry, and the indirect influence of improved rice and wheat irrigation systems have also contributed to the expansion of potato production in Asia. The demand is strongest for processing quality potatoes that supply the fast food chains in large urban concentrations where processed potato products fetch top prices. Such increasing demand is putting strong pressure on national and international breeding institutions to produce high quality processing varieties well adapted to the wide array of agro-ecological conditions, in South East Asia in particular. The lack of adequate seed systems in this region is the single most important impediment to the expansion of the cultivation of the crop. Unfavourable agro-ecological conditions interfere with the production of high quality seed in most Asian potato growing areas, and the availability of high quality seed of the right quantity at the right time remains the most consequential bottleneck to efficient potato production. The seed issue is also the principal problem of potato cultivation in the traditional potato growing areas of Central and Eastern Europe. A review of “the development of integrated systems for large scale propagation of elite plants using in vitro techniques” with specific focus on “potato seed production by tissue culture” is therefore very timely. It provides a platform for analysis and discussion of solutions for some of the most common seed problems facing the potato industry in many parts of the word. All efforts to improve the potato crop and to solve the associated seed problems begin with the right choice and use of the available genetic resources. Resistance to certain pests and diseases has a direct bearing on the success of a seed program. Multiple virus resistance, in particular, would ensure a halt to seed degeneration caused by an accumulation of viruses and thus greatly prolong the ability of seed producers and ware potato growing farmers to grow their crops at great economic benefit. This paper will therefore deal with the current status of the World Potato Collection held in trust by the International Potato Center (CIP) in Peru by presenting up-to-date information on its classification, phytosanitary status and availability of the genetic material and its evaluation data to the breeders worldwide.  相似文献

In recent years, dairy farmers in semi‐arid regions have shifted from maize (Zea mays L.) as their primary source of feed to drought‐tolerant crops, such as millet (Pennisetum glaucum L.), due to lack of water for irrigation. However, millet alone may not provide feed of sufficient quality and crude protein content for dairy cows. A field experiment was conducted in 2 years to evaluate (i) whether intercropping millet with a relatively drought‐tolerant soya bean cultivar (Glycine max Merr, cv. Williams) could improve silage quality with minimum yield penalty, and (ii) if the application of molasses could further enhance the nutritive value of silage of millet–soya bean intercrops. There were three intercropping ratios (60% millet with 40% soya bean, 50% millet with 50% soya bean, 40% millet with 60% soya bean) and monocultures of millet and soya bean. Mixed forages were treated with three levels of molasses: M0 (without molasses), M1, and M2 (2·5 and 5% fresh matter respectively). Inclusion of soya bean in millet crops resulted in decreased silage yield compared with millet alone. The highest yield was obtained from the ratio of 60% millet with 40% soya bean. Molasses‐treated silage had higher lactic acid, lower pH, and lower acid detergent fibre (ADF) and neutral detergent fibre (NDF). Silage produced from millet–soya bean intercrops exhibited enhanced fermentation, indicated by lower pH (3·64) and higher lactic acid (16·63 g kg?1 DM) than silage from monocultures. Intercropping ratios had lower water‐soluble carbohydrate, ADF and NDF than millet monoculture. Overall, an intercropping ratio of 60% millet with 40% soya bean was advantageous over other ratios in terms of higher yield, nutritive value and economic value.  相似文献

Thirty-six adult Wistar albino male rats (75–128 g) of age 8 weeks were used to study the effect of dehulled and soaked bambara groundnut combined with sorghum or crayfish on iron and phosphorus balances of rats fed for 10 days. Three out of the ten days were for adjustment and the rest for the balance period. Six diets were formulated and fed to the rats. The mixed protein diets provided 10% protein daily for the entire study period. Casein(CA) served as a reference protein. Rats fed the CA diet had significant decreases (p < 0.05) in food intake, maintenance body weight, phosphorus intake and phosphorus balance when compared with those of the test groups. As judged by iron nutriture, dehulled brown bambara groundnut (DBGB) appeared to be superior to the white variety. Soaking seriously affected iron utilization in brown variety. Dehulling produced significant increases (p < 0.05) in phosphorus balance in animals fed the white variety of bambara groundnut compared with the brown variety. On the other hand, soaking produced positive phosphorus balance in rats consuming the brown variety. Addition of crayfish produced a slight nonsignificant decrease (p > 0.05) in rodents eating the brown variety. These results suggested that varietal difference and treatment affected iron and phosphorus utilization in rats fed bambara groundnut in conjunction with sorghum and/or crayfish.  相似文献
