The degradation of secoiridoid, tocopherol, and antioxidant activity in extra virgin olive oils (EVOOs) was studied during 8 months of storage in closed bottles in the dark, at 40 and 25 degrees C. Picual, Arbequina, Taggiasca, and Colombaia monovarietal EVOOs possessing quite different fatty acid and antioxidant contents were used. The secoiridoid aglycones, namely, the oleuropein and ligstroside derivatives, and alpha-tocopherol decreased following pseudo-first-order kinetics. In all EVOOs oleuropein derivatives were less stable than the corresponding ligstroside derivatives and alpha-tocopherol. Accordingly, overall antioxidant activity decreased following pseudo-first-order kinetics, with rate constants ranging from 0.85 x 10(-)(3) to 4.1 x 10(-)(3) days(-)(1) at 40 degrees C and from 0.8 x 10(-)(3) to 1.5 x 10(-)(3) days(-)(1) at 25 degrees C. According to both the antioxidant activity and the hydrolysis and oxidation indices established by EU regulation to assess EVOO quality, Colombaia oil was the least stable, followed by Taggiasca, Arbequina, and Picual oils. Despite antioxidant degradation, EVOOs with high antioxidant contents were still "excellent" after 240 days of storage at 40 degrees C. These data led to the conclusion that the beneficial properties of EVOOs due to antioxidant activity can be maintained throughout their commercial lives.  相似文献

Gamma-linolenic acid is an essential fatty acid for humans with delta-6-desaturase deficiency; it is a precursor of prostaglandins, prostacyclins, and tromboxanes; and it has antiinflammatory and antitumoral effects. Tocopherols are natural antioxidants with biological activity, heart/vascular, and cancer protective properties. The oil, gamma-linolenic acid, and tocopherol contents, as well as tocopherol composition, were investigated in the seed oil of a collection of 47 accessions belonging to various species of the genus Ribes. Differences for oil content among species were not significant. The highest total tocopherol content was found in R. nigrum (mean, 1716 mg kg(-1) oil), followed by R. rubrum (mean, 1442 mg kg(-1) oil). R. grossularia showed the lowest values for this trait (mean, 786 mg kg(-1) oil). The three species also differed strongly for tocopherol composition. R. rubrumwas distinguished by a higher concentration of delta-tocopherol (mean, 20.2%); R. grossularia displayed the highest percentage of gamma-tocopherol (mean, 70.0%), and R. nigrum showed the highest concentration for alpha-tocopherol (mean, 34.8%), the most biologically active among the four tocopherols. Regarding gamma-linolenic acid, the highest content was found in R. nigrum, which exhibited up to 15.8% of this essential fatty acid in the oil. R. grossularia and R. rubrum showed mean gamma-linolenic acid contents of 8% and 6.2%, respectively. The present study indicated that seeds of Ribes species, especially R. nigrum, could be used as sources of gamma-linolenic acid and natural vitamin E.  相似文献

Analysis of the biochemical composition of Irvingia malayana was carried out. This Cambodian nut contains 7.5% water and 70% oil. Most of the fatty acids are saturated and include 42% C12:0 and 41.8% C14:0; the sterol composition is similar to that of other vegetable oils. This oil is less rich in alpha-tocopherol than in gamma-tocopherol. Analysis of the solid content of the oil with respect to the temperature by NMR shows a fast fall of solid content around its fusion range at 38-39 degrees C. The main differences in the properties of the indigenous Cambodia nut from other known oleaginous seeds are in its selenium content, fatty acid composition, fusion temperature profile, and content of antioxidants. These important characteristics can soon make possible its application in pharmacology, cosmetics, the margarine industry, etc.  相似文献

Twelve pumpkin cultivars (Cucurbita maxima D.), cultivated in Iowa, were studied for their seed oil content, fatty acid composition, and tocopherol content. Oil content ranged from 10.9 to 30.9%. Total unsaturated fatty acid content ranged from 73.1 to 80.5%. The predominant fatty acids present were linoleic, oleic, palmitic, and stearic. Significant differences were observed among the cultivars for stearic, oleic, linoleic, and gadoleic acid content of oil. Low linolenic acid levels were observed (<1%). The tocopherol content of the oils ranged from 27.1 to 75.1 microg/g of oil for alpha-tocopherol, from 74.9 to 492.8 microg/g for gamma-tocopherol, and from 35.3 to 1109.7 microg/g for delta-tocopherol. The study showed potential for pumpkin seed oil from all 12 cultivars to have high oxidative stability that would be suitable for food and industrial applications, as well as high unsaturation and tocopherol content that could potentially improve the nutrition of human diets.  相似文献

The effect of canola (Brassica napus L.) seed germination under illuminated and dark environments on the total concentration and the composition of tocopherols and phytosterols in seedlings and extracted oil were investigated. During the first 10 days of germination, a decrease in gamma-tocopherol was offset by an increase in alpha-tocopherol, indicating the interconversion of these isomers. From day 10 to day 20 under illumination, there was a net increase in alpha-tocopherol and total tocopherols suggesting the synthesis of new tocopherols, whereas there was no net increase in tocopherols in dark. Tocopherols were mainly concentrated in the leafy seedling tops rather than in the non-photosynthesizing bottoms, whereas phytosterols were equally distributed across both sections. The total tocopherol content of oil extracted from 20-day-old seedlings was 4.3- to 6.5-fold higher than that of intact seeds. On a dry seedling basis, the content and composition of phytosterols did not change significantly (p > 0.05) over the sprouting period, but the concentration of total phytosterols in the oil fraction increased 4.2- to 5.2-fold. The concentration of these valuable phytochemicals in the oil fraction is largely due to the depletion of oil reserves during germination, as well as the de novo synthesis of new alpha-tocopherol stimulated by the presence of light. Germination may represent a viable means to naturally concentrate these high-value constituents in canola oil, offering improvements in oil quality based on the nutritional value and oxidative protection offered by tocopherols and the health benefits provided by both tocopherols and phytosterols.  相似文献

Controversial data on the antioxidant effects of tocopherols have already been shown in different test systems, yet delta-tocopherol was hardly considered. This study was designed to assess the effects and degradation of alpha-, gamma-, and delta-tocopherol in four concentrations from between 0.01 and 0.25% on the oxidation of purified rapeseed oil trigacylglycerols (RO-TAG) at 40 degrees C in the dark in a low oxygen containing system for 11 weeks. Oxidation experiments were performed weekly by assessing primary (peroxide value, PV; conjugated dienes, CD) and secondary (p-anisidine reactive products, p-AV; hexanal) oxidation products, the degree of unsaturation with the iodine value (IV), and the stability of tocopherols. Test approaches were performed with and without the addition of 0.01% alpha,alpha'-azoisobutyronitrile (AIBN), which is a known radical initiator. alpha- and gamma-Tocopherols increased the rate of lipid oxidation, which was more pronounced in the presence of AIBN. Only the lowest amount of 0.01% gamma-tocopherol was comparable to the control sample in the test without AIBN. The most effective was shown to be delta-tocopherol, which did not elevate lipid oxidation except the PV in the AIBN test, but they did not delay it either. delta-Tocopherol was the most stable followed by gamma- and alpha-tocopherol. For alpha- and gamma-tocopherol, but not for delta-tocopherol, strong correlations were found between the tocopherol degradation and the extent of oxidation. Results suggest that (i). at concentrations higher than 0.05%, tocopherols are less efficient and turn their mode of action or participate in side reactions in RO-TAG and (ii). delta-tocopherol was shown to be the most stable and effective under these low oxygen conditions.  相似文献

The balance between the vitamin E (tocochromanols) and polyunsaturated fatty acid (PUFA) contents mainly determines the susceptibility to lipid peroxidation and the storage stability of corn oil. In 1997, field experiments were conducted at two different locations to evaluate a collection of 30 corn hybrids for fatty acid profiles and tocochromanol contents. Hybrids differed significantly (p < 0.01) for major fatty acids, as well as for tocochromanol contents and composition. The major fatty acids were palmitic, oleic, and linoleic acids, whose contents were in the ranges 9.2-12.1%, 19.5-30.5%, and 53.0-65.3%, respectively. The tocopherol contents ranged as follows: alpha-tocopherol, 67-276 mg (kg of oil)(-1); beta-tocopherol, 0-20 mg (kg of oil)(-1); gamma-tocopherol, 583-1048 mg (kg of oil)(-1); delta-tocopherol, 12-71 mg (kg of oil)(-1); total tocopherol, 767-1344 mg (kg of oil)(-1). gamma-Tocopherol was the predominant derivative among all tocopherols. The tocotrienol contents were in the ranges 46-89, 53-164, and 99-230 mg (kg of oil)(-1) for alpha-, gamma-, and total tocotrienol contents, respectively. The tocotrienol profile was not characterized by the predominance of any tocotrienol homologue. alpha-Tocopherol was positively correlated with PUFA (r = 0.41) and with the vitamin E equivalent (vit E equiv) (r = 0.84), and it was not correlated with gamma-tocopherol. gamma-Tocopherol was highly correlated with total tocopherol and tocochromanol contents (r = 0.93 and r = 0.90, respectively), indicating that the contribution of this vitamer to the total tocochromanol content is the most important among all tocochromanols. The high positive correlation found between the vit E/PUFA ratio and the vit E equiv, as well as the absence of correlation between this ratio and PUFA indicates that a higher vit E/PUFA ratio can be easier achieved be increasing the vitamin E content than by modifying fatty acid profile in corn oil.  相似文献

The effects of dietary oregano essential oil and alpha-tocopheryl acetate supplementation on the oxidative stability of long-term frozen stored turkey meat were investigated. Thirty 12-week-old turkeys, randomly divided into five groups, were given a basal diet or a basal diet supplemented with 200 mg of alpha-tocopheryl acetate kg(-1), or 100 or 200 mg of oregano oil kg(-1), or 100 mg of oregano oil plus 100 mg of alpha-tocopheryl acetate kg(-1) for 4 weeks prior to slaughter. Lipid oxidation in breast and thigh meat was assessed after 1, 3, 6, and 9 months of frozen storage at -20 degrees C prior to or following 7 days of refrigerated storage at 4 degrees C. Results showed that oregano oil increased the oxidative stability of breast and thigh meat during the frozen storage. Dietary oregano oil at the inclusion level of 200 mg kg(-1) feed was significantly (p < 0.05) more effective in delaying lipid oxidation compared to the level of 100 mg kg(-1), but equivalent to dietary alpha-tocopheryl acetate supplementation at 200 mg kg(-1), which in turn was inferior to dietary supplementation of 100 mg kg(-1) oregano essential oil plus 100 mg kg(-1) alpha-tocopheryl acetate that was significantly (p < 0.05) superior to all other treatments. Thigh meat was more susceptible to oxidation than breast meat, although the former contained alpha-tocopherol at markedly higher levels. Mean alpha-tocopherol levels in breast and thigh meat from all treatments decreased during the frozen storage, the decrease being sharper between 1 and 3 months of frozen storage for breast and between 3 and 6 months for thigh meat. Oregano oil supplementation increased (p < 0.05) the retention of alpha-tocopherol in meat, the increase being positively correlated with the supplementation level. However, the retention of alpha-tocopherol in meat could only partly elucidate the antioxidant activity exhibited by dietary oregano oil supplementation.  相似文献

Soybean seeds are an important source of dietary tocopherols, but like seeds of other dicotyledonous plants, they contain relatively little alpha-tocopherol, the form with the greatest vitamin E activity. To evaluate potential effects of environmental stress during seed maturation on tocopherols, soybeans were raised in greenhouses at nominal average temperatures of 23 degrees C or 28 degrees C during seed fill, with or without simultaneous drought (soil moisture at 10-25% of capacity), during normal growing seasons in 1999 (cvs. Essex and Forrest) and 2000 (cvs. Essex, Forrest, and Williams). Total free (nonesterified) tocopherols increased slightly in response to drought in Essex and Forrest. All three lines responded to elevated temperature and, to a lesser extent, drought with large (2-3-fold) increases in alpha-tocopherol and corresponding decreases in delta-tocopherol and gamma-tocopherol. The results suggest that weather or climate can significantly affect seed tocopherols. It may be possible to breed for elevated alpha-tocopherols by selecting for altered plant response to temperature.  相似文献

Changes in the concentration of tocopherol, monophenols, o-diphenols, squalene, and polyunsaturated fatty acids in olive oil were evaluated during 1 year at various storage conditions. Samples of two different extra virgin olive oil (EOO), produced in Calabria (Italy), were stored in dark and in colorless bottles, filled up completely or to half, in order to simulate the domestic storage conditions. The extent of oxidation or photooxidation was monitored by periodic measurements of peroxide values and the rate of degradation of alpha-tocopherol, o-diphenols, squalene, and polyunsaturated fatty acids. The quantitative analysis of the constituents has been performed by HPLC-DAD, HPLC-MS, and GC-MS. The main changes in the concentrations of the analyzed compounds were associated with the major oxygen level in the half-empty glass bottles. alpha-Tocopherol was the first molecule to be oxidized (-20% after 2 months, -92% after 12 months). Squalene and o-diphenols were protected in the first months by the presence of alpha-tocopherol, and their content decreased significantly only after 6 and 8 months, respectively, in the half-empty bottles. The concentration of polyunsaturated fatty acids remained almost constant during 8 months for all four different storage conditions; their oxidation started when the level of the antioxidants decreased.  相似文献

Effects of stripped (alpha-tocopherol < 5 mg L(-)(1)) corn oil on flesh firmness, skin color, acidity, soluble solids content (SSC), scald, and fruit volatiles during 6 months at 0 degrees C were studied using Golden Supreme and Delicious apples. Treatment with 10% oil emulsion reduced production of ethylene, alpha-farnesene, and major volatile esters in the first 3 months of storage, but this trend reversed after 5 months. After 6 months at 0 degrees C plus 7 days at 20 degrees C, oil-treated fruit were firmer and greener and had higher levels of titratable acidity than the controls. In addition, control fruit developed 27% and 42% scald in Golden Supreme and Delicious apples, respectively, whereas oil-treated fruit were free from scald. Soluble solids content and ethanol production were unaffected by oil treatment.  相似文献

Tomato seeds and skins acquired from the byproduct of a local tomato processing facility were studied for supercritical fluid extraction (SFE) of phytochemicals. The extracts were analyzed for lycopene, beta-carotene, alpha-carotene, alpha-tocopherol, gamma-tocopherol, and delta-tocopherol content using high-performance liquid chromatography-electrochemical detection and compared to a chemically extracted control. SFEs were carried out using CO(2) at seven temperatures (32-86 degrees C) and six pressures (13.78-48.26 MPa). The effect of CO(2) flow rate and volume also was investigated. The results indicated that the percentage of lycopene extracted increased with elevated temperature and pressure until a maximum recovery of 38.8% was reached at 86 degrees C and 34.47 MPa, after which the amount of lycopene extracted decreased. Conditions for the optimum extraction of lycopene from 3 g of raw material were determined to be 86 degrees C, 34.47 MPa, and 500 mL of CO(2) at a flow rate of 2.5 mL/min. These conditions resulted in the extraction of 61.0% of the lycopene (7.19 microg lycopene/g).  相似文献

Phenolic compounds present in crude oil extracts from acai fruit ( Euterpe oleracea) were identified for the first time. The stability of acai oil that contained three concentrations of phenolics was evaluated under short- and long-term storage for lipid oxidation and phenolic retention impacting antioxidant capacity. Similar to acai fruit itself, acai oil isolates contained phenolic acids such as vanillic acid (1,616 +/- 94 mg/kg), syringic acid (1,073 +/- 62 mg/kg), p-hydroxybenzoic acid (892 +/- 52 mg/kg), protocatechuic acid (630 +/- 36 mg/kg), and ferulic acid (101 +/- 5.9 mg/kg) at highly enriched concentrations in relation to acai pulp as well as (+)-catechin (66.7 +/- 4.8 mg/kg) and numerous procyanidin oligomers (3,102 +/- 130 mg/kg). Phenolic acids experienced up to 16% loss after 10 weeks of storage at 20 or 30 degrees C and up to 33% loss at 40 degrees C. Procyanidin oligomers degraded more extensively (23% at 20 degrees C, 39% at 30 degrees C, and 74% at 40 degrees C), in both high- and low-phenolic acai oils. The hydrophilic antioxidant capacity of acai oil isolates with the highest phenolic concentration was 21.5 +/- 1.7 micromol Trolox equivalents/g, and the total soluble phenolic content was 1252 +/- 11 mg gallic acid equivalents/kg, and each decreased by up to 30 and 40%, respectively, during long-term storage. The short-term heating stability at 150 and 170 degrees C for up to 20 min exhibited only minor losses (<10%) in phenolics and antioxidant capacity. Because of its high phenolic content, the phytochemical-enriched acai oil from acai fruit offers a promising alternative to traditional tropical oils for food, supplements, and cosmetic applications.  相似文献

Cruciferous vegetables contain high levels of vitamins that can act as antioxidants, compounds that may protect against several degenerative diseases. The edible portions of 50 broccoli and 13 cabbage, kale, cauliflower, and Brussels sprouts accessions were assayed to determine variation in alpha-carotene, beta-carotene, alpha-tocopherol, gamma-tocopherol, and ascorbate contents within and between subspecies of Brassica oleracea. Ascorbate content was estimated in fresh samples using HPLC. Tissues for carotene and tocopherol analysis were lyophilized prior to extraction. Carotene and tocopherol concentrations were simultaneously measured using a reverse phase HPLC system. Results indicate that there is substantial variation both within and between subspecies. Kale had the highest levels of vitamins, followed by broccoli and Brussels sprouts with intermediate levels and then by cabbage and cauliflower, with comparatively low concentrations. Variability in vitamin content among the broccoli accessions suggests that potential health benefits that accrue with consumption are genotype dependent.  相似文献

Brown rice is a valuable source of lipid-soluble antioxidants including ferulated phytosterols (i.e., gamma-oryzanol), tocopherols, and tocotrienols. To evaluate the impact of temperature on the accumulation of these compounds, seeds from six different rice lines grown to maturity in replicate greenhouses in Gainesville, FL, were analyzed. The lines represented Oryza sativa indica, O. sativa japonica, and Oryza glaberrima of different origins. Temperatures were maintained near ambient at one end of each greenhouse and at approximately 4.5 degrees C above ambient at the other end. gamma-Oryzanols, tocopherols, and tocotrienols were extracted from whole seed (i.e., brown rice) and analyzed by HPLC. Tocotrienols and tocopherols varied widely between lines but changed only slightly with respect to temperature. In general, the proportions of alpha-tocotrienol and/or alpha-tocopherol increased at elevated temperature, whereas gamma-tocopherol and gamma-tocotrienol decreased. Six gamma-oryzanol peaks, identified on the basis of absorbance maxima at 330 nm and HPLC-mass spectrometry, were quantified. The most abundant component was 24-methylenecycloartanyl ferulate, present at 40-62% of total. Its levels increased 35-57% at elevated temperature in five of six lines, accounting for most of the change in total gamma-oryzanol. The results suggest that the physiological action of individual ferulated phytosterols should be investigated because their relative proportions in gamma-oryzanol can change.  相似文献

Among cereals, only maize has not only a high amount of carotenoids, tocopherols, and oil content but also is rich in starch and protein content compared with other major food crops, such as rice and wheat. The present investigation was made primarily to assess the genetic variability for nutritionally important traits in 87 elite maize inbreds representing major heterotic groups in China. Carotenoid and tocopherol fractions were measured by high-performance liquid chromatography (HPLC), whereas oil, starch, and protein contents were detected by a VECTER22/N near-infrared analyzer. Significant interactions between genotypes and years were observed for all the traits. The pooled mean values of beta-carotene, beta-cryptoxanthin, alpha-carotene, lutein, zeaxanthin, and total carotenoids were 0.449, 0.876, 0.121, 5.803, 3.048, and 10.298 microg g (-1), respectively, whereas the combined mean performance of alpha-tocopherol, gamma-tocopherol, delta-tocopherol, and total tocopherols were 23.98, 32.90, 2.189, and 59.55 microg g (-1), respectively. The average protein, starch, and oil contents were observed to be 12.28, 64.51, and 3.55%, respectively. High level of heritability estimates were observed for all the traits and ranged from 65.6% (protein content) to 92.5% (alpha/gamma-tocopherol ratio). Most of the traits studied in this experiment were either significantly positive correlated or independent. The present finding exhibits substantial opportunities to the breeders for improvement of these traits in maize cultivars and also suggests further exploration of a new source of elite breeding stocks containing a high level of these nutritionally important compounds. Finally, these findings may also help in biofortification of maize.  相似文献

The electron spin resonance (ESR) spin trapping technique was investigated as an analytical approach to follow lipid oxidation of rapeseed oil, sunflower oil, and fish oil during storage at 40 degrees C. Unlike previous investigations, alpha-phenyl-N-tert-butylnitrone (PBN), used as spin trap, was added to the fresh oils and formation of radicals was monitored during storage. Results were compared with the development in peroxide value (PV) and the thiobarbituric acid index (TBA). Increasing radical development was detected during the initial stages of oxidation, during which no significant changes in PV and TBA were observed. Evidence of spin adduct depletion was found during prolonged storage, suggesting that although spin trapping of radicals may be used to follow early events in lipid oxidation, it is not a suitable parameter for long periods of time. Addition of the spin trap after sequential samplings is recommended for getting an insight of oxidative changes during storage. Further, the influence of the spin trap (PBN) on lipid oxidation was studied in detail by application of PV and TBA and by following the depletion of naturally occurring tocopherol. PBN was found to possess a profound inhibiting effect on lipid oxidation. Such an effect was found to be dependent on the nature of the oil, and it was observed that the lower the oxidative stability, the larger the effect of PBN on lipid oxidation. This effect was interpreted in terms of the capability of PBN to react with peroxyl radicals, which in turn depends on the initial tocopherol content of the oils.  相似文献

Effects of tocopherols on the oxidative stability of stripped vegetable oils were studied by adding pure tocopherols--alpha, beta, gamma, and delta--in their naturally occurring proportions in soybean and sunflower oils to the triacylglycerols (TAG) of soybean and sunflower oils. Soybean and sunflower oils were purified by stripping all minor constituents, leaving the triacylglycerols. Pure tocopherols in the proportion typical of sunflower oil--high alpha, low gamma, and low delta--were added to purified sunflower oil and to purified soybean oil. Pure tocopherols in the proportion typical of soybean oil--low alpha, high gamma, and high delta--were added to the purified oils. Oils were subjected to accelerated autoxidation using oven storage at 60 degrees C in the dark and accelerated photooxidation at 7500 lx light intensity at 30 degrees C. Oxidation levels of aged oils were measured by the formation of both peroxides and volatile compounds and by flavor analysis. Results from substituting the tocopherol profile from one oil type to another varied on the basis of whether they were oxidized in the dark or in the light. For example, during autoxidation in the dark, soybean oil with the typical soybean tocopherol profile had the lowest levels of peroxides and total volatile compounds, whereas sunflower oil with the sunflower tocopherol profile had the highest levels. In flavor analyses of the same oils, sunflower oil with the soybean tocopherol profile was the most stable. Soybean oil with the profile of sunflower tocopherols was the least stable in dark oxidation. In contrast to the data from autoxidation in the dark, addition of tocopherols typical of sunflower oil significantly improved light stability of both oil types compared to the addition of soybean tocopherols to sunflower oil. The tocopherol profile typical of soybean oil was significantly more effective in inhibiting autoxidation in the dark; however, the tocopherol profile typical of sunflower oil inhibited light oxidation significantly more than the soybean tocopherol profile.  相似文献

Interesterified plastic fats were produced with trans-free substrates of fully hydrogenated soybean oil, extra virgin olive oil, and palm stearin in a weight ratio of 10:20:70, 10:40:50, and 10:50:40, respectively, by lipase catalysis. The major fatty acids of the products were palmitic (32.2-47.4%), stearic (12.0-12.4%), and oleic acid (33.6-49.5%). After storage at 5 degrees C (refrigerator temperature) or 24 degrees C (room temperature) for 16 h, the physical properties were evaluated for solid fat content, texture, melting, and crystallization behavior, viscoelastic properties, crystal polymorphism, and crystal microstructure. The interesterified fats contained desirable crystal polymorphs (beta' form) as determined by X-ray diffraction spectroscopy. They exhibited a wide plastic range of solid fat content of 52-58% at 10 degrees C and 15% at 40 degrees C. The physical properties were influenced by the ratio of palm stearin and olive oil. Harder and more brittle texture, crystallization and melting at higher temperature, higher solid fat contents, and more elastic (G') or viscous (G') characteristics were observed in the produced fats containing a higher content of palm stearin and lower content of olive oil. The produced fats stored at 5 degrees C consisted mostly of beta' form crystal together with a small content of beta form, while those at 24 degrees C had only beta' form. The produced fat with a higher amount of palm stearin appeared to have more beta' form crystal and small size crystal clusters. Thus, the physical properties of the produced plastic fats may be desirable for use in a bakery product.  相似文献

alpha-Tocopherol, the main tocopherol homologue found in olive oil, was determined using normal phase HPLC. Ninety Greek virgin olive oils, selected according to a designed sampling protocol from different cultivars and regions all over Greece for three successive crop years, were analyzed. For a specific olive cultivar, which is widely used for the production of olive oil in Greece, additional measurements were made to study the effect of milling conditions on alpha-tocopherol concentration. Finally, a significant number of commercial olive oil samples (25) obtained from the retail market were analyzed. High concentrations of alpha-tocopherol were observed in most of the samples selected from various regions. Values ranging between 98 and 370 mg/kg were found (>200 mg/kg in 60% of samples). Extraction conditions were not found to influence alpha-tocopherol level. alpha-Tocopherol content of retail market samples was high, ranging from 120 to 250 mg/kg of oil (>180 mg/kg in 60% of samples). Storage of samples under domestic conditions for two years showed that good handling is quite important for retaining high alpha-tocopherol levels and for increasing, thus, the storage life and nutritional value of this exquisite oil.  相似文献
