The intake of Dietary Fibre (which is defined as the sum of lignin and the polysaccharides not hydrolysed by the endogenous secretions of the human digestive tract) is derived from the plant cell walls in the diet and other non-structural polysaccharides either present naturally in foods, or derived from polysaccharide food additives such as gums or algal polysaccharides. The composition of this complex mixture, its chemical and physical properties, and therefore, the physiological effects associated with its ingestion, will vary according to the foods making up in the diet. While techniques for the measurement and characterisation of dietary fibre still call for a considerable amount of methodological development it is possible to obtain reliable estimates for the major components and the overall composition of these components. These show that in fruits and vegetables the total dietary fibre content (on a fresh weight basis) lies between 2 and 5 g/100 g with peas and beans being an exception in having higher contents. The dietary fibre in cereals varies with the cereal and the reate of extraction used; for example, wholemeal wheat flours contain between 12 and 15 g/100 g whereas white wheat flour (72% extraction) contains between 3 and 4 g/100 g. Wheat bran and related products have much higher contents. The proportion of the dietary fibre present as cellulose does not show great variablility but lignin is extremely variable. Fruits and vegetables contain very small amounts of lignin unless they have lignified seeds or special lignified tissues. The non-cellulosic polysaccharides of fruits and vegetables are characteristically rich in uronic acids (from pectic substances) and arabino-galactans. In cereals β-glucans and arabino-xylans predominate and wheat bran and wholemeal wheat and rye flours are particularly rich in arabino-xylans. The amounds and composition of the dietary fibre in foods commonly forming the diet eaten in the United Kingdom will be reviewed and their contribution to the diet as a whole will be discussed. Changes in the pattern of food consumption in the United Kingdom in the past century will be discussed in relation to the effects that these have had on the consumption of dietary fibre.  相似文献

Sixteen 15 kg liveweight entire-male pigs were given either a low-fibre (1.21 g/100 g Neutral detergent fibre, NDF) or a high-fibre (6.38 g 100 g, NDF) wheat bread as their sole source of dietary protein, in a conventional 21-day metabolism study. A glucose/oil supplement which was assumed to be completely absorbed was given with the bread to ensure a high ratio of dietary energy to protein, to allow measurement of biological value (BV). The apparent faecal digestibility of gross energy was significantly (p<0.001) lower (7.4% units) for pigs given the high-fibre bread as was the apparent digestibility of NDF (24% units lower). The apparent faecal digestibility of total nitrogen was also significantly (p<0.001) lower for the animals fed the high-fibre bread, but there were no significant differences between the breads for the BV of their protein. The overall mean BV for the breads was 46%. The results indicate a significantly lower digestibility of nutrients and gross energy in breads containing appreciable quantities of wheat bran fibre.  相似文献

Interest in the fiber content of foods has decreased in recent years as concerns about fat intake have increased. Fiber, however, remains an important component of the diet. Soluble dietary fiber, including pectic substances and hydrocolloids, is found naturally in foods such as fruits, vegetables, legumes and oat bran. Insoluble fiber, including cellulose and hemicellulose, is found in foods such as whole grains. Fiber supplementation has been used to enhance the fiber content of a variety of foods ranging from cereal-based products to meats, imitation cheeses and sauces. Products used to enhance fiber content of foods have traditionally come from cereals such as wheat, corn and oats. There are a variety of other products, however, such as fruits, vegetables, legumes and less commonly used cereals such as barley, which are potential sources of dietary fiber supplements. This article reviews research on some of these underutilized sources of dietary fiber.  相似文献

The present investigation was carried out to study the hypolipidemic effect of dietary fibre from cornbran and blackgram seedcoat in rats. Isoproteinous diet having one percent cholesterol and ten percent dietary fibre from cornbran and blackgram seedcoat was fed to four groups of albino rats for six weeks. With consumption of both the grain husks, total lipids, cholesterol and tryglycerides were lowered while HDL-cholesterol was found to be significantly increased. However, serum phospholipids were not affected significantly by grain husks. Cornbran was observed to be more hypolipidemic than blackgram seedcoat.  相似文献

Some plant foods viz. bottlegourd, carrot, cauliflower, cabbage, green bengalgram, pea, apple, plum, guava, karonda, blackgram husk and lentil husk were analysed for their dietary fibre components. The total dietary fibre contents of these foods varied from 14.68 to 78.21 percent on dry matter basis. As compared to fruits and vegetables, the husks had higher amount of total dietary fibre. Cellulose represented as the major fibre constituent in most of the foods whereas, husks were observed to be good sources of hemicellulose. All foods were low in pectin and lignin contents except guava.  相似文献

Cereals provide a good source of dietary fibre and other important compounds with nutritional potential, such as phenolic compounds, antioxidants, minerals and vitamins. Although native Andean cereals are known to have high nutritional value, their minor components have not been studied thoroughly. In this study, two varieties of a native Andean crop, kañiwa (Chenopodium pallidicaule), were investigated as sources of dietary fibre and specific antioxidant compounds. Two products, an extrudate and bran, were also prepared and their functional properties and bioactive compounds were determined. Both varieties were rich in total dietary fibre and lignin, and the phenolic components analyzed had high antioxidant activity. The extrudates had good functional properties, such as degree of gelatinization, sectional expansion index and water solubility index; the bran was high in bioactive compounds, such as total phenolics. In conclusion, kañiwa may offer an alternative to traditional cereals as a health-promoting food ingredient.  相似文献

The results suggest that the bran fraction of wheat would potentially provide naturally occurring antioxidants. Phytochemicals and antioxidants in whole grains have not received as much attention as the phytochemicals in fruits and vegetables although the increased consumption of whole grains and whole grain products has been associated with reduced risk of developing chronic diseases such as cardiovascular disease, type 2 diabetes, some cancers and all-cause mortality. Recent research has shown that the total phytochemical content and antioxidant activity of whole grains have been commonly underestimated in the literature, and that whole grains contain more phytochemicals than was previously reported. Most whole grain phenolics are in bound form, 85% in corn, 76% in wheat, and 75% in oats. In addition, whole grains contain unique phytochemicals that complement those in fruits and vegetables when consumed together. The beneficial effects associated with whole grain consumption are in part due to the existence of the unique phytochemicals of whole grains. The majority of phytochemicals of whole grains that are beneficial for health are present in the bran/germ fraction. In whole wheat flour, the bran/germ fraction contributed 83% of total phenolic content, 79% of total flavonoid content, 78% of total zeaxanthin, 51% of total lutein, and 42% of total β-cryptoxanthin. The bran/germ fraction of whole wheat may therefore impart greater health benefits when consumed as part of a diet, and help reduce the risk of chronic diseases. This paper will review recent research on the phytochemicals and antioxidant activity of whole grains and their unique contribution to the health benefits of whole grains.  相似文献

Different sources of dietary fibre (cellulose, pectin, Isabgol, cabbage and guava) were fed to weaning rats for 5 weeks to study their effect on serum vitamins. Both the plant foods (cabbage and guava) were analysed for dietary fibre. Guava was found to be a good source of dietary fibre constituting 51.77% of dry pulp, whereas cabbage contained only 16.17%. Cellulose was the major component of dietary fibre in both the plant foods. The concentration of vitamin A and thiamine in the serum of fibre-fed rats was significantly lower than that of rats on a fibre-free diet. However, the amount of vitamin A in serum decreased significantly with the increase in level of dietary fibre, but the decrease was non-significant in the case of thiamine.  相似文献

Although, wheat bran is a good source of dietary fibre (DF), it has certain disadvantages due relatively lower levels of soluble DF. Therefore, in the current study, the effect of extrusion treatment on microstructure and enzymatic hydrolysis of wheat bran was investigated. Extrusion treatment increased fibre solubility at all process conditions and the screw speed was found to be the most effective parameter. Physicochemical properties of bran were affected from extrusion treatments. While the water-binding capacities of extruded brans were lower than that of non-extruded wheat bran, their water solubilities were higher. Enzymatic hydrolysis increased the soluble DF content of the bran samples as compared to those of respective samples at the beginning of incubation. The results showed that extrusion treatment can be used to disrupt the wheat bran microstructure and thus to increase the soluble fibre content. Enzymatic hydrolysis can also be used for increasing solubility further. The outcomes of this study can be utilized for improving the technological functionality of cereal fibres to develop high fibre ingredients for food applications.  相似文献

Bran is a good source of dietary fibre, phytochemicals, and also protein, but highly insoluble and recalcitrant structure of bran hinders accessibility of these components for gastrointestinal digestion. In the present work, influence of bioprocessing on the microstructure and chemical properties of rye bran and wheat bread fortified with the rye bran were studied. In vitro protein digestibility, and release of short chain fatty acids (SCFA) and ferulic acid in a gut model were studied. Bioprocessing of rye bran was performed with subsequent treatments with cell-wall hydrolysing enzymes (40 °C, 4 h) and yeast fermentation (20 °C, 20 h). Bioprocessing of rye bran resulted in reduced total dietary fibre content, caused mainly by degradation of fructan and β-glucan, and increased soluble fibre content, caused mainly by solubilisation of arabinoxylans. Microscopic analysis revealed degradation of aleurone cell wall structure of the bioprocessed rye bran. Bioprocessing caused release of protein from aleurone cells, assessed as a larger content of soluble protein in bran and a higher hydrolysis rate in vitro. Bioprocessed bran had also faster SCFA formation and ferulic acid release in the colon fermentation in vitro as compared to native bran.  相似文献

Effect of full-fat or defatted rice bran on serum cholesterol   总被引:6,自引:0,他引:6  
Rice bran has been shown to lower serum cholesterol in hamsters. Leghorn cockerel chicks were fed 60% full-fat rice bran (FFRB) and corn/soy (CS) diets with 0.5% added cholesterol. Both diets contained 19% protein. All reported parameters are on blood serum. Significant differences (p<0.05) were found in total cholesterol (TC), triglycerides (TG), high-density and low-density lipoprotein cholesterol (HDL and LDL). In a second study, chicks were fed FFRB, defatted rice bran (DFRB), and CS diets balanced for 18% protein, 14.47% total dietary fiber and 10.78% lipid with 0.5% added cholesterol. Both TC and TG were significantly lower (p<0.05) in chicks fed FFRB and CS diets. Significant differences were found in HDL values for all diets with FFRB exhibiting the highest mean value (155 mg/dl) and CS exhibiting the lowest mean value (114 mg/dl). All diets were significantly different (p<0.05) in LDL, with mean values of 249, 318 and 275 mg/dl for FFRB, DFRB and CS, respectively. Wheat bran supplementation (11 gm per day) was carried out for a period of two months in 30 maturity onset diebetics. The efficacy of bran supplementation was monitored by measuring the fasting and 2 h post prandial blood sugar levels, glycosylated serum protein levels, glycosylated albumin levels and serum lipid and lipoprotein cholesterol levels. The results indicated a transient reduction in fasting and 2 h post prandial blood sugar levels after one month's bran therapy. The effect of supplementation of three fruits, Indian gall nut, bedda nut and gooseberry, on serum lipid levels and excretion of bile acids was investigated. Rats made hypercholesterolemic by feeding hypercholesterolemia inducing diet (HID) for a period of 30 days were used as the test model. Feeding of a dried powder of these fruits along with the HID resulted in significant (p<0.01) reduction in total cholesterol, LDL cholesterol and triglycerides. HDL cholesterol remained unchanged in groups fed gall nut and bedda nut. However, the levels were significantly (p<0.01) higher in groups fed mixed and gooseberry diets in comparison to the control diet. Excretion of bile acids was found to be significantly (p<0.01) higher in animals receiving the three fruits in combination in comparison to those receiving the individual fruits.  相似文献

Effects of feeding different levels of vegetable fibre to normal and non-insulin dependent diabetics were studied. Influences of a control diet (diet with no vegetable fibre) and a purified fibre diet (Isapgol) were compared to results achieved with different levels of several vegetables. A negative correlation between the level of fibre and blood glucose levels in terms of mean percent peak rise, AUC, and per cent glycemic response was shown. Bitter gourd was more effective than the leafy vegetables. Even though the trend in post prandial glucose levels was same for both normal and diabetic subjects, the metabolic response varied significantly between the two groups.  相似文献

To investigate the effects of dietary proteins on the level of serum total cholesterol (TC), triglyceride (TG) and high density lipoprotein (HDL), 32 male Wistar rats were randomly divided in control and 3 experimental groups (El, E2 and E3). The feeding regimes of rats were as follow: control, standard diet; E1, a cholesterol free diet containing 20% soybean protein; E2, a cholesterol free diet containing 20% casein and E3, a cholesterol free diet containing 10% soybean protein and 10% casein. The experimental period was 11 weeks but at the end of 7th week the diets of E1 and E2 groups were crossed over for the next 4 weeks. Blood samples were collected weekly, via the ophthalmic sinus and the serum levels TC, TG and HDL were measured. In comparison with control group, the results show that at the end of 7th week TC levels in E1 and E2 groups were significantly (p<0.05) increased while HDL level unchanged and the TC value of E2 was bigger (not significant) than E1. However by crossing over the diets, the TC level was significantly (p<0.05) diminished in E2 while TG value remarkably (p<0.05) increased. These results indicate that soybean protein may insert its hypocholesterolemic effect in hypercholestrolemic condition than in normolipidemic condition.  相似文献

The objective of this study was to evaluate the effect of reduced-calorie avocado paste on lipid serum profile, insulin sensitivity, and hepatic steatosis in rats fed a hypercholesterolemic-high fructose diet. Thirty five male Wistar rats were randomly separated in five groups: Control group (ground commercial diet); hypercholesterolemic diet plus 60 % fructose solution (HHF group); hypercholesterolemic diet plus 60 % fructose solution supplemented with avocado pulp (HHF+A group); hypercholesterolemic diet plus 60 % fructose solution supplemented with reduced-calorie avocado paste (HHF+P group); and hypercholesterolemic diet plus 60 % fructose solution supplemented with a reduced-calorie avocado paste plus fiber (HHF+FP group). The A, P, and FP were supplemented at 2 g/kg/d. The study was carried out for seven weeks. Rats belonging to the HHF group exhibited significantly (P?≤?0.05) higher total cholesterol, triglycerides, and insulin levels in serum as well as lower insulin sensitivity than the control group. Supplementation with reduced-calorie avocado paste showed a significant (P?≤?0.05) decrease in total cholesterol (43.1 %), low-density lipoprotein (45.4 %), and triglycerides (32.8 %) in plasma as well as elevated insulin sensitivity compared to the HHF group. Additionally, the liver enzymes alanine aminotransferase and aspartate aminotransferase decreased significantly in the HHF-P group (39.8 and 35.1 %, respectively). These results are likely due to biocompounds present in the reduced-calorie avocado paste, such as polyphenols, carotenoids, chlorophylls, and dietary fibre, which are capable of reducing oxidative stress. Therefore, reduced-calorie avocado paste attenuates the effects of a hypercholesterolemic-high fructose diet in rats.  相似文献

This study was undertaken to assess the effect of blended oils, i.e., polyunsaturated fatty acid (PUFA) rich vegetable oils like safflower oil (SFO) and sunflower oil (SNO) with the unconventional and hypocholesterolemic rice bran oil (RBO) on the serum lipid profile of rats. Rats fed RBO + SNO/SFO at 70:30 ratio for a period of 28 days showed significantly (p < 0.05) lower levels of total cholesterol (TC), triglycerides (TG) and low density lipoprotein (LDL) cholesterol and increased high density lipoprotein (HDL) cholesterol in animals fed a high cholesterol diet (HCD) and cholesterol free diet (CFD). Liver total cholesterol (TC) and triglycerides (TG) were also reduced. Fecal excretion of neutral sterols and bile acids was increased with use of RBO blends. RBO, which is rich in tocopherols and tocotrienols, may improve the oxidative stability of the blends. Tocotrienols are known to inhibit 3-hydroxy, 3-methyl, glutaryl CoA (HMG-COA) reductase (rate limiting enzyme in cholesterol biosynthesis), resulting in hypocholesterolemia. In addition to improving the lipid profile by lowering TC, TG and LDL-C and increasing HDL-C, blending of RBO with other oils can result in an economic advantage of lower prices.  相似文献
