During our screening of plant materials to find new natural fragrance and flavor ingredients, we discovered two series of 3-sulfanylalkyl alkanoates in a peel extract of fruits of wild-growing Poncirus trifoliata (L.) Raf. (Rutaceae), a species closely related to Citrus. The two series belong to alkanoates of 3-methyl-3-sulfanylbutan-1-ol and 3-sulfanylhexan-1-ol, respectively, and thus are members of a family of natural molecules having in common a 1,3-positioned O,S moiety. The alkanoate residues comprise all even-numbered saturated fatty acids from C2 (acetate) to C18 (octadecanoate). Among the 20 sulfur-containing compounds identified, 14 are described for the first time as naturally occurring in a botanical species. Several cysteine-S-conjugates were synthesized as hypothetical precursors of the new volatile sulfur-containing constituents, where after S-(3-hydroxy-1,1-dimethylpropyl)-L-cysteine, S-[3-(acetyloxy)-1,1-dimethylpropyl]-L-cysteine, and S-[1-(2-hydroxyethyl)butyl]-L-cysteine were identified in the fruit peel. No cysteine-S-conjugates were detected in the fruit juice.  相似文献

2-Heptanethiol was identified for the first time as a constituent of red and green bell pepper extracts. The chemical structure of this new aroma compound was proposed on the basis of mass spectra and retention indices and confirmed by chemical synthesis and nuclear magnetic resonance spectroscopy measurements. Its aroma properties were described as sulfury, onion-like, and vegetable-like, reminiscent of bell pepper at lower concentrations, with an orthonasal detection threshold of 10 microg/L of water. No differences in odor note and threshold value were observed for the enantiomeric forms, which were prepared from enantiopure 2-heptanol by tosylation, followed by thioacetylation and reduction, giving the target thiol enantiomers.  相似文献

The volatiles present in fresh, pink-fleshed Colombian guavas ( Psidium guajava, L.), variety regional rojo, were carefully isolated by solvent extraction followed by solvent-assisted flavor evaporation, and the aroma-active areas in the gas chromatogram were screened by application of the aroma extract dilution analysis. The results of the identification experiments in combination with the FD factors revealed 4-methoxy-2,5-dimethyl-3(2 H)-furanone, 4-hydroxy-2,5-dimethyl-3(2 H)-furanone, 3-sulfanylhexyl acetate, and 3-sulfanyl-1-hexanol followed by 3-hydroxy-4,5-dimethyl-2(5 H)-furanone, ( Z)-3-hexenal, trans-4,5-epoxy-( E)-2-decenal, cinnamyl alcohol, ethyl butanoate, hexanal, methional, and cinnamyl acetate as important aroma contributors. Enantioselective gas chromatography revealed an enantiomeric distribution close to the racemate in 3-sulfanylhexyl acetate as well as in 3-sulfanyl-1-hexanol. In addition, two fruity smelling diastereomeric methyl 2-hydroxy-3-methylpentanoates were identified as the ( R,S)- and the ( S,S)-isomers, whereas the ( S,R)- and ( R,R)-isomers were absent. Seven odorants were identified for the first time in guavas, among them 3-sulfanylhexyl acetate, 3-sulfanyl-1-hexanol, 3-hydroxy-4,5-dimethyl-2(5 H)-furanone, trans-4,5-epoxy-( E)-2-decenal, and methional were the most odor-active.  相似文献

The L-cysteine derivatives (R)-2-amino-3-(methyldisulfanyl)propanoic acid (S-methylthio-L-cysteine), (R)-2-amino-3-(propyldisulfanyl)propanoic acid (S-propylthio-L-cysteine), (R)-2-amino-3-(1-propenyldisulfanyl)propanoic acid (S-(1-propenylthio)-L-cysteine), and (R)-2-amino-3-(2-propenyldisulfanyl)propanoic acid (S-allylthio-L-cysteine) were prepared from 3-[(methoxycarbonyl)dithio]-L-alanine, obtained from the reaction of L-cysteine with methoxycarbonylsulfenyl chloride. The occurrence of these S-(+)-alk(en)ylthio-L-cysteine derivatives in onion (Allium cepa L.) was proven by using UPLC-MS-ESI(+) in SRM mode. Their concentrations in fresh onion were estimated to be 0.19 mg/kg S-methylthio-L-cysteine, 0.01 mg/kg S-propylthio-L-cysteine, and 0.56 mg/kg (S-(1-propenyllthio)-L-cysteine, concentrations that are about 3000 times lower than that of isoalliin (S-(1-propenyl-S-oxo-L-cysteine). These compounds were treated with Fusobacterium nucleatum, a microorganism responsible for the formation of mouth malodor. These L-cysteine disulfides were demonstrated to predominantly produce tri- and tetrasulfides. Isoalliin is almost entirely consumed by the plant enzyme alliin lyase (EC 4.4.1.4 S-alk(en)yl-S-oxo-L-cysteine lyase) in a few seconds, but it is not transformed by F. nucleatum. This example of flavor modulation shows that the plant produces different precursors, leading to the formation of the same types of volatile sulfur compounds. Whereas the plant enzyme efficiently transforms S-alk(en)yl-S-oxo-L-cysteine, mouth bacteria are responsible for the transformation of S-alk(en)ylthio-L-cysteine.  相似文献

Volatile sulfur compounds have a low odor threshold, and their presence at microgram per kilogram levels in fruits and vegetables influences odor quality. Sensory analysis demonstrates that naturally occurring, odorless cysteine- S-conjugates such as S-( R/ S)-3-(1-hexanol)- l-cysteine in wine, S-(1-propyl)- l-cysteine in onion, and S-(( R/ S)-2-heptyl)- l-cysteine in bell pepper are transformed into volatile thiols in the mouth by microflora. The time delay in smelling these volatile thiols was 20-30 s, and persistent perception of their odor occurred for 3 min. The cysteine- S-conjugates are transformed in free thiol by anaerobes. The mouth acts as a reactor, adding another dimension to odor perception, and saliva modulates flavors by trapping free thiols.  相似文献

Producing economical yields of bell pepper (Capsicum annuum L.) while conserving water and nutrients requires an integrated approach to fertilization and irrigation. Detailed fertilization recommendations exist for bell peppers grown in Florida, but current irrigation recommendations are based on historical weather data and year-to-year adjustments. The objective of this study was to develop and test a crop factor (CF) for bell peppers grown with plasticulture and irrigated daily. Crop water use (ETc) was calculated daily by multiplying CF with Class A pan evaporation (Ep). Values for the proposed CF were 0.20, 0.40, 0.80, 1.00, and 0.80 for periods 1–2, 3–4, 5–11, 12, and 13 weeks after transplanting, respectively. Daily Ep values were converted, to irrigation volumes using 10 mm Ep = 835 L/100 m of bed length. ‘Brigadier’ bell peppers were established in a factorial combination of 75%, 100%, and 125% of the recommended 224 kg N/ha rate and 33%, 66%, 100%, and 133% of the reference irrigation rate (I3) based on the proposed CF. Soil water tension (SWT) was monitored twice weekly in all the plots receiving the 100% nitrogen (N) rate. The numbers of days SWT remained below the recommended 15 kPa increased quadratically in both years as irrigation rate increased. Only the 100% and 133% I3 irrigation rates maintained SWT within the 0 to 15 kPa range at 15 and 30 cm depths on most days in 2001 and 2002. In 2001, bell pepper yields tended to increase as N rate increased. For 125% N rate, total, marketable, and fancy bell pepper yields responded quadratically to irrigation rates. Highest yields occurred between 115% and 124% of I3. In 2002, bell pepper yield did not respond to irrigation rate, and responded quadratically and linearly for N rates of 75%, 100%, and 125%, respectively. Highest bell pepper yields occurred with 125% N rate and 133% I3 irrigation rate. These results suggest that highest yields of bell pepper grown in the spring with plasticulture may be achieved with a combination of 125% of the University of Florida recommended N rate and irrigation scheduled in real time using 1.25 × CF test values of 0.25, 0.50, 1.25, 1.00, and 1.00 for the periods 1–2, 3–4, 5–11, 12, and 13 weeks after transplanting, respectively, with 10 mm Ep = 835 L/100 m of bed length.  相似文献

The 2-methoxy-3-isobutylpyrazine content in grapes and red wines was assayed by stable isotope dilution gas chromatography-mass spectrometry, following vapor extraction and purification on a cation resin microcolumn. The threshold beyond which the green bell pepper character is marked in wines has been determined. From a comparison of the 2-methoxy-3-isobutylpyrazine concentrations of 50 red Bordeaux and Loire wines from different vintages and grape varieties (Cabernet Sauvignon, Cabernet franc, and Merlot) with the intensity of the green bell pepper character as perceived on tasting, the threshold value was estimated to be 15 ng/L. Statistical analysis of the 2-methoxy-3-isobutylpyrazine concentrations of 89 red Bordeaux wines showed that Cabernet wines were more commonly affected by this vegetative character. Changes in the 2-methoxy-3-isobutylpyrazine concentration as the grapes ripen are affected by the environmental and cultural conditions (soil, climate, training system, etc.). A very good correlation was shown between the breakdown of malic acid and 2-methoxy-3-isobutylpyrazine as the grapes ripened, irrespective of grape variety, type of soil, or weather conditions.  相似文献

When Sauvignon blanc or Gros Manseng grape must was percolated through an immobilized gamma-glutamyltranspeptidase column, there was a significant increase in the concentration of S-3-(hexan-1-ol)-L-cysteine, the precursor of 3-mercaptohexan-1-ol, a compound that contributes to the varietal aroma of wines made from these grapes. Low- and high-resolution liquid secondary ion mass sepectrometry (LSIMS) analyses established the presence of S-3-(hexan-1-ol)-glutathione in Sauvignon blanc must. The identification of this compound suggests that the S-3-(hexan-1-ol)-L-cysteine in grapes is produced by the catabolism of S-3-(hexan-1-ol)-glutathione. As is the case in other plant or animal organisms, S-glutathione conjugates may be involved in certain detoxification systems in vines.  相似文献

Angelica gigas obtained from different geographical regions was characterized using (1)H nuclear magnetic resonance (NMR) spectroscopy and ultraperformance liquid chromatography-mass spectrometry (UPLC-MS) followed by multivariate data analyses. Principal component analysis (PCA) and orthogonal partial least-squares-discriminant analysis (OPLS-DA) score plots from (1)H NMR and UPLC-MS data sets showed a clear distinction among A. gigas from three different regions in Korea. The major metabolites that contributed to the discrimination factor were primary metabolites including acetate, choline, citrate, 1,3-dimethylurate, fumarate, glucose, histamine, lactose, malate, N-acetylglutamate, succinate, and valine and secondary metabolites including decursin, decursinol, nodakenin, marmesin, 7-hydroxy-6-(2R-hydroxy-3-methylbut-3-ethyl)coumarin in A. gigas roots. The results demonstrate that (1)H NMR and UPLC-MS-based metabolic profiling coupled with chemometric analysis can be used to discriminate the geographical origins of various herbal medicines and to identify primary and secondary metabolites responsible for discrimination.  相似文献

该文通过大田试验,比较了地下滴灌与地表滴灌及其不同施肥量对青椒生长的响应。试验设置地下滴灌和地表滴灌2个灌水处理和0、75、150、300 kg/hm2 4个施肥水平,灌水周期为4 d。另外设1个畦灌对照处理。结果表明,2 a中地下滴灌产量均高于地表滴灌,2007年平均高4%,2008年平均高13%。而地下滴灌耗水量低于地表滴灌,2007年平均低6.7%,2008年平均低7.3%。地下滴灌和地表滴灌0~40 cm土层的根系总根长分别是畦灌的2.44和1.46倍,且地下滴灌10 cm以下各层的根长占总根长的百分比,比地表滴灌高7%,这说明地下滴灌不仅促进作物根系的生长,而且使根系更多的扎入较深土层。地下滴灌150 kg/hm2施氮量为青椒的最优灌溉施肥策略。  相似文献

Gas chromatography-mass spectrometry (GC-MS) and gas chromatography-olfactometry (GC-O) were used to determine the aromatic composition and aroma active components of commercial banana essence and fresh banana fruit paste. Totals of 43 and 26 compounds were quantified in commercial banana essence and fresh banana fruit paste, respectively. Five new components in commercial banana essence were identified as methyl butyrate, 2,3-butanediol diacetate, 2-hydroxy-3-methylethylbutyrate, 1-methylbutyl isobutyrate, and ethyl 3-hydroxyhexanoate. A total of 42 components appear to contribute to the aromatic profile in banana. Isoamyl acetate, 2-pentanol acetate, 2-methyl-1-propanol, 3-methyl-1-butanol, 3-methylbutanal, acetal, isobutyl acetate, hexanal, ethyl butyrate, 2-heptanol, and butyl butyrate had high concentrations and were most detected by GC-O panelists in the commercial banana essence. Volatile components found only in fresh banana fruit paste that were detected by aroma panelists include E-2-hexenal, limonene, and eugenol.  相似文献

Syntheses of the metabolites from platyphylloside, a phenol causing digestibility inhibition in rumen fluid, have been performed to identify the active metabolite. 1,7-Bis(4'-hydroxyphenyl)-3-heptanone (3-platyphyllone), racemic, and the two enantiomers of 1,7-bis(4'-hydroxyphenyl)-3-heptanol (centrolobol) and 1,7-bis(4-hydroxyphenyl)heptane (platyphyllane) were synthesized and tested regarding digestibility inhibition in vitro in cow rumen fluid. All compounds tested induced a decreased digestion. Centrolobol was found to be the metabolite causing the observed effect, and (R)-centrolobol was found to be the enantiomer formed in the rumen liquor in vitro.  相似文献

Potassium (K) is a major nutrient element that has effects on growth, yield, and quality production of agricultural crops. In the present study, the effects of various K concentrations in a nutrient solution including 150, 235, 300, 400, or 500 mg K L?1 were evaluated on two pepper cultivars; chili pepper (Capsicum annuum Avicolare) and bell pepper (California Wonder) under greenhouse conditions. Hoagland's formula was used for preparation of nutrient solutions. The vegetative growth parameters including plant height, leaf area, SPAD value, and shoot fresh weight were significantly increased by 300 mg L?1 K in both cultivars. The highest yield and fruit quality parameters including fruit length/diameter ratio, fruit dry matter percentage, fruit vitamin C, total soluble solids, and titratable acidity in chili pepper and bell pepper were obtained under application of 300 and 400 mg K L?1 in nutrient solution, respectively. In either cultivar there was increase in leaf K, nitrogen, and zinc concentrations, while in bell pepper calcium was reduced by higher K levels in the nutrient solution. The results indicate that for better growth and quality production of pepper, higher levels of K in nutrient solutions can be beneficial.  相似文献

Forty-one thiols, mainly β-sulfanylalkyl acetates, β-sulfanylalkyl alcohols, and β-sulfanylalkyl carbonyls, were recently evidenced in hop. In a beer hopped with the Tomahawk cultivar, most of them were found at higher levels than expected. The aim of the present work was to investigate the polyfunctional thiols in beers hopped with different varieties. A few thiols proved not to come only from hop (mainly 2-sulfanylethyl acetate, μg/L levels, and 1-sulfanylpentan-3-one and 1-sulfanylpentan-3-ol, ng/L levels, internal standard (IST) equivalents). The thiol profile of Saaz-hopped beer proved similar to that of the reference beer produced without hop. A high level of 3-sulfanyloctan-1-ol emerged as an indicator of the use of Tomahawk hop (140 ng/L, IST equivalents; FD (flavor dilution) = 65536). In both Cascade- and Tomahawk-hopped beers, 3-sulfanylhexan-1-ol and 3-sulfanylheptan-1-ol were smelled at high flavor dilutions, although only for the latter, significant amounts of the unreduced 3-sulfanylheptanal were found in hop. As already claimed for hop authentication, 3-sulfanyl-4-methylpentan-1-ol remains a good marker of Nelson Sauvin-hopped beers (548 ng/L, IST equivalents; FD = 65536), together with 4-sulfanyl-4-methylpentan-2-one (128 ng/L, FD = 4096). As illustrated by the huge production occurring during fermentation, accurate prediction of hop varietal impact requires quantitating thiol adducts in hop. S-3-(1-Hydroxyhexyl)cysteine was evidenced here for the first time in Cascade hop.  相似文献

Abstract

There is a growing realization that an increasing number of countries are approaching full utilization of their conventional water resources and that the quantity of good-quality water supplies available to agriculture is diminishing. Effects of irrigation regime and irrigation water salinity on bell pepper including yield, fruit number and quality, vegetative and root growth, evapotranspiration and water use efficiency were investigated in this study by conducting two different experiments. Six different salinity levels of irrigation water and four different irrigation regimes were used as treatments. Considering the results from irrigation water salinity experiment, it can be concluded that as soil salinity increases, water consumption, water use efficiency, yield and other vegetative growth parameters of bell pepper were decreased. A polynomial relationship between soil salinity and water consumption was observed. It was found that bell pepper is moderately sensitive to salinity with a 1.2 dS m?1 threshold and a 10.9% slope value. In the irrigation regime experiment, limited irrigation caused decreases in water consumption, yield and vegetative growth of bell pepper. Yield response factors were close in the cases of irrigation regime (1.50) and irrigation water salinity (1.40). Total soluble solids of bell pepper were increased due to both irrigation water salinity and water application rate but not dry matter ratio. Considerable water consumption decreases because of salinity were determined. Therefore, the effect of irrigation water salinity should be considered in irrigation management to prevent excess saline water application and to protect the environment.  相似文献

The study was set up to evaluate the efficiency of amino acids and seaweed on vegetative growth, reproductive phase, yield, and postharvest storage quality of hydroponically grown bell pepper cultivars “Sven Rz F-1” and “Red Knight.” Different concentrations of amino acid and seaweed were sprayed on bell pepper plants under hydroponic conditions. Pre-harvest foliar application of amino acids and seaweed significantly increased plant height, number of leaves, leaf area, yield per plant, number of marketable fruits per plant, average fruit diameter, fruit wall thickness, and average single fruit weight. Amino acid and seaweed significantly improved postharvest physicochemical quality of both bell pepper cultivars under extended cold storage conditions. Conclusively, amino acid as well as seaweed extract not only improved growth, development, yield, and overall quality of bell pepper cultivars but also increased storage life with reduced weight loss and decay along with better physicochemical quality.  相似文献

临界氮浓度稀释曲线是诊断作物氮营养状况的有效手段。该研究基于2 a温室小区试验,以参考作物蒸发蒸腾量(reference crop evapotranspiration,ET0)为基准,设置4个灌溉水平(105%ET0、90%ET0、75%ET0、60%ET0)和4个氮素水平(300、225、150、75 kg/hm2),构建和验证基于地上部生物量的甜椒在不同水分条件下的临界氮浓度稀释曲线经验模型。结果表明,植株氮素吸收量、地上部生物量、经济产量和水分利用效率(water use efficiency,WUE)随灌水量增加呈先增加后减小的趋势;灌溉水平75%ET0和90%ET0下,最优施氮量差异较小,且可获得较高经济产量和WUE,但经济产量和WUE不能同时达到最佳。75%ET0灌溉水平可获得高于90%ET0灌溉水平约11%的水分利用效率,且经济产量仅降低约3%,鉴于研究区水资源较短缺,灌水量75%ET0施氮量190 kg/hm2左右为最佳策略。该研究可为西北地区温室甜椒实时精准灌水施氮提供理论依据和技术支持。研究可为西北地区温室甜椒实时精准灌水施氮提供理论依据和技术支持。  相似文献

The concentrations of 19 odorants, recently characterized by GC-olfactometry and aroma extract dilution analysis as the most odor-active compounds in raw hazelnuts, were quantitated by stable isotope dilution assays (SIDA). Calculation of odor activity values (OAV) on the basis of odor thresholds in oil revealed high OAVs, in particular for linalool, 5-methyl-4-heptanone, 2-methoxy-3,5-dimethylpyrazine, and 4-methylphenol. A model mixture in sunflower oil containing the 13 odorants showing OAVs above 1 in their natural concentrations resulted in a good similarity compared to the overall nut-like, fruity aroma of the raw hazelnuts. Quantitation of the 25 most odor-active compounds in roasted hazelnut paste by SIDA showed clear changes in the concentrations of most odorants, and formation of new odor-active compounds induced by the roasting process was observed. The highest OAVs were calculated for 3-methylbutanal (malty), 2,3-pentanedione (buttery), 2-acetyl-1-pyrroline (popcorn), and (Z)-2-nonenal (fatty), followed by dimethyl trisulfide, 2-furfurylthiol, 2,3-butanedione, and 4-hydroxy-2,5-dimethyl-3(2H)-furanone. The aroma of a model mixture containing the 19 odorants with OAVs above 1 in their actual concentrations in the roasted nut material was judged to elicit a very good similarity to the popcorn-like, coffee-like, and sweet-smoky aroma of the roasted hazelnut paste. New SIDAs were developed for the quantitation of 5-methyl-4-heptanone, 5-methyl-(E)-2-hepten-4-one, 2-thenylthiol, and 3,5,5-trimethyl-2(5H)-furanone.  相似文献

Irrigation and nitrogen fertilization are two important aspects of bell pepper production. Yet, limited information is available on the effect of irrigation on foliar nutrient content. Bell pepper were grown on bare ground under two nitrogen fertilization rates (11 and 19 kg N week‐1) and irrigated according to an irrigation scheduling model based on weather data and crop age. Eight irrigation rates ranged between 36 and 148% of the model rate. Leaf samples were taken at first bloom (62 days after transplanting, DAT) and after final harvest (84 DAT). Yield response and the foliar content of all essential elements determined [nitrogen (N), phosphorus (P), potassium (K), calcium (Ca), magnesium (Mg), boron (B), copper (Cu), iron (Fe), molybdenum (Mo), manganese (Mn), zinc (Zn)] responded linearly or quadratically to irrigation rates and most foliar nutrient contents remained within or above the sufficiency range. Foliar mineral content tended to be lower at 84 DAT as compared to 62 DAT. Only Ca became deficient under high irrigation rates on 84 DAT. Current fertilization recommendations for bell pepper and 100% of the model irrigation rate resulted in highest yield. These results suggest that the high N rate supplied as calcium nitrate should be used when multiple bell pepper harvests are expected.  相似文献

A transition period of at least 2 years is required for annual crops before the produce may be certified as organically grown. There is a need to better understand the various management options for a smooth transition from conventional to organic production. The purpose of this study was to evaluate the effects of different organic amendments and biofertilizers (BFs) on productivity and profitability of a bell pepper–french bean–garden pea system as well as soil fertility and enzymatic activities during conversion to organic production. For this, the following six treatments were established in fixed plots: composted farmyard manure (FYMC, T1); vermicompost (VC, T2); poultry manure (PM, T3) along with biofertilizers (BF) [Rhizobium/Azotobacter + phosphorus solubilizing bacteria (Pseudomonas striata)]; mix of three amendments (FYMC + PM + VC + BF, T4); integrated nutrient management (FYMC + NPK, T5); and unamended control (T6). The yields of bell pepper and french bean under organic nutrient management were markedly lower (25.2–45.9% and 29.5–46.2%, respectively) than with the integrated nutrient management (INM). Among the organic treatments, T4 and T1 produced greater yields of both bell pepper (27.96 Mg ha?1) and french bean (3.87 Mg ha?1) compared with other treatments. In garden pea, however, T4 gave the greatest pod yield (7.27 Mg ha?1) and was significantly superior to other treatments except T5 and T1. The latter treatment resulted in the lowest soil bulk density (1.19 Mg m?3) compared with other treatments. Similarly, soil organic C was significantly greater in all the treatments (1.21–1.30%) except T2 compared to T6 (1.06%). Plots under INM, however, had greater levels of available nitrogen–phosphorus–potassium (NPK) than those under organic amendments. T1 plots showed greater dehydrogenase and acid phosphatase activities compared with other treatments. However, T4 and T5 plots had greater activities of β-glucosidase and urease activities, respectively. The cost of cultivation was greater under organic nutrient management (except T2) compared with INM. The latter treatment gave greater gross margin and benefit/cost (B/C) ratio for all vegetables, except that T2 gave greater B/C ratio in garden pea compared with other treatments. We conclude that T1 and T4 were more suitable for enhancing the productivity of bell pepper–french bean–garden pea system, through improved soil properties, during transition to organic production.  相似文献
