The purpose of the study was to investigate the use of hyperspectral imaging (HSI) to detect and quantify chlorophyll (Chl) and total glycoalkaloid concentrations (TGA) in potatoes. To create a set of tubers with different concentrations of Chl and TGA, potatoes of four varieties were wounded or treated with red, blue, red/blue, UV-a, UV-b or UV-c light. HSI analyses were performed with a reflection based setup implemented in an industrial potato sorting machine. After hyperspectral analyses, the peel was sampled, and concentrations of Chl and total TGA were determined. Results showed that the HSI system predicted the concentrations of Chl with a relatively high degree of accuracy, and a prediction R2 value of 0.92. Prediction of TGA concentrations performed to a much lesser extent, and the overall prediction R2 value was only 0.21. Moderate soil covers only affected the prediction powers to a minor degree.  相似文献

A study of the changes in organic acids and amino acids occurring during storage of tubers at 70 and 55 F was made on several varieties grown in 1965 and 1966. Citric acid tended to increase and malic acid usually decreased. Pungo potatoes showed decreases in aspartic and glutamic acids and increases in several other amino acids. Increases or decreases in both organic and amino acids were usually greater in potatoes stored at 70 F than those stored at 55 F. Temperature of storage appeared to have a greater effect on organic and amino acids than would be in-dicated by results of previous workers. Considerable amounts of pyro-glutamic acid were found in some potato varieties. There were significant decreases in ascorbic acid in potatoes stored at both 70 F and 55 F.  相似文献

The benefits of being able to process potatoes directly into chips or fries from cold storage (2 to 4 C) include less shrinkage, retention of dry matter, decreased disease loss, extended marketability, and the elimination of the need for dormancy-prolonging chemicals. Unfortunately at low temperature, potato tubers undergo a phenomenon known as cold-induced sweetening where the rate of conversion of starch to reducing sugars (i.e., glucose and fructose) is accelerated. As raw potatoes are sliced and cooked in oil at high temperature, the accumulated reducing sugars react with free amino acids in the potato cell forming unacceptably brown- to black-pigmented chips or fries via a non-enzymatic, Maillard-type reaction. Potatoes yielding these unacceptably colored products are generally rejected for purchase by the processing plant. All commercial potato cultivars presently used for the production of potato chips and fries accumulate excess free reducing sugars when exposed to cold stress. If a “cold-processing potato” was available, energy savings would be realized in potato-growing regions where outside storage temperatures are cool. In regions where outside temperatures are moderately high, increased refrigeration costs may occur. This expense would be offset, however, by removal of the need to purchase dormancy-prolonging chemicals, by a decreased need for disease control and by improvement of long-term tuber quality. The primary goal of this review is to describe recent research of a biochemical and molecular nature that relates to the underlaying mechanisms regulating post harvest, cold-induced sweetening in potato tubers. No attempt was made to outline the extensive research conducted on the genetic manipulation of carbon metabolism between starch and free sugars during photosynthesis and/or during potato development in relation to source/sink interactions.  相似文献

The processing of potatoes into chips is expanding in China. There is a need for new processing cultivars that are well-suited for the local ecological environment. Eleven potato varieties were bred from hybridization and backcrossing between the local cultivated potato varieties (Solanum tuberosum L.) and wild potato species. Lines from different wild species’ germplasms showed that the ability to accumulate reducing sugars was significantly different during low temperature storage (4 °C). A correlation analysis was conducted to determine the correlation coefficient among reducing sugars, acid invertase, free amino acids, chip colors and the content of acrylamide after storage at room and low temperatures. The lines 0706-116, 0737-6 and 0726-205 had low levels of reducing sugars, acrylamide content and acceptable chip colors for potato chip processing. The results indicated that the transfer of wild species’ processing traits into local cultivars by hybridization and continuous backcrossing is an effective potato breeding method and that the wild germplasm resources S. phureja and S. chacoense are suitable for improving the processing traits of local varieties.  相似文献

The effects of baking and boiling on the nutritional and antioxidant properties of three sweet potato cultivars (Beniazuma, Koganesengan, Kotobuki) cultivated in Turkey were investigated. The samples were analyzed for proximate composition, total phenolic content, ascorbic acid, β-carotene, antiradical activity, and free sugars. The dry matter, protein, and starch contents of the sweet potatoes were significantly changed by the treatments while the ash and crude fiber contents did not differ as significantly. The β-carotene contents of baked and boiled sweet potatoes were lower than those of fresh sweet potatoes; however, the total phenolic and ascorbic acid contents of the baked and boiled sweet potatoes were higher than those of the fresh samples. Generally, the antiradical activity of the sweet potatoes increased with the treatments. Sucrose, glucose, and fructose were quantified as free sugars in all fresh sweet potatoes; however, maltose was determined in the treated samples. In terms of the analyzed parameters, there were no explicit differences among the sweet potato cultivars.  相似文献

The effects of various processing methods on available lysine and total and free amino acid levels of low (1.065 – 1.075) specific gravity (LSG) and high (1.095 – 1.106) specific gravity (HSG) potatoes were investigated. LSG potatoes after canning and chip making showed approximately 40% loss of total amino acid contents. Such losses in drum dried potatoes were approximately 20% and that of french fries 4.5%. All processing methods adversely affected the available lysine content; chips and canned potatoes showing the maximum loss, followed by drum dried and french fried potatoes. Losses in HSG potato products showed a trend similar to that of LSG material, but on a considerably reduced scale.  相似文献

Acrylamide, a suspected human carcinogen, is a Maillard reaction product that forms when carbohydrate-rich foods are cooked at high temperatures. Processed potato products, including French fries and potato chips, make a substantial contribution to total dietary acrylamide. Health safety concerns raised by acrylamide in food increased financial risks to the potato industry and encouraged industry to take a proactive approach toward acrylamide mitigation. The USDA National Institutes of Food and Agriculture Specialty Crop Research Initiative (SCRI) on acrylamide reduction in potato was a cooperative endeavor in which industry partners worked at a systems level with university and government researchers to develop acrylamide mitigation strategies. Short-term goals focused on identifying advanced breeding clones and recently released varieties that have lower acrylamide-forming potential than standard potato varieties. Research was also directed at developing more efficient potato breeding methods, including marker-assisted breeding, genome wide selection, and improved phenotyping methods. Data from the National Fry Processing Trial (NFPT) and SCRI agronomic trial have shown that dramatic reductions in acrylamide are achievable through the use of new varieties that maintain low concentrations of tuber reducing sugars. Chipping potato trials coordinated by Potatoes USA and data from breeding populations suggest that maintaining low tuber reducing sugars through extended storage and lowering tuber asparagine content are options for decreasing acrylamide content in potato chips. To have an impact, new varieties must have exceptional agronomic performance and must produce finished products that meet requirements for consumer attributes including color, texture and taste. Data consistently show that this is more easily achievable in chipping potatoes than in fry processing potatoes.  相似文献

Prior to storage, Maine-grown Katahdin potatoes were sorted into five specific gravity classes. Samples of three classes (high, intermediate, and low) were stored in individual boxes at 38 F for eight months, 45 F for one month, and 50 F for one month. New York-grown Katahdins were sorted into specific gravity classes periodically after removal from storage. Both lots were analyzed periodically for free amino acids (including the amides). In general, an inverse relationship was found between total solids and free amino acids calculated on a dry weight basis in Maine-grown and New York-grown Katahdin potatoes. In most cases little difference was found on the fresh-weight basis. Changes in the amino acids during storage were quite random. The differences found in the amino acid values between samples due to sorting for specific gravity before and after placing in storage were minor.  相似文献

An off-line near-infrared reflectance (NIR) feasibility study was conducted to explore the critical steps in the NIR determination of the major potato constituents (dry matter, starch, and protein) in relatively large (10 kg) potato samples. The results were important for the design of an automated industrial analysis system for potatoes with in-line NIR. The 10-kg potato samples were pulped with an industrial rotary saw blade rasp. A critical step in the NIR measurements was the occurrence of phase separation in the potato pulp. Phase separation manifests itself directly after pulping the potatoes and significantly affects the NIR spectrum. Therefore, during the NIR measurements, the potato pulp had to be stirred continuously. The NIR spectra (1,100–2,500 nm) were measured by applying an optical fiber NIR probe (EDAPT-1) connected to the NIR spectrophotometer (Technicon Infralyzer IA 500). NIR models for the concentration of dry matter, starch, and coagulating protein in potatoes have been developed. With the partial least squares regression procedure, promising NIR models were calculated. The NIR models were validated using an independent validation set of potato samples. The root mean square error in prediction of the samples in the validation set was 0.5% (w/w) for dry matter, 0.63 (w/w) for starch concentration, and 0.06% (w/w) for the coagulating protein.  相似文献

Summary Studies of the effect of fertilisation stress, harvest time, machine sorting, storage time, peeling and blanching of potatoes (Solarium tuberosum L.) were carried out. Mechanical impact by sorting before storage did not have a significant effect on hardness of pre-peeled potatoes. Potato hardness decreased significantly with the storage time for raw potatoes following an exponential function. Treatment of potatoes in a damage drum for 5 minutes (36 drops from 35 cm) increased the subsurface hardening, production of brick-like cells and deposition of suberin. Potato hardness throughout the whole potatoes increased with blanching time by blanching at 85 and 95 °C. It was concluded that development of potato hardiness occur because of two mechanisms. That is: 1) wound healing by periderm formation with deposition of suberin and: 2) activation of methyl esterase activity by blanching and subsequent crosslinking of demethoxylated pectin by calcium ions, respectively.  相似文献

Potato mop top virus (PMTV) induced necrosis can cause tuber quality loss at harvest and storage. Stored potatoes help maintain a constant supply of potatoes to the market and processing industry. PMTV-induced necrosis continues to develop during storage and appropriate timelines are needed for growers to make marketing decisions of their potatoes before incurring any significant quality losses. Survival analysis was used to estimate the time to event occurrence (PMTV-induced necrosis) in four (red-, russet-, white-, and yellow-skinned) potato market types across six post-harvest assessments conducted over two years. At each assessment the presence and absence of PMTV-induced necrosis was recorded and probability of tuber survival was estimated. Survival curves were significantly different among the four market type potato cultivars (Log-Rank test, P < 0.0005). Red- and russet-market type cultivars showed low and high survival probability, respectively, demonstrating that red cultivars need priority marketing. The survival probabilities decreased with increased storage time during both years, indicating that PMTV-induced necrosis development is dependent on potato cultivar and post-harvest storage. The median (50% of tubers with symptoms) survival times were estimated as 167 and 214 days for red- and other market type potato cultivars. The information from this study could potentially help growers regulate storage times for their cultivars to minimize tuber quality loss due to PMTV-induced tuber necrosis.  相似文献

Peeled sweet potato slices of two standard varieties were soaked for 120 min, drained, boiled for 20 min, and mashed. The pulp was prepared in 6 simple dishes and tested organoleptically by a trained taste panel. The pulp was also prepared and evaluated by 30 families. Sugar and protein contents were compared to those of untreated uncooked sweet potato, and untreated cooked sweet potato. Diffusion processing lowers the content of all sugars, but subsequent cooking increases reducing sugar content. Processing also removes water soluble phenolic substances and results in less polyphenolic discoloration before and after cooking. Protein and starch contents are also reduced, the former by diffusion, and the latter by diffusion and by erosion on boiling. Dishes made from the pulp were highly acceptable, more moist in texture, less sweet, and more attractive than dishes from non-processed sweet potatoes. People who do not like to eat sweet potatoes found diffusion processed pulp highly acceptable as a staple food.  相似文献

In pot experiments with greatly differing rates of N, P, K, and S, and 3 levels of water, dry matter (DM) yields of tubers varied from 28 to 454 g/pot. Especially P-, K- and S-deficiency reduced the starch content of boiled potatoes, from P from 74 to 59% in DM. S-deficiency increased soluble, insoluble and total digestible fibre (TDF) from about 9 to 12.4% TDF in DM of boiled potatoes. Lignin content of fresh potato DM was increased from 0.7 to 2.0 and from 0.8 to 3.7% by P- and K-deficiency. P-deficiency considerably increased arabinose, galactose, and uronic acid, and decreased glucose content. N-application and P-, K- and S-deficiency increased total- and NO3-N concentrations which varied from 1.32 to 3.67% and from 17 to 400 ppm in DM. Water stress slightly decreased total-N content. Increasing N in DM, due to high N-rates or P- or K-deficiency, decreased concentrations in crude protein (CP) of all essential amino acids, whereas aspartic acid (asparagine) increased. S-deficiency caused particularly strong decreases in concentrations of essential amino acids from 1.28 to 0.49, 1.62 to 1.10, 5.24 to 3.68, and 5.59 to 2.57 g/16 g N of cystine, methionine, lysine and leucine, respectively. Glutamic acid (glutamine) content was increased from 15.7 to 27.6 g/16 g N by S-deficiency. Expressed as g amino acid/kg DM, all amino acid concentrations increased with increasing % N in DM. In N-balance trials with rats, increasing crude protein concentrations in DM of boiled potatoes increased the true digestibility (TD) of the protein from 72 to 90 but decreased the biological value (BV) from 89 to 65. S-deficiency caused a further reduction of the BV to 45. Excluding S-deficiency treatments, linear regression equations between CP concentrations and BV and TD gave correlation coefficients r of –0.94*** and 0.82***, respectively. There was close agreement between changes of BV and concentrations of first limiting amino acids (chemical score), with r=0.96***.  相似文献

Summary Amino acids and sugars were removed from slices of potato of the cultivar Record. The slices were then soaked in solutions of the amino acids and various concentrations of glucose to study their effect on the fry colour of crisps. Glutamine was an important amino acid in the development of fry colour intensity at low glucose concentrations and also contributed to the dark fry colour when combined with glucose concentrations above 0.15%. The basic amino acid arginine had a similar but lesser effect and other amino acids used gave the same effect at glucose concentrations above 0.45%. Asparagine could play an important role in the development of fry colour quality and may decrease the grey colour intensity developed by the mixture of amino acids.  相似文献

An automated semi-industrial system with in-line near-infrared reflectance (NIR) for the characterization of the chemical composition of potatoes was designed and constructed, and its performance was tested. The system consisted of the following subsystems: sample crate manipulator, weighing unit for the gross sample weight, potato washing machines with a washing water recycling system, belt for visual inspection of the potatoes, unit for measuring the underwater weight (UWW), industrial rotary saw blade rasp for pulping the potatoes equipped with a sulfite dosage system for inhibiting enzymatic browning of the pulped potatoes, and industrial NIR system for the measurement of the potato composition. The whole system was controlled and operated by a programmable logic controller and process personal computer system. The system was able to process 12 potato samples per hour. Measurements were done to establish the sample carry-over in the system. The carry-over was proven to be well below the maximum acceptable level of 2%. The UWW values established with the automatic system corresponded very well with the UWW data obtained by manual weighting. The day-to-day reproducibility of the UWW system was tested with golf balls. These balls have about the same specific gravity and size as potatoes. The day-to-day reproducibility coefficient of variation of the UWW unit was 0.4%. As a principle of proof, two tentative partial least squares calibration models, one for the starch concentration and one for the coagulating protein concentration in the potato samples, were calculated, applying leaving one out cross-validation. Both models were very promising. The by NIR-predicted starch concentrations showed to be at least as good or even better than the by UWW-obtained starch concentrations. The average difference between the by NIR-predicted and the chemically measured starch concentration was 0.0 ± 0.3% (w/w). For the coagulating protein concentration, the average difference between the by NIR-predicted and the chemically measured concentration was 0.00 ± 0.06% (w/w). In future years, potatoes of a wider range of varieties, growing locations, and growing seasons have to be added to the present tentative model, in order to get a robust NIR model.  相似文献

A procedure for determining sugars in potato tubers by gas chromatography is described and examples given of its application to stored and reconditioned potatoes. Juice from tubers is extracted, boiled, centrifuged, and the trimethylsilyl derivatives of the sugars prepared. Column choice and operating conditions are given. Results are fairly comparable to those from wet analysis, are more comprehensive, and more easily obtained.  相似文献

Russet Burbank potatoes that had been stored at 40°F. for 5 months after harvest were irradiated with 5,200 and 14,000 rad of Co60 gamma rays. In general, irradiation caused an accumulation of sugars. At 40°F., the sucrose level rose to nearly 3 times that of the control in 16 days following irradiation. Fructose and glucose showed smaller increases and the latter did not accumulate significantly in the tubers given the higher dose of gamma rays. At 70°F., the levels of sucrose and glucose in the irradiated tubers rose above those in the controls, the difference reaching a maximum in 4 days and then declining. Irradiation had no effect on loss of fructose at this temperature. Color of potato chips processed from the irradiated potatoes was in general darker than that of chips from control tubers. The storage-time pattern of color change resembled that of the reducing rather than total sugar. Fourteen thousand rad did not prevent initiation of germination in the tubers but did destroy their sprout-growth apparatus. Although the lower dosage did not prevent initiation and subsequent growth, it prevented the formation of secondary tubers, which appeared on the sprouted control tubers. Furthermore, unlike the controls, the low-dosage potatoes developed branching hair sprouts with no tendency toward apical dominance during the early stages of sprouting. The rate of greening of gamma-irradiated and illuminated tubers was significantly less than that of unirradiated illuminated controls. Evidence is presented that irradiation may increase the susceptibility of potatoes to attack by molds under some conditions.  相似文献

Ozone and 1,8-cineole were investigated as alternatives to isopropyl-n-(3-chloro-phenyl)carbamate (CIPC) to control sprout development of potato (Solatium tuberosum) tubers cv Russet Burbank during long-term storage. Sprout development was similar in ozone-treated and air-stored tubers, but both had much larger and more numerous sprouts than CIPC-treated tubers. Sucrose and reducing sugars in ozone-treated tubers were similar to levels in air-stored potatoes. Fry color was not different among potatoes stored in ozone, air and CIPC. Conversely, potatoes treated with 1,8-cineole did not produce any sprouts during the 25 week study. The fry color of tubers exposed to cineole was darker than either air-stored or CIPC-treated tubers. Sucrose and reducing sugar levels were higher in cineole-treated tubers than in tubers treated with CIPC.  相似文献

马铃薯、玉米套作是西南山区主要的种植模式,但是各地的厢宽和行比很不规范,导致玉米和马铃薯竞争关系明显,限制了产量的进一步提高。为获得综合增产的最优厢宽行比及马铃薯群体控制技术,研究了马铃薯、玉米套作模式下田间配置及烯效唑对马铃薯产量的影响。试验结果表明:1.5 m开厢,马铃薯和玉米行比2:2的总产量最高,与当地1.5 m开厢,马铃薯和玉米行比1:2相比,马铃薯增产64.3%,玉米减产6.3%,全年总增产粮食14.3%,增收20.4%;盛花期马铃薯叶面喷施15 mg·kg-1烯效唑能增产21.4%,增产的直接原因是增加了马铃薯大薯率和大薯产量。大幅增产的合理使用浓度为10~15 mg·kg-1,可作为高密度、高肥水条件马铃薯高产的重要技术措施。  相似文献

There are five wild potato species in Guatemala:Solanum agrimonifolium,S. bulbocastanum,S. clarum,S. demissum, andS. morelliforme. We conducted a collecting expedition there from September 11 to November 5, 1995. The goals of the expedition were to gather field data for taxonomic studies of the five species of Guatemalan wild potatoes and to collect potato germplasm. Our 43 true seed collections nearly quadruple the available wild potato germplasm for Guatemala, provide germplasm from most previously known localities, and add new ones. We provide a systematic treatment of Guatemalan wild potatoes, geographic and logistical data for collecting wild potatoes in Guatemala, statistics on human population growth and deforestation to help explain decline of wild potato populations, recommend areas for future collecting, and suggest two areas as in-situ reserves for wild potatoes  相似文献
