Three grazing experiments were conducted to determine the effect of level of endophyte infection, rate of N fertilization of tall fescue grass, grazing period, and paddock exchange on selected chemical properties of four bovine carcass tissues. Samples of semitendinosus and longissimus muscle and of subcutaneous and perinephric adipose tissue were excised from the left side of each carcass. In Exp. 1, percentage of stearic acid was higher (P less than .05) and percentages of palmitoleic and oleic acid were lower (P less than .05) in all tissues from steers grazed on LELN Au-Triumph fescue than in tissues from steers grazed on LELN KY-31 fescue. Grazing periods of 175 or 245 d or paddock exchange (Exp. 2) had no significant effect on proximate composition of semitendinosus and longissimus muscles; however, moisture content was higher (P less than .05) in the semitendinosus muscle from steers grazed on 100% (100E) endophyte-infected KY-31 fescue. Forage treatment, grazing period, and paddock exchange (Exp. 2 and 3) had no significant effect on percentage of saturated fatty acids in the subcutaneous, semitendinosus, and longissimus tissue samples. Twenty-four Suffolk x Hampshire ram lambs (average 46 kg) were assigned to one of three diets containing rapeseed meal (RM), soybean meal (SBM), or whole rapeseed-soybean meal (RSSBM) as the protein source. Diets contained 75% roughage, 14% CP and 2.0 Mcal of ME/kg and lambs were allowed ad libitum access to diets for 35 d. Lipid composition of the longissimus, semimembranosus, and triceps brachii muscles and their corresponding s.c. adipose tissue was determined by gas-liquid chromatography (GLC). The total lipid content in either muscle or subcutaneous fat was not different (P greater than .01) by diet. In lean tissue, palmitic and palmitoleic acids were higher and stearic acid was lower (P less than .01) in rams fed RM than in rams fed RSSBM or SBM, regardless of anatomical location. In the s.c. adipose tissue, the amounts of myristoleic, pentadecylic, and palmitoleic acids were lower and the amount of stearic acid was higher (P less than .01) in rams fed RSSM than in those fed RM or SBM, regardless of anatomical location. The semimembranosus and triceps brachii muscles from all treatments contained 12 to 19% more polyunsaturated fatty acids (PUFA) than the longissimus muscle. The cholesterol content of the three muscles was highest in SBM-fed lambs, lowest in RM-fed lambs, and intermediate in RSSBM-fed lambs. One hundred forty British x Exotic crossbred, yearling steers (370 kg) were used in a 2 x 2 factorial experiment to evaluate main effects and the interaction of grain type (steam-flaked sorghum grain [SFSG] or steam-flaked corn [SFC]) and level of supplemental far (0 or 4% yellow grease [YG]) on feedlot performance, diet NE concentration, carcass traits, and chemical composition and sensory properties of longissimus muscle. Steer performance and estimated dietary NEm and NEg values were not different between SFSG and SFC. Supplemental YG improved (P less than or equal to .05) gain/feed and estimated NEm and NEg of both SFSG and SFC diets. Compared with steers fed SFSG, steers fed SFC had a more yellow (P less than .05) subcutaneous fat color. Supplemental YG had an additive effect (P less than .025) on yellow color of subcutaneous fat but improved (P less than .08) the lean color of longissimus muscle. Grain type or supplemental YG had no effect on sensory properties or mechanical shear of longissimus muscle. Longissimus muscle cholesterol content was elevated (P less than .05) by supplemental YG (.49 vs .52 mg/g of wet tissue for 0 vs 4% YG, respectively); however, the biological significance of this result is questionable. Similarly, effects of YG on increased (P less than .05) stearic acid concentration and a higher concentration (P less than .05) of linoleic acid measured in longissimus muscle of steers fed SFSG vs SFC were small in magnitude. We conducted an experiment to determine the effects of dietary copper (Cu) source and level on carcass characteristics, longissimus muscle fatty acid composition, and serum and muscle cholesterol concentrations in steers. Sixty Angus and Angus x Hereford steers were stratified by weight and initial liver Cu concentration within a breed and randomly assigned to treatments. Treatments consisted of: 1) control (no supplemental Cu); 2) 20 mg Cu/kg DM from Cu sulfate (CuSO4); 3) 40 mg Cu/kg DM from CuSO4; 4) 20 mg Cu/kg DM from Cu citrate; 5) 20 mg Cu/kg DM from Cu proteinate; and 6) 20 mg Cu/kg DM from tribasic Cu chloride. A corn silage-soybean meal-based diet was fed for 56 d. Steers were then switched to a high-concentrate diet. Equal numbers (n = 5) of steers per treatment were slaughtered after receiving the finishing diets for either 101 or 121 d. Serum cholesterol was not affected by treatment during the growing phase but was decreased (P < .05) in steers supplemented with Cu by d 84 of the finishing period and remained lower (P < . 05) at subsequent sampling periods. Longissimus muscle cholesterol concentration tended to be reduced (P < .11) by Cu supplementation. Hot carcass weight and backfat were lower (P < .05) in animals receiving supplemental Cu. However, Cu-supplemented and control steers had similar marbling scores. Longissimus muscle polyunsaturated fatty acid concentrations (18:2 and 18:3) were increased (P < .07) and saturated fatty acid concentrations tended (P < . 11) to be reduced by Cu supplementation. These results indicate that as little as 20 mg of supplemental Cu/kg diet can reduce backfat and serum cholesterol and increase muscle polyunsaturated fatty acids in steers fed high-concentrate diets.  相似文献

Fifty-eight Holstein and 58 crossbred beef steers were individually fed one of four isonitrogenous diets to evaluate the effects of forage source (corn silage and alfalfa haylage) and protein source (soybean meal and fish meal) on feedlot performance. Phase 1 diets (up to 354 kg of BW) were 40% forage and 60% concentrates and were fed for 70 to 136 d (depending on diet and breed group). Phase 2 diets (354 kg of BW until slaughter) were 20% forage and 80% concentrates and were fed for 127 to 150 d (depending on diet and breed group). Slaughter end points were .6 cm of 12th rib fat for Holsteins and 1.0 cm of rib fat for crossbreds using real-time ultrasonic estimates. The steers were fed for a maximum of 330 d each year. Forage source was a significant component of variation for most growth, efficiency, and carcass traits. Holstein and crossbred steers fed alfalfa haylage had significantly lower average daily gain, feed efficiency, dressing percentage, and empty body fat and required more days on feed to reach slaughter end points, but had higher total feed energy intake available for production. Steers fed corn silage diets had significantly greater energetic efficiency (P less than .05) than those fed alfalfa haylage, due to increased use of ME to produce fat in the carcass. Protein type did not influence gain, feed or energetic efficiency, energy intake, or most carcass traits. A significant protein system x forage source interaction among the four diets was detected for crossbred steers fed corn silage and fish meal, for which there was significantly greater feed conversion with lower energy intake above maintenance, possibly due to better fiber digestion and(or) amino acid flow to the lower tract. Alfalfa haylage plus soybean meal diets decreased (P less than .05) the percentage of Holsteins grading USDA Choice or higher. These results indicate that corn silage, because of greater energy concentration, was a more desirable forage in feedlot diets composed of less than or equal to 40% forage and that protein type (soybean meal and fish meal) in growing diets is not an important factor in feedlot performance or carcass traits of Holstein or crossbred steers that are fed these diets.  相似文献

To investigate the impact of dietary whole cottonseed (WCS) level on fatty acid composition, growth, and carcass traits, 45 Hereford steers were assigned to diets containing 0, 15, or 30% dietary WCS. The 15 and 30% WCS contributed an estimated 3.3 and 6.6% additional lipid, respectively, to the diets. After being fed for 54 d, all animals were weighed and slaughtered, and carcass measurements were obtained. There were no differences (P greater than .05) among dietary treatment groups in live weight or ADG for the 54-d feeding period. Control steers had larger (P less than .05) longissimus muscle areas than steers fed 30% WCS, which accounted for the advantage in yield grade (P less than .05) exhibited by the control group. Feeding of 30% WCS resulted in minor increases in linoleic and total polyunsaturated fatty acid content of perinephric fat expressed in both normalized (area percentage) and gravimetric (g/100 g of fresh tissue) formats. There were no significant differences in the monounsaturated or saturated fatty acid content of adipose tissues from animals fed the different diets. Subcutaneous adipose tissue samples were higher (P less than .01) in total unsaturates but had lower (P less than .05) proportions of C18:0 and C18:1 than perinephric samples. Feeding WCS at the levels reported herein only had minor effects on fatty acid composition of beef adipose tissues.  相似文献

Sixty ribeye steaks were used to determine the effects of anabolic implants on i.m. lipid composition of beef steers. Steaks were obtained from carcasses (346 kg) of steers assigned to four treatment groups (C = nonimplanted control; ET = 28 mg of estradiol benzoate plus 200 mg of trenbolone acetate on d 0; ET/ET = ET on d 0 and d 61; and S/ET = 20 mg of estradiol benzoate plus 200 mg of progesterone on d 0 and ET on d 61) and fed a high-concentrate diet for 127 d. Total fatty acid content of the longissimus was less (P < .05) for implanted steers. Implanting increased (P < .05) stearic and linolenic acid percentages and reduced (P < .05) oleic acid percentage but did not alter (P > .05) percentages of other fatty acids. These changes translated into increased (P < .05) percentages of saturated fatty acids and reduced (P < .05) monounsaturated fatty acids in the longissimus of implanted steers. However, on a per-steak weight basis, implanting did not alter (P > .05) the amounts of any of the individual fatty acids, but it increased (P < .05) the total cholesterol amount. Implanting with an estrogenic compound first reduced (P < .05) the percentage and total amounts of linoleic and polyunsaturated fatty acids. On a percentage basis, implanting alters fatty acid amounts; however, when the increase in ribeye size with implanting is accounted for and fatty acids are evaluated on a per-steak basis, these differences are not significant.  相似文献

Tall fescue hay (H) supplemented with corn and urea (HU) or corn gluten meal (HCGM) and ammoniated tall fescue hay supplemented with corn (AH) or corn gluten meal (AHCGM) were fed to steers in two 4 X 4 Latin-square trials. Diets were fed to four Angus-Hereford steers (550 kg) at equal intakes in trial 1 and to four Hereford steers (350 kg) at ad libitum intakes in trial 2. Ammoniation reduced cell wall concentrations of p-coumaric acid and ferulic acid by 48 and 67%, respectively. Concentrations of other phenolics were also reduced. Apparent total tract digestibilities of vanillin, p-coumaric acid and ferulic acid were lower (P less than .05, .001 and .01, respectively) when nontreated hay was fed in trial 1, but were not different between hay types in trial 2. In trial 1, greater negative intestinal digestibilities of p-coumaric acid (P less than .001) and vanillin (P less than .05) occurred for steers fed HU and HCGM vs AH and AHCGM diets. Digestibilities of neutral detergent fiber (NDF) and acid detergent fiber (ADF) were greater (P less than .001) for steers fed ammoniated hay diets in both trials and greater (P less than .05) for HCGM vs HU in trial 1. More than 96% of the NDF and ADF digested by steers in trial 1 was digested in the stomach. Intakes of digestible NDF and ADF, but not indigestible NDF or ADF, were higher (P less than .001) for steers fed AH and AHCGM in trial 2. In situ dry matter disappearance rate of ammoniated hay was greater (P less than .05) than that of nontreated hay, but rate of cotton thread disappearance from bags suspended in the rumen of steers fed the various diets was similar among treatments. In both trials, feeding ammoniated hay resulted in higher (P less than .05) ruminal concentrations of acetate and higher (P less than 0.05) acetate:propionate ratios. Ruminal liquid dilution rates were lower (P less than .05) for steers fed AH and AHCGM in trial 1, but were not different in trial 2. Ruminal dry matter concentration and solids dilution rate were not affected by diet in either trial. The results are interpreted to indicate that increased intake of ammoniated hay is a result of increased rate and extent of fiber digestion.  相似文献

Crossbred steers (n = 136) were used to assess breed differences in growth performance, carcass characteristics, fatty acid composition (total lipids and phospholipids), and palatability attributes of longissimus muscle. A multiple regression model was applied to crossbreeding data to estimate genetic differences between Simmental and Red Angus at the same level of backfat finish (10 mm). Simmental spent 71 more (P < 0.001) days on feed to acquire the same degree of backfat thickness as Red Angus, had heavier (P < 0.001) slaughter weights, larger (P = 0.002) longissimus muscle area, and increased (P = 0.023) lean yield. Average daily gain did not differ (P = 0.297) between breeds. Simmental were less (P = 0.012) efficient in converting feed to gain than Red Angus. Generally, there were few breed differences in palatability attributes for longissimus and semitendinosus muscles, with the exception of increased (P < 0.05) beef flavor scores for Simmental beef vs Red Angus beef across both muscles. For total lipids, concentrations of myristoleic acid (14:1), palmitoleic acid (16:1), and vaccenic acid (18:1n-7), along with n-6 to n-3 fatty acid (n-6:n-3) ratio, were greater (P < 0.05) in Simmental than Red Angus. In contrast, concentrations of margaric acid (17:0), eicosapentaenoic acid (20:5n-3), and total n-3 polyunsaturated fatty acids (n-3 PUFA) were greater (P < 0.05) in Red Angus than Simmental. For phospholipids, Simmental had lower (P < 0.05) amounts of 20:5n-3, docosahexaenoic acid (22:6n-3), and n-3 PUFA, with a greater (P = 0.017) n-6:n-3 ratio. Activity of delta9-desaturase enzyme in the conversion of palmitic acid (16:0) to 16:1 was greater (P = 0.001) in total lipids from Simmental as compared with Red Angus. A genetic basis for fatty acid differences is suggested, although the biological and practical significance needs to be demonstrated.  相似文献

本研究选择国外猪种杜洛克和中国地方猪深县猪体重 95 kg 的阉割公猪各 5 头,比较 2 个猪品种背最长肌之间肉质、氨基酸、脂肪酸和微量元素的差异。结果表明:杜洛克猪的肌内水分、肉色、大理石纹、滴水损失、粗蛋白质和脂肪含量低于深县猪(P<0.01);杜洛克猪背最长肌中谷氨酸、天冬氨酸、精氨酸、组氨酸、丝氨酸、脯氨酸、甘氨酸、苏氨酸、半光氨酸、丙氨酸、缬氨酸、苯丙氨酸、异亮氨酸、酪氨酸、亮氨酸、呈味氨基酸总量、必需氨基酸和总氨基酸含量低于深县猪(P<0.01);杜洛克猪背最长肌的饱和脂肪酸含量棕榈酸、豆蔻酸、硬脂酸和花生四烯酸多不饱和脂肪酸亚油酸和亚麻酸低于深县猪(P<0.01);单不饱和脂肪酸棕榈油酸含量低于深县猪(P<0.01),而油酸没有显著性差异;杜洛克猪背最长肌中微量元素钾、锶、铜、锌、硅和铬含量均低于深县猪(P<0.01),镍差异显著(P<0.05)。结果显示,中国地方猪深县猪在肉质及营养价值方面优于瘦肉型的杜洛克猪,为深县猪的品种资源保护和肉产品的开发利用提供依据。  相似文献

The effect of breed and diet on insulin response to glucose challenge and its relation to intramuscular fat deposition was determined in 36 steers with 12 each of greater than 87% Wagyu (referred to as Wagyu), Wagyu x Limousin, and Limousin breeds. Weaned steers were blocked by weight into heavy, medium, and light calves and placed in six pens with two pens per weight type and with two steers of each breed per pen. Three pens with steers from each weightclass were fed backgrounding and finishing diets for 259 d, while the other three pens were fed the same diets where 6% of the barley grain was replaced with sunflower oil. Prior to initiation of the finishing phase of the study the intravenous glucose tolerance test (VGTIT) was conducted in all steers. Once steers were judged as carrying adequate 12th-rib fat, based on weight and days on feed, they were harvested and graded and samples of the longissimus muscle were procured for determination of fat content and fatty acid composition. Dietary oil improved (P = 0.011; 0.06) ADG and feed conversion efficiency of steers during the latter part of backgrounding and only ADG during early part ofthe finishing period. Generally percent kidney, pelvic, and heart fat was the only adiposity assessment increased (P = 0.003) by dietary oil. The IVGTT results indicated that insulin response to intravenous glucose was lower in Limousin steers than in Wagyu steers. Dietary oil decreased (P = 0.052) fasting plasma insulin concentration in Wagyu steers compared with Limousin steers. The correlation coefficients among the IVGTT measures and intramuscular fat content or marbling score were less than 0.4, and only a negative trend existed between fasting insulin and USDA marbling scores. However, the carcasses of the Wagyu steers graded US Choice, and 66% of the Wagyu carcasses graded US Prime, which were substantially better than the quality grades obtained for the carcasses from the other breed types. Dietary oil did not affect muscle fat content but increased (P = 0.01) conjugated linoleic acid (CLA) concentrations by 339%. Results indicated that IVGTT measures were not appropriate indices of marbling potential in cattle and that dietary oil can enhance CLA content of beef.  相似文献

Eight MARC III composite (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) steers weighing approximately 350 kg were fed 0 or 3 ppm of the beta-adrenergic agonist L644,969 (Merck Sharp and Dohme Laboratories, Rahway, NJ) for 6 wk in a high-concentrate diet. Feed efficiency was higher (P less than .05) in beta-adrenergic agonist-fed steers at 1, 3, 5, and 6 wk on trial. Average daily gain was greater (P less than .05) in beta-adrenergic agonist-fed steers at 3, 5, and 6 wk on treatment. Fractional degradation rate (percentage/day) of skeletal muscle myofibrillar protein was 27.1% lower (P less than .05) in beta-adrenergic agonist-fed steers at 3 wk on trial. Fractional accretion rate (percentage/day) of skeletal muscle myofibrillar protein in beta-adrenergic agonist-fed steers was higher (P less than .05) at 1, 3, 5, and 6 wk on trial. The beta-adrenergic agonist-fed steers had heavier (P less than .05) carcasses (9.6%), larger (P less than .05) longissimus muscle areas (24.3%), and lower (P less than .05) USDA yield grades (43.8%). Marbling degree, USDA quality grade, kidney, pelvic, and heart fat percentage, and 12th rib fat thickness were not different (P greater than .05). Calpastatin activity was higher (P less than .05) in muscle from the beta-adrenergic agonist-fed steers at 0 and 7 d postmortem. In four feeding trials with beef steers, corn silage (CS), alfalfa hay (AH), and alfalfa silage (AS) were compared as roughage sources in dry-rolled (DRC); dry whole (DWC); ground, high-moisture (GHMC); and whole, high-moisture corn (WHMC) fattening diets. In processed corn diets (DRC and GHMC), steers fed CS had lower DMI (P less than .05) and feed:gain ratios (P less than .10) than steers fed AS as the roughage source. In a separate trial, greater gains (P less than .10) and lower feed:gain ratios (P less than .05) were found during the initial feeding period, which included the adaptation phase, for steers fed CS vs steers fed AH as the roughage source. Over the entire feeding period, lower (corn type x roughage source interaction, P less than .05) feed:gain ratios were found in GHMC diets when CS was fed as the roughage source; feed:gain ratios were similar in steers fed DRC diets containing either CS or AH. Over the entire feeding period, similar performance was found among steers fed the various roughage sources in DWC diets; however, with WHMC diets, steers fed AS as the roughage source had lower feed:gain ratios than did steers fed AH (P less than .05) or CS (P greater than .10). In the processed corn diets, high correlations were found between diet NDF digestibility and gain (r = .80), intake (r = .68), and feed:gain ratios (r = -.66); similar trends were found in WHMC diets but not in DWC diets. These results suggest that the ideal roughage source to complement finishing diets may depend on corn processing method and feeding period (adaptation vs finishing).  相似文献

Fatty acid composition of total lipid extracts of muscle and adipose samples from crossbred bulls (N = 34) and steers (N = 35) was determined by gas-liquid chromatography. Samples of semitendinosus, triceps brachii and longissimus muscle and of subcutaneous and perinephric adipose tissue were excised from the right side of each carcass. In addition, thin-layer chromatography was utilized to obtain phospholipid and triacylglycerol fractions from total lipid extracts of semitendinosus and longissimus muscle and subcutaneous adipose tissue from 10 bull and steer cohorts (N = 20). The most prominent sex condition effect was in percentage of total poly-unsaturated fatty acids (PUFA). Bull tissues contained higher (P less than .01) percentages of PUFA than those of steers at all sampling sites. This reflected higher percentages of linoleate (C18:2), linolenate (C18:3) and arachidonate (C20:4) in bull tissues. Most of the PUFA were present as phospholipids in muscle samples. The fatty acid composition of muscle phospholipids was similar regardless of sex condition or muscle sampled. Total lipid extracts of semitendinosus and triceps brachii muscles of both bulls and steers contained from 6 to 10% more unsaturated fatty acids (UFA) compared with M. longissimus. Muscle triacylglycerols contained relatively high percentages of saturated fatty acids (SFA). Semitendinosus and longissimus samples from steers contained higher (P less than .05 and P less than .01, respectively) percentages of total SFA than those from bulls. Steer samples contained slightly higher percentages of palmitic acid (C16:0) compared with bulls at all sampling sites, and this difference was significant for M. longissimus. The fat:lean ratio of muscle tissue is the major factor that determines fatty acid composition.  相似文献

This study evaluated the effect of barley varieties in the diets of finishing steers on carcass composition, fat, and lean color and the fatty acid profile of subcutaneous fat. Crossbred steers (391 kg initial BW) were assigned randomly to one of five finishing diets composed primarily of corn (n = 9), Morex barley (n = 9), Steptoe barley, (n = 9), or two experimental barley varieties SM3 (n = 9) and SM5 (n = 9). Grains were cracked prior to feeding. Diets were formulated (DM basis) to be isonitrogenous (2.24% N) and isocaloric (2.01 Mcal/kg NEm and 1.35 Mcal/kg NEg). Steers were slaughtered according to industry-accepted procedures when it was visually estimated that 70% of carcasses would grade USDA Choice. After a 24-h chill at 4 degrees C, carcass quality and yield grade data were collected by trained, experienced university personnel. Objective color (L*, a*, and b*) of both the LM and subcutaneous fat were measured, and samples of subcutaneous fat were removed from the 10th- to 12th-rib region for fatty acid analysis. Diet did not affect hot carcass weight (P = 0.15), fat thickness (P = 0.58), LM area (P = 0.57), percentage of internal fat (P = 0.52), yield grade (P = 0.96), marbling (P = 0.73), or quality grade (P = 0.10). However, the LM from steers fed diets formulated with Morex and SM5 barley varieties tended to be lighter (higher L* values, P = 0.08) than the LM from steers fed the corn-based diet. Additionally, fat from steers fed corn tended to be more yellow (higher Hunter b* values, P = 0.09) than fat from steers fed barley-based diets. Although grain source had only minimal effects on the fatty acid composition of subcutaneous fat samples, pentadecanoic acid (15:0) was greater (P < 0.05) in fat from steers fed SM3 and Steptoe barley varieties than in fat from steers fed corn. Stearic acid (18:0) concentrations were higher (P < 0.05) in fat samples from steers fed corn than in those fed the experimental barley lines (SM3 and SM5). Conversely, fat samples from steers fed Steptoe and SM5 barley had greater (P < 0.05) gadoleic acid (20:1) concentrations than fat from steers fed corn or Morex variety. Seventy-three Holstein steers (initial BW 138.5 +/- 4.3 kg; approximately 3 mo of age) were allotted by BW to one of three growing-phase treatments to determine the effect of source and amount of energy on feedlot performance, and characteristics of subcutaneous (s.c.) and intramuscular (i.m.) adipose tissue. Treatment diets were 1) high concentrate fed ad libitum (ALC); 2) high forage fed ad libitum for 55 d, then a mid-level forage diet fed ad libitum for 98 d (ALF); or 3) limit-fed high concentrate to achieve a gain of 0.8 kg/d for 55 d, then to achieve a gain of 1.2 kg/d for 98 d (LFC). All steers were fed the ALC diet from d 154 to slaughter. Eight steers per treatment were selected after an average of 145 and 334 d on feed for determination of adipocyte cellularity and lipogenic enzyme activity at the end of the growing and finishing phases, respectively. Remaining steers were slaughtered after an average of 334 d on feed. At initial slaughter, ALC steers had a two- to threefold greater (P < 0.05) s.c. fat depth, and 1.9-fold greater (P < 0.01) longissimus muscle ether extract than steers in other groups. At final slaughter, LFC steers had a greater fat depth than ALF steers (P < 0.10) and had the greatest (P < 0.10) longissimus muscle ether extract. Increased fat depth for ALC steers at initial slaughter was a result of a greater (P < 0.05) mean adipocyte diameter in the s.c. depot. Mean i.m. adipocyte diameter followed the same trend (P < 0.16). The number of adipocytes per gram of s.c. fat was least for ALC and greatest for ALF (P < 0.10) at initial slaughter. Mean diameter and number of adipocytes per gram of i.m. and s.c. fat did not differ among treatments at final slaughter (after 180 d on a common finishing diet). High energy (ALC) increased activities of ATP-citrate lyase, fatty acid synthase, 6-phosphogluconate dehydrogenase, glucose-6-phosphate dehydrogenase, and malate dehydrogenase (P < 0.05), in the s.c. depot, and increased activities of ATP-citrate lyase and glucose-6-phosphate dehydrogenase (P < 0.10) in the i.m. depot at initial slaughter. Lipogenic enzyme activity in the s.c. depot at final slaughter did not differ among treatments. Glucose-6-phosphate dehydrogenase activity in the i.m. depot at final slaughter was lowest (P < 0.10) in ALF. Hypertrophy made a greater contribution to fat tissue growth than hyperplasia. Hypertrophy was affected by amount of energy, whereas hyperplasia was affected by source of energy. Differences diminished when cattle were fed the common finishing diet.  相似文献

Four multicannulated Holstein steers (initial BW 424 +/- 16 kg) were used in a 4 x 4 Latin square to determine the influence of protein supplementation on forage intake, site and extent of digestion, and nutrient flow in steers consuming dormant bluestem-range forage (2.3% CP). Treatments were 1) control, no supplement; 2) 1.8 kg of low-protein supplement, 12.8% CP (Low-CP); 3) 1.8 kg of moderate-protein supplement, 27.1% CP (Mod-CP); and 4) 2.7 kg of dehydrated alfalfa pellets, 17.5% CP (Dehy). The Dehy supplement was fed to provide the same amount of CP/d as Mod-CP, and all supplements provided similar amounts of ME/d. Forage DMI was increased (P less than .05) by feeding Mod-CP and Dehy. Ruminal OM digestibility was 39% greater (P less than .05) for the Mod-CP and Dehy supplementations than for the Low-CP supplementation and control. Ruminal CP digestibility was negative for all treatments, and control (-326%) was less (P less than .05) than supplemented treatments (average -27%). Total tract OM digestibility was greatest (P less than .10) for steers fed Mod-CP and least for control steers; Low-CP and Dehy steers were intermediate. Total tract NDF digestibility tended (P = .15) to be less with Low-CP than with Mod-CP and Dehy. Duodenal N flow was greater (P less than .05) with Mod-CP and Dehy than with Low-CP and control. In summary, supplementation with Mod-CP increased forage intake, digestion, and duodenal N flow compared with Low-CP or control; however, the response was similar when Mod-CP and Dehy supplements were fed to provide equivalent amounts of CP and ME daily.  相似文献

Forty-eight Angus and Hereford x Angus steers were used to determine the effects of copper (Cu) on lipid and catecholamine metabolism. Steers were stratified by weight within breed and randomly assigned to treatments. Treatments consisted of 0 (control, no supplemental Cu), 10, or 40 mg of supplemental Cu (from Cu2(OH)3Cl)/kg DM. Steers were fed a corn silage-soybean meal-based growing diet for 42 d. Animals were then switched to a high-concentrate finishing diet and remained on the same dietary treatments. On d 70, indwelling jugular catheters were nonsurgically inserted into five steers per treatment. Blood samples were obtained from steers after a 24-h period of feed withdrawal, 1 h after feeding, and after i.v. administration of norepinephrine and were subsequently analyzed for nonesterified fatty acid (NEFA) and catecholamine concentrations. Average daily gain over the finishing period was higher (P < 0.06) in steers receiving supplemental Cu. Serum total cholesterol concentrations were reduced (P < 0.05) on d 84 and 112 in steers supplemented with Cu. Serum norepinephrine (P < 0.14) and NEFA concentrations following feed withdrawal tended (P < 0.12) to be higher in Cu-supplemented steers. Postfeeding norepinephrine concentrations tended to be higher (P < 0.14) in Cu-supplemented steers. Nonesterifled fatty acid concentrations were lower (P < 0.10) in Cu-supplemented steers after norepinephrine administration. Backfat depth was decreased (P < 0.10) and longissimus muscle polyunsaturated fatty acid percentages were increased (P < 0.10) in steers receiving supplemental Cu. These results indicate that Cu addition to a finishing diet containing 5 mg Cu/kg DM alters lipid metabolism. The reduction in backfat depth may be due to copper altering catecholamine metabolism in steers.  相似文献

The experiment investigated the digestion of lipids from different forage silages in beef steers. Six Hereford x Friesian steers prepared with rumen and duodenal cannulas were given ad libitum access to a high-sugar grass silage, control grass silage, red clover silage, or mixtures of the red clover and each of the grass silages (50:50, DM basis). The experiment was conducted as an incomplete 5 x 5 Latin square, with an additional randomly repeated sequence. Total fatty acid and C18:3n-3 concentrations were greater (P < 0.05) for the high-sugar grass silage than the control grass silage or the red clover silage. Dry matter and total fatty acid intake were less (P < 0.05) for steers fed the control grass silage than for steers fed the other diets. Duodenal flow of C18:3n-3 was greater (P < 0.05), and flows of C18:0 and total C18:1 trans were less (P < 0.05), for the red clover silage compared with the 2 grass silage diets, with the mixtures intermediate. These results were supported by a reduction (P < 0.05) in biohydrogenation of C18:3n-3 for the red clover silage, with the mixtures again being intermediate. Flows of total branched- and odd-chain fatty acids were greater (P < 0.05) for the high-sugar grass silage diet, possibly as a result of greater microbial flow, because these fatty acids are associated with bacterial lipid. Duodenal flows of the chlorophyll metabolite, phytanic acid, were greater (P < 0.05) for animals fed the high-sugar grass silage treatments compared with the other treatments. These results confirm the potential for modifying the fatty acid composition of ruminant products by feeding red clover silage.  相似文献

Six Hereford steers averaging 256 kg were used in a 2 x 3 factorial arrangement within a 6 x 6 Latin square design to study the effect of forage conservation (silage vs hay) and N supplementation (0, 200 g of fish meal plus 43 g of urea, or 400 g of fish meal) on ruminal characteristics, digestibility, blood urea, and in situ degradability of DM, N, and ADF. Dry matter intake of forage and total DMI did not differ among treatments (P greater than .05) and averaged 5.3 and 5.5 kg, respectively. Steers fed silage had greater (P less than .05) pH and concentrations of ammonia N, isobutyrate, isovalerate, and valerate in the rumen than in the rumen of those fed hay. Nitrogen supplementation increased (P less than .05) concentrations of total VFA and valerate in the rumen. Digestibility of N and ADF was greater (P less than .05) for silage than for hay, and N supplementation increased digestibility of N. Plasma urea concentrations were greater (P less than .05) for steers fed silage than for those fed hay. These data suggest that feed utilization is better with silage than with hay and is increased by N supplementation.  相似文献
