The effects of dietary conjugated linoleic acid (CLA) on fatty acid composition, lipid oxidation, and pork quality were investigated. Pigs (n = 20) were fed a diet containing 0, 1, 2.5, or 5% CLA for 4 wk and slaughtered at 105 kg. The longissimus thoracis et lumborum muscle was collected at 24 h postmortem. Pork loin chops (3 cm thick) were packaged aerobically and stored at 4 degrees C for 7 d. Samples were analyzed for ultimate pH, intramuscular fat content, fatty acid composition, thiobarbituric acid-reactive substances, color (L*, a*, b*), and water-holding capacity. Dietary CLA reduced the concentration of linoleic acid and increased CLA concentration in intramuscular fat of pork loin (P < 0.05). The concentration of CLA in muscle was increased with dietary CLA level and did not change during storage. Thiobarbituric acid-reactive substance value of control was higher than that of the CLA-fed groups (P < 0.05). Intramuscular fat content was increased by dietary CLA, and less purge loss was observed with samples from CLA-fed pigs (P < 0.05). Dietary CLA improved the color stability of pork loin during cold storage. After 7 d, lightness (L*) and yellowness (b*) of the 5% CLA-fed group were significantly lower than those of control (P < 0.05). The results indicated that the water-holding capacity of pork loin was increased with increased intramuscular fat content apparently caused by dietary CLA. Also, the data indicated that color stability of pork was improved with inhibition of lipid oxidation and changing of fatty acid composition by dietary CLA.  相似文献

Pork quality is influenced by nutrition, genetics, management, and pork-processing procedures. Pigs of lean genotype fed diets high in unsaturated fat may have thinner, lower-quality bellies with a soft fat composition. Therefore, we investigated the effects of supplementing 5% choice white grease that had been chemically hydrogenated to iodine values of 80, 60, 40, or 20 on pork quality. Diets were fed to barrows and gilts of two genotypes (NPD [Ham-line x Manor hybrid] and PIC [406, 419, or 420 x C22]; n = 240) in a 4 x 2 x 2 factorial design. Pigs (76.8 kg of mean initial weight) were placed on test at a common age and were fed dietary treatments for 52 d. Pigs of PIC genotype were heavier at trial initiation, had higher feed intake and feed conversion ratio (F/G; P < 0.05), and greater backfat (26.3 vs. 24.0 mm; P < 0.001) and loin depth (59.0 vs. 55.3 mm; P < 0.001) compared with the NPD genotype pigs. As the iodine value of dietary fat was reduced, belly thickness increased (P < 0.05) and length decreased linearly (P < 0.05). Congruently, belly fat iodine value decreased from 73.9 to 67.4 (linear effect; P < 0.001) and belly fat C18:2 concentration declined from 20.6 to 16.3% (linear and quadratic effect; P < 0.001). The belly mono- and polyunsaturated fat ratio increased 29% as diet iodine value declined from 80 to 20 (linear and quadratic effect; P < 0.001). Further, there was a linear increase (P < 0.001) in saturated fatty acid concentration of belly fat (C14:0, C16:0, and C18:0) as dietary fat iodine value declined. Quadratic (P < 0.005) effects were detected in the level of C18:1trans as iodine value decreased from 80 to 20, paralleling dietary content. Dietary fat iodine value did not affect fat digestibility, ADFI, or F/G. Pork belly quality was improved as defined by reduced iodine value, C18:2 content, increased saturated fatty acid content, increased thickness, and decreased length as dietary iodine value decreased. Results indicate that reduction of dietary fat iodine value by chemical hydrogenation has the desirable effect of improving pork quality and does not alter growth performance.  相似文献

We investigated the effects of dietary conjugated linoleic acid (CLA) on fatty acid composition and lipid oxidation in breast meat of broiler chickens. Broiler chickens (28-day-old females) were fed diets containing experimental oils at 20 g/kg diet for 28 days. The experimental oils consisted of either a 2:0, 1:1, or a 0:2 (wt : wt) ratio of safflower oil (high linoleic acid content) to a commercial CLA mixture. In this study, dietary CLA supplementation significantly increased the composition and content of CLA in chicken meat. The predominant CLA in meat from birds with supplemented diets was the cis -9, trans -11 isomer. The proportion of saturated fatty acid in meat significantly increased with increasing CLA supplementation, with a corresponding decrease in monounsaturated fatty acid. Dietary CLA also reduced thiobarbituric acid reactive substances (TBARS) values in raw meat during storage at 4°C for 5 days. These results provide evidence that CLA feeding is a practical strategy not only for adding nutritional benefits to chicken meat but also for improving meat quality including oxidative stability.  相似文献

OBJECTIVE: To examine effects of dietary protein quality (casein [CA] vs corn gluten [CG]) and dietary lipids (corn oil [CO] vs oil blend [OB] rich in long-chain polyunsaturated fatty acids [LCPUFAs]) on fatty acid composition in liver and adipose tissue after weight loss in overweight cats. ANIMALS: 24 ovariohysterectomized adult cats. PROCEDURE: Cats were allowed ad libitum access to a high-quality diet until they weighed 30% more than their ideal body weight. Cats were then randomly assigned to 1 of 4 weight-reduction diets (6 cats/diet) and were fed 25% of maintenance energy requirements per day. Diets consisted of CG-CO, CA-CO, CG-OB, and CA-OB, respectively, and were fed until cats lost weight and returned to their original lean body mass. Liver biopsy specimens and samples of perirenal, subcutaneous, and abdominal fat were obtained and analyzed for fatty acid content. RESULTS: Following weight loss, fatty acid composition of the liver and adipose tissue was primarily affected by protein quality in that cats fed CA had significantly higher percentages of 20:4(n-6) and 22:6(n-3) fatty acids than those fed CG. Cats fed the CG-CO diet had the lowest concentrations of LCPUFAs, suggesting that dietary lipids and protein quality each influence fatty acid composition in tissues. CONCLUSIONS AND CLINICAL RELEVANCE: These data provide direct evidence that dietary protein quality alters fatty acid composition of tissues during weight loss in cats. The fatty acid patterns observed suggest that protein quality may alter fatty acid composition through modulation of desaturase activity.  相似文献

1. A study was undertaken to examine the effect of supplementation of diets with fats of different chain length and degree of unsaturation on the performance, carcase characteristics and tissue fatty acid composition of broilers.

2. Three hundred and sixty 19‐day‐old female broilers were fed on diets containing supplemental fat/oil (50 g/kg) in the form of beef tallow (BT) (diet T‐T), soyabean oil (SBO) (diet S‐S), rapeseed oil (RSO) (diet R‐R), marine oil (MO) (diet M‐M) or binary mixtures (0.5:0.5 w/w) of these lipids (diets T‐S, T‐R, T‐M, S‐R, S‐M, and R‐M) to 54 d of age. Food intake, live weight, plucked weight and the lipid concentration and fatty acid composition of abdominal fat pad, liver and breast muscle were measured.

3. Food intake, plucked weight and live weight were greatest for diet T‐T and lowest for diet R‐R. Food conversion ratio was poorest for birds fed on diets containing BT. Lipid concentration in abdominal fat pad was significantly higher in birds fed on diets containing SBO. liver lipid concentration was significantly reduced by diets containing RSO.

4. Abdominal fat pad fatty acid profile was most readily altered by dietary fatty acids. There was a strong correlation between dietary fatty acid composition and tissue fatty acid composition for all fatty acids except C14:0, C20:0, C20: 2n‐6 and C20: 4n‐6. The tissue P/S ratio ranged from 0.40 for diet T‐T to 1.40 for diet S‐S. The n‐6/n‐3 ratio was significantly increased by the inclusion of SBO and decreased by the inclusion of MO.

5. Liver fatty acid profile was least modified by dietary fatty acids. There was an inverse relationship between liver and dietary C20:4n‐6 concentration. Tissue C18:2n‐6 and C20:4n‐6 were highly correlated, suggesting significant interconversion by ?‐6 desaturase in this tissue. The n‐6/n‐3 ratio was significantly increased by inclusion of SBO and significantly decreased by the inclusion of MO.

6. In breast muscle MO‐based diets increased the proportion of n‐3 PUFA at the expense of n‐6 PUFA. The tissue concentrations of C18:ln‐9, C18:2n‐6, C20:ln‐9, C20:5n‐3, C22:5n‐3 and C22:6n‐3 were strongly correlated with dietary fatty acid composition. Muscle and diet P/S and n‐6/n‐3 ratios were highly correlated.  相似文献

The effect of supplemental dietary fat on the fatty acid composition of some tissue lipids of rainbow trout fingerlings was studied. Data showed that dietary fatty acids were deposited nearly unchanged in the adipose tissue. The level of eicosapentaenoic acid, however, dropped significantly. Muscle showed remarkable capacity for deposition of dietary fat, while only minor changes were observed in the fatty acid composition of liver lipids. Levels of some polyenoic acid (e.g. 18: 2 omega 6, 20:4 omega 6, 20:5 omega 3, 22:6 omega 3) showed, that the fish converted lower unsaturated fatty acids to highly unsaturated fatty acids. It was observed that dietary acids had little effect on the fatty acid composition of tissue phospholipids. This result shows, that 17% fat in the diet are tolerated by trout, without alterations in the fat composition of the liver tissue. Probably the low rearing temperature (11 degrees C) had a more pronounced effect on the fatty acid composition of phospholipids than the diet.  相似文献

Abstract

The influence of dietary protein, fat and mineral levels on crude fat and fatty acid digestibility was investigated in growing pigs. The experiment was a factorial design with two levels of protein (normal and high), two levels of dietary fat (3 and 15% of DM) and three levels of minerals (50, 100 and 150% of Danish Standard). Four litters, each of six female pigs, were used in the experiment.

Increasing the dietary protein content resulted in a moderate but significant increase in the ileal digestibility of fatty acids. The increase was most pronounced for the saturated fatty acids. Addition of animal fat to the basal diet caused a substantial increase in ileal digestibility of all fatty acids except stearic acid (18:0). A variation in the dietary mineral content of ±50% of the Danish Standard had no significant influence on ileal digestibility of crude fat and fatty acids. Apparently, microbial hydrogenation occurred in the hind-gut, but the increase in stearic acid (18:0) excretion could not be explained solely by biohydrogenation of unsaturated fatty acids. The interactions between dietary protein and fat on the increase of faecal 18:0 showed that the dietary composition had a very complex effect on the microbial activity in the hind-gut. Consequently, determination of fatty acid digestibility should be performed at the terminal ileum, whereas crude fat (Stoldt) digestibility can be carried out on faecal material.  相似文献

[目的] 比较中国荷斯坦奶牛、荷斯坦奶牛和西门塔尔牛乳中常规营养成分含量、矿物质元素含量及脂肪酸含量和组成的差异。[方法] 选取中国荷斯坦奶牛、荷斯坦奶牛和西门塔尔牛各6头,每头奶牛收集200 mL生鲜乳样品,利用乳成分分析仪测定乳中常规营养成分含量,通过原子吸收分光光度计测定乳中矿物质元素含量,应用气相色谱仪测定乳中脂肪酸含量和组成。采用统计学方法对不同品种牛乳中的营养成分含量及脂肪酸含量和组成进行比较。[结果] 中国荷斯坦奶牛生鲜乳中乳脂含量显著(P<0.05)高于荷斯坦奶牛,乳蛋白含量显著(P<0.05)高于荷斯坦奶牛和西门塔尔牛;中国荷斯坦奶牛生鲜乳中乳钙含量显著(P<0.05)高于荷斯坦奶牛,乳锌含量显著(P<0.05)高于荷斯坦奶牛和西门塔尔牛。中国荷斯坦奶牛生鲜乳中豆蔻酸含量显著(P<0.05)低于荷斯坦奶牛,油酸和亚油酸含量显著(P<0.05)高于西门塔尔牛;中国荷斯坦奶牛生鲜乳中饱和脂肪酸含量显著(P<0.05)低于西门塔尔牛,不饱和脂肪酸含量显著(P<0.05)高于西门塔尔牛。[结论] 中国荷斯坦奶牛乳中部分营养成分和矿物质元素含量接近或优于荷斯坦奶牛和西门塔尔牛,脂肪酸含量和组成与荷斯坦奶牛相近,脂肪酸组成优于西门塔尔牛。  相似文献

The experiment was organized in a 3 x 2 factorial arrangement with three dietary fat blends and a basal (20 mg kg(-1) diet) or supplemented (220 mg kg(-1)) level of alpha-tocopheryl acetate. Dietary vitamin E and monounsaturated to polyunsaturated fatty acid ratio (dietary MUFA/PUFA) affected muscle alpha-tocopherol concentration (alpha-tocopherol [log microg g(-1)] = 0.18 (+/- 0.105) + 0.0034 (+/- 0.0003) x dietary alpha-tocopherol [mg kg(-1) diet] (P < 0.0001) + 0.39 (+/- 0.122) x dietary MUFA/PUFA (P < 0.0036)). An interaction between dietary alpha-tocopherol and dietary MUFA/PUFA exists for microsome alpha-tocopherol concentration (alpha-tocopherol [log microg g(-1)] = 1.14 ( +/- 0.169) (P < 0.0001) + 0.0056 ( +/- 0.00099) x dietary alpha-tocopherol [mg kg(-1) diet] (P <0.0001) + 0.54 (+/- 0.206) x dietary MUFA/PUFA (P < 0.0131) - 0.0033 (+/- 0.0011) x dietary alpha-tocopherol [mg kg(-1))] x dietary MUFA/PUFA (P < 0.0067)), and hexanal concentration in meat (hexanal [ng x g(-1)] = 14807.9 (+/- 1489.8)- 28.8 (+/- 10.6) dietary alpha-tocopherol [mg x kg(-1)] (P < 0.01) - 8436.6 (+/- 1701.6) x dietary MUFA/PUFA (P < 0.001) + 24.0 (+/- 11.22) x dietary alpha-tocopherol-dietary MUFA/ PUFA (P < 0.0416)). It is concluded that partial substitution of dietary PUFA with MUFA lead to an increase in the concentration of alpha-tocopherol in muscle and microsome extracts. An interaction between dietary alpha-tocopherol and fatty acids exists, in which at low level of dietary vitamin E inclusion, a low MUFA/ PUFA ratio leads to a reduction in the concentration of alpha-tocopherol in microsome extracts and a concentration of hexanal in meat above the expected values.  相似文献

[目的] 分析不同粗饲料日粮对西门塔尔繁殖母牛瘤胃液pH值、瘤胃挥发性脂肪酸含量及血液指标的影响。[方法] 选择体重相近的西门塔尔繁殖母牛18头,按同质原则分为3组,每组6头。日粮1组粗饲料为干玉米秸秆,日粮2组粗饲料为全株玉米青贮,日粮3组粗饲料为全株玉米青贮+干玉米秸秆。预试期14 d,正试期42 d。采集试验牛的瘤胃液和血液样本,进行瘤胃液pH值、挥发性脂肪酸(volatile fatty acid,VFA)含量及血液指标测定。[结果] 3组繁殖母牛的瘤胃液pH值差异不显著(P> 0.05)。全株玉米青贮组的瘤胃内乙酸含量显著(P<0.05)高于干玉米秸秆组,全株玉米青贮组和全株玉米青贮+干玉米秸秆组的瘤胃内丙酸含量显著(P<0.05)高于干玉米秸秆组,全株玉米青贮组的瘤胃内正丁酸和异丁酸含量显著(P<0.05)高于其他组。干玉米秸秆组的血清SOD活力和T-AOC活力显著(P<0.05)低于其他组,GSH-Px活力显著(P<0.05)低于全株玉米青贮+干玉米秸秆组。干玉米秸秆组血清中的铁(Fe)和锌(Zn)含量显著(P<0.05)低于全株玉米青贮组,干玉米秸秆组和全株玉米青贮组血清中的硒(Se)含量显著(P<0.05)高于全株玉米青贮+干玉米秸秆组。干玉米秸秆组血清中VD和VE含量显著(P<0.05)低于其他组。[结论] 饲喂以全株玉米青贮或者全株玉米青贮+干玉米秸秆为粗饲料的日粮,西门塔尔繁殖母牛的瘤胃发酵和血液生化指标优于饲喂以干玉米秸秆为主要粗饲料的日粮。结合饲养成本和农区粗饲料供给情况,生产中推荐全株玉米青贮+干玉米秸秆的粗饲料饲喂模式。  相似文献

This study was conducted to determine the effects of dietary crude glycerol and dried distillers grains with solubles (DDGS) on growing-finishing pig performance, carcass characteristics, and carcass fat quality. We hypothesized that because dietary crude glycerol has been observed to increase carcass SFA, it might ameliorate the negative effects of DDGS on fat quality. The 97-d study was conducted at a commercial swine research facility in southwestern Minnesota with 1,160 barrows (initial BW = 31.0 ± 1.1 kg). Pigs were blocked by initial BW, and pens were randomly allotted to 1 of 6 dietary treatments with 7 replications per treatment. Treatments were arranged in a 2 × 3 factorial with main effects of crude glycerol (0, 2.5, or 5%) and DDGS (0 or 20%). All corn-soybean meal-based diets contained 3% added fat (choice white grease). There were no glycerol × DDGS interactions for any response criteria evaluated. Increasing dietary glycerol did not affect finishing pig growth performance. Adding 20% DDGS to the diet did not affect ADG; however, finishing pigs fed diets with added DDGS had greater (2.47 vs. 2.41 kg/d; P = 0.02) ADFI and poorer (0.39 vs. 0.40; P = 0.01) G:F than pigs not fed DDGS. Feeding increasing dietary glycerol or 20% DDGS did not affect carcass characteristics. For carcass fat quality, feeding 20% DDGS resulted in decreased (P < 0.01) palmitic and oleic acids, total SFA and total MUFA, and increased (P < 0.01) linoleic, total PUFA, total unsaturated fatty acids, and iodine value in jowl fat, belly fat, and backfat. Increasing dietary crude glycerol increased myristic acid (linear, P < 0.05) and MUFA (quadratic, P < 0.05) in jowl fat and increased (quadratic, P < 0.05) oleic acid and MUFA in backfat. In conclusion, feeding 20% DDGS to finishing pigs increased ADFI, reduced G:F, and increased carcass fat iodine value, whereas feeding crude glycerol did not influence growth performance, carcass characteristics, and had a minor influence on fatty acids of carcass fat. Both of these biofuel coproducts can be used in combination without affecting finishing pig performance or carcass traits; however, feeding crude glycerol did not fully mitigate the increased unsaturation of carcass fat observed when feeding DDGS.  相似文献

The chemical composition, digestibility and energy value of eight animal and vegetable fat batches was determined (animal fat, soya oil, palm oil, palm oil, palm oil mix and vegetable oil byproduct). To a basal diet, 5, 10, 15, 20, 25 or 30% dietary fat was added, and digestibility and balance experiments with each fat batch were carried out with three litters of six female pigs, weighing 50-75 kg. The digestibility was determined by multiple regression analysis. The content of HCl-extracted fat and the amount of gross energy was nearly equal for all the fat sources and as such not related to the variation in fatty acid composition or digestibility. Inclusion of soya oil, which is high in polyunsaturated fatty acids, enhanced protein digestibility, whereas inclusion of the other fat sources did not influence protein digestibility. A curvilinear function of fat digestibility (% of intake) to dietary fat concentration was found, thus reflecting the significance of the endogenous fat losses on the determined digestibility value. The incorporation and elimination rate of dietary PUFA in pork fat was investigated in this study. Experiment 1 examined the incorporation of dietary PUFA into backfat (BF) and into the triglyceride (TG) and phospholipid (PL) fractions of the i.m. fat of the loin. Experiment 2 examined the elimination of PUFA from BF due to withdrawal of PUFA from the diet. In Exp. 1, Piétrain x Seghers Hybrid pigs (70 barrows and 70 gilts averaging 11 wk of age and 30 kg initially) were assigned to five dietary treatments in a 2 x 5 factorial arrangement during a 16-wk feeding period. Pigs received a diet containing about 2.5% tallow (T) for 8, 10, 12, 14, or 16 wk, followed by a diet containing about 15% full-fat soybeans (FFS) for 8, 6, 4, 2, or 0 wk, respectively. Additionally, BF biopsies were taken every 2 wk from eight pigs on the 8-wk FFS dietary treatment, starting from the time pigs were switched to the FFS diet. Linoleic acid [18:2(n-6)], linolenic acid [18:3(n-3)], eicosadienoic acid [20:2(n-6)], arachidonic acid [20:4(n-6)], and PUFA contents in BF increased (P < .01) with time on the FFS diet, but contents of these fatty acids were similar for pigs fed FFS for 6 or 8 wk. The PUFA content of the biopsies rose throughout the FFS treatment; the greatest increase in PUFA occurred during the first 2 wk of feeding FFS. The PUFA content of the TG and PL fractions in i.m. fat of the longissimus muscle tended to increase with time on the FFS diet. The increase was significant (P < .01) in the TG fraction for 18:3(n-3) and in the PL fraction for 20:4(n-6) and 22:6(n-3). In Exp. 2, 11-wk-old pigs (10 barrows and 10 gilts) were fed a FFS-based diet from 11 to 19 wk of age, followed by the T-diet for an additional 8 wk. During the latter period, biopsies were taken every 2 wk. The elimination of PUFA from BF was greatest during the first 2 wk after the dietary change. The PUFA reached the lowest level at the age of 25 wk. These experiments show that the PUFA: saturated fatty acid ratio of BF can be increased from .34, corresponding with a T-based diet, to .55, by feeding a FFS diet for 6 wk before slaughter.  相似文献

The effects of corn dried distillers grains with solubles (DDGS) feeding on rumen fermentation and milk production in cows were evaluated using diets high in neutral detergent fiber (NDF, 45.9–46.6%). The control diet (Control) consisted mainly of hay, corn silage and concentrates. In the experimental diets, the concentrates were replaced with DDGS as 10% dry matter (DM) (10%DDGS) and 20% DM (20%DDGS). Eight cows were used for each 14‐day treatment period. Effect of DDGS feeding on DM intake was not significant. Ruminal volatile fatty acids and ammonia‐N at 5 h after feeding of 20%DDGS were decreased compared to Control, whereas protozoal count at 2 h after feeding of 20%DDGS was higher than that of 10%DDGS. Milk yield of cows fed DDGS diets was greater than that of Control, although percentages of milk protein and solids‐not‐fat were decreased by DDGS diets. The proportions of C10:0, C12:0, C14:0 and C16:0 in the milk fat decreased, and those of C18:0, C18:1, C18:2 and cis‐9, trans‐11 conjugated linoleic acid (CLA) increased markedly with elevated DDGS. Increase in trans‐11 C18:1 was observed in the rumen fluid at 5 h after feeding. These findings suggest that DDGS feeding enhanced milk yield, as well as CLA synthesis under a high dietary NDF condition.  相似文献

The effects of five different dietary fat supplements on fatty acid composition and oxidative stability of subcutaneous and kidney fat were evaluated in 36 Brown Swiss bulls and compared to a low fat diet in a monofactorial design. The following fat supplements were provided as additional fat at 30 g per kg feed dry matter: crystalline rumen-protected fat, coconut oil, and three types of crushed whole oilseeds (rapeseed, sunflower seed and linseed). Adipose tissues reflected differences (P < 0.05) in dietary fatty acid composition although to a lower extent. Using protected fat, which contained elevated levels of trans fatty acids, and sunflower seed, containing a high proportion of linoleic acid, significantly increased C18:1 trans fatty acid proportion in the adipose tissues. The use of sunflower seed increased conjugated linoleic acid. The oilseeds resulted in lower amounts of C16:0 in favour of C18:0. Except for linseed, all fat supplemented groups improved oxidative stability of adipose tissues as compared with control. This was explained by lower proportions of unsaturated fatty acids in adipose tissue (protected fat), by elevated alpha-tocopherol contents (rapeseed, sunflower seed) or by a combination of both (coconut oil). Fat colour remained unaffected by treatments. Compared to other fat supplements oilseeds, especially sunflower seed and rapeseed, can therefore be recommended to be fed to bulls in order to increase the proportions of C18 unsaturated fatty acids in adipose tissues and to maintain or improve oxidative stability.  相似文献

The aim of the current study was to evaluate the impact of carnosic acid (CA), selenised yeast (YSe) and selenate (VISe) supplemented to diets, including fish oil (FO) and rapeseed oil (RO), on the content of fatty acids, total cholesterol (TCh), tocopherols and malondialdehyde in the fat located between the thigh muscles and the heart in lambs. Twenty-four male Corriedale lambs were divided into 4 groups of 6 animals. Animals were fed a diet with FO and RO (the control diet) or experimental diets containing RO, FO and CA with/without Se (as YSe or VISe). The experimental diets without/with YSe or VISe changed concentrations of fatty acids in the fat and heart compared to the control. All experimental diets increased the levels of c11c14C20:2, c5c8c11c14C20:4, c5c8c11c14c17C20:5 and the sums of long-chain polyunsaturated fatty acids (LPUFA) and conjugated linoleic acid isomers in the fat compared to the control. The experimental diet containing YSe or VISe increased the content of Se, TCh, c11c14C20:2, c8c11c14C20:3, c5c8c11c14C20:4, c5c8c11c14c17C20:5, c7c10c13c16c19C22:5, c4c7c10c13c16c19C22:6 and the concentration sum of n-3LPUFA, n-6LPUFA and tocopherols in the heart in comparison with the control diet and the diet containing only CA. Experimental diets reduced the concentration of malondialdehyde in the fat and heart in comparison with the control diet. Our dietary intervention has great potential for future practical and commercial implementations.  相似文献

Abstract

Long-chain fatty acid metabolism in the digestive tract was studied in lactating cows fed at two levels of dry matter intake (L, 8.6 kg DM and H, 12.6 kg DM), with 0, 4 and 6% added tallow at low feed level (L0, L4 and L6), and 0, 2, 4 and 6% fat at high feed level (H0, H2, H4 and H6). Mean fatty acid balance from mouth to duodenum was about zero when corrected for endogenous fatty acids from bile. However, regression analysis showed a microbial synthesis of 68 g at zero fatty acid intake, and a trend which indicated declining de novo synthesis of fatty acids with increasing fat level in the diet. As a mean 68% of the unsaturated C18 fatty acids were hydrogenated in the rumen.

Fatty acid and crude fat true digestibilities decreased with increasing fat intakes owing to a decrease in stearic acid (C18:0) digestibility.  相似文献

[目的] 研究日粮中添加富硒蛋白桑叶粉对陕南白山羊屠宰性状指标、肌肉理化特性指标及肌肉脂肪酸和硒含量的影响。[方法] 将30只3月龄陕南白山羊羯羊随机分为对照组和富硒桑叶组,每组15只;对照组饲喂基础日粮,富硒桑叶组在基础日粮中添加15%的富硒蛋白桑叶粉;试验期为60 d,预饲期15 d,正饲期45 d;试验结束时进行屠宰试验,测定屠宰性状及肌肉理化特性指标;采集试验羊背最长肌,测定肌肉脂肪酸含量和硒含量。[结果] 日粮中添加15%的富硒蛋白桑叶粉可显著(P<0.05)提高陕南白山羊肌肉pH1 h值和失水率;富硒桑叶组的眼肌面积和胴体重大于对照组,但差异不显著(P>0.05)。在2组山羊的背最长肌中检测到19种脂肪酸,其中饱和脂肪酸5种,不饱和脂肪酸14种;2组山羊肌肉中饱和脂肪酸、单不饱和脂肪酸及多不饱和脂肪酸含量占脂肪酸总含量的比例相似,分别约为28%、67%、5%;富硒桑叶组肌肉中的γ-亚麻酸含量显著(P<0.05)高于对照组,但脂肪酸总含量低于对照组。与对照组相比,富硒桑叶组肌肉中硒含量有所升高,但差异不显著(P>0.05);富硒桑叶组(0.071 3 mg/kg)和对照组(0.066 0 mg/kg)背最长肌硒含量均达到陕西省含硒肉类食品标准。[结论] 在陕南白山羊日粮中添加15%桑叶粉可在一定程度上改善产肉量、促进硒在肌肉中的富集、减少胴体脂肪沉积,但由于肌肉失水率显著升高,需在储存和运输过程中尽量避免水分丢失。  相似文献

Tannins were recently evaluated as feed additives in order to increase antioxidant compounds in animal diet, mainly to enhance resistance to lipid oxidation in meat. Rabbit meat is one of the most susceptible animal products, thus the main aim of this study was to evaluate the capacity of tannins to elongate shelf life of rabbit meat. Ninety hybrid rabbits were fed with three different diets: basal diet (control, C) and basal diet supplemented with 0.3% or 0.6% of tannins mix. Meat samples were refrigerated as raw at 4°C up to 11 days and analysed both as raw and cooked for physical‐chemical characteristics, fatty acids profile, lipid oxidation and antioxidant capacity. Results showed that dietary tannins affected meat colour of raw samples (mostly yellowness). Lipid peroxidation (TBARS) of raw samples was lower in tannins group than C group; a further inhibition of peroxidation was showed also in cooked samples only by the highest dose of tannins mix. Moreover, antioxidant capacity (ABTS) of raw samples increased with the percentage of tannins. In conclusion, supplementation with 0.6% of tannins mix seems to positively affect the lipid peroxidation and antioxidant capacity of meat without modifying the intrinsic characteristics of rabbit meat.  相似文献

The effect of dietary n-3 fatty acids on the fatty acid composition and lipid peroxidation of different tissues in pigs were studied. 20 castrated male pigs were included in this investigation, one half was fed daily a diet containing 1.3 g n-3 fatty acids/kg diet (control) and 10 pigs were fed a diet containing 14 g n-3 fatty acids/kg diet (n-3 diet) at the growing-finishing period. The intake of dietary n-3 fatty acids increased the concentration of these fatty acids in backfat, and the neutral and polar fractions of skeletal muscle and heart homogenates. The polar fraction showed an increased relative concentration of n-3 fatty acids in comparison to control, while the n-6 fatty acid content was reduced. In heart homogenates there was an enlargement of n-3 fatty acids both in polar lipids and in neutral lipids whilst n-6 fatty acids were decreased. Feeding n-3 fatty acid enriched diet had no influence on meat quality parameters drip loss, meat colour or pH value. The lipid peroxidation (measured as malondialdehyde equivalents) was in the order liver > heart > skeletal muscle with higher values in the n-3 group. However, by stimulation of oxidation by Fe2+/ascorbate for 3 hours the order of oxidative products in the n-3 group was muscle > liver > heart, whereas in the control group the order was liver > heart = muscle. Summarized, feeding a highly n-3 fatty acid enriched diet caused an incorporation of these fatty acids and increased the susceptibility to peroxidation in all investigated tissues.  相似文献
