为了揭示气调贮藏抑制双孢蘑菇褐变的作用机理,采用透射电镜法对气调贮藏条件下双孢蘑菇细胞超微结构的变化进行观察,分析了双孢蘑菇细胞超微结构完整性与组织褐变度之间的关系,结果表明:双孢蘑菇贮藏过程中组织细胞的完整性与褐变度密切相关,适宜的气调环境能够显著抑制双孢蘑菇贮藏过程组织细胞的降解,从而延缓组织褐变。  相似文献

为探讨气调处理对绿芦笋抗氧化和抗病性相关酶活性的影响,以空气为对照(CK),在15±1℃和相对湿度为90%~95%的贮藏条件下,研究5种不同比例气体成分[CA1(5%CO_2+1.5%O_2)、CA2(7%CO_2+0%O_2)、CA3(7%CO_2+1.5%O_2)、CA4(7%CO_2+3.5%O_2)、CA5(9%CO_2+1.5%O_2)]对达宝利绿芦笋采后感官品质、菌落总数、相对电导率、丙二醛(MDA)含量、总酚含量、二苯基苦基苯肼(DPPH)清除率、羟自由基(·OH)清除率以及超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、过氧化物酶(POD)、多酚氧化酶(PPO)、苯丙氨酸解氨酶(PAL)活性的影响。结果表明,气调处理不同程度抑制了芦笋根部的腐烂,延缓了其菌落总数、相对电导率和MDA含量的上升,维持其较高的总酚含量、DPPH清除率、·OH清除率以及SOD、CAT、PPO活性,减缓了其POD活性上升,并保持了组织较低的PAL活性,所有气调处理中以CA3效果较好。此外,以绿芦笋根部开始出现腐烂为标准,CK、CA1、CA2、CA4、CA5和CA3的贮藏期分别为1、2、2、2、4和5 d。因此,CA3(7%CO_2+1.5%O_2)的气调处理可维持达宝利绿芦笋采后较好品质。本研究结果为绿芦笋的贮藏保鲜提供了理论依据及技术支持。  相似文献

基于酶动力学方程的双孢蘑菇气调贮藏呼吸速率模型   总被引:2,自引:2,他引:0  
为了给气调贮藏设计提供理论设计依据,采用酶动力学方程,建立了双孢蘑菇呼吸速率随贮藏时间变化的理论模型;研究了在贮藏温度为5℃、气体体积分数为20%O_2、80%N2的贮藏条件下,贮藏时间对双孢蘑菇采后呼吸速率的影响,并建立了双孢蘑菇呼吸速率随贮藏时间变化的数学模型,模型决定系数R~2为0.9766、0.9331。模型与实测值进行配对T检验差异不显著(P0.05),呼吸速率值的绝对误差小于5 m L/(kg·h),相对误差变化范围为0.06%~24.95%。在已建模型基础上,研究不同贮藏温度(5、10、15、20℃)对已建模型参数的影响,利用Arrhenius方程来描述贮藏温度对果蔬呼吸速率的影响,建立了包含温度和贮藏时间因子的呼吸速率模型,模型决定系数R~2为0.9073、0.9350。验证试验结果表明,模型与实测值进行配对T检验差异不显著(P0.05),呼吸速率值的绝对误差小于17 m L/(kg·h),相对误差变化范围为1.00%~25.25%。该模型可为双孢蘑菇气调贮藏期间呼吸速率的预测及贮藏品质研究提供参考。  相似文献

为探索高氧处理对双孢蘑菇保鲜的效果,该试验研究了体积分数为40%、60%、80% 和100% O2及空气气流连续处理对双孢蘑菇在2℃、12 d 贮藏期间主要品质指标和抗性物质变化的影响。结果表明,高氧处理对可溶性固形物含量无显著影响。60%~100%高氧处理可显著抑制双孢蘑菇硬度的下降、菇肉和菇皮的褐变以及细胞膜透性的增加,60%~100%高氧处理的双孢蘑菇脯氨酸含量低于对照处理,差异显著(p<0.05);可溶性蛋白质含量高于对照,差异不显著。总体来看, 高氧处理有效保持了双孢蘑菇的品质。  相似文献

电喷雾纳米涂膜工艺优化及其对双孢蘑菇保鲜效果   总被引:1,自引:1,他引:0  
为了使涂膜技术更有效地应用于果蔬采后保鲜,该文通过电喷雾技术将纳米SiO_2/马铃薯淀粉膜液喷涂在新鲜的双孢蘑菇上,研究了在(4±1)℃贮藏期间双孢蘑菇生理品质的变化,筛选出适于电喷雾涂膜的最佳膜液浓度,且对电喷雾形成涂层的性能(透水率、透O_2率、透CO_2率、水溶性、溶胀度、拉伸强度)和微观结构(scanning electron microscopy,SEM、X-ray diffraction,XRD、fourier transform infrared spectroscopy,FTIR)进行一定的研究。结果表明,适合双孢蘑菇电喷雾技术纳米涂膜保鲜的最佳膜液0配比为纳米SiO_2质量分数0.4%、马铃薯淀粉质量分数4%、甘油质量分数3%,其透水率、透O_2率、透CO_2率分别为514.35、126.84、778.06 g/(m2×d)、拉伸强度24.50 MPa、水溶性54.76%、溶胀度85.75%。电喷雾因液滴带同种电荷,形成的涂层比较均匀,纳米SiO_2分散性更好,分子间作用力较强,且涂层的性能更优。在贮藏保鲜期间电喷雾处理的双孢蘑菇相对普通喷雾处理组能保持较好(P0.05)的感官品质及生理品质,研究结果为电喷雾技术在食用菌采后保鲜的应用上提供参考。  相似文献

本实验以吉林省长白山区抚松人参为试材,进行了辐照保鲜人参的研究。结果表明,采用硅窗气调小包装+20Gy ~(60)Coγ射线辐照人参,室内贮藏127天,地窖贮藏249天,保鲜率均达90%以上。保鲜参除总糖略有降低外,人参总皂甙和氨基酸组成均无明显变化。包装袋中的气体组成以CO_2<5.7%、O_2>10%、O_2/CO_2在1.4—3.0左右为宜,有效的辐照剂量为20—40Gy。  相似文献

以双孢蘑菇为试验材料,研究不同的褐变抑制剂对双孢蘑菇保鲜效果的影响,通过正交试验筛选出双孢蘑菇MA贮藏中有利于色泽保持的最适褐变抑制剂配比。研究结果表明,对双孢蘑菇贮藏保鲜效果较好的褐变抑制剂及其浓度为:0.1%的无水亚硫酸钠溶液、0.06%~0.10%的抗坏血酸溶液、0.8~2.6 mmol/L的半胱氨酸溶液;保鲜液最佳配比为2 mmol/L半胱氨酸、0.05%抗坏血酸、0.15%无水亚硫酸钠、浸泡时间8 min。  相似文献

动态气调是在气调基础上发展起来的一种新型贮藏保鲜技术,它可以抑制果实的衰老过程,延长贮藏时间。并减少贮藏腐烂损失。组合动态气调是一种更先进的技术。我们在常温下用合适浓度的CO2和O2在苹果入贮初期进行短期组合冲击,然后再选择能够满足苹果长期贮藏保鲜环境气体参数的塑料薄膜包装贮藏的组合动态气调技术,经1984、1985两年在苹果产区山东省平度县试验表明,对主要品种红星、金帅、青香蕉及国光具有满意的保鲜效果。  相似文献

不同CO2浓度下鸡蛋呼吸仿真分析及验证   总被引:2,自引:2,他引:0  
贮存环境中CO_2浓度对鸡蛋呼吸作用及新鲜度变化具有重要影响,为了进一步考察在不同CO_2浓度下鸡蛋呼吸释放CO_2的扩散及新鲜度变化情况,该研究测定贮存在温度为25℃、相对湿度为65%、CO_2体积分数分别为1.5%、3.0%、4.5%及空气(对照组)环境下鸡蛋呼吸和新鲜度,利用FLUENT软件完成不同CO_2浓度下鸡蛋第1天呼吸释放CO_2的扩散过程仿真。结果表明,利用Fluent软件计算所得气体速度值和试验值基本一致,模拟值与实测值相对误差在4%~9%。不同CO_2浓度下鸡蛋释放CO_2的扩散过程符合重气扩散的特点,其扩散方向受到CO_2浓度的影响,且随着贮存环境中CO_2浓度的增加,鸡蛋呼吸释放CO_2的扩散量和扩散速度逐渐变小,呼吸得到抑制。再通过分析贮存过程中不同CO_2体积分数下鸡蛋呼吸强度和新鲜度变化得出,对照组1.5%CO_2与3.0%CO_2下的鸡蛋呼吸强度和新鲜度具有显著差异(P0.05),当贮存环境中CO_2体积分数达到3.0%时,对鸡蛋呼吸强度的抑制效果不再明显,且新鲜度变化保持不变。3.0%CO_2和4.5%CO_2体积分数下贮存鸡蛋20 d,其新鲜度等级仍在AA级以上,综合经济因素,3.0%CO_2保鲜鸡蛋效果较优。该研究可为鸡蛋呼吸和气调保鲜技术提供理论及数据基础。  相似文献

The effect of chitosan-oil coating on the postharvest quality and shelf life of shiitake (Lentinus edodes) mushrooms stored at 4 ± 1 °C for 16 days was investigated. Mushroom weight loss, firmness, total phenolics, ascorbic acid, malondialdehyde (MDA), electrolyte leakage rate, and microbial and sensory quality were measured. The results indicate that treatment with chitosan-oil coating maintained tissue firmness, inhibited increase of respiration rate, and reduced microorganism counts, such as yeasts and molds and pseudomonad, compared to control treatment. The efficiency was better than that of thyme oil treatment or chitosan coating. Furthermore, shiitake mushrooms treated with chitosan-oil coating also exhibited significantly higher levels of total phenolics, flavonoids, as well as individual phenolic compounds than control. Sensory evaluation proved the efficacy of chitosan-oil coating by maintaining the overall quality of shiitake mushroom during the storage period. Our study suggests that chitosan-oil coating might be a promising candidate for maintaining shiitake mushroom quality and extending their postharvest life.  相似文献

The effect of high-oxygen atmospheres on strawberry flavor was studied. Strawberry fruits (Fragariax ananassa Duch. cv. Camarosa) were stored at 8 degrees C in four different atmospheres: air, 5% O(2)/20% CO(2), 80% O(2)/20% CO(2), and 90% O(2)/10% CO(2). Changes in several quality parameters were evaluated. Atmospheres combining high O(2) and high CO(2) were the most effective in preventing fungal growth and enhancing strawberry firmness. Other quality parameters such as color, titrable acidity, sugars and organic acids distribution, off-flavor development, and aroma were only mildly affected by superatmospheric O(2) levels. After one week of storage, unexpected high contents of off-flavor related compounds were found in the 80% O(2)/20% CO(2) and 90% O(2)/10% CO(2) atmospheres. Evidence of an altered ester biosynthesis was also found in fruits stored under these high-O(2) atmospheres. Data obtained suggest that stress induced by high CO(2) and stress induced by high O(2) have an additive effect on strawberry flavor alteration.  相似文献

为研究60Co-γ和电子束2种射线的不同剂量对新鲜香菇采后保鲜效果的影响,本试验通过测定鲜香菇的硬度、呼吸强度、电导率、感官品质等指标,筛选2种辐照射线的最优剂量,并对比分析最优辐照处理下香菇细胞的微观结构。结果表明,60Co-γ射线中,2 kGy剂量组香菇硬度降幅为37%,呼吸强度为10.81 mg·kg-1·h-1,相对电导率为0.268%,均小于其他剂量组;电子束射线中,3 kGy剂量组香菇硬度降幅为38%,呼吸强度为10.39 mg·kg-1·h-1,相对电导率为0.241%,均小于其他剂量组。综合感官分析可知, 3 kGy电子束组和2 kGy 60Co-γ射线组香菇的保鲜效果分别优于同类射线其他剂量组。显微分析可知,与2 kGy 60Co-γ射线相比,3 kGy电子束辐照能够较好地保持新鲜香菇的菌丝形态,延缓其进一步降解,从而延长其贮藏期。本研究探索了辐照在香菇保鲜过程中的可行性,为推动电子束辐照技术和60Co-γ辐照技术在香菇保鲜领域的应用提供了可靠的理论依据与技术支持。  相似文献

为研究西洋梨不同气调贮藏时间出库后货架期品质的变化,将西洋梨品种“阿巴特”在1.8%±0.2% O2,0.8%±0.2% CO2气体体积分数条件下进行不同时间贮藏。结果表明,与冷藏相比,贮藏期内气调贮藏可显著地抑制西洋梨果实硬度的下降和色泽的变化,降低果实出汁率、淀粉含量和乙烯释放量,并推迟乙烯高峰的出现时间,抑制淀粉酶活性的上升;货架期间,不同贮藏期出库果实自货架6 d起气调贮藏与对照相比果实硬度和淀粉含量的下降速率和色泽变化较快,果实的出汁率和淀粉酶活性明显上升,同时果实的乙烯释放明显加快。气调贮藏与对照相比可在一定程度上抑制贮藏期果实品质的下降,其中气调贮藏90 d、货架8 d的西洋梨果实能获得较好的后熟效果。  相似文献

The effects of controlled-atmosphere (CA) storage on the firmness, respiration rate, quality, weight loss, total phenolics and flavonoids contents, and total antioxidant activities of the Pilgrim and Stevens cultivars of cranberries (Vaccinium macrocarpon Aiton) have been studied during storage in atmospheres of 2, 21, and 70% O(2) with 0, 15, and 30% CO(2) (balance N(2)); and 100% N(2) at 3 degrees C. Elevated CO(2) concentrations decreased bruising, physiological breakdown, and decay of berries, thereby reducing fruit losses. Respiration and weight loss of fruits decreased, but fruit softening increased, at higher CO(2) concentrations. Accumulations of acetaldehyde, ethanol, and ethyl acetate varied by cultivar and storage atmosphere but were generally highest in the 2 and 70% O(2) and 100% N(2) atmospheres and increased in response to elevated CO(2) concentrations. Overall, the 30% CO(2) plus 21% O(2) atmosphere appeared optimal for the storage of cranberries. Sensory analysis is required, however, to confirm that accumulations of fermentation products at this atmosphere are acceptable for consumers. Stevens fruits had a higher phenolics content and total antioxidant activity than Pilgrim fruits. The storage atmosphere did not affect the content of total phenolics or flavonoids. However, the total antioxidant activity of the fruits increased overall by about 45% in fruits stored in air. This increase was prevented by storage in 30% CO(2) plus 21% O(2).  相似文献

The aim of this work was to assess whether extra time spent under AIR conditions after storage in an ultra low oxygen (ULO) atmosphere could allow the regeneration of volatile compound emission without negatively affecting quality parameters and the consumer acceptability of Fuji apples. Fruits were stored for 19 and 30 weeks at 1 degrees C and 92% RH under ULO atmosphere conditions (1 kPa O 2:1 kPa CO 2) or under ULO conditions followed by different periods (2 and 4 weeks) in cold AIR atmosphere (ULO + 2w or ULO + 4w, respectively). Standard quality and emission of volatile compounds were analyzed after storage plus 1 and 7 days at 20 degrees C. Sensory attributes and acceptability were also determined after 7 days at 20 degrees C. The extra period of 30 weeks in an AIR atmosphere after ULO storage resulted in an increase in the concentration of the compounds that most contribute to the flavor of Fuji apples. These fruits were relatively well accepted by consumers despite a slight decline in firmness and acidity.  相似文献

为了延长伽师瓜的贮藏期,该文研究了8种不同气体配比对新疆伽师瓜贮期生理变化和贮藏品质的影响。结果表明,在体积分数为7%CO2+5%O2+ 88%N2条件下贮藏伽师瓜,其可滴定酸含量、还原糖含量和果实硬度可以得到保持,过氧化物酶(POD)、多酚氧化酶(PPO)和多聚半乳糖醛酸酶(PG)活性受到抑制,过氧化氢酶(CAT)活性保持相对较高水平,贮藏80 d腐烂指数为0.3,商品果率90%,贮后果实色泽鲜绿,风味甘甜香美,保鲜效果较好,为新疆伽师瓜贮藏保鲜提供了理论依据和技术方法。  相似文献

Phenylalanine ammonia-lyase (PAL, EC 4.3.1.5.) activity, tanning ability, and polyphenols levels were measured in cherimoya (Annona cherimola Mill.) fruit treated with 20% CO(2) + 20% O(2) + 60% N(2) for 1, 3, or 6 days during chilling temperature (6 degrees C) storage. The residual effect of CO(2) after transfer to air was also studied. These observations were correlated with texture and cellular characteristics, visualized by cryo-SEM. Tanning ability and the early increase in tannin polyphenols induced by chilling temperature were reduced by CO(2) treatment. Conversely, high CO(2) atmosphere enhanced the nontannin polyphenol fraction as compared with fruit stored in air. Lignin accumulation and PAL activation observed in untreated fruit after prolonged storage at chilling temperature were prevented by high CO(2). Moreover, the restraining effect on lignification was less effective when the CO(2) treatment was prolonged for 6 days. In addition, fruits held at these conditions had greater firmness and the histological characterization of the separation between cells was similar to that in untreated fruits. We conclude that CO(2) treatment modulates the phenolic response that seems to regulate the strength of cell adhesion and so to prevent hardening caused by chilling temperature storage.  相似文献

Select mushrooms were analyzed for proximate constituents and carbohydrate profiles either raw or cooked and at different stages of maturity. White button mushrooms (Agaricus biporus) contained high concentrations of ash (12.5 and 11.9% for immature and mature mushrooms, respectively). Starch and total dietary fiber (TDF) concentrations were higher in maitake (Grifola frondosa) and shiitake (Lentinus edodes) mushrooms. Crude protein (CP) and acid-hydrolyzed fat (AHF) were highest in crimini (Agaricus bisporus) and white button and maitake mushrooms, respectively. Chitin concentrations were highest in portabella (Agaricus bisporus) and enoki (Flammulina velutipes) mushrooms (8.0 and 7.7%, respectively). Oligosaccharides were found in low concentrations in some mushrooms. CP and TDF accounted for 86.4 and 49.3% of mushroom organic matter. Cooking increased starch, TDF, and AHF but decreased CP and chitin concentrations. The chitin concentration increased with mushroom maturity. These results detail the complete carbohydrate profile of several important mushroom varieties.  相似文献
