摘    要:随着人民生活水平的提高,牛肉消费量在快速增长,与此同时消费者对牛肉品质的要求也越来越高,如何评价牛肉品质越来越受到重视。作者对牛肉品质评定的感观指标、内在指标以及影响牛肉品质的因素作一综述。
