Leptin is the hormone product of the obese gene that is synthesized and predominantly expressed by adipocytes. This study estimated the genetic variation in serum leptin concentration and evaluated the genetic and phenotypic relationships of serum leptin concentration with performance, efficiency of gain, and carcass merit. There were 464 steers with records for serum leptin concentration, performance, and efficiency of gain and 381 steers with records for carcass traits. The analyses included a total of 813 steers, including those without phenotypic records. Phenotypic and genetic parameter estimates were obtained using SAS and ASREML, respectively. Serum leptin concentration was moderately heritable (h2 = 0.34 +/- 0.13) and averaged 13.91 (SD = 5.74) ng/mL. Sire breed differences in serum leptin concentration correlated well with breed differences in body composition. Specifically, the serum leptin concentration was 20% greater in Angus-sired steers compared with Charolais-sired steers (P < 0.001). Consequently, ultrasound backfat (27%), carcass 12th-rib fat (31%), ultrasound marbling (14%), and carcass marbling (15%) were less in Charolais- than Angus-sired steers (P < 0.001). Conversely, carcass LM area (P = 0.05) and carcass lean meat yield (P < 0.001) were greater in Charolais- compared with Angus-sired steers. Steers with greater serum leptin concentration also had greater DMI (P < 0.001), greater residual feed intake (P = 0.04), and partial efficiency of growth (P = 0.01), but did not differ in feed conversion ratio (P > 0.10). Serum leptin concentration was correlated phenotypically with ultrasound backfat (r = 0.41; P < 0.001), carcass 12th-rib fat (r = 0.42; P < 0.001), ultrasound marbling (r = 0.25; P < 0.01), carcass marbling (r = 0.28; P < 0.01), ultrasound LM area (r = -0.19; P < 0.01), carcass LM area (r = -0.17; P < 0.05), lean meat yield (r = -0.38; P < 0.001), and yield grade (r = 0.32; P < 0.001). The corresponding genetic correlations were generally greater than the phenotypic correlations and included ultrasound backfat (r = 0.76 +/- 0.19), carcass 12th-rib fat (r = 0.54 +/- 0.23), ultrasound marbling (r = 0.27 +/- 0.22), carcass marbling (r = 0.76 +/- 0.21), ultrasound LM area (r = -0.71 +/- 0.19), carcass LM area (r = -0.75 +/- 0.20), lean meat yield (r = -0.59 +/- 0.22), and yield grade (r = 0.39 +/- 0.26). Serum leptin concentration can be a valuable tool that can be incorporated into appropriate selection programs to favorably improve the carcass merit of cattle.  相似文献

Angus-crossbred steers (n = 216) were used in a 3-yr study to assess the effects of winter stocker growth rate and finishing system on finishing performance and carcass characteristics. During winter months (December to April) steers were randomly allotted to 3 stocker growth rates: low (0.23 kg x d(-1)), medium (0.45 kg x d(-1)), or high (0.68 kg x d(-1)). Upon completion of the winter phase, steers were randomly allotted within each stocker treatment to a corn silage-concentrate or pasture finishing system. All steers regardless of finishing treatment were finished to an equal-time endpoint to eliminate confounding of treatments with animal age or seasonal factors. Upon completion of the finishing period, steers were slaughtered in 2 groups (one-half of pasture and one-half of feedlot cattle each time) and carcass data were collected. Winter data were analyzed as a completely randomized design, with winter treatment, pen replicate, year, and the winter x year interaction in the model. Finishing performance and carcass data were analyzed in a split-plot design with finishing system in the whole plot, and winter growth rate and winter x finish in the split-plot. Winter treatment mean within finishing replication was the experimental unit, and year was considered a random effect. Winter stocker phase treatments resulted in differences (P < 0.001) in final BW, ADG, and ultrasound LM area between all treatments for that phase. Pasture-finished cattle had lower (P < 0.001) final BW, ADG, HCW, LM area, fat thickness, KPH, dressing percent, USDA yield grade, and USDA quality grade. Winter stocker treatment influenced (P < 0.05) final BW and HCW, with low and medium being less than high. Steers with low stocker gain had greater (P < 0.05) finishing ADG. Dressing percent was greater (P < 0.001) for high than low, and USDA quality grade was greater (P < 0.05) for high than low and medium. Carcass LM area, fat thickness, KPH, and USDA yield grade were not influenced (P > 0.05) by winter rate of gain. Cattle on low during winter exhibited compensatory gain during finishing but were unable to catch the high group regarding BW or HCW. The USDA quality grade was greater for high than low or medium. Animal performance during the winter stocker period clearly impacts finishing performance, carcass quality and beef production in both pasture- and feedlot-finishing systems, when cattle were finished to an equal-time endpoint.  相似文献

This study evaluated the effect of barley varieties in the diets of finishing steers on carcass composition, fat, and lean color and the fatty acid profile of subcutaneous fat. Crossbred steers (391 kg initial BW) were assigned randomly to one of five finishing diets composed primarily of corn (n = 9), Morex barley (n = 9), Steptoe barley, (n = 9), or two experimental barley varieties SM3 (n = 9) and SM5 (n = 9). Grains were cracked prior to feeding. Diets were formulated (DM basis) to be isonitrogenous (2.24% N) and isocaloric (2.01 Mcal/kg NEm and 1.35 Mcal/kg NEg). Steers were slaughtered according to industry-accepted procedures when it was visually estimated that 70% of carcasses would grade USDA Choice. After a 24-h chill at 4 degrees C, carcass quality and yield grade data were collected by trained, experienced university personnel. Objective color (L*, a*, and b*) of both the LM and subcutaneous fat were measured, and samples of subcutaneous fat were removed from the 10th- to 12th-rib region for fatty acid analysis. Diet did not affect hot carcass weight (P = 0.15), fat thickness (P = 0.58), LM area (P = 0.57), percentage of internal fat (P = 0.52), yield grade (P = 0.96), marbling (P = 0.73), or quality grade (P = 0.10). However, the LM from steers fed diets formulated with Morex and SM5 barley varieties tended to be lighter (higher L* values, P = 0.08) than the LM from steers fed the corn-based diet. Additionally, fat from steers fed corn tended to be more yellow (higher Hunter b* values, P = 0.09) than fat from steers fed barley-based diets. Although grain source had only minimal effects on the fatty acid composition of subcutaneous fat samples, pentadecanoic acid (15:0) was greater (P < 0.05) in fat from steers fed SM3 and Steptoe barley varieties than in fat from steers fed corn. Stearic acid (18:0) concentrations were higher (P < 0.05) in fat samples from steers fed corn than in those fed the experimental barley lines (SM3 and SM5). Conversely, fat samples from steers fed Steptoe and SM5 barley had greater (P < 0.05) gadoleic acid (20:1) concentrations than fat from steers fed corn or Morex variety. Although the variety/line of barley included in the finishing diet may affect LM and fat color, grain-source (barley vs. corn) had little effect on beef carcass quality and yield grades and did not greatly alter the fatty acid composition of subcutaneous fat.  相似文献

A 2-yr study was conducted to evaluate 1) steers fed ad libitum high concentrate after weaning (CONC), or 2) steers grown on pasture for 82 d, followed by high-concentrate finishing (PAST), on the performance and carcass traits of 74 early-weaned (117 d of age) steers. Potential breed differences were evaluated using crossbred steers of three types: 1) 3/4 Angus x 1/4 Simmental (BRI), 2) 3/4 Simmental x 1/4 Angus (CON), and 3) 1/2 Wagyu x 1/4 Angus x 1/4 Simmental (WAG). Steers were randomly assigned within breed to the two treatments. There was no interactions (P > .10), so the data were pooled over years. The CONC steers had an ADG that was .17 kg/d higher (P = .0001), intake 1.09 kg/d lower (P = .0001), and gain:feed ratio .013 unit better (.190 vs .177, P = .008) than PAST steers overall. Growing treatment did not affect total concentrate consumed (P = .97). The BRI steers required 31 d less than did CON steers (P = .008), and 23 d less than WAG steers (P = .05) when fed to a constant fat end point (1.1 cm). The BRI steers exhibited an ADG .16 kg/d higher (P = .0003), tended (P = .07) to have an ADG intake .49 kg/d higher, and exhibited gain:feed .01 unit better (.189 vs 180) than WAG steers. When compared with CON steers, BRI steers consumed 310 kg less total concentrate (P = .0003). No differences (P > .38) were observed between growing treatments for carcass characteristics or sensory attributes except that CONC steers tended (P = .11) to improve percentage of steers grading Average Choice or higher by 47% over PAST steers. The WAG steers had a 76-unit higher marbling score (1,000 = Small00, 1,100 = Modest00) (P = .006) than BRI steers, resulting in 19% more (P = .09) steers grading > or = Choice and 82% more (P = .03) grading > or = Average Choice. Liver (P = .15) and rumen (P = .01) weights as a percentage of hot carcass weight were reduced for CONC steers. The CONC steers had higher gain, lower intake, better efficiency, reduced liver and rumen weights, and consumed the same amount of total concentrate when compared with PAST steers. The BRI steers had less finishing days and lower daily intake compared with CON steers. The WAG steers had more days finishing, lower gain, lower intake, more undesirable efficiencies, consumed the same amount of total concentrate, and improved quality grades compared with BRI steers.  相似文献

The objectives of this work were to estimate heterosis and breed genetic effects for carcass quantity, quality, and palatability traits of steers (Bos spp.) produced from matings of Romosinuano, Brahman, and Angus cattle. Steers (n = 464) were weaned at 7 mo of age and transported to the Southern Great Plains where they grazed winter wheat for 6 mo and were then fed a finishing diet until serial slaughter after different days on feed (average 130 d). Carcass quality and quantity traits were measured; steaks (aged 7 d) were obtained for palatability evaluation. Heterosis was detected for BW, HCW, dressing percentage, LM area, and yield grade for all pairs of breeds. Generally, Romosinuano-Angus heterosis estimates were smallest, Romosinuano-Brahman estimates were intermediate, and Brahman-Angus heterosis estimates were largest. The direct Romosinuano effect was to decrease (P < 0.05) BW (-67 ± 16 kg), HCW (-48 ± 10 kg), dressing percentage (-1.4 ± 0.5 units), 12th rib fat thickness (-5.2 ± 0.8 mm), and yield grade (-0.9 ± 0.1), and to increase LM area per 100 kg HCW (3.6 ± 0.3 cm(2)/100 kg). Significant Brahman direct effects were detected for BW (34 ± 17 kg), HCW (29 ± 10 kg), dressing percentage (1.6 ± 0.6 %), LM area per 100 kg HCW (-3.3 ± 0.4 cm(2)/100 kg), and yield grade (0.6 ± 0.1). Significant Angus direct effects were to increase 12th rib fat thickness (3.8 ± 1 mm). Among sire breed means, Romosinuano had reduced (P = 0.002) marbling score (393 ± 9) than Angus, but greater mean sensory tenderness scores (5.8 ± 0.1), and reduced percentage Standard carcasses (10 ± 2%) than Brahman (P < 0.002). Angus sire breed means for marbling score (475 ± 10), overall tenderness (5.8 ± 0.1), and percentage Choice carcasses (75 ± 5%) were greater (P < 0.05) than Brahman sire breed means (360 ± 11, 5.4 ± 0.1, 31 ± 5%). From consideration only of characteristics of the end product of beef production, Romosinuano did not provide a clearly superior alternative to Brahman for U.S. producers, as they had some quality and palatability advantages relative to Brahman, but at lighter HCW.  相似文献

Steers were generated from Angus (A), Beefmaster (BM), Brangus (BA), Gelbray (GB), and Simbrah (SB) sires mated to cows of their breed and to Brahman x Hereford F1 cows (except A) to characterize their carcass traits, composition, and palatability. The 290 steers (48 A, 48 BM, 36 BA, 31 GB, and 46 SB) were slaughtered at an equal fatness end point as determined by real-time ultrasound and visual evaluation. Angus steers had lighter (P < 0.01), more youthful (P < 0.01) carcasses with a higher (P < 0.05) quality grade, more (P < 0.01) fat thickness, and a larger (P < 0.01) longissimus area/100 kg than BM-, BA-, GB-, and SB-sired steers. Angus steers also had a lower (P < 0.01) specific gravity, a higher (P < 0.01) percentage fat and less (P < 0.05) lean in the 9th to 11th rib, and steaks aged for 10 d were more tender (P < 0.01) than steaks from Brahman-derivative sired steers. The BM- and BA-sired steers had lighter (P < 0.01), more youthful (P < 0.05) carcasses, and smaller (P < 0.01) longissimus area than GB- and SB-sired steers. The 9th to 11th rib section from the BM- and BA-sired steers had less lean and more bone (P < 0.01) than GB- and SB-sired steers. The BA-sired steers had more (P < 0.01) marbling and a higher (P < 0.05) quality grade than BM-sired steers. The SB-sired steers had heavier (P < 0.01) carcasses than the GB-sired steers. There were no differences in shear force for steaks aged for 3 d for any of the breed types, but with 10 d of aging, steaks from Angus steers were more tender, possibly indicating that steaks of Brahman-derivative breeds aged at a slower rate than those from Angus.  相似文献

Beef steer carcasses from three 2 x 2 factorial feeding experiments (Exp. 1, 20 carcasses; Exp. 2 and 3, 19 carcasses each) were evaluated to study the influence of supplementing with roasted soybeans (RSB; 127 degrees C for 10 min) vs soybean meal (SBM) and implanting with the estrogenic growth promoter Synovex-S (SYN, 20 mg estradiol benzoate and 200 mg progesterone) on carcass merit, composition of dissected 9-10-11th rib section, estimated edible carcass composition, and cooking characteristics of strip loin steaks. In all experiments, steers were fed diets consisting of 15% corn silage, 15% orchardgrass silage, and 70% corn-based concentrate. There were no treatment interactions found in this study. Final BW averaged 480.4, 498.5, and 500.7 kg for Exp. 1, 2, and 3, respectively, and hot carcass weights averaged 288.4, 296.4, and 309.1 kg. Across experiments, hot carcass weight was 8.3 kg less (P < .03) for RSB steers than for SBM steers. Fat weight (P < .01) and percentage of fat (P < .01) were less and percentage of bone (P < .04) was greater in the 9-10-11th rib section of RSB steers than of SBM steers. Estimated percentage of fat (P < .02) was less and percentage of bone (P < .04) was greater in edible carcass of RSB steers than in that of SBM steers. Total 9-10-11th rib section weight tended to be less for RSB steers (P < .08) than for SBM steers. Carcass merit measurements were not affected (P > .10) by supplement, but numerically the percentage of kidney, pelvic, and heart fat was 11% greater for RSB steers than for SBM steers in Exp. 2 and 3. Final BW and carcass weight were 38.7 and 22.6 kg greater (P < .01), respectively, for SYN-implanted steers than for steers not implanted. Longissimus muscle area was greater (P < .01), percentage of kidney, pelvic, and heart fat (P < .02) was less, USDA quality grade tended to be less (P < .09), and shear force of strip loin was greater (P < .01) for SYN-implanted steers than for steers not implanted. The 9-10-11th rib section and estimated carcass compositions were not different (P > .10) between SYN-implanted steers and steers not implanted but reflected a somewhat leaner carcass. The authors conclude from this study that in feedlot steers, either implanted or not implanted, there is no benefit from supplementing with RSB in place of SBM, and that the use of RSB in place of SBM in feedlot diets may reduce the amount of edible carcass.  相似文献

A 2 x 2 factorial experiment with 48 crossbred steers (with Hereford, Angus, and Charolais genetics, and an initial BW of 373 +/- 8.4 kg) was conducted to evaluate the effects of dietary sunflower seeds (SS) and tylosin phosphate (TP) on production factors, carcass characteristics, liver abscess incidence, and fatty acid composition of the muscle (pars costalis diaphragmatis; PCD) and subcutaneous fat. Individually penned steers were fed either a control diet of 84.5% rolled barley, 14% barley silage, and 1.5% mineral and vitamin mix on a DM basis, or an SS diet, in which SS replaced 15% of the diet. Half the animals fed each diet received TP at 11 mg/kg of DM as a top dressing. Interactions were significant for all production factors. A reduction (P = 0.008) in DMI was observed from 10.1 +/- 0.4 kg/d, in steers fed the control diet, to 8.9 +/- 0.3 and 8.6 +/- 0.3 kg/d, in steers fed the SS and SS + TP diets, respectively. Greater (P = 0.014) ADG was observed for steers fed the control diet than for those fed the SS or SS + TP diet (1.4 vs. 1.1 and 1.2, SE = 0.1 kg/d, respectively); however, G:F ratios were greater (P = 0.011) in steers fed the control diets than in those fed the SS diets. Steers fed the control and SS diets had the heaviest and lightest HCW (347 +/- 6.9 vs. 325 +/- 8.4 kg; P = 0.025), respectively. Lean meat yield (%) of steers fed SS was greater (P = 0.117) than in steers fed the control diets, whereas total lean yield [(HCW x lean meat yield)/100] was similar (P = 0.755). Provision of the SS or SS + TP diet eliminated (P = 0.08 for interaction) liver abscesses compared with the 36 and 9% incidence in steers fed the control or control + TP diet, respectively. Fatty acid weight percentages (wt%) followed similar patterns in PCD and subcutaneous fat. Feeding the SS diets led to greater (P = 0.001) wt% of 18:0 and 18:2n-6, but reduced the wt% of 16:0, 9-cis (c)-18:1, and 18:3n-3 in PCD compared with that in steers fed the control diets, but the wt% of 9c,11-trans (t), and 10t,12c CLA were increased (P = 0.001) by 36 and 400% in PCD. Dietary SS increased (P < 0.001) the wt% of trans-18:1 isomers. The 10t-18:1 and 11t-18:1 isomers were the greatest, but dietary TP elevated (P = 0.004) only 10t-18:1, and total trans-18:1 (excluding 11t-18:1) was 0.47 +/- 0.06 g/100 g of PCD. Dietary SS for finishing steers reduced the incidence of liver abscesses without affecting total lean yield of the carcass, with modest increases in trans fatty acids and in potentially beneficial fatty acids (11t-18:1 and CLA).  相似文献

Our objective was to compare the effects of feeding steam-flaked, high-oil corn with normal steam-flaked corn to which yellow grease was added to equalize dietary fat on performance and carcass characteristics of finishing beef steers, and palatability, retail case life, and fatty acid composition of strip loins. Angus steers (n = 120; initial BW = 288 kg) were allotted to dietary treatments consisting of 1) normal mill-run, steam-flaked corn plus added fat (NMR) or 2) high-oil, steam-flaked corn (HOC) and assigned randomly to pens (12 pens/treatment with 5 steers/pen). Performance (ADG, DMI, and G:F) was measured over time, and cattle were shipped to a commercial abattoir for collection of carcass data after 165 d on feed. Carcass data were collected at 48 h postmortem on all carcasses, and 2 carcasses from each pen were selected randomly for collection of strip loins (IMPS #180A). At 14 d postmortem, 4 steaks (2.54 cm thick) were removed for retail display, trained sensory panel analysis, Warner-Bratzler shear force determination, and fatty acid analysis. Daily BW gain was greater (P = 0.03) and G:F was increased 8.4% (P = 0.01) for steers fed NMR compared with HOC, but DMI was not affected (P > 0.10) by treatment. No treatment differences were observed (P > 0.10) for HCW, 12th-rib fat, KPH, and yield grade. Marbling scores were greater (P = 0.01) for NMR than for HOC, and LM area tended (P = 0.07) to be greater in NMR than in HOC carcasses. The proportion of carcasses grading USDA Choice did not differ (P = 0.77) between treatments, but a greater (P = 0.04) proportion of carcasses graded in the upper two-thirds of Choice for NMR vs. HOC. Trained sensory panel traits and Warner-Bratzler shear force values did not differ between treatments (P > 0.10), and no differences (P > 0.10) were detected for purge loss or fatty acid composition. Overall, ADG and G:F were less and marbling score was decreased, but there were no differences between treatments in beef palatability, retail case life, or concentrations of fatty acids in strip loins.  相似文献

A 2-yr experiment was conducted to compare carcass characteristics and meat palatability attributes of steers ((3/4) British, (1/4) Continental) finished postweaning as calves or yearlings. Calves and yearlings of the same contemporary group were designated to a finishing system at weaning. Calves (n = 73) were finished in the feedlot (191 d) on a high-concentrate diet. Yearlings (n = 84) grazed crop residues after weaning, followed by spring and summer pasture grazing, and concluded with a short finishing period (91 d) in the feedlot. All steers were fed to a constant, fat thickness endpoint of 1 cm. The M. longissimus lumborum steaks from each production system were aged for 7, 14, or 21 d for Warner-Bratzler shear force determination and for 7 or 14 d for in-house sensory panel evaluation. Insoluble, percent soluble, and total collagen were determined. Yearlings produced heavier (P < 0.001) carcasses with larger (P < 0.001) LM areas and lower (P < 0.001) marbling scores and quality grades. Calves possessed greater amounts of total collagen (P < 0.001), with a significantly greater percentage of soluble collagen compared with yearlings (39.72 vs. 24.38%). Calves produced steaks with lower (P < 0.001) shear force values and greater (P < 0.001) sensory ratings for flavor. The USDA Choice steaks from the calves were more (P < 0.001) tender and more (P < 0.050) palatable than Choice steaks from yearlings, and USDA Select steaks from calves were rated more tender (P < 0.001), juicy (P = 0.012), and desirable (P < 0.001) than Select steaks from yearlings. As expected, increasing aging time from 7- to 14- to 21-d produced steaks with lower (P < 0.001) shear force values, regardless of the production system. Risk probabilities showed 1.24% of the steaks from calf-finished steers and 21.22% of steaks from yearling-finished steers to be tough. Sensory rating probabilities showed the steaks from the calves were most likely to be desirable for tenderness, whereas steaks from the yearlings were most likely to be undesirable for tenderness, juiciness, flavor, and overall acceptability. Thus, calf-finished steers produce carcasses superior in quality and palatability compared with those from yearling-finished steers. However, yearling-finished steers can produce tender beef with extended aging.  相似文献

A 2(3) factorial arrangement of treatments was utilized to determine effects of postweaning zeranol implantation, breed (Angus vs Limousin) and castration (bull vs steer) on growth, behavior and carcass traits. An initial slaughter group was used to account for breed differences in composition and to determine fat and lean growth in the 9-10-11th rib section (NTE). The remaining cattle were fed a finishing diet to a fat end point of .76 cm, as determined by a backfat probe. Control bulls outgained (P less than .01) control steers both to the first kill date and over the entire test and did not require significantly more time to reach the fat end point. The implant did not influence gain in bulls but did increase gain in steers. Angus and Limousins were similar in growth rate for the first 126 d before the first slaughter date. Limousins required more (P less than .01) time to reach the fat end point. Bulls and Limousins produced heavier (P less than .01) carcasses and larger rib eyes (P less than .05; bulls; P less than .01; Limousins). Steers and Angus had higher (P less than .01) marbling scores and lower bone maturity. Implanting decreased (P less than .05) marbling and increased carcass maturity. Small but significant shifts in carcass wholesale cut weight distribution were found between breed and sex condition groups. Bulls and Limousins had greater lean growth in the NTE. Bulls and steers were similar in fat growth, but Angus exceeded Limousin in this trait. Two experiments were conducted to determine the effects of sex on carcass traits and cooked beef steak palatability. In Exp. 1, steers (n = 99), heifers (n = 51), and intravaginally spayed heifers (n = 46) were fed a high-energy diet for 161 d. No implants were administered, and heifers were not fed melengestrol acetate to suppress estrus. In Exp. 2, 60 steers and 60 intact heifers from the same ranch source used in Exp. 1 were fed in 2 locations (sites 1 and 2). All management factors were equal across experiments except that intact heifers were fed melengestrol acetate to suppress estrus in Exp. 2. Steers in Exp. 1 were 25 kg heavier (P < 0.01) in HCW than heifers at comparable (P = 0.39) carcass fat thickness. Spayed heifers (Exp. 1) had a 5.7% smaller (P < 0.05) LM area compared with steers and intact heifers, which were similar. In Exp. 2, there was no difference (P = 0.2) in carcass weight, and heifers had greater (P < 0.01) 12th rib fat thickness compared with steers. Calculated yield grades were similar (P = 0.21) among treatments in Exp. 1 and tended (P = 0.08) to be greater for heifers compared with steers in Exp. 2. In Exp. 1, USDA quality grades and marbling scores were lower (P < 0.01) for steers compared with intact and spayed heifers, which were similar. The effects of sex on tenderness were examined at a common level of fat-thickness and marbling by covariate analysis. Steaks from steers, compared with those from nonimplanted, intact heifers, in the 2 experiments combined were: (a) superior (P < 0.05) in 2 of 9 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 6 of 9 palatability assessments when marbling score was adjusted to a common level. In Exp. 1, steaks from nonimplanted steers compared with those from nonimplanted spayed heifers were: (a) superior (P < 0.05) in 0 of 8 palatability assessments when subcutaneous fat thickness (at the 12th rib) was adjusted to a common level, and (b) superior (P < 0.05) in 3 of 8 palatability assessments when marbling score was adjusted to a common level. These findings suggest that sex should be added to the list of antemortem factors contributing to variation in cooked beef steak tenderness. However, more research is needed to precisely identify those factors contributing to the lower tenderness observed for steaks from heifer carcasses.  相似文献

Cattle (n = 995 steers and 757 heifers) were randomly selected from a commercial abattoir (Emporia, KS) to determine the relationships between USDA quality and yield grade characteristics and serum concentrations of leptin, IGF-I, and GH. Animals were randomly selected postexsanguination on the slaughter line on 4 occasions (March, May, August, and January). Blood was collected at exsanguination and transported to the University of Missouri for analysis. Sex and hide color were recorded. Carcass data included HCW, 12th-rib fat thickness, KPH, LM area, and marbling score, which were collected from each carcass approximately 24 h postmortem. Average serum leptin concentrations were greater (P = 0.008) for heifers (11.9 ng/mL) than steers (10.9 ng/mL). Heifers had lighter carcasses (331.9 vs. 352.2 kg, P < 0.001), greater 12th-rib fat measurements (1.3 vs. 1.1 cm, P < 0.001), greater KPH (2.5 vs. 2.4%, P < 0.001), and more marbling (Small(40) vs. Small(10), P < 0.001) than steers. Positive correlations (P < 0.01) existed between leptin concentration and marbling score (r = 0.28), 12th-rib fat depth (r = 0.37), KPH (r = 0.23), and USDA yield grade (r = 0.32). Negative correlations were found between leptin and IGF-I (r = -0.11; P < 0.001) and leptin and GH (r = -0.32; P < 0.001). Negative correlations (P < 0.01) were observed for IGF-I and KPH (r = -0.23) and marbling score (r = -0.20), whereas GH was most highly negatively correlated with KPH (r = -0.23; P < 0.001). Leptin concentration accounted for variation (P < 0.001) in a model separating least squares means across USDA quality grade, separating USDA standard (8.5 ng/mL), select (10.3 ng/mL), low choice (12.2 ng/mL), and upper 2/3 choice/prime (>12.9 ng/mL) carcasses. There was no difference (P = 0.31) observed in leptin concentrations between the upper 2/3 choice and prime carcasses (12.9 and 14.2 ng/mL, respectively). Relationships within endocrine profiles and between endocrine concentrations and carcass quality characteristics may prove to be a useful tool for the prediction of beef carcass composition.  相似文献

Over 2 yr, 45 Angus-sired steer offspring of Angus and Angus crossbred females were used to determine the effects of early weaning on feedlot performance, carcass characteristics, and economic return to the cow-calf enterprise. Steers were assigned by birth date to one of two weaning treatments: 1) weaned at an average age of 100 d (early weaned) or 2) weaned at an average age of 200 d (normally weaned). Within 36 d of weaning, steers were given ad libitum access to a high-concentrate diet (90% dry, wholeshelled corn). Steers were harvested when 12th-rib fat thickness averaged 1.27 cm within treatment as estimated by ultrasound. Carcass measurements were taken 48 h postmortem and rib steak tenderness was determined at 14 d postmortem by Warner-Bratzler shear force. Early-weaned steers had greater ADG from time of early weaning to normal weaning than suckling normally weaned steers (1.27 vs. 0.86 kg/d, respectively; P < 0.001). However, early-weaned steers tended to have lower ADG for the entire finishing period than did normally weaned steers (1.33 vs. 1.39 kg/d, respectively; P = 0.08). Compared with normally weaned steers, early-weaned steers had lower daily DMI (7.40 vs. 5.95 kg/d, respectively; P < 0.001) and lower total DMI for the finishing period (1,618 vs 1,537 kg, respectively; P < 0.05). Early-weaned steers had greater gain:feed for the finishing period than normally weaned steers (0.223 vs 0.189, respectively; P < 0.001). Carcass weights were lighter for early-weaned steers than for normally weaned steers (277.9 vs. 311.2 kg, respectively; P < 0.001). There was no difference in yield grade (3.1 vs. 3.2; P < 0.10) between treatments. All carcasses graded Low-Choice or greater, and there was no difference in the percentage of carcasses grading Mid-Choice or greater (94.5 vs 83.9% for early- and normally-weaned, respectively; P > 0.10). Warner-Bratzler shear force values were similar between treatments. Early-weaned steers had a lower cost of gain than normally weaned steers ($ 0.82 vs. 0.91/kg, respectively; P < 0.001). However, due to lighter carcass weights, early-weaned steers generated less return to the cow-calf enterprise than normally weaned steers ($ 380.89 vs 480.08/steer; P < 0.001). The early weaning of steers at 100 d of age decreased total DMI, improved gain:feed, and lowered the cost of gain; however, return to the cow-calf enterprise was decreased due to lighter carcass weights.  相似文献

Use of poultry fat in the finishing diets of steers has not been studied as a potential source of added energy. Therefore, 60 Angus crossbred steers were fed 1 of 3 dietary treatments consisting of 1) a corn-soybean meal control diet devoid of added fat; 2) the control diet formulated with 4% tallow; or 3) the control diet formulated with 4% poultry fat. Addition of fat did not (P = 0.17) affect ADG for the 112-d study. The inclusion of tallow in the diet reduced (P < 0.05) ADFI of steers compared with those on the control diet; however, ADFI of steers fed poultry fat did not differ from those fed the control (P = 0.06) or the tallow (P = 0.36) diets. At d 55, steers consuming either fat source had improved (P < 0.05) G:F compared with steers fed the control diet. For the entire 112 d, steers consuming the poultry fat diet gained more efficiently (P < 0.05) than the control steers, and the tallow-fed steers were intermediate and not different from the other groups (P > or = 0.14). The inclusion of fat in the diet did not (P > or = 0.15) affect carcass characteristics. Steaks from the steers consuming diets with added fat were darker (lower L* value; P < 0.05) than the controls; however, dietary treatments did not (P > or = 0.10) affect any other objective color measurements or discoloration scores during retail display. Thiobarbituric acid reactive substances for LM steaks did not differ (P = 0.21) by dietary treatment. The cooked LM steaks from steers fed poultry fat did not (P > or = 0.80) differ in juiciness or flavor intensity from steaks of steers fed the control or tallow diets. There were also no differences (P = 0.18) in off flavors as a result of added dietary fat. In the LM and adipose tissue, percentages of total SFA were increased (P = 0.05) by adding supplemental fat to the diet, regardless of source. In the LM, total MUFA were decreased (P = 0.02) by adding supplemental fat. Conversely, diet did not (P > or = 0.14) affect the proportions of total PUFA in either tissue or total MUFA in the adipose tissue. Results indicated that replacing beef tallow in finishing diets with poultry fat, a more economical energy source, had no detrimental effects on growth performance, carcass characteristics, retail display life, fatty acid profiles, or palatability.  相似文献

Thirty-three steer calves were used to determine the effect of sire breed (Angus or Charolais), time of weaning [normal weaned at approximately 210 d of age (NW) or late weaned at approximately 300 d of age (LW)], and muscle type [LM and semitendinosus muscle (STN)] on fatty acid composition. The whole plot consisted of a 2 (sire breed) × 2 (time of weaning) treatment arrangement, and the subplot treatment was muscle type. Body weights were recorded at 28-d intervals to determine animal performance. Muscle biopsies were collected on d 127 and 128 of finishing. All calves were slaughtered on d 138, and carcass data were collected. Angus-sired steers had lighter initial BW (271 vs. 298 kg; P = 0.02), and LW steers were heavier (351 vs. 323 kg; P = 0.03) on d 28, but no other differences in BW were noted. Charolais-sired steers had larger LM area (P = 0.03), reduced yield grades (P = 0.01), less 12th-rib fat (P < 0.01), and less marbling (P < 0.01) than Angus-sired steers. Carcass measures overall indicate Angus-sired steers were fatter. Hot carcass weight was heavier (348 vs. 324 kg; P = 0.04) in LW steers than NW steers. No other differences (P > 0.05) were observed for feedlot performance or carcass characteristics. Total lipids were extracted from muscle biopsies, derivatized to their methyl esters, and analyzed using gas chromatography. The LM had greater SFA (43.94 vs. 35.76%; P < 0.01) and decreased unsaturated fatty acids (UFA; 56.90 vs. 66.19%; P < 0.01) compared with the STN. Percent total MUFA was greater in STN than LM (51.05 vs. 41.98%; P < 0.01). Total SFA, UFA, and MUFA did not differ due to sire breed or time of weaning. Total PUFA differed (P = 0.04) due to a sire breed × time of weaning interaction but did not differ due to muscle type, with greater PUFA in NW Charolais than any other sire breed × time of weaning combination. Observed changes in percent MUFA may be a result of greater Δ(9)-desaturase activity. The calculated desaturase index suggests STN has a greater Δ(9)-desaturase activity than LM, but no differences (P > 0.05) between sire breed or time of weaning were observed. These results indicate that sire breed, time of weaning, and muscle type all affect fatty acid composition in beef. This information provides insight into factors for manipulation of beef fatty acids. More research is needed to identify beef cuts based on fatty acid profile and healthfulness.  相似文献

One hundred forty-four Angus male calves were assigned to one of five slaughter-age groups: 9, 12, 15, 18 and 24 mo of age. After weaning, one-half of the calves within slaughter age were castrated. One-half of the 12-, 15-, 18- and 24-mo age groups of each sex were further randomly allotted to a high-energy (HE) or low-energy (LE) finishing diet. Eight bulls and eight steers assigned to the 9-mo slaughter group were fed the HE diet only. Samples from the longissimus muscle (LM) were taken at the 12th rib for histological evaluations of fat deposits. Thin sections from the LM at the 11th rib were stained for lipid, collagen and elastin. Steaks from the LM were cooked and evaluated by a sensory panel and sheared by a Warner-Bratzler shear (WBS) device. The 9-10-11th rib sections were separated into muscle, fat and bone. Collagen, elastin and collagen solubility were determined chemically. Bulls had heavier carcasses, less fat and lower sensory scores for tenderness and juiciness than steers. Steers fed the HE diet had lower WBS values than bulls on either diet. Cooking losses were higher for bulls at 12, 18 and 24 mo than for steers. Histological evaluation showed that collagen content was higher for bulls than for steers and higher for cattle fed the LE diet than those fed the HE diet. Among cattle on the HE diet, the 9-mo cattle had more collagen than all older groups. Neither sex nor diet had an effect on elastin content shown by histological evaluation, but 12-mo cattle had the most elastin and the 15- and 18-mo cattle had the least elastin. Collagen content determined by chemical analysis was not affected by sex, diet or slaughter age. Correlation coefficients among histologically and chemically evaluated collagen and elastin and meat traits were too low to be of practical importance. The time-intensive histological techniques used in our study provided little additional information over that obtained from visually evaluated or chemically measured meat traits.  相似文献

A winter grazing/feedlot performance experiment repeated over 2 yr (Exp. 1) and a metabolism experiment (Exp. 2) were conducted to evaluate effects of grazing dormant native range or irrigated winter wheat pasture on subsequent intake, feedlot performance, carcass characteristics, total-tract digestion of nutrients, and ruminal digesta kinetics in beef cattle. In Exp. 1, 30 (yr 1) or 67 (yr 2) English crossbred steers that had previously grazed native range (n = 38) or winter wheat (n = 59) for approximately 180 d were allotted randomly within previous treatment to feedlot pens (yr 1 native range = three pens [seven steers/pen], winter wheat = two pens [eight steers/pen]; yr 2 native range = three pens [eight steers/pen], winter wheat = four pens [10 or 11 steers/pen]). As expected, winter wheat steers had greater (P < 0.01) ADG while grazing than did native range steers. In contrast, feedlot ADG and gain efficiency were greater (P < 0.02) for native range steers than for winter wheat steers. Hot carcass weight, longissimus muscle area, and marbling score were greater (P < 0.01) for winter wheat steers than for native range steers. In contrast, 12th-rib fat depth (P < 0.64) and yield grade (P < 0.77) did not differ among treatments. In Exp. 2, eight ruminally cannulated steers that had previously grazed winter wheat (n = 4; initial BW = 407 +/- 12 kg) or native range (n = 4; initial BW = 293 +/- 23 kg) were used to determine intake, digesta kinetics, and total-tract digestion while being adapted to a 90% concentrate diet. The adaptation and diets used in Exp. 2 were consistent with those used in Exp. 1 and consisted of 70, 75, 80, and 85% concentrate diets, each fed for 5 d. As was similar for intact steers, restricted growth of cannulated native range steers during the winter grazing phase resulted in greater (P < 0.001) DMI (% of BW) and ADG (P < 0.04) compared with winter wheat steers. In addition, ruminal fill (P < 0.01) and total-tract OM digestibility (P < 0.02) were greater for native range than for winter wheat steers across the adaptation period. Greater digestibility by native range steers early in the finishing period might account for some of the compensatory gain response. Although greater performance was achieved by native range steers in the feedlot, grazing winter wheat before finishing resulted in fewer days on feed, increased hot carcass weight, and improved carcass merit.  相似文献

An experiment was conducted to test the hypothesis that field peas may replace soybean meal in diets fed to growing and finishing pigs without negatively influencing pig performance, carcass quality, or pork palatability. Forty-eight pigs (initial average BW 22.7 +/- 1.21 kg) were allotted to 1 of 3 treatments with 2 pigs per pen. There were 8 replications per treatment, 4 with barrows and 4 with gilts. The treatments were control, medium field peas, and maximum field peas. Pigs were fed grower diets for 35 d, early finisher diets for 35 d, and late finisher diets for 45 d. Pigs receiving the control treatment were fed corn-soybean meal diets. All diets fed to pigs receiving the medium field peas treatment contained 36% field peas and varying amounts of corn; soybean meal was also included in the grower and the early finisher diets fed to pigs on this treatment. In contrast, no soybean meal was included in diets fed to pigs on the maximum field peas treatment, and field peas were included at concentrations of 66, 48, and 36% in the grower, early finisher, and late finisher diets, respectively. Pig performance was monitored within each phase and for the entire experimental period. At the conclusion of the experiment, carcass composition, carcass quality, and the palatability of pork chops and pork patties were measured. Results showed that there were no effects of dietary treatments on ADFI, ADG, or G:F. Likewise, there were no differences in carcass composition among the treatment groups, but gilts had larger (P = 0.001) and deeper (P = 0.003) LM, less backfat (P = 0.007), and a greater (P = 0.002) lean meat percentage than barrows. The pH and marbling of the LM, and the 10th rib backfat were not influenced by treatment, but there was a trend (P = 0.10) for more marbling in barrows than in gilts. The subjective color scores (P = 0.003) and the objective color score (P = 0.06) indicated that dietary field peas made the LM darker and more desirable. Pork chops from pigs fed field peas also had less (P = 0.02) moisture loss compared with chops from pigs fed the control diet. Treatment or sex did not influence palatability of pork chops or pork patties. In conclusion, field peas may replace all of the soybean meal in diets fed to growing and finishing pigs without negatively influencing pig performance, carcass composition, carcass quality, or pork palatability.  相似文献

Crossbred barrows (n = 144; 80 kg) from four farrowing groups were phenotypically selected into fat (FAT) and lean (LEAN) pens using ultrasound. The difference in 10th-rib fat depth between the LEAN and FAT groups was > or =0.5 cm. Within a farrowing group, pigs were assigned to pens (five pigs per pen and eight pens per phenotype) to equalize pen weight and fat depth. Pigs were fed a corn-soybean meal diet containing 19% CP, 1.0% added animal/vegetable fat, and 1.1% lysine (as-fed basis). Half the pens received 10 ppm (as-fed basis) of ractopamine (RAC) during the 28-d finishing phase. At 7-d intervals, live weight and feed disappearance were recorded to calculate ADG, ADFI, and G:F, and 10th-rib fat depth and LM area were ultrasonically measured to calculate fat-free lean and fat and muscle accretion rates. During the first 7 d on feed, LEAN pigs fed RAC gained less (P < 0.05) than FAT pigs fed RAC or LEAN and FAT pigs fed the control diet (RAC x phenotype; P = 0.02); however, RAC did not (P > 0.25) affect ADG after the second, third, and fourth weeks, or over the entire 28-d feeding period. Although wk-2 and -3 ADG were higher (P < or = 0.03) in LEAN than in FAT pigs, phenotype did not (P = 0.08) affect overall ADG. Dietary RAC decreased (P < or = 0.05) ADFI over the 28-d feeding trial, as well as in wk 2, 3, and 4, but intake was not (P > 0.20) affected by phenotype. Neither RAC nor phenotype affected (P > 0.10) G:F after 7 d on trial; however, RAC improved (P < or = 0.04) wk-3, wk-4, and overall G:F. Lean pigs were more efficient (P < or = 0.05) in wk 2 and 3 and over the duration of the trial than FAT pigs. Ultrasound LM accretion (ULA) was not (P > or = 0.10) affected by RAC; however, LEAN pigs had greater (P < or = 0.02) ULA in wk 2 and 4 than FAT pigs. Although fat depth was lower (P < 0.01) in RAC-fed pigs than pigs fed the control diet, ultrasound fat accretion rate indicated that RAC-pigs deposited less (P = 0.04) fat only during wk 4. In addition, calculated fat-free lean (using ultrasound body fat, ULA, and BW) was increased (P < 0.05) in RAC pigs after 3 and 4 wk of supplementation. In conclusion, RAC enhanced the performance of finishing swine through decreased ADFI and increased G:F, whereas carcass lean was enhanced through decreases in carcass fat and increases in carcass muscling.  相似文献
