兰州市肉与肉制品微生物污染状况的研究   总被引:1,自引:0,他引:1  
目的:了解兰州市定点屠宰场生猪屠宰加工产品的卫生质量以及肉与肉制品致病菌污染状况。方法:2003-2006年,应用国标法对2个定点生猪屠宰场300份生猪胴体样品进行了菌落总数、大肠菌群和沙门氏菌检验;采用随机采样法对兰州市不同酒店和超市的生猪肉、牛肉、羊肉、禽肉100份,熟肉制品1 200份进行了常见致病菌的检验。结果:生猪胴体体表和肉样沙门氏菌检出率分别为7.5%和14%;生肉检出致病菌阳性20份,总检出率为20%;熟肉制品检出致病菌阳性39份,阳性率为3.25%。生肉中以猪肉致病菌阳性率最高,为20%。结论:兰州市生猪胴体的卫生质量急需提高,屠宰生产加工水平亟待改善。  相似文献

One hundred and forty seven samples of pig faeces collected from 14 herds located in different parts of Finland were examined for Yersinia enterocolitica biotype 4 serotype 0:3. Twenty six (17.7%) animals and 5 herds (35.7%) were positive. The tonsils of 350 animals from 35 herds with high condemnation figures at meat inspection and the tonsils of 131 animals from 13 herds with low condemnation figures collected from 2 abattoirs in southwest Finland were also examined. The prevalence raes of Y.e. in animals were 38.3% and 31.3% and in herds 74.3% and 61.5%, respectively. The prevalence of Y.e. in herds with the high and low partial condemnation percentages did not differ significantly. No isolation of Y.e. was made from 104 samples of pork and minced pork collected from retail markets in Helsinki and from exporting slaughterhouses.  相似文献

A cross-sectional study was undertaken to determine the presence and prevalence of salmonellae in retail raw chicken meat and giblets (gizzard and liver) in supermarkets in Addis Ababa (Ethiopia). A total of 301 samples (244 chicken meat, 32 gizzards and 25 livers) were collected from 22 randomly selected supermarkets and examined for the presence of Salmonella. For the isolation and identification of salmonellae, the technique recommended by the International Organization for Standardization (ISO 6579, 1998) was used. Salmonellae were detected from 54 (17.9%) of the 301 samples examined. Chicken meat and giblet samples in 68.2% (15/22) of the supermarkets were contaminated with salmonellae. The contamination level of Salmonella was higher in chicken giblets as compared to chicken meat, which were respectively 12.3%, 53.1% and 28.0% in chicken meat, gizzard and liver samples. Out of the 54 Salmonella isolates, nine different serotypes were identified: Salmonella Braenderup (31.5%), S. Anatum (25.9%), S. Saintpaul (14.8%), S. Uganda (11.1%), S. Haifa, S. Group B, S. Rough form and S. Typhimurium (each 3.7%) and S. Virchow (1.8%). The high level of Salmonella contamination of chicken meat and giblets observed in the present study indicated the need in an improvement in the microbiological quality of retail chicken in Ethiopia.  相似文献

Human salmonellosis is a major public health problem worldwide. Infections can pass to humans by contact with contaminated substances in the food chain. This study aimed to determine the prevalence and contamination levels of Salmonella isolated from pork, chicken and beef sold in different types of retail stores in Chiang Mai and Lamphun provinces and to investigate the genetic relatedness among Salmonella isolates in food chains in that area. A total of 360 meat samples from supermarkets, mini‐grocery stores and fresh markets were obtained. Salmonella Rissen and S. Weltevreden were found in all meat sample types and in human cases. The overall prevalence of Salmonella in the chicken, pork and beef samples was 34.17%, 32.50% and 3.33%, respectively. Quantitatively, Salmonella contamination was highest in pork (1.24 log10MPN/g), followed by chicken (1.08 log10MPN/g), and beef (0.75 log10MPN/g). The highest frequency of Salmonella contamination was found at the fresh markets (85.71%), whereas the highest quantity of contamination level was from mini‐grocery stores (1.27 log10MPN/g). The rep‐PCR analysis results revealed that some of the Salmonella from meat samples and human cases were identical clones.  相似文献

The aim of this study was to provide baseline data on the population and herd Salmonella seroprevalence in sows and finishers. For the population estimates in 1996 and 1999 and the herd prevalences for sows and gilts, blood samples from swine vesicular disease (SVD) and pseudorabies monitoring programmes were used and tested in an indirect Salmonella enzyme-linked immunosorbent assay (ELISA). The herd prevalence for finishers was determined using blood samples collected at two slaughterhouses.The population prevalence for finishers in 1996 and 1999 was 23.7 and 24.5%, respectively, and for sows 40.5 and 60.4%, respectively. The prevalence in free range (FR) finishers was significantly higher (44.6%) than in intensively housed finishers in 1999, identifying a hazard group for possible extra pork and pork product contamination. Of 406 finishing herds, 9% were completely seronegative for Salmonella (cut-off OD%>10). Of these 406 finishing herds, 69.7% had Salmonella-status I (low prevalence), 21.7% status II (moderate prevalence) and 8.6% status III (high prevalence) (cut-off OD%>40). In 46 multiplying sow herds, 20 breeding sow herds and 20 matching replacement gilt herds, the average herd prevalences were 54, 44.4 and 19.3%, respectively. Two gilt herds were completely seronegative. The prevalence in the gilt herds was never higher than in the matching breeding sow herds. Agreement on methodology and calibration of ELISA tests would make these results comparable between countries and is a prerequisite for a co-ordinated and integrated program to reduce Salmonella in pork in the European Union.  相似文献

Fresh meat retail cases in 104 supermarkets across 5 regions of the United States were audited for product space allocation, percentage of space allocated to each fresh meat category and frequency of species among all stock keeping units (n = 14,863). The United States was divided into Mountain/Southwest, Midwest, Northeast, Southeast, and West Coast regions. Fresh meat categories for self-service cases included beef muscle cuts, ground beef, pork, veal, lamb, chicken, turkey, fresh sausage, value-added, heat and serve, ham-bone-in, ham-boneless, ham steak, other processed meats, seafood, and nonmeat items. Fresh meat categories for the full-service case included seafood, beef, pork, chicken, and other. Whole muscle beef, pork, and chicken products were available in all stores. Ground beef products and turkey were reported in almost all stores, 94.5 to 100%, respectively. The majority of the self-service meat case was dedicated to beef in all regions except for the Northeast, where chicken occupied the majority of the self-service case. Linear meters of self-service fresh meat case were greatest in the Northeast region, which was similar to Mountain and Midwest regions, but different (P = 0.003) than the Southeast and West Coast regions. However, the West Coast region best utilized the retail meat case by providing consumers with the greatest number of offerings per linear meter. The percentage of stores audited with a full-service meat case was 37.5%, and the percentage with a full-service seafood case was 60.6%. The full-service meat case was the smallest (number of linear meters, P = 0.039) in the Southeast and largest (number of linear meters, P = 0.039) in the Midwest.  相似文献

In 2006 and 2007 beef and pork carcass swabs from provincially inspected abattoirs in Alberta, Canada were tested to determine the levels of total aerobic bacteria, coliform bacteria, and generic Escherichia coli, and the prevalence of Salmonella spp., Campylobacter spp., and Shiga toxin-producing E. coli (STEC). Swabs from beef and pork carcasses from 48 and 34 facilities, respectively, were analyzed. All samples tested were positive for aerobic bacteria with 99.8% of beef and 96.0% of pork samples, having total counts of ≤ 100 000 CFU/cm(2). Coliform bacteria were isolated from 22.4% and 42.0% of beef and pork carcass samples, respectively. Generic E. coli were recovered from 14.6% of beef and 33.7% of pork carcass samples. For beef carcasses, positive tests were obtained for 0.1% of 1036 samples tested for Salmonella spp., 1.5% of 1022 samples tested for Campylobacter spp. and 5.4% of 1018 samples tested for STEC. For pork carcasses, positive tests were obtained for 1.6 % of 1076 samples tested for Salmonella spp., 8.8% of 1070 samples tested for Campylobacter spp. and 4.8% of 1067 samples tested for STEC.  相似文献

Fresh meat retail cases in 104 supermarkets across 5 regions of the United States were audited for the use of packaging types and materials, branding, and cooking/nutritional information. Frequency means were separated for species of beef, ground beef, pork, chicken, turkey, lamb, and veal. Traditional polyvinyl chloride overwrap was used on 47.0% of packages in the fresh meat case nationwide and was the most frequent packaging type for beef, ground beef, pork, lamb, and veal. The use of modified atmosphere packaging was greatest (P < 0.001) in ground beef (33.2%) and turkey (45.1%) products. The 3 most common tray colors in the fresh meat retail case on a national level were white (39.6%), yellow (22.4%), and black (11.5%). Foam trays were used in 72.6% of all packages in the retail meat case. In 2004, 60.2% of all packages were case-ready. Chicken (94.8%) and turkey (95.6%) products utilized case-ready packaging systems more (P < 0.001) than any other species. On a national level, 50.1% of all products carried a national brand, 12.2% carried a store brand, and the remaining 37.7% of products in the fresh meat case in 2004 were not branded. Chicken was most (P < 0.001) likely to carry a natural brand label. Labels with cooking instructions were found most (P < 0.001) on pork (37.3%) and turkey products (48.1%). Chicken (20.4%) and turkey products (20.7%) were most (P < 0.001) likely to have the cooking instructions printed on the packaging material compared with all other species. Labels with nutritional information were most (P < 0.001) likely to be found on turkey products (55.7%) in the fresh meat case compared with any other species. On the national level, 6.1% of all packages reported in the fresh meat case in 2004 were value-added.  相似文献

Salmonella in pork can be combated during pre- or post-harvest. For large slaughterhouses, post-harvest measures like decontamination might be cost-effective while this is less likely with small-to-medium sized slaughterhouses. In this study, pre-harvest measures might be more relevant. We describe an extended surveillance-and-control programme for Salmonella in finisher pigs, which, to establish equivalence to the Swedish control programme, is intended for implementation on the Danish island, Bornholm. The effect of the programme on food safety was estimated by analysing Salmonella data from pig carcasses originating from herds that would have qualified for the programme during 2006-2008. Food safety was interpreted as prevalence of Salmonella on carcasses as well as the estimated number of human cases of salmonellosis related to pork produced within the programme. Data from the Danish Salmonella programme were obtained from Bornholm. We used a simulation model developed to estimate the number of human cases based on the prevalence of Salmonella on carcass swabs. Herds are only accepted in the programme if they have one or less seropositive sample within the previous 6 months. In this way, the Salmonella load is kept to a minimum. The programme is not yet in operation and pigs that qualify for the programme are currently mixed at slaughter with those that do not qualify. Therefore, we had to assess the impact on the carcass prevalence indirectly. The prevalence of Salmonella in carcass swabs among qualifying herds was 0.46% for the 3?years as a whole, with 2006 as the year with highest prevalence. According to the simulation the expected number of human cases relating to pork produced within the programme was below 10. When the programme is in operation, an extra effect of separating pigs within the programme from those outside is expected to lower the prevalence of Salmonella even further.  相似文献

The present study provides the first data about the prevalence of Salmonella contamination of broilers and slaughterhouses in the region of Constantine, Algeria. The serotypes and anti-microbial resistance phenotypes of the isolates were determined, and risk factors contributing to the contamination were evaluated. A total of 2490 samples, 1800 originating from 30 broiler farms and 690 from 15 slaughterhouses, were taken during two periods: March 2005-June 2006 and September 2006-March 2007. Salmonella contamination concerned 37% of the broiler farms and 53% of the slaughterhouses. Among the 55 isolates recovered, 10 different serotypes were identified. The most frequently recovered serotypes in both slaughterhouses and breeder farms were S. Hadar (36%, n = 20), S. Virchow (16%, n = 9), S. Infantis (10.9%, n = 6), S. Albany (11%, n = 6) and S. Carnac (7%, n = 4). Isolates belonging to S. Heidelberg (2%, n = 1) and S. Rissen (2%, n = 1) were found only in farms, while those belonging to S. Typhimurium (9%, n = 5), S. Enteritidis (4%, n = 2) and S. Montevideo (2%, n = 1) were recovered only from slaughterhouses. Thirty-nine isolates (80%) were resistant to at least one anti-microbial and 51% were multi-resistant, i.e. resistant to two or more anti-microbial molecules. About 58% (n = 32) were resistant to streptomycin, 36% (n = 20) to tetracyclines, 27% (n = 15) to nalidixic acid, 13% (n = 7) to ofloxacin and one isolate to enrofloxacin. Finally, seven distinct anti-microbial resistance profiles were identified. In parallel, four risk factors were found to be significantly associated with Salmonella contamination. Together with the huge spread of Salmonella in the broiler production chain in Constantine, Algeria, these risk factors highlight the hazards of the broiler channels, particularly linked to poor technical and hygiene practices.  相似文献

One hundred seventy-five samples of fresh pork sausage representing thirty-five different commercial brands from six different retail stores were examined for the presence of salmonellae by standard enrichment, plating, biochemical and serological techniques. Contamination levels varied from 0 to 50% among stores and from 0 to 28% among brands. Prior research implied reduced prevalence of salmonellae in fresh pork sausage; however, these results indicate no variation in prevalence since 1969.  相似文献

In Denmark, it was agreed to lower the Salmonella prevalence in pork to 1.2% before the end of 2006. The current control did not seem to be sufficient to attain this goal. Therefore, four alternatives to the existing Danish control strategy for Salmonella in pork were compared in a cost-benefit analysis: (1) hot-water decontamination of all pigs at slaughter, (2) sanitary slaughter of pigs from herds with high levels of Salmonella, (3) use of home-mixed feed in herds with slaughter pigs and (4) use of acidified feed for slaughter pigs. The data originated from official statistics, published papers as well as expert opinion. The partial cost-benefit analysis was restricted to slaughterhouses affiliated with the Danish Meat Association and Danish human cases ascribable to pork from these slaughterhouses. Only hot-water decontamination was socio-economically profitable. Hot-water decontamination had a net present value over 15 years of 3.5 million euros. For sanitary slaughter the net present value was - 43.6 million euros, for home-mixed feed it was - 262.3 million euros and for acidified feed it was - 79.9 million euros. For all alternatives the costs were born solely by the pig sector, whereas primarily the consumers and public authorities received the benefits. The aim of the present study was to evaluate the bacterial quality of chicken (n = 96) and turkey (n = 96) marketed in Casablanca, Morocco. Poultry samples (n = 192) were collected randomly from traditional shops and supermarkets during 2 sampling periods (hot and cold seasons). The samples were analyzed for the presence and counts of various bacteria. Results indicated that aerobic plate counts and fecal coliforms were particularly high in all the samples analyzed. Escherichia coli, coagulase-positive Staphylococcus, Clostridium perfringens, Salmonella, and Listeria monocytogenes were detected, respectively, in 48.4, 10.4, 7.2, 1.6, and 0.5% of the poultry meat samples. The chicken and turkey samples contained, respectively, 25 and 33.3% of bacteria above the maximum limits established by the Moroccan regulatory standards. The highest bacterial counts in poultry meat product samples were recorded with the traditional slaughtering process during the hot season (P < 0.05). These high levels of microbial contamination and occurrence of pathogenic bacteria reflect the poor hygienic quality of poultry meat under these conditions.  相似文献

The implementation of the European regulations regarding zoonoses demands objective and scientific statements regarding the status of the Salmonella prevalence in the national pig herds of all EU member states. Since 2002, the "QS Qualit?t und Sicherheit GmbH" has carried out serological Salmonella monitoring in German finishing pig herds. All data generated within the monitoring system are entered into the central database Qualiproof(?) (Qualitype AG, Dresden). The dataset investigated included 5,324,532 samples taken between January 1, 2003 and December 31, 2008, originating from 22,490 herds. Blood sera or meat juices were sampled following a standardized sampling scheme (up to 60 samples per year and herd, depending on herd size) using one of four evaluated ELISA-tests. Herds were classified into three categories I (0-20%), II (>20-40%), or III (>40%) by their percentage of yearly positive samples, which was re-calculated quarterly. The number of participating herds increased continuously since the start of the monitoring programme, with regional differences in the degree of participation. In 2008, 10.8% of all samples were positive. Adjusted for the distribution of samples in the German districts, the Salmonella prevalence in Germany was 7.9%. In general the distribution of herds in the categories was relatively stable over time. In the fourth quarter of 2008, 81.9% of the herds were allocated to category I, 14.0% to category II, and 4.0% to category III. However, the prevalence of Salmonella tended to decrease in herds that participated over a longer period. Differences could be found between German geographical regions. Seroprevalences were higher in the Northwest and the Northeast than in the South. This might be due to the relationship between Salmonella seroprevalences and farm densities per district, which were both higher in Northern than in Southern Germany. The Salmonella monitoring system will contribute to the reduction of the Salmonella prevalence in German pork production, when it is supplemented by control measures.  相似文献

A mandatory programme monitoring the occurrence of Salmonella in pork at slaughterhouses and a serological monitoring of slaughter-pig herds has been implemented in Denmark since 1993 and 1995, respectively. All results are stored in a central database. From this, aggregated weekly results of serological and bacteriological samples collected in the period between January 1995 and July 2000 were extracted. In addition, the reported weekly incidence of human infections with S. Typhimurium covering the same time period was obtained. The times series were analysed for trends and cyclic variations by seasonal decomposition. The association between the incidence in humans and the prevalence of Salmonella in pigs and pork, and prevailing weather conditions, were analysed by using a general linear (glm) and a general additive model (gam). Explanatory variables were lagged to account for time elapsed between sampling, consumption, incubation period and case registration. The results of the seasonal decomposition showed an overall declining trend in all three time series. All time series exhibited a double peaked annual cycle. The seasonal variation of the prevalence in pork and the human incidence had a very similar course. The variables that were both biologically meaningful and statistically significant in both regression models were the prevalence in pork sampled 4 to 5 weeks before case registration, the seroprevalence, measured as the average prevalence of week 15 to 35 before case registration, and the air temperature lagged at 2 and 3 weeks. Limitations on inferences from overall surveillance data are discussed.  相似文献

The main objective of this study was to analyse potential herd-level factors associated with the detection of Salmonella antibodies in fattening pigs. Two independent datasets, consisting of blood and meat juice samples respectively, were used. Additional information about husbandry, management and hygiene conditions was collected by questionnaire for both datasets. The serological analysis showed that 13.8% of the blood samples and 15.7% of the meat juice samples had to be classified as Salmonella-positive. Logistic-regression models were used to assess statistically significant risk factors associated with a positive sample result. The results of the statistical blood sample analysis showed that the application of antibiotics increased the odds ratio (OR) by a factor of 5.21 (P < 0.001) compared to untreated pigs. A fully slatted floor decreased the prevalence of Salmonella as well as the use of protective clothing or the cleaning of the feed tube (ORs 0.35-0.54, P < 0.001). It was shown that a distance of less than 2 km to other swine herds increased the chance of a positive Salmonella result (OR = 3.76, P < 0.001). The statistical analysis of the meat juice samples revealed the importance of feed aspects. The chance of obtaining a positive meat juice sample increased by a factor of 3.52 (P < 0.001) by using granulated feed instead of flour. It also became clear that liquid feeding should be preferred to dry feeding (OR = 0.33, P < 0.001). A comparison of the blood sample analysis to the meat juice model revealed that the latter was less powerful because data structure was less detailed. The expansion of data acquisition might solve these problems and improve the suitability of QS monitoring data for risk factor analyses.  相似文献

Central Luzon is the number one pig-producing region in the Philippines and was affected by Foot-and-Mouth disease (FMD) in 1995. In this paper, the impact of FMD on the Central Luzon meat market from 1995 to 1999 was examined. Employing the error correction model (ECM) and historical decomposition, the impact of FMD on the Central Luzon pork and chicken meat market was quantified. The following findings were observed: (a) pig farm and pork wholesale prices dropped 11.8% and 15.7%, respectively, after the initial FMD outbreaks in January, 1995; (b) in February, 1995, chicken farm and wholesale prices declined by 21.1% and 14.2%, respectively (while chicken retail prices also went down by 10.5%); (c) the margins of pig and chicken traders were also adversely affected at some point; and (d) FMD caused changes of dynamic interdependence among prices by meat type at different levels of the meat supply chain.  相似文献

目的了解新疆石河子地区动物性食品中单核细胞增生李斯特氏菌(LM)污染状况。方法在石河子地区选取5个具有代表性动物性食品零售点,对最常食用的生鲜猪肉、牛肉、羊肉、鸡肉、冻鸡肉、冻虾和冻带鱼8类动物性食品进行随机采样,采用病原分离培养和PCR法对样品中的单核细胞增生李斯特氏菌进行检测。结果检测8类249份食品样品,细菌分离鉴定阳性样品12份,平均阳性率4.82%;PCR法检测阳性样品36份,平均阳性率为14.46%。结论石河子动物性食品中LM的污染比较普遍,尤以冻鸡肉和冻虾LM污染较重,新鲜猪肉、牛肉和羊肉LM污染程度较轻。  相似文献

Herd-level risk factors for salmonellosis in pigs were investigated in a cross-sectional study on 62 Belgian farrow-to-finish pig herds belonging to one slaughterhouse cooperative. Data concerning housing and ventilation, management, hygiene, biosecurity, production parameters, feeding, disease control and transport to the slaughterhouse were collected during a herd visit by means of a questionnaire. The percentage of positive animals in a slaughterhouse delivery, as determined by qualitative Salmonella isolation in the mesenteric lymph nodes taken from 30 slaughter pigs, was the outcome variable. All samples were taken in 4 different slaughterhouses. Variables first were submitted to a univariable analysis using a logistic mixed regression model, with herd as random effect. Variables which were related to the Salmonella prevalence (P < 0.05) were analysed further in a multivariable model. The clustering of Salmonella infection within a pen also was studied in a generalised mixed model with pen as random effect. Salmonella isolates were identified by serotype. In 57 (92%) of the herds, at least one sample was found positive for Salmonella. The median percentage of positive Salmonella samples per delivery was 64% (range: 0-100%). In the multivariable model, only type of floor was related significantly to the prevalence: 100% (95% CI 88-100) for herds with <50% slatted floors to 54% (36-70) for herds with fully slatted floors. The results from the analysis should be interpreted with care because only 62 herds were included in the study. Clustering between pigs from the same pen could not be demonstrated (variance +/- S.D.: 0.11 +/- 0.16). S. typhimurium (30%) and S. derby (20%) were most common among the 23 different serotypes that were found.  相似文献

An investigation was conducted in Morogoro municipality to assess the likelihood of slaughter cattle posing public health risk of contaminating carcasses with thermophilic Campylobacter. Butchers and meat shopkeepers were interviewed on source of slaughter cattle, method of animal and carcass transportation, carcass dressing, meat storage facilities, access to clean water and availability of food hygiene practices. Faecal samples were collected from 107 slaughter cattle and after slaughter; four different parts of dressed carcasses (i.e. from ham, neck, pelvis and thigh muscles) were also sampled. In addition 107 cattle meat samples for Campylobacter culture were collected in different meat shops. The samples were subjected to standard bacteriological examination using Skirrows protocol. It was found that cattle slaughter, dressing and meat handling in meatshops was done under unhygienic condition. Thermophilic Campylobacter prevalence in slaughter cattle was 5.6% while contamination rate of dressed carcasses and cattle meat at shops was 9.3% and 1.9%, respectively. The majority of thermophilic Campylobacter isolated were C. jejuni (88.9%) while C. coli was isolated at 11.1%. Findings of this study suggest possibility of humans acquiring zoonotic Campylobacter infections from cattle meat particularly when meat preparation and processing is not done properly. More work is required to establish the magnitude of zoonotic enteric Campylobacteriosis in humans and epidemiological role of cattle and other animals in the study area.  相似文献
