The effects of edible coatings and mild heat shocks on quality aspects of refrigerated broccoli were studied. Minimally processed broccoli was coated with either chitosan or carboxymethyl-cellulose with or without a previous application of a mild heat shock of 1.5 min at 50 °C. Product was packaged in multilayered polyolefin bags and stored at 5 °C for 18 d. Quality parameters such as weight loss, texture, colour, ascorbic acid content, total chlorophyll content, oxygen concentration inside the bags, browning potential, mesophilic aerobic counts, and sensory quality, were evaluated during storage. Edible coatings exhibited a beneficial impact on broccoli quality. The weight loss in uncoated broccoli was found to be between 2 and 5 times higher compared to coated samples. During storage, coated florets from both thermally and non-thermally treated samples, presented higher retention of the (?a*/b*) ratio indicating better green colour retention and a reduced rate of floret yellowing. Chitosan coating always presented the lower ascorbic acid degradation rates (twofold lower compared with control samples). Broccoli texture for uncoated samples increased significantly during storage. However, for carboxymethyl-cellulose coated broccoli a slight increase in texture was observed while for chitosan coated broccoli no significant changes in texture were observed throughout the storage period. After the edible coating application the microbial broccoli load dropped by around 1.5 and 0.9 logarithmic units in chitosan and carboxymethyl-cellulose films, respectively. During storage, the application of chitosan coating significantly reduced total microbial counts in the thermally and non-thermally treated uncoated samples. Among the assayed edible coatings, chitosan effectively maintained quality attributes and extended shelf life of minimally processed broccoli. The single application of a mild heat shock had a measurable influence in reducing weight loss, enzymatic browning in broccoli stems, and in delaying yellowing of broccoli florets. Moreover, chitosan coating combined with a mild heat shock showed the best performance for long-term refrigerated storage of minimally processed broccoli.  相似文献

Fresh broccoli heads contain relatively high levels of beneficial phytochemicals, particularly glucosinolates and flavonoids, but it is not clear whether or not the levels are affected by postharvest handling conditions. Accordingly, broccoli heads (Brassica oleracea var. italica) were stored at temperatures of 1 or 4 °C, 99% relative humidity (RH), for 2, 7, 14 or 28 days to simulate domestic and export transport conditions. After removal from cool storage, heads were then placed at 8, 15 or 20 °C, with 99, 90 or 70% RH, respectively, for 3 days to simulate marketing conditions. At the end of both phases, heads were rated for visual quality, turgor, presence of rots and yellowing, and the contents of glucoraphanin, quercetin and kaempferol were measured. Visual quality declined significantly with increasing temperature and length of storage, caused primarily by increasing yellowing and loss of turgor. Glucoraphanin, quercetin and kaempferol contents were not significantly affected by storage and marketing temperature and time. These results suggest that current transport and marketing practices are not likely to have a deleterious effect on the levels of aliphatic glucosinolates and flavonols in broccoli.  相似文献

The effects of different modified atmosphere packaging (MAP) on antioxidant compounds and storage quality of ‘Hicrannar’ sweet pomegranates were investigated during long term storage. Pomegranates were harvested at the commercial harvest stage and packed in two different types of MAP (MAP1 and MAP2). After packaging, all fruit were stored at 6 °C and 90–95% RH for 120 days, then removed from storage for different quality analyses. Some fruit were kept at 20 °C for 3 days to simulate a period of shelf-life. Fruit weight loss, decay index, skin color, total titratable acidity, total soluble solids content, total phenolics, total anthocyanins and antioxidant activity were determined. Internal atmospheres created by the MAP were periodically assessed during cold storage, and CO2 concentrations increased and O2 concentrations decreased inside the MAP. MAP significantly reduced weight loss after both 120 days of cold storage and shelf-life. MAP2 was the most effective packaging in reducing weight loss. Storage of pomegranates in MAP also reduced decay and the decay index, and maintained visual appearance compared to control fruit. During storage, a decrease in L* and C* values and an increase in h° values were observed in all treatments. However, fruit stored in MAP2 had higher L*, C* and lower h° values than in other treatments. Titratable acidity and total soluble solids decreased after cold storage and shelf-life, and no significant differences among treatments were found. Total phenolics, total anthocyanin contents and antioxidant activity increased during the storage period in control fruit.  相似文献

Colour is one of the most important quality attributes of broccoli. Yellowing due to senescence of broccoli florets is the main external quality problem. Controlled atmosphere (CA) storage is a very effective method to maintain broccoli quality. The aim of this paper is to characterise the colour behaviour (measured by RGB colour image analysis) of broccoli as affected by CA and temperature. Data on colour behaviour and gas exchange were gathered for broccoli heads stored in containers at three temperatures and subjected to four levels of O2 and three levels of CO2 concentrations. An integrated colour model is proposed that combines a colour model with a standard gas exchange model. The colour model is based on an existing colour model that describes the formation of (blue/green) chlorophyllide from the colourless precursor, the bidirectional conversion of chlorophyllide into (blue/green) chlorophyll and the decay of chlorophyllide. A multi-response approach was applied, accounting for 92% of the variance. Gas exchange parameters were estimated using the gas exchange model, the colour parameters were estimated using the colour model. Both models are linked via the reaction rate constant that describes the decay of chlorophyllide, as this reaction rate constant was found to be affected by the gas conditions. The integrated model might be applied to predict colour changes of MAP packaged broccoli as a low level of O2 and a high level of CO2 will only affect colour retention at higher temperatures.  相似文献

This study determined the minimum inhibitory concentration (MIC) and minimum bactericidal/fungicidal concentration (MBC/MFC) of water and ethanol Satureja hortensis (SH) extract, as well as the antimicrobial activity of pullulan films with an addition of the extracts against test strains. The pullulan coating with an addition of water SH extract was also applied pepper and apple fruit. The concentration of bioactive compounds in the extracts was assessed using HPLC. The analysis included the effect of pullulan coating with water SH extract on weight loss and color change in peppers during storage at 16 °C/14 days, and 16 °C/28 days, and apples at 16 °C/14 days, and 2 °C/28 days. A microscopic image of the coating on materials was evaluated and sensory analysis performed. Polyphenolic compounds from phenolic acid and flavone families were identified in the extracts, and higher levels of phenolic compounds (p < 0.05) were found in the water extract. The activity of pullulan films with SH extracts increased significantly (p < 0.05) with the increase in SH extract concentration (5%, 10% and 20%). Pullulan films with water SH extract inhibited the growth of Gram-positive and Gram-negative bacteria and Penicillium expansum more strongly than was the case with those films with an ethanol SH extract. Moreover, coating application resulted in a decrease in weight loss and an extension of storage time, and also protected the material against excessive wilting and wrinkling on the surface, maintaining freshness and consumer appeal.  相似文献

Changes in bioactive compounds (total phenolics and total carotenoids, and individual anthocyanins) as well as total antioxidant activity (TAA) in separate fractions; hydrophilic (H-TAA) and lipophilic (L-TAA), in the peel and the flesh of 2 purple and 2 yellow skin plum cultivars under modified atmosphere packaging (MAP) conditions, using two films with different gas permeability, were studied. Results revealed that in all cultivars, total phenolics and H-TAA increased in the peel and flesh during storage, as well as the two identified anthocyanins: cyanidin-3-glucoside and cyanidin-3-rutinoside in the purple cultivars. These changes were significantly delayed in fruit stored under MAP conditions. Total carotenoids and L-TAA increased in the yellow cultivars (in both peel and flesh) while decreases were observed in the purple cultivars, these changes also being delayed by the use of MAP. Positive correlations were found between H-TAA and total phenolics and between L-TAA and total carotenoids.  相似文献

In this study, the changes in vitamin C, l-ascorbic acid (AA) and l-dehydroascorbic acid (DHA) levels in broccoli flower buds were examined during pre-storage and storage periods, simulating refrigerated transport with wholesale distribution and retail, respectively. Broccoli heads were pre-stored for 4 or 7 days at 0 °C or 4 °C in the dark and then stored for 3 days at 10 °C or 18 °C. During storage the broccoli heads were exposed for 12 h per day to three different levels of visible light (13, 19 or 25 μmol m−2 s−1) or a combination of visible light (19 μmol m−2 s−1) and UV-B irradiation (20 kJ m−2 d−1), or they were stored in the dark. The vitamin C content in broccoli flower buds during storage was significantly affected by pre-storage period and temperature. Higher vitamin C levels in flower buds after storage were observed for broccoli heads pre-stored for 4 days or at 0 °C as compared to those pre-stored for 7 days or at 4 °C. Storage temperature also affected vitamin C in broccoli flower buds, with higher levels observed for broccoli stored at 10 °C than at 18 °C. Hence, vitamin C in broccoli flower buds was demonstrated to decrease together with increasing pre-storage period, pre-storage temperature and storage temperature. AA in broccoli flower buds was influenced mainly by storage temperature and to a minor extent by pre-storage temperature. The DHA level and DHA/AA ratio were stable in flower buds of broccoli pre-stored for 7 days, whereas increasing tendencies for both DHA level and ratio were observed after pre-storage for 4 days. These results indicate a shift in the ascorbate metabolism in broccoli flower buds during storage at low temperatures, with its higher rate observed for broccoli pre-stored for shorter time. There were no effects of the light and UV-B irradiation treatments on vitamin C, AA and DHA levels in broccoli flower buds.  相似文献

为了明确不同厚度PE袋包装对西兰花采后品质的影响,以未装袋的西兰花作为对照(CK),采用PE微孔袋以及厚度为20、30、40、50μm的PE袋对西兰花进行包装处理,置于(15±1)℃环境下存放,通过测定贮藏期间气体体积分数、感官评价、色差、失重率、硬度、可溶性固形物含量、VC含量、叶绿素含量、挥发性物质等指标,研究不同包装处理对西兰花贮藏品质的影响。结果表明,相比于CK组,各包装组可有效降低西兰花的失重率,防止其黄化,减缓叶绿素、VC含量和硬度的下降;且相比于其他包装组,厚度为20μm的PE袋处理能显著减缓叶绿素损失,维持西兰花的感官品质和固有风味。因此,西兰花在(15±1)℃条件下采用20μm PE袋包装处理效果较好。  相似文献

The evaluation of the impact of postharvest processing and storage on the health benefits of vegetables is of great practical importance. Reports on their effect on the antioxidant capacity, polyphenol and S-alk(en)yl-l-cysteine sulfoxide (ACSO) content, i.e. isoalliin and methiin of the white shaft of leek (Allium ampeloprasum var. porrum), however, are limited. This study determined the levels of the antioxidant properties of leek from postharvest processing at the farm until refrigerated storage of 13 days at the consumer. Two cases were investigated, (1) leek sold as an entire plant and (2) leek with a large part of the green leaves removed, where the shafts are sold in a plastic package. The antioxidant capacity and the total content of phenolic compounds in the white shaft of the entire and packaged leek was stable during 13 days of refrigerated storage. A significant increase in the concentration of isoalliin was observed. Comparing the entire and processed/packaged leek, significant differences could be observed in antioxidant properties. The ACSO content in the white shaft of packaged leek was significant lower than the content in the white part of the entire leek. Therefore, the minimal processing step of cutting the green leaves and roots had an influence on the levels of antioxidant properties.  相似文献

Response surface methodology (RSM) and Box–Behnken design were used to study the combined hurdle effect of mild heat time (1–5 min) at 50 °C, ultrasonic processing time (0–10 min) and citric acid concentration (0–2%) on the quality of refrigerated broccoli after 10 d of storage at 5 °C. Treatment effects were evaluated on weight loss, superficial colour (hue angle (H°) and total colour difference (ΔE)), headspace gas composition (O2 and CO2), overall browning potential, chlorophyll content, ascorbic acid content, mesophilic counts and overall visual quality (OVQ) and optimize the process by means of the desirability function. Predicted models were found to be significant with high regression coefficients (91–97%). High regression coefficients indicated that second-order polynomial models could be used to predict and optimize the quality retention in minimally processed broccoli during storage. The mesophilic counts, ascorbic acid content and the overall visual quality were significantly influenced by the three independent variables either independently or interactively. Both thermal and ultrasonic treatments were found to be critical factors influencing changes in chlorophyll content, O2 concentration inside the package, hue angle and ΔE. On the other hand, thermal treatment and citric acid concentration were found to be significant on overall browning potential. By using the desirability function approach and considering superficial colour parameters, O2 concentration, mesophilic counts, browning potential, ascorbic acid and chlorophyll content, the optimum processing conditions were 7.5 min of ultrasonic treatment, 3 min of a heat shock treatment and a citric acid concentration of 1.5%. These results were in good agreement with the maximum found from the canonical analysis performed from the response surface when only considering sensorial analysis. Under these optimal processing conditions it is possible to employ citric acid treatment in combination with ultrasonic and thermal treatments as hurdles for retention of green colour, nutritional quality, microbial control and for extending shelf life of refrigerated minimally processed broccoli.  相似文献

Degreening caused by chlorophyll degradation is the most important feature that determines postharvest loss of quality in broccoli. Chlorophyll molecules are assembled to several thylakoid proteins, from which chlorophylls must be released in order to be catabolized. Stay-Green (SGR), a chloroplast-located protein, specifically interacts with light harvesting complex subunits helping toward their destabilization and to the release of chlorophylls. In this work, a fragment of a gene encoding a SGR from broccoli (BoSGR) was cloned. The expression of BoSGR was analyzed and detected an important increment during postharvest senescence, simultaneously with chlorophyll degradation. In order to analyze the effect of different growth regulators, different groups of broccoli heads were treated with cytokinins, ethylene and 1-MCP. Cytokinins and 1-MCP delayed the increment of BoSGR expression whereas ethylene accelerated the process. In addition, several postharvest treatments that delay degreening in broccoli florets were applied to evaluate their effects on BoSGR expression. Samples treated with modified atmosphere, hot air, UV-C or white lights showed a delay in chlorophyll degradation and degreening. In most cases, the treatments also delayed the increment of BoSGR expression during senescence, reaffirming the relationship between the expression of this gene and chlorophyll degradation.  相似文献

The influence of film barrier properties on the quality loss of minimally processed grapes stored at 5 °C was addressed. Table grapes (Vitis vinifera cv. Italia) differing in quantity and frequency of irrigation, were tested with five different packaging films. Two commercially available films were used: a multilayer film obtained by laminating nylon and a polyolefin layer (NP), an oriented polypropylene film (OPP), along with three biodegradable polyester-based films (NVT-100, NVT-50 and NVT-35). The packed grape quality during storage was determined by monitoring the headspace oxygen and carbon dioxide concentration, the grape sensory qualities, and the viable cell concentration of the following spoilage microorganisms: total viable bacterial count, lactic acid bacteria, yeasts and molds. All the investigated films successfully preserved the quality of packed produce for the entire observation period (35 d). However, the best results were obtained using high barrier films such as NP and NVT-100. Slight differences were recorded between the two sets of table grapes in terms of respiratory activity and sensory quality.  相似文献

The effect of active modified atmosphere packaging with different initial gas compositions on fresh shiitake mushrooms was investigated. Shiitake mushrooms were packaged under each of the following conditions: (1) high oxygen packaging (HOP), 100% oxygen initially; (2) medium oxygen packaging (MOP), 50% O2 and balanced with N2 initially; (3) low oxygen packaging (LOP), 3% O2/5% CO2, balanced with N2 initially. Passive modified atmosphere packaging with air inside initially (AIR) was used as the control treatment. All the packaged samples were stored at 10 °C with 90% RH for 7 days. During storage, gas compositions, electrolyte leakage, crude water-soluble polysaccharides, total phenolic content and free amino acid content were determined. The results showed that ethanol release was high in LOP and AIR but retarded in MOP and HOP. No packaging could prevent the decrease in polysaccharide content decreasing. Both the active and passive modified atmosphere packaging maintained the color and integrity of the mushrooms. The active modified atmosphere packaging had a significant effect on the increase of total phenolic content and total amount of free amino acids. LOP had a harmful impact on mushrooms with high levels of electrolyte leakage. In conclusion, HOP and MOP had a better effect on maintaining the nutritional compounds of shiitake mushrooms.  相似文献

The effect of carvacrol and methyl cinnamate vapors incorporated into strawberry puree edible films on the postharvest quality of strawberry fruit (Fragaria × ananassa) was investigated. Fresh strawberries were packed in clamshells and kept at 10 °C for 10 days with 90% RH. Strawberry puree edible films, applied in the clamshell, served as carriers for the controlled release of natural antimicrobial compounds without direct contact with the fruit. Changes in weight loss, visible decay, firmness, surface color, total soluble solids content, total soluble phenolics content and antioxidant capacity of strawberries during storage were evaluated. A significant delay and reduction in the severity of visible decay was observed in fruit exposed to antimicrobial vapors. Carvacrol and methyl cinnamate vapors released from the films helped to maintain firmness and brightness of strawberries as compare to the untreated strawberries. The natural antimicrobial vapors also increased the total soluble phenolics content and antioxidant activity of fruit at the end of the storage period.  相似文献

The efficacy of chemical dips and modified atmosphere packaging (MAP), alone and in combinations, on the quality of fresh-cut papaya were studied throughout 25 days at 5 °C. Fresh-cut papaya were dipped in a solution of calcium chloride (1% w/v) and citric acid (2% w/v), packed in an atmosphere of 5% O2, 10% CO2, 85% N2 and stored at 5 °C for 25 days. Physico-chemical analysis (package atmosphere, weight loss, pH, total soluble solids, firmness and color) and microbial quality along with a sensory analysis were measured at regular intervals throughout the storage period. Significant differences were found among the chemically treated and non-treated fresh-cut papaya in all the parameters considered. Chemical treatment followed by MAP, showed the best results among the treatment in terms of retaining sensory and quality characteristics and extending the shelf-life of 25 d for fresh-cut papaya.  相似文献

Lipoxygenases (LOX) belong to a large family of plant enzymes that catalyze the hydroperoxidation of polyunsaturated fatty acids. Most of them are expressed during senescence and contribute to membrane deterioration and biosynthesis of jasmonic acid, a known senescence enhancer. In this work, we cloned a fragment of a gene encoding a LOX from broccoli (BoLOX1). The analysis of the sequence revealed that BoLOX1 is closely related to other LOX from higher plants. Furthermore, we analyzed the expression of BoLOX1 and detected a larger increase during postharvest senescence. A slight increase of total lipoxygenase activity was also found during senescence. In other sets of experiments, broccoli heads were treated with plant hormones, such as cytokinin and ethylene, as a way to assess the effect of such compounds on the expression of BoLOX1. Cytokinin treatment delayed the increase of BoLOX1 expression and lipoxygenase activity whereas ethylene accelerated both processes. Also, several postharvest treatments were applied in order to delay senescence in broccoli florets and to evaluate their effects on BoLOX1 expression. Samples treated with modified atmosphere, hot air, UV-C or white light showed a delay in chlorophyll degradation and degreening. In most cases, the treatments also delayed the increase of BoLOX1 expression, reaffirming the relationship between the expression of this gene and senescence. However, treatments like modified atmospheres and visible light markedly increased lipoxygenase activity, which suggests a lack of correlation between BoLOX1 expression and lipoxygenase activity.  相似文献

While temperature management is a usual accepted practice and is the simplest and easiest way of delaying vegetable deterioration, maintenance of the recommended relative humidity (RH) during postharvest storage is not always carried out. The objectives of this work were to simulate two RH conditions: optimal (95–98%) and low (70–72%) during the storage of lettuce heads at recommended temperatures (0–2 °C), and to address how deviation of RH from optimal conditions affects lettuce quality indices. The effects of storage on quality parameters were assayed as follows: weight loss and water content as physical indices, chlorophyll content as a greenness index, native microflora (mesophilic bacteria, psychrotrophic bacteria, lactic acid bacteria, total coliforms, yeast and molds) as microbiological quality indices, ascorbic acid retention as a nutritional quality index, and overall quality as a sensory acceptability index. Additionally, these indices (with the exception of weight loss) were analyzed in three lettuce sections: external (composed by outer and older leaves), middle (composed by mid leaves) and internal (composed by inner and younger leaves). Shelf-life of lettuce was significantly affected by RH. The exposure of lettuce heads to low RH drastically reduced shelf-life by 75%. Plants exposed to low RH had considerable weight loss from the first day to the end of storage. For both RHs, the middle and internal sections did not show chlorophyll changes during storage while the external section showed pigment degradation characterized by first order kinetics. Ascorbic acid underwent first order degradation for all situations (sections and RH conditions), but with different degradation rates. The microbial population counts were slightly affected by RH. The overall quality of lettuce stored at low RH decreased rapidly. The shelf-life of material stored at this relative humidity condition was 5 days, when the overall quality scores of middle and external sections were below the acceptability limit and only the internal section had a score above the limit. In addition, overall quality of lettuce stored at optimal RH decreased slowly. At day 5 of storage the three lettuce sections had high scores and the product was satisfactory. Only at day 20 did the external section show a score just on the acceptability limit.  相似文献
