The oxalate, hydrocyanic acid, phytic acid and phosphorus contents of twelve leafy vegetables were determined. The values ranged from 47.7–194.3 mg/100 g DM, 4.32–23.8 mg/100 g DM, 90–260 mg/100 g DM and 215–1110 mg/100 g DM, respectively. The ratio of phytic acid to phosphorus ranged from 13.9–90.7. The leaves contained low levels of hydrocyanic acid, while the oxalate, phytic acid and phosphorus contents were high. The results are discussed in terms of their clinical implications and nutritive values.  相似文献

Spices, such as cinnamon, cloves, cardamom, garlic, ginger, cumin, coriander and turmeric are used all over the world as flavouring and colouring ingredients in Indian foods. Previous studies have shown that spices contain variable amounts of total oxalates but there are few reports of soluble oxalate contents. In this study, the total, soluble and insoluble oxalate contents of ten different spices commonly used in Indian cuisine were measured. Total oxalate content ranged from 194 (nutmeg) to 4,014 (green cardamom) mg/100?g DM, while the soluble oxalate contents ranged from 41 (nutmeg) to 3,977 (green cardamom) mg/100?g DM. Overall, the percentage of soluble oxalate content of the spices ranged from 4.7 to 99.1% of the total oxalate content which suggests that some spices present no risk to people liable to kidney stone formation, while other spices can supply significant amounts of soluble oxalates and therefore should be used in moderation.  相似文献

The molar ratios as Ca:Phy, Phy:Fe, Phy:Zn, Phy:Cu were found to be 0.14–0.29, 1.96–3.86, 5.11–20.5 and 13.0–23.9, respectively. Significant dephytinization, ranging between 35.3 and 69.3% in different varieties, was achieved on exogenous enzymatic treatment. Enzymatic dephytinization in the in vitro simulated gastrointestinal digestion resulted in significant increase in the bioavailability of essential minerals. The increase in bioavailability of calcium, iron, zinc and copper on exogenous enzymatic dephytinization ranged between, respectively (x-folds): 1.30–1.96, 1.11–1.52, 1.22–1.78 and 1.11–1.73.  相似文献

在海南琼中县什运乡采集土壤样品276个,系统测定pH值及氮、磷、钾、钙、镁、锌、硼等含量,按第2次土壤普查土壤养分分级标准和全国农业技术推广服务中心微量元素含量分析要求,对其进行养分状况评价。结果表明,什运乡土壤酸性强;有机质和全氮含量处于中等水平,但土壤碱解氮较高,处于中等偏上水平;无论是全量水平,还是有效态水平,土壤磷、钾含量均处于低至极低水平;中、微量营养元素分布不一,交换性钙含量高而交换性镁含量低,有效锌含量丰富而有效硼含量缺乏。鉴于海南中部山区退化较为严重的土壤养分状况,在发展热带现代农业种植过  相似文献

White and brown ragi (Eleusine coracana) varieties were analysed for tannin, phytate phosphorus, total phosphorus, iron, ionisable iron, zinc and soluble zinc content. White ragi had no detectable tannin while in brown varieties it ranged from 351 to 2392 mg per 100 g. Germination brought about a progressive decrease in tannin and phytate phosphorus and an increase in ionisable ion and soluble zinc content of grain ragi. Both in raw and germinated grain, ionizable iron was significantly higher in white than in brown varieties. While ionisable iron was inversely correlated with the level of tannin and phytate phosphorus, soluble zinc was negatively correlated with phytate phosphorus. After extraction of tannin, ionisable iron of brown ragi rose by 85%. On the other hand, in white varieties, addition of tannin extracted from brown ragi, resulted in a 52–65% decrease in ionisable iron content. These studies indicated that poor iron availability in ragi as judged by its low ionisable iron content was due to the presence of tannin in the grain.  相似文献

More than one-third of the world's population is afflicted by iron (Fe) and zinc (Zn) deficiencies, since cereal grain as a staple food of the people contains low levels or low bioavailability of Fe and Zn because of phytate. In maize, 80% of grain phosphorus (P) is in the form of phytate, and P could be an indicator of phytate content. The objectives of this study were (1) to estimate genetic variation of Fe and Zn in a maize population including P/Fe and P/Zn molar ratios as quantitative traits; (2) to determine relations among yield, P, Fe, Zn, P/Fe and P/Zn molar ratios; and (3) to define the implications of those on biofortification (breeding) programmes. There were significant genetic variations and workable heritabilities for Fe, Zn, P/Fe and P/Zn estimated in 294 F4 lines of a maize population, but there were no associations among six traits according to both simple correlations and principal component analysis. Weak correlations between P and Fe and between P and Zn indicated feasibility of breeding non low-phytic acid maize genotypes with more appropriate phytate/Fe and phytate/Zn relations. Bioavailability of iron and zinc varied substantially in a maize population justifying utilisation of these unique parameters in biofortification programmes.  相似文献

Twenty two lines/accessions belonging to 5 species ofCelosia were analysed for their nutritional and antinutritional composition. The nutrient contents, vitamin C varied from 18.8 to 53.6 mg/100 g, carotenoids 9.1 to 15.1 mg/100g, protein 2.1 to 5.9%, while the antinutritional factors, nitrate 0.18 to 0.46% and oxalate 0.98 to 3.93%. Moisture ranged 81 to 89%. Variation of these parameters with leaf position and the amino acids profile of some promising lines was also evaluated.  相似文献

Different grades of maize flour were produced by dry milling of yellow maize. The chemical composition of wholemeal, three semi-sifted flours and degermed maize was determined, and the nutritional value of the flours were investigated in balance experiments with growing rats. Distinct differences in nutrient and fibre content were found. Amino acid composition was significantly different in the milled fractions, and the content of minerals and phytate in the flours was determined by the extent to which the germ was retained. Phytate: zinc molar ratios ranged from 43 to 2. Weight gain of rats was closely correlated to the concentration of lysine (r=0.99) and tryptophan (r=0.97). Weight gain of rats fed degermed maize was reduced to half of that of rats fed wholemeal. True protein digestibility was high, but protein quality varied widely between the different flour fractions. Energy density of the flours was quite similar. Rats fed wholemeal had the highest intake of zinc and the highest apparent zinc absorption and retention but the lowest femur zinc concentration. Factors present in whole maize may interfere with zinc utilization. The results might indicate an interaction between phytate and fibre. Supplementation of wholemeal with lysine and tryptophan increased the biological value of the protein and the weight gain considerably, but apparent absorption and retention of zinc as well as femur zinc concentration were similar in unsupplemented and supplemented rats. The percentage of zinc absorbed from degermed maize flour was high, but degermed maize has a very low content of minerals and is highly deficient in lysine and tryptophan.  相似文献

Influence of irradiation (0.05–0.20 kGy) and germination (24–120 hours) in distilled and tap water on phytate, protein and amino acids of soybean, was studied. Phytate values significantly decreased with increasing germination period and irradiation dose (P<0.01). Irradiation independently decreased the original phytate (212.0 mg/100 g) to a range value of 205.0–190.0 mg/100 g depending upon dose level. Germination of unirradiated seeds for 120 hours in distilled and tap water lowered the phytate to 55.0 and 94.9 mg/100 g (74.1 and 55.2% reduction) respectively. Maximum destruction of phytate to levels of 20.5 and 50.9 mg/100 g (90.3 and 76.0% reduction) occurred during germination of 0.20 kGy samples for 120 hours in distilled and tap water respectively. Total protein content significantly increased during germination (P<0.05) and the increase was more in tap than distilled water. Germination for 120 hours of untreated seeds in tap water increased the essential and decreased non-essential amino acids while in the 0.10 kGy sample, increases in both cases were observed.  相似文献

Seven seed samples of J. curcas, both in raw and roasted state, sold in some villages in Quintana Roo state, Mexico for human consumption were analyzed for physical characteristics, nutrients and antinutrients. The average seed weight varied from 0.53 to 0.74 g and kernel weight as proportion of raw seed weight was from 61 to 66%. The contents of crude protein, lipid and ash of kernels from raw seeds were 27–30%, 55–62% and 3.7–5.2% respectively. The levels of antinutrients in meal from the raw seeds were: trypsin inhibitor activity (14.6–28.7 mg trypsin inhibited/g), lectin (25.6–52.2 unit; one unit is the reverse of minimum amount of mg meal/ml assay which produced haemagglutination), saponins (1.9–2.3% as diosgenin equivalent) and phytate (8.4–10%). Phorbol esters in kernels from raw seeds were not detected in four samples and in other three samples it ranged from 0.01 to 0.02 mg/g as phorbol-12-myristate 13-acetate equivalent. Roasting of seeds inactivated almost 100% of trypsin inhibitor activity. Although lectin activity reduced on roasting, it was still present in high amounts. Saponins, phytate and phorbol esters were not affected by roasting.  相似文献

Nine species (Seriolina nigrofasciata, Siganus canaliculatus, Rhabdosargus haffara, Scomberomorus commerson, Liza alata, Epinephelus areolatus, Plectorhinchus sordidus, Lethrinus nebulosus and Penaeus semislcatus) of raw fish commonly consumed in Bahrain were analyzed for their proximate, mineral and heavy metal content. The protein content ranged from 17.9-21.8 g/100 g, fat content from 0.80-16.1 g/100 g and energy content from 87.1-216.7 kcal/100 g. The raw fish also had high levels of sodium (82-300 mg/100 g), potassium (210-400 mg/100 g), phosphorous (200-280 mg/100 g), magnesium (23-47 mg/100 g) and zinc (0.0-2.2 mg/100 g). Content of iron, calcium and copper were quite low. The species Penaeus semislcatus had low levels of both lead and mercury (<0.02 microg g(-1)). The maximum level of lead was 0.50 microg g(-1) and mercury was 0.20 microg g(-1). One species (Rhabdosargus haffara) of fish had cadmium levels of 0.03 microg g(-1), while the rest of the fish had less than 0.02 microg g(-1). Overall, fish available in the market of Bahrain are a good source of some essential minerals. Furthermore, the heavy metal content is below the maximum permitted limits and can be safely consumed by the general public. However, monitoring of heavy metals in fish consumed in Bahrain should be done periodically.  相似文献

Two wild and eight domesticated cultivars of finger millet were analyzed to determine their proximate composition and calcium, iron, and amino acid content. Wide variations were observed in the protein (mean values ranged from 7.5 to 11.7%), calcium (376 to 515 mg/100 g), and iron (3.7 to 6.8 mg/100 g) content of the wild and domesticated cultivars. A wild progenitor of finger millet, Ecoracana subsp.africana was significantly higher in protein than four of the six domesticated accessions analyzed. The calcium and iron content of the wild progenitor was also significantly greater than that of two domesticated cultivars. The wild species was also found to be higher in lysine and five other essential amino acids. These results indicate that the nutritional value of finger millet may be significantly improved by selective crossbreeding of the cereal's wild and domesticated cultivars.  相似文献

The effects of cooking, germination, and fermentation on the chemical composition of cowpea were studied. There were noticeable trends in the protein, carbohydrate and crude fiber as a result of the different treatments. Both the germinated and fermented samples contained more ether extractable lipids than the raw and cooked samples. Untreated raw cowpea contained 5.9 mg/g phytic acid, 1.66 mg/g phytate phosphorus, 3.3 mg/g total phosphorus, 56.8 mg/g total sugar, and no reducing sugar. Cooking the dry beans at 100°C for 1 1/2 hours had little effect on the phytic acid and phytate phosphorus. There were, however, significant decreases in total phosphorus and sugars of the cooked beans. After germination for 24 hours, 48 hours and 72 hours respectively, there was a significant decrease in phytic acid and total sugar and increase in total phosphorus and reducing sugar. Similar results were also obtained when the dry beans was fermented for 24 hours, 48 hours and 72 hours respectively.  相似文献

The nutrient and antinutrient components of tubers from seven cultivars ofDioscorea alata were determined. The average crude protein content ofD. alata tubers was 7.4%. Starch (75.6–84.3%) was the predominant fraction of the tuber dry matter. Significant differences in crude protein and starch contents were observed among cultivars. Vitamin C content of the yam tubers ranged from 13.0 to 24.7 mg/100 g fresh weight. The results showed yams to be reasonably good sources of minerals. Phytic acid contents of the yams were low, with values ranging from 58.6 to 198.0 mg/100 g dry matter. Total oxalate levels in yam tubers were found to be in the range of 486–781 mg/100 g dry matter, but may not constitute a nutritional concern since 50–75% of the oxalates were in the water-soluble form. The overall results are suggestive of the nutritional superiority of yams compared to other tropical root crops.  相似文献

The effects of processing (soaking, dehulling, fermentation and heat treatment) on the cooking time, protien, mineral, tannin, phytate and in vitro protein digestibility (IVPD) of the african yambean (AYB) were examined. The cooking time ranged from 90–155 minutes. Soaking reduced cooking time by about 50 percent. Soaking for 12 hours was the most appropriate to reduce cooking time, tannin and phytate levels. It improved in vitro protein digestibility (IVPD). Prolonged soaking (24 hours) decreased calcium (Ca) and iron (Fe) values by 19 percent and 35 percent, respectively. Dehulling showed that Ca, Fe, magnesium (Mg) and zinc (Zn) were concentrated in the seed coat of the AYB. The seeds soaked and dehulled retained Mg and Zn. Dehulling reduced tannin but had no significant effect on phytate and the IVPD of the AYB except for seeds soaked for 12 hours before dehulling. Soaking for 24 hours before dehulling significantly increased crude protein content by 16 percent (p<0.05). Blanching and roasting increased the IVPD by 8–11 percent. Fermentation had no effect on the crude protein, Ca, Fe, Mg and Zn but significantly reduced phytate content of the AYB. Fermentation had no advantage over heat treatment with respect to improving the in vitro protein digestibility of the AYB.  相似文献

Thirty wild fruits, nuts, herbs, spices and leafy vegetables were characterized and their chemical composition determined. Some of them were not only used for food, but for medicine in minor aliments by the natives. Results of the proximate analysis showed that on dry weight basis, the crude protein content ranged from 4.6 to 22.1 percent for spices and herbs, 3.2 to 43.1 percent for fruits and nuts, and 15.9 to 35.7 percent for leafy vegetables. The fat (ether extract) ranged from 7.5 to 36.0 percent for spices and herbs, 1.8 to 72.6 percent for fruits and nuts and 10.6 to 22.6 percent for leafy vegetables. Total carbohydrate content ranged from 34.6 to 71.9 percent for spices and herbs, 11.3 to 76.1 percent for fruits and nuts, and 24.6 to 51.4 percent for leafy vegetables. The wild fruits, nuts and leafy vegetables are high in ascorbic acid (Vitamin C.) Ascorbic acid content ranged from 18 mg/100 g dry sample to 113 mg/100 g sample for fruits and nuts, and 23 mg/100 g to 232 mg/100 g sample for leafy vegetables. The levels for peroxide value and free fatty acids (as percent oleic acid) of the spices are generally low indicating good storage stability of these plant materials. The flavour imparting essential oils (as percent oleoresin) content of the spices/herbs were fairly high and ranged from 0.1 to 5.2 percent.  相似文献

UPAS-120, a high yielding and early maturing variety of pigeon peas releasedby the Department of Plant Breeding, CCS Haryana Agricultural University, Hisar contained a significant amount of phytic acid, i.e. 886 mg/100 g. When it was subjected to various domestic processing and cooking methods viz. soaking (6, 12, 18 h), dehulling, ordinary as well as pressure cooking and germination (24, 36 and 48 h), a drastic decrease in level of phytic acid with a remarkable increase in the HCl-extractability of mono, divalent, andtrivalent ions, like calcium, phosphorus, and iron occurred. Germination (48 h) was found to be the best method for decreasing the phytic acid content, i.e.35 to 39 percent less than the control and significantly (p<0.05) increasingthe non-phytate phosphorus and HCl-extractable phosphorus. Pressure cooking of soaked-dehulled pigeon pea also rendered equally good results. The calcium, phosphorus and iron contents of pigeon pea seeds were 197.3, 473.1, and 9.91 mg/100 g, respectively; some losses varying from 3 to 9 percent were noticed when the legume was subjected to soaking, cooking, and germination but the maximum losses, i.e. 23 percent, occurred when the seeds were dehulled. However, HCl-extractability of Ca, P and Fe improved to a significant extent when the pigeon pea seeds were soaked, soaked-dehulled, cooked and sprouted which may have been due to decrease in the phytate content followed by processing and cooking. The significant negative correlations between the phytic acid and HCl-extractability of minerals of processed pigeon pea strengthens these findings.  相似文献

The proximate composition of three varieties ofPiper guineense (Odusa — Ibibio/Efik) viz. Uyat Odusa (cultivated and peppery), Eting-keni Ikot (wild forest variety) and Eting-keni mben inyang (wild, riverine variety), were determined using available standard methods. Also determined were mineral, antinutrient and ascorbate levels. The cultivated pepperic variety had the highest content of crude protein and moisture (18.9% and 97% respectively) while the wild, riverine variety had the highest content of ether extract, carbohydrate and calories (7.79%, 63.38% and 398 cals respectively). The cultivated variety had appreciable amounts of phosphorus (1.12 mg/100 g), potassium (1.2 mg/100 g), sodium (0.24 mg/100 g), zinc (0.18 mg/100 g), and copper (0.18 mg/100 g) while the forest variety contained more of calcium (12.38 mg/100 g), magnesium (1.21 mg/100 g) and iron (0.85 mg/100 g). The wild riverine variety appeared to have the least mineral content but had the highest ascorbate level of 173.4 mg/100 g. Of four antinutrients assayed, the cultivated pepperic one had the least quantities while the forest variety was highest in hydrocyanic acid (85.8 mg/100 g) and glucosinolates (0.20 mg/100 g). The wild riverine variety had the highest level of total oxalate (165.0 mg/100 g). These quantities are however far below documented toxic levels.  相似文献

Bathua (Chenopodium album) and fenugreek (Trigonella foenum graecum) stored in polyethylene bags and without packaging for 24 or 48 hours in a refrigerator at 5 or 30 °C in polyethylene bags. The fresh leaves were also dried (oven and sun); blanched (5, 10 or 15 min) and cooked in an open pan and a pressure cooker. The processed leaves were analyzed for total and extractable calcium and zinc content. The Ca and Zn content of these leaves varied from 970 to 2230 and 10.50 to 12.30 mg/100 g DM and the percentage HCl-extractability was 80.34 to 83.04 and 82.43 to 83.90, respectively. Non significant effects of drying and storage were observed on total Ca and Zn content and HCl-extractability while blanching and cooking resulted in significant improvement of HCl-extractability of these two minerals. Thus, cooking and blanching are good ways to improve the HCl-extractability of Ca and Zn.  相似文献
