This study was conducted in order to compare the nutrient and chemical contents of two Korean teas: traditional Chungtaejeon tea (CTJ) with that of green tea (GT). Main bioactive compounds and the antioxidant activities using four radical scavenging assays (ABTS, CUPRAC, FRAP and DPPH) in methanol and acetone extracts of both teas were determined. It was found that the contents of vitamin C, amino acids and total nitrogen in CTJ were lower than that of GT (p < 0.05). Caffeine, reducing sugar and chlorophyll contents in CTJ were similar to GT. Catechin (C), epicatechin (EC), and epigallocatechin (EGC) contents were lower in CTJ than in green tea (p < 0.05), but gallocatechin (GC), epicatechin gallate (ECG), epigallocatechin gallate (EGCG) and catechin gallate (CG) showed no significant differences between CTJ and GT (p ≥ 0.05). The contents of polyphenols, flavonoids, flavanols and tannins in CTJ methanol were 229.30 ± 11.3 mg GAE/g dry weight (DW), 15.24 ± 0.8 mg CE/g DW, 109.10 ± 5.1 mg CE/g DW and 25.68 ± 1.2 mg CE/g DW, respectively, and significantly higher than in acetone extracts (p < 0.05). Flavonoids (quercetin and kaempferol) were higher in GT than in CTJ and myricetin was higher in CTJ (p < 0.05). Threonine and aspartic acid was lower, and glutamic acid was higher in CTJ compared with GT (p < 0.05). Free amino acid content in CTJ and GT showed no significant difference. Potassium and magnesium in CTJ were lower compared to GT, but no significant difference was found for iron, manganese and calcium. Also, the level of the antioxidant activity by all four used assays was significantly higher in CTJ and in methanol was higher than in acetone extracts (p < 0.05). In conclusion, traditional fermented Korean tea Chungtaejeon contains high quantities of bioactive compounds and possesses high antioxidant activity. The contents of the bioactive compounds and the levels of antioxidant activities are significantly higher in methanol than in acetone extracts. 3-D fluorescence and FTIR- spectroscopy showed slight differences between the two investigated tea samples and can be used as additional tools for identification of polyphenols. Both studied teas can be recommended as a source of bioactive compounds.  相似文献

The reported high phenolic levels in sorghum have led an interest from sorghum breeding programs in developing and identifying germplasms with high phenolic levels, which require screening a large number of samples to find those with the highest levels. Since wet chemistry screening methods are slow, expensive, and destructive, the use of NIR calibration curves could be an alternative. The objectives of this project were to determine the variation range in total phenols, condensed tannins, and 3-deoxyanthocyanidin levels in a diverse set of sorghum genotypes and to assess the predictive value of NIR curves to estimate these compounds in sorghum. A calibration curve to estimate each compound was developed and validated with an independent validation set. Calibration curve correlations for total phenols, condensed tannins, and 3-deoxyanthocyanidins were r = 0.98, 0.97, and 0.99, respectively. Correlations between NIR-predicted values and reference values in the validation set were significant for total phenols (r = 0.93), condensed tannins (r = 0.81) and 3-deoxyanthocyanidin (r = 0.82). These indicated that sufficient variation for these compounds existed within sorghum and that NIR calibration curves could be used to rapidly and non-destructively predict total phenols, condensed tannins, and 3-deoxyanthocyanidins concentrations in whole grain sorghum.  相似文献

番石榴风味独特,营养丰富。本研究以‘珍珠’番石榴和‘水晶’番石榴为试材,研究番石榴果皮和果肉中 生物活性物质含量及其与抗氧化能力关系。结果表明:番石榴果皮和果肉中,‘珍珠’番石榴的总酚、类黄酮、酚酸、 单宁含量均高于‘水晶’番石榴;番石榴的果皮和果肉发育过程中总酚、类黄酮、酚酸、叶绿素及类胡萝卜素含量均 呈下降趋势;番石榴果皮中生物活性物质含量高于果肉,且果皮抗氧化能力高于果肉;在生物活性物质与总抗氧化能 力的相关性方面,总酚含量相关性最高。本研究结果可为番石榴加工产品开发提供理论和实践基础。  相似文献

Sorghum is a good source of phenolic compounds with a variety of genetically dependent types and levels including phenolic acids, flavonoids, and condensed tannins. Most sorghums do not contain condensed tannins, but all contain phenolic acids. Pigmented sorghums contain unique anthocyanins that could be potential food colorants. Some sorghums have a prominent pigmented testa that contains condensed tannins composed of flavan-3-ols with variable length. Flavan-3-ols of up to 8–10 units have been separated and quantitatively analyzed. These tannin sorghums are excellent antioxidants, which slow hydrolysis in foods, produce naturally dark-colored products and increase the dietary fiber levels of food products. Sorghums have high concentration of 3-deoxyanthocyanins (i.e. luteolinidin and apigenidin) that give stable pigments at high pH. Pigmented and tannin sorghum varieties have high antioxidant levels that are comparable to fruits and vegetables. Finger millet has tannins in some varieties that contain a red testa. There are limited data on the phenolic compounds in millets; only phenolic acids and flavones have been identified.  相似文献

The aim of this work was to evaluate the antioxidant potential of teas prepared from twenty-four commercially available berries and flowers of Sambucus nigra L. in relation to their phenolic profile, as reflected by the most representative phenolic acids (caffeic, chlorogenic, p-coumaric, ferulic, gallic and syringic acids); flavonols (quercetin, kaempferol, myricetin and rutin); and total phenolic (TPC), phenolic acid (TAC) and flavonoid (TFC) contents. The infusions prepared from elderflowers contained more abundant phenolic compounds than the elderberry infusions. The TPC of these infusions ranged from 19.81 to 23.90 mg of gallic acid equivalents/g dry weight of sample (GAE/g DW) for elderberries and from 15.23 to 35.57 mg GAE/g DW for elderflowers, whereas the TFC ranged from 2.60 to 4.49 mg of rutin equivalents/g dry weight of sample (RUTE/g DW) in elderberry infusions and from 5.27 to 13.19 mg RUTE/g DW in elderflower infusions. Among the phenolic compounds quantified in this study, quercetin (2.07–9.48 mg/g DW) and myricetin (1.17–9.62 mg/g DW) had the highest concentrations in the teas prepared from berries and flowers, respectively. Moreover, the antioxidant potential of elder infusions assessed by 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical and ferric reducing antioxidant power (FRAP) assays revealed that the teas prepared from flowers had higher mean DPPH and FRAP activities than the teas prepared from berries. Therefore, elder beverages could be important dietary sources of natural antioxidants that contribute to the prevention of diseases caused by oxidative stress.  相似文献

The pecan nut [Carya illinoinensis (Wangenh) C. Koch] is a natural source of polyphenols with antioxidant properties. In this study, the encapsulation of aqueous and hydroalcoholic extracts of pecan nut shell were evaluated for the release of bioactive compounds and antioxidant potential in order to explore food applications using zein as encapsulating agent. The extracts showed high contents of total phenolics, condensed tannins and high antioxidant activity. Concentrations of proanthocyanidins were 9-fold higher in hydroalcoholic extracts. The LC-DAD analysis showed that catechins were the major phenolic compounds in samples, with epigallocatechin levels up to 138.62 mg mL?1. Zein microparticles loaded with aqueous extract released 2.3 times more phenolic compounds than the hydroalcoholic extracts and the DSC thermograms showed that extracts of pecan nut shell remained thermally stable up to 240 °C. The zein microcapsules obtained in this study were efficiently encapsulated and represent an interesting additive due its high antioxidant capacity, physicochemical characteristics and morphology. The use of zein microparticles combined with natural extracts constitute a step forward in the improvement of current technology for delivering phenolic compounds with applications in functional foods and nutraceuticals.  相似文献

Among the three main divisions of marine macroalgae (Chlorophyta, Phaeophyta and Rhodophyta), marine green algae are valuable sources of structurally diverse bioactive compounds and remain largely unexploited in nutraceutical and pharmaceutical areas. Recently, a great deal of interest has been developed to isolate novel sulfated polysaccharides (SPs) from marine green algae because of their numerous health beneficial effects. Green seaweeds are known to synthesize large quantities of SPs and are well established sources of these particularly interesting molecules such as ulvans from Ulva and Enteromorpha, sulfated rhamnans from Monostroma, sulfated arabinogalactans from Codium, sulfated galacotans from Caulerpa, and some special sulfated mannans from different species. These SPs exhibit many beneficial biological activities such as anticoagulant, antiviral, antioxidative, antitumor, immunomodulating, antihyperlipidemic and antihepatotoxic activities. Therefore, marine algae derived SPs have great potential for further development as healthy food and medical products. The present review focuses on SPs derived from marine green algae and presents an overview of the recent progress of determinations of their structural types and biological activities, especially their potential health benefits.  相似文献

Seaweeds are a potential source of bioactive compounds that are useful for biotechnological applications and can be employed in different industrial areas in order to replace synthetic compounds with components of natural origin. Diverse studies demonstrate that there is a solid ground for the exploitation of seaweed bioactive compounds in order to prevent illness and to ensure a better and healthier lifestyle. Among the bioactive algal molecules, phenolic compounds are produced as secondary metabolites with beneficial effects on plants, and also on human beings and animals, due to their inherent bioactive properties, which exert antioxidant, antiviral, and antimicrobial activities. The use of phenolic compounds in pharmaceutical, nutraceutical, cosmetics, and food industries may provide outcomes that could enhance human health. Through the production of healthy foods and natural drugs, bioactive compounds from seaweeds can help with the treatment of human diseases. This review aims to highlight the importance of phenolic compounds from seaweeds, the scope of their production in nature and the impact that these compounds can have on human and animal health through nutraceutical and pharmaceutical products.  相似文献

Free essential oil methanolic extracts from three different geographical populations of Lippia graveolens in México were screened for antioxidant and antimutagenic properties by the DPPH and Kado microsuspension assay, respectively. Total phenolic and flavonoid contents as well as HPLC identification and quantification of naringenin and rosmarinic acid were also carried out. In addition, a taxonomical phenetic analysis was performed. The L. graveolens extracts showed varying content of phenols and flavonoids. Significant concentration of rosmarinic acid was found for the first time in the species. All the extracts were capable of scavenging DPPH radicals in a concentration dependent fashion; the IC50 values correlate with the phenolic content. None of the extracts was toxic to TA100 and TA98 strains at the concentrations tested; moreover, the extracts at a concentration equivalent to 200 μg of gallic acid inhibited a 39 and 30% the mutagenicity induced by 4-nitro-o-phenylenediamine and sodium azide, respectively. The results suggest that the Mexican oregano is a source of polar bioactive ingredients for the food industry.  相似文献

Sorghum grain is rich in phenolic compounds and may be used to develop functional tea beverages. This work investigated the effect of processing techniques on the phenolic contents, antioxidant activity, and volatile compounds of a white colour sorghum (Liberty) grain tea. Significant (P ≤ 0.05) increase of total phenolic content, total flavonoid content and condensed tannin content were observed during the processing, whereas the antioxidant activity was not statistically enhanced. A total of 63 volatile compounds were detected including 5 alcohols, 13 alkanes, 2 aldehydes, 2 carboxylic acids, 15 esters, 4 ketones, 3 pyrazines and 1 phenylenediamine, which were affected by the processing techniques. The sorghum tea made from powder form infusion had more abundant volatile compounds compared to whole grain form infusion. The findings of this research have potential to expand human consumption of sorghum grain in the new form of grain tea.  相似文献

Seaweeds are considered healthy and sustainable food. Although their consumption is modest in Western countries, the demand for seaweed in food markets is increasing in Europe. Each seaweed species has unique nutritional and functional features. The preparation of blends, obtained by mixing several seaweeds species, allows the obtaining of maximum benefits and ingredients with single characteristics. In this work, five seaweed blends, commercially available and produced under organic conditions in Europe, were characterized. The proximal composition included contents of ash (20.28–28.68% DW), proteins (17.79–26.61% DW), lipids (0.55–1.50% DW), and total carbohydrates (39.47–47.37% DW). Fatty acid profiles were determined by gas chromatography–mass spectrometry (GC–MS), allowing quantification of healthy fatty acids, namely n-3 and n-6 polyunsaturated fatty acids (PUFA), and calculation of lipid quality indices. Each blend showed a characteristic PUFA content in the lipid pool (35.77–49.43% of total fatty acids) and the content in essential and healthy n-3 PUFA is highlighted. The atherogenicity (0.54–0.72) and thrombogenicity (0.23–0.45) indices evidenced a good nutritional value of lipid fractions. As nutritional and environmentally attractive products, the consumption of the studied seaweed blends can contribute to a healthy lifestyle.  相似文献

Evidence supports the health promoting benefits of berries, particularly with regard to the prevention and management of chronic diseases such cardio- and cerebrovascular disease, diabetes and Alzheimer’s disease. Two related pathophysiological features common to many of these conditions are oxidative stress and the accumulation of advanced glycation endproducts (AGEs). Whereas antioxidant properties are well-established in several species of berries and are believed central to their protective mechanisms, few studies have investigated the effects of berries on AGE formation. Here, employing a series of complementary in vitro assays, we evaluated a collection of wild berry extracts for 1) inhibitory effects on fluorescent-AGE and Nε- (carboxymethyl)lysine-albumin adduct formation, 2) radical scavenging activity and 3) total phenolic and anthocyanin content. All samples reduced AGE formation in a concentration-dependent manner that correlated positively with each extract’s total phenolic content and, to a lesser degree, total anthocyanin content. Inhibition of AGE formation was similarly related to radical scavenging activities. Adding antiglycation activity to the list of established functional properties ascribed to berries and their phenolic metabolites, our data provide further insight into the active compounds and protective mechanisms through which berry consumption may aid in the prevention and treatment of chronic diseases associated with AGE accumulation and toxicity. As widely available, safe and nutritious foods, berries represent a promising dietary intervention worthy of further investigation.  相似文献

The aqueous extracts of four marine algae, Caulerpa racemosa var. macrophysa, Gracilaria tenuistipitata var. tenuistipitata, Sargassum sp., and Ulva lactuca, from the coastal areas in Southern Thailand, were prepared by boiling dried seaweed powder in water for 3 h, and by autoclaving each sample at 120 °C for 3 h. They were then freeze-dried and evaluated for their antioxidant activities using DPPH (1, 1-diphenyl-2-picrylhydrazyl), hydroxyl radical (OH) and superoxide anion (O2•−) scavenging assays. Boiling extracts of the seaweeds, except C. racemosa, were found to have higher total phenolic contents (TPC) than those obtained from the autoclave method. The antioxidant results also showed that O2•− scavenging activity existed only in the boiling extracts of C. racemosa, G. tenuistipitata, and U. lactuca. In DPPH and OH assays, however, almost all the boiling extracts were less active than the autoclave ones. Among the four alga species, Sargassum sp. was the most active. Both extracts of this seaweed had the highest TPC and also displayed the strongest DPPH and OH inhibitory activities. A strong positive-correlation between the antioxidant potency and TPC of the autoclave extracts was found, while for the boiling extracts such relation was very weak. This result thus reflected that in addition to the phenolic compounds, there might be some other active components present in these extracts involved in the antioxidant activity.  相似文献

Caulerpa racemosa (sea grapes) and Ulva lactuca (sea lettuces) are edible green seaweeds and good sources of bioactive compounds for future foods, nutraceuticals and cosmeceutical industries. In the present study, we determined nutritional values and investigated the recovery of bioactive compounds from C. racemosa and U. lactuca using hot water extraction (HWE) and subcritical water extraction (SWE) at different extraction temperatures (110 to 230 °C). Besides significantly higher extraction yield, SWE processes also give higher protein, sugar, total phenolic (TPC), saponin (TSC), flavonoid contents (TFC) and antioxidant activities as compared to the conventional HWE process. When SWE process was applied, the highest TPC, TSC and TFC values were obtained from U. lactuca hydrolyzed at reaction temperature 230 °C with the value of 39.82 ± 0.32 GAE mg/g, 13.22 ± 0.33 DE mg/g and 6.5 ± 0.47 QE mg/g, respectively. In addition, it also showed the highest antioxidant activity with values of 5.45 ± 0.11 ascorbic acid equivalents (AAE) mg/g and 8.03 ± 0.06 trolox equivalents (TE) mg/g for ABTS and total antioxidant, respectively. The highest phenolic acids in U. lactuca were gallic acid and vanillic acid. Cytotoxic assays demonstrated that C. racemosa and U. lactuca hydrolysates obtained by HWE and SWE did not show any toxic effect on RAW 264.7 cells at tested concentrations after 24 h and 48 h of treatment (p < 0.05), suggesting that both hydrolysates were safe and non-toxic for application in foods, cosmeceuticals and nutraceuticals products. In addition, the results of this study demonstrated the potential of SWE for the production of high-quality seaweed hydrolysates. Collectively, this study shows the potential of under-exploited tropical green seaweed resources as potential antioxidants in nutraceutical and cosmeceutical products.  相似文献

Aqueous acetone extracts prepared from five Indigofera species of Burkina Faso, namely Indigofera colutea (Burm.) Murril., I. macrocalyx Guilld et Perr., I. nigritana Hook f., I. pulchra willd. and I. tinctoria L., were investigated for their phytochemical composition and their antioxidant activities. Standard methods and TLC were used to screen the phytochemical composition. The total phenolic and flavonoid content of extracts were assessed by Folin-Ciocalteu and AlCl3 methods, respectively. These extracts were also evaluated for their antioxidant potentials using ferric reducing antioxidant power (FRAP), 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azinobis(3-ethylbenzothiazoline-6-sulphonate) (ABTS) assays. Flavonoids, saponins, quinones, sterols/triterpenes and tannins were present in all these species except for I. pulchra where quinones were not found. Gallic acid, caffeic acid, rutin and myricetin in I. colutea; gallic acid, quercitrin, myricetin in I. tinctoria; galangin and myricetin in I. macrocalyx were identified by thin layer chromatography. Among these, I. colutea, I. tinctoria, I. nigritana and I. macrocalyx, which had the highest phenolic content, were also found to possess the best antioxidant activities. The results indicated a good correlation between antioxidant activities and total phenolic content (p<0.05 for FRAP/DPPH and DPPH/ABTS and p<0.01 for FRAP/ABTS). These plants represent promising sources of natural antioxidants and these findings give scientific bases to their ethnopharmacological uses.  相似文献

The extraction of condensed tannins from grape pomace was examined using water medium in the presence of NaOH, Na2CO3, NaHCO3 eventually in the presence of Na2SO3. The tannin fractions reactivity towards formaldehyde was studied by gel time analysis and thermomechanical analysis in bending and it was demonstrated that despite of their lower phenolic contents, some of these extracts displayed promising properties for adhesive applications. A resin formulation in which the total content of tannin is 75% of the total resin solids content gave good results and was employed for the elaboration of the first grape pomace based-wood particleboard which passed relevant international standard specifications for interior-grade panels.  相似文献

In recent years, considerable interest has been focused on the antioxidant potential (including antiradical activity) of crops. Antiradical power (ARP) is influenced by antioxidant compounds, which in turn are controlled by mineral element status. There are relatively few studies considering the variation of assimilated mineral element content (with respective synergies and antagonisms) on secondary metabolites and resultant ARP in plants grown under open-field conditions. The present study was aimed at identifying variables affecting ARP in leaf material of Trifolium pratense L. using Path Analysis as an analytical processing tool. Variation in leaf ARP (2,2-diphenyl-1-picrylhydrazyl scavenging activity), total phenol, flavonoid, mineral element (macro- and micro-elements), and dry weight (DW) content was obtained by growing three T. pratense cultivars (Altaswede, Lucrum and Kvarta) in two non-irrigated, open-field sites (Florence and Consuma) over two consecutive years. Path Analysis then permitted the dissection of genotypic variation (for each locality) in total phenol and flavonoid, mineral element and DW effects on ARP, as well as the underlying mechanisms contributing to the associations between the respective variables and their relative importance in determining ARP. ARP, attributable to effects of DW, and flavonoid and non-flavonoid phenols, was genotype-dependent. Changing tissue DW from hydrated to intermediate levels (Florence), was the greatest positive determinant of ARP in Lucrum and Kvarta in Florence. In the intermediate to more water-stressed tissues, characteristic of Consuma, the flavonoids were direct, positive predictors of ARP in all varieties with N exercising both a negative and the greatest overall effect on ARP through the flavonoids. Altaswede was characterised by higher ARP, flavonoid and Al content than Kvarta, with Lucrum displaying intermediate levels. After more established growth (2007), the indirect impact of N, Ca and DW on both biomass and ARP via chlorophyll and flavonoid content is presented for each locality.  相似文献

Phenolic compounds have various nutritional and functional properties, especially antioxidant activity. The objective of this study was to explore the relationship between the phenolic compound accumulation, antioxidant property and gene expression during maize kernel development. In this study, we explored the effects of developmental stage on the accumulation of phenolic compounds and their antioxidant activities. The expression levels of genes involved in phenolic biosynthesis were also studied. The results showed that the total phenolic content (TPC) and total anthocyanin content (TAC) were gradually increased from 15 to 48 days after pollination (DAP), whereas the total flavonoid content (TFC) decreased continuously. The antioxidant activity of maize kernels was increased gradually and positively associated with TPC. ZmCHSs in flavonoid biosynthetic pathway played important roles for total flavonoid accumulation at both early and later development stages. The expression pattern of ZmANS corresponded to the accumulation of total anthocyanin during kernel development. These results revealed that developmental stage affected the accumulation of different phenolic compounds, antioxidant activity and related gene expression. The antioxidant activity of maize kernels was dependent on the total phenolic accumulation which was related to the expression profiles of the genes participated in phenolic synthesis.  相似文献

The bioactive materials in brown seaweeds hold great interest for developing new drugs and healthy foods. The oil content in brown seaweeds (Saccharina japonica and Sargassum horneri) was extracted by using environmentally friendly supercritical CO2 (SC-CO2) with ethanol as a co-solvent in a semi-batch flow extraction process and compared the results with a conventional extraction process using hexane, ethanol, and acetone mixed with methanol (1:1, v/v). The SC-CO2 method was used at a temperature of 45 °C and pressure of 250 bar. The flow rate of CO2 (27 g/min) was constant for the entire extraction period of 2 h. The obtained oil from the brown seaweeds was analyzed to determine their valuable compounds such as fatty acids, phenolic compounds, fucoxanthin and biological properties including antioxidant, antimicrobial, and antihypertension effects. The amounts of fucoxanthin extracted from the SC-CO2 oils of S. japonica and S. horneri were 0.41 ± 0.05 and 0.77 ± 0.07 mg/g, respectively. High antihypertensive activity was detected when using mixed acetone and methanol, whereas the phenolic content and antioxidant property were higher in the oil extracted by SC-CO2. The acetone–methanol mix extracts exhibited better antimicrobial activities than those obtained by other means. Thus, the SC-CO2 extraction process appears to be a good method for obtaining valuable compounds from both brown seaweeds, and showed stronger biological activity than that obtained by the conventional extraction process.  相似文献
